01 // At the core of the S 202’s unique performance is the legendary smooth-ness of its bolt. Get ready for silent loading and quick, fluid reloads! The only thing faster is the SAUER 303.

02 // If you need a set trig- ger, it should be as practice-oriented as the one on the S 202: It can be set with almost no sound and above all without that metallic “click”.

03 // If the gun is put on safe while the trigger is set, the trigger does not unset automatically since one click will alarm all game in the vicinity. Now putting the safety on no longer means the end of the hunt.

its roots in insights gained through stress research. In the words of one expert: “There is a reason that an emergency stop button on dangerous machinery has no other function

than ‘OFF’. This ensures that the operator, even under stress, achieves that result.” This is why the safety button on the S 202 has no other

function than to put the gun on safe and the fire button in front of the trigger can only take it off safe. The fire button is fully protected from inadvertent activation by the trigger

guard but can be silently pushed upward immediately before the shot, providing that extra edge needed for still-hunting or shooting moving game. To complete the package, the S 202 shines with even more features that are of inestimable advantage in the field. MAKING OF: THE HYBRID STOCK

This unique combination of finest quality walnut and super-sticky elastomeric inserts is created in three steps. The stock is pre-shaped to the new ERGO MAX configuration. The inlays, familiar to owners of the S 303 with XT stock, are then cemented into the milled recesses and meticulously sanded to fit by hand. INCOMPARABLE ERGONOMICS.IT’S A HEAD GAME.

The SAUER 202 Synchro XT takes the pole position among modular hunting rifles with thumbhole stocks. Its winning concept takes the elements required for a stable shooting position, certain aiming and perfect trigger pull and builds them into an infinitely adjustable stock comb. Reinhard Rüger, former national team trainer for the running boar and running target disciplines brings it to a point: “An adjustable comb makes for a correct hold.”

“Wild Game – 130 Everyday Recipes”

THE GOOD LIESSO NEARStar chef Harald Rüssel cooks mainly with what grows and is produced in his region. His hotel “Landhaus St. Urban” with its two restaurants lies between the wooded heights of Hunsrück and the Mosel valley. This is where he defined the core of his award-winning cuisine.

BRAISED VENISON SHOULDER

Verbena tea (Verbena officinalis)

Grated peel of 1 lemon

Rosemary sprig

Remove the large tendons from the boned shoulder of stag. Peel the parsley root and carrot and slice them into sticks. Season the inside of the shoulder cut. Roll up the vegetable sticks in side it and bind tightly with kitchen twine. Pre-heat oven to 180° C (350° F).

Sauté the shoulder on all sides in oil, then remove shoulder

from heat and lightly brown the mirepoix in the drippings.

Add tomato paste and simmer with mirepoix for a short time.

Deglaze with red wine then add venison broth. Return the shoulder

to the pan, add the rosemary and re-maining spices and braise for 30 minutes

in the pre-heated oven. Reduce heat to 160° C (320° F) and continue braising for 2 ½ hours.

Chef Rüssel, how did you come to be a hunter? RÜSSEL // As my cooking style tend-ed more and more toward country cuisine, I found myself purchasing freshly harvested game from local hunters much more frequently than before. As a result, I worked a lot more with venison and my wish to become a hunter myself grew ever stronger.

Normally only tenderloin or haunch-es land in the pan or the broiler …RÜSSEL // … I use the entire animal. From bones for broths and sauces, to neck meat for bratwurst, to pot roast from the haunch, I use it all. Different cooking and preparation techniques transform less privileged parts of the animal into tasty mor-sels of unadulterated and natural organic quality.

You have two restaurants in your hotel – why?RÜSSEL // Each restaurant is dif-ferent from the other and speaks to a different clientele. In my gour-met restaurant two elaborate five

to seven course menus are served, usually prepared with high quality ingredients made from the best Ger-man products, for example Polting lamb, Oldenburg duck, freshwater fish from the Mosel or oysters from Sylt’s Royal Austern & Co.

In “Hasenpfeffer”, the second restau-rant, only artisan-grade homestyle cooking with venison from my hunt-ing land and fruits and vegetables local to the region is offered.

You have written a classic with your cookbook “Wild Game – 130 Everyday Recipes”. What is next on your plate?RÜSSEL // That title was selected

last year at the EAT gourmet festival in Berlin as best German cookbook and is now in its second edition. Our new project, “Freitags Fisch” (Friday Fish), has recipes for German fresh-water fish and appears to be just as successful. A new game cookbook is in the planning stage. I will primarily be caring for my restaurants and the hotel business, but a little free time should remain for my family and the hunt.

CALL OF THE WILD

he fact that we arrive at the hunting area alive is something I rate as sensational. Soon after starting out on our weekend road trip from

Almaty (Alma-Ata) into the mountains, it becomes clear to me that there is only one rule of the road around the Kazakh capital: No rules! The number of lanes chang-es constantly, traffic lights are no more than colorful decoration, and over and again potholes the size of bomb craters inspire interesting evasive maneuvers. But I enjoy hours of compensation for every moment of urban terror: We drive across steppes, jolt through the desert, traverse canyons and work our way past spectacular landscapes kilometer by kilometer on our way to the hunting grounds.

When we reach the hunting lodge we see that our arri-val has been eagerly awaited. Serik, Dmitriy and Alek-sander, three local foresters, greet us heartily and then immediately direct us to an area behind the lodge where we can sight in our rifles before dusk. The target is

at 200 meters. While I am removing my Take Down from its case and putting it together, palaver breaks out amongst my hosts. Right, they must think that I’ll never hit anything with this ‘Tinkertoy’. Supported by a sandbag and a car hood, I whip the first 180 gr Norma Plastic Point into the middle of the target and the second and third shots land right next to it.

This news produces a combination of fear and nausea in me since I am already almost at the end of my tether.

path meter by meter. Every time the hooves of my horse slip slightly, about 3 liters of adrenaline shoot straight into my head. Luckily ‘Fury’, as I now call my patient brown, is not only iron-nerved but sure-footed as well. I am indescribably relieved when we finally dismount and tether the horses at the edge of a small clearing. Aleks, who can speak a little broken German, points to me and says that he, Dmitriy and I must now climb up to the 3000 meter mark (9800 ft). Shortly thereafter I notice that this is going to be a foot race for me. While the other two smoke and joke in their wellies as they sprint uphill, here I am wheezing after them. After about an hour, we reach our stand which has a broad

view of the opposing rock face. Aleks plops himself down on my SAUER rucksack. He appreciates having a warm bottom and is in a better mood for it yet grum-bles that the color is ridiculous, my mostly gesticulated defense of the value of blaze orange notwithstanding. After a little while with no game in sight, Aleks breaks the silence: “Shoot maral good,” he whispers. I nod. “Shoot argali very good.” I look at him quizzically but nod just to be on the safe side. Aleks’ broad grin lets his teeth flash like a gold vein in the Klondike: “Shoot argali and eat argali,” he murmurs with shining eyes. While I am considering an appropriate response, far up the opposing bluff a movement in the woodline to the

Serik and Aleks swear by their Kalashnikovs. Each stands unsupported and takes a few pot shots at a rock about 100 meters away, kicking up the dust around it until finally both proclaim that they are good to go. Now Dmitriy pulls an aging Soviet sniper rifle with mini-scope out of its slip cover. He opens fire alternately upon nearby and distant rocks, vigorously spinning the dials between shots until he announces that his gun, too, cannot miss.

We move out at dawn the next morning. Serik warns us at the start that the maral deer will be pretty high up due to recent mild weather. I look up and start to seriously wonder whether I will survive the climb. Then Aleks comes around the corner with a few saddled horses. The expression on my face must mirror total derailment, enough so that one of them laughingly asks if I have

ever been on a horse. Of course not! But now there is no turning back and with their copious assistance – but mainly thanks to the stoic patience of my nameless horse – I am able to finish the first leg of the ascent without falling off. Luckily, the Take Down is stowed disassembled in my rucksack. I am calmed not so much by the compact transport dimensions of the gun but by the fact that not carrying a hard, bulky object across my back increases the probability of my staying in the saddle or at least increases my chances of not dying if I fall on my own gun. This image is still with me an hour later as we reach the foot of the mountain, where I was thinking that we would proceed on foot. Think again: We keep riding. That’s when they tell me that I should stick only my toes into the stirrups so that I will be able to jump off onto the rock face in the case of a fall or landslide. This news produces a combination of fear and nausea in me since I am already almost at the end of my tether. Completely cramped by my desperate efforts to cling to my mount, I struggle up the stony

about 300 meters. I aim at the base of the neck and the shot is out. Showing a definite reaction to the shot, the stag lumbers toward cover.

The second shot is a miss. The stag is already among the boulders adjacent to the woodline as the third shot brings it down from the rear. That’s when the dam bursts. Dmitriy and Aleks rejoice as if they had just kicked the winning goal for the World Cup and, before I know it, they are running with knives drawn up the side of the hill. I unload and chase after them. By the time I catch up they already have the washbasin-sized liver out and basking in the golden reflection of Aleks’ smile. We quickly pack the filets into our rucksacks as Dmitriy prompts our march back with “Soon dark.” We will return the next morning with the horses to bring back the head and the rest of the carcass. By the time we reach the horses by the light of the only flashlight – mine – it is long past dark. I sit on ‘Fury’ with my high beam on and then hear “No, no, nix lamp! Horse know.”

So now we all must – in every sense of the word – have blind faith that our mounts will bring us safely home. I lose my cap when an errant branch flies into my face, but I had lost my nerve long before that. We somehow miraculously reach the lodge where our reception can-not be more triumphant. In a short span of time, the table fills with grilled liver, maral filets and all kinds of side dishes. As the feast runs its course my guides hold court with theatrical retellings of unbelievable tales of heroism of which they are the stars. Again and again the stag – played by Aleks – crosses the firebreak, and again and again Dimitry opens fire. The range increases from one telling to the next until in the end, not even the actors believe the story. We laugh, drink and party all night long. Stag dead, meat secured, more luck than we deserve and above all, still alive – Thanks, ‘Fury’!

ROE LOIN SCHNITZEL

Cut the roe loin into thin slices. Place the slices between sheets of plastic wrap and pound them with a meat tenderizer or steak hammer until they are about 4 mm (1/8 in) thick.

Finely grind the allspice and salt with a mortar and pestle and season the meat with it. Coat both sides in flour. Beat the eggs and dip the floured schnitzels in them. Combine the bread crumbs with the ground nuts and dredge the schnitzels through the mixture.

Warm the canola oil in a pan on medium heat and fry each schnitzel for 3 – 4 minutes per side until they are golden brown, then add butter. This gives them a nutty taste and a nice color. Drain on paper towels and serve.

A DAY LIKE NO OTHERAn 8000 hectare (31 sq. mi.) forested hunting area in Bulgaria. Twenty hunters from around the world equipped with either the S 303 Black Velvet or the S 303 Synchro XT in .308 Win. Fourteen beaters, sixteen dogs and a wild boar population the likes of which we had never seen.

rrüieer, Brrüieer!” I can hear the beaters coming as they call out and blow their horns.

“Ho! Ho! Ho! Brrüieer! Brrüieer!” I have been standing for almost an hour on a path next to a thicket and the cold is starting to creep up. Im-patient, I shift my weight from one foot to the other. Almost unexpect-edly, a quick succession of events: Rustling leaves, breaking twigs, and the fever is upon me! A sounder of boar rumbles out of the thicket not ten meters from me. At the front is the alpha sow with her yearlings and shoats bringing up the rear. I instinc-tively shoulder and cock my S 303, take aim at a shoat, and fire. It rolls. My next target is the last shoat in the sounder. Shot: Piglet down. A massive boar (Keiler) then emerg-es from behind, mud caked on his sides so that I can hardly make him out in the background. He reacts to the shot but keeps on going. I shoot a second time and then he, too, is down. The sounder has passed us by. De-cock the action and take a good deep breath. My whole body shakes.

My shoats and the boar steam in the cold but the drive is not yet over. A half hour later I spot another huge hog in the thicket. I estimate his weight at far more than 100 kg (220 lb). Unfortunately, the vegeta-tion is so thick that I cannot take a

shot. With a little luck, my neighbor Igor at the next peg might get him. As the boar moves towards him, Igor takes his opportunity and shoots. The first shot is good, the second misses, and capital boar is down at the third. Igor told me later, “I thought you’d shoot, but when noth-ing happened, I took my chance. Despite the distance and the hectic situation, I could stay on target with the S 303 and still give it the final third shot as well.”

It is the beginning of December 2013 and we find ourselves in Byalka in northeast Bulgaria. 20 outdoor jour-nalists from around the world are gathered here and will report back to 14 countries on their experiences with the SAUER 303.

The perfect interplay between self- loading rifle, red dot sight and am-munition is to be tested and experi-enced. Since in Bulgaria there is no restric-tion on magazine capacity, we are able to fill up our 5-round maga-zines. Each guest can pick out his own S 303. Even when sighting in at 75 meters, the journalists are impressed by its performance. The combination of .308 Win. and semi-automatic action leaves them mar-veling at its soft recoil. “The recoil

is almost like shooting an air rifle,” says Thomas, a freelance journalist from Denmark. The next morning, we are out be-fore sunup. The chief forestry official makes it known to the assembly that boars, yearlings and shoats may be shot today. We are split up into groups and six pickups bring us to our pegs.

At the next drive, I resolve to experi-ence hunting from a new perspective. This time, I will go with the beat-ers and their dogs. I take my S 303 with since you never know what will happen. Tsvetan, one of the beaters, tells me that he is a hunter himself and has been doing this since he was a boy. “In here, you are the first one to witness what happens on a

He shows me freshly broken ground – there were pigs here only a short time ago. One of his hounds, a Bulgari-an Barak, is still young and in the middle of its training. This breed is perhaps more familiar to some as the Bosnian Coarse-haired Hound. The dog gives voice as we move through a blackthorn thicket. It is as if the brushwork just five meters in front of

me is alive! Suddenly a boar dashes out of the undergrowth. The dog is right behind him and follows him in full voice as they crash through the bushes. A short time later, a shot, a keening howl, and then silence.

No one leaves empty-handed. It is a day that none of these hunters will ever forget.

I go with the beaters to recover the fallen game. When we are done, I ask Tsvetan, “What does ‘Brrüieer’ really mean? Is it Bulgarian?”

He explains: “‘Brrüieer’ is kind of like ‘Hop-Hop’ or ‘Hussasa’ – it means absolutely nothing.” That may be, but it still got the boar onto their feet!

Suddenly Tsvetan pokes me and points to a small blackberry patch in front of us. We could see that a wounded yearling had pushed its way into it. “You shoot,” I tell him and

hand the S 303 over to him. Tsvetan cocks it and brings it up. One shot and the yearling is down. He looks at the rifle in fascination: “It fits like it was made for me.” We pull the hog out onto the trail and move on. Suddenly we hear four shots to our right and then another three shots. A sounder must have passed the line of shooters. More reports come from various directions.

I ask Tsvetan what his greatest chal-lenge as a hunter has been: “I remem-ber a very special situation when three hounds swam after a boar they had chased into a small river. One of the dogs was mine. It was the end of December and cold as ice. The boar was cornered by the dogs and could not flee. I was afraid for my pack since the hog kept attacking them. A shot was impossible since the dogs were too close to him. So I took off my clothes and went into the water. One of my friends saw this

BRAISED WILD BOAR HAUNCH WITH SAVORY RUB

Remove the fine silver membrane from the wild boar haunch. This keeps the haunch from shrinking and allows the aroma of the spices to penetrate the meat. Peel the onions, carrot and celeriac and dice into approx. 5 mm (¼ in) cubes.

Heat the vegetable oil in a large broiler and then sauté the vegetable cubes until they are golden brown. Add the tomato paste and mix thoroughly. Deglaze with pinot noir and let simmer. Preheat oven to 180°C (350°F).

Combine the spices with the coarse sea salt and grind with a mortar and pestle until fine. Brush canola oil onto the haunch and then rub the ground spices into it.

Fry the haunch on all sides in sunflower oil until it is golden brown, then remove from heat and place on top of the cooked vegetable mixture. Add the thyme, rosemary and pressed garlic. Roast in the preheated oven for 1.5 – 2 hours. Brush the haunch from time to time with vegetable oil so that it develops a nice brown crust. The haunch should reach an internal tempera-ture of 59 – 60°C (138 – 140°F). Remove broiler from oven and let it rest in a warm place for about 15 min-utes before serving.

he sun is low as we reach our campsite on the Palouse River in southeast Washington State. It is the middle of October and the seemingly

endless cut fields appear to glow in the warm light. Every-one must pitch in if camp is to be set before nightfall. All of the off-road vehicles are unloaded and the wall tents as well as the provisional camp kitchen are quickly assembled. As darkness falls, it finds us sitting around our campfire grilling steaks and drinking beer. Mike, the camp organizer, forges a plan for the upcoming hunting day and explains his strategies to us. We will be hunting the whitetail, the most popular big game animal in North America and the most populous.

Washington bucks are not known for their impressive trophies but rather their impressive numbers. Intensive

agricultural cultivation provides ample sources of nu-trition while the countless canyons offer good refuge.

The hunting area consists of 8000 hectares (31 sq. mi.) of private farmland bisected by the Palouse River on whose banks are found densely overgrown cliffs and steep rock faces. The majority of the area is used for the planting of wheat. The rest lies fallow, offering an optimal habitat to deer as well as pheasants.

We will employ two hunting methods during the two week early season. In the morning’s first light will be the long range spot-and-stalk technique. Binoculars and telescopes will be used to glass the cliffs and boulders where deer prefer to retreat. If one of us finds a bedded buck, he will then try and get within shooting range

of it. Should this technique prove unsuccessful, we will conduct small drives through their bedding areas during the day.

On the morning of the third day we hunt in an area called “Paradise on the Palouse”. There is a bend in the Palouse River here and steep rock faces dominate the banks. With me is Mike as well as cameramen Bill and Jake who are recording the hunt for an episode of Petersen’s Hunting TV. In the predawn light we can see females crossing the river towards the overgrown but stony rock face. As the sun comes up over the hills, we concentrate on an area where small clearings dot the thick undergrowth. We continuously see movement in the bushes but can only vaguely make out the game within. Suddenly, Mike pokes me and points to a place in the shadow of a boulder. I can just make out the silhouette of a buck but, even with the telescope, his antlers are difficult to see. As Mike grabs the telescope I search for a solid rest for my SAUER 101.

buck. With the beaters only 200 meters away from us, a buck steps out at about 120 paces into a small clearing and looks back towards the beaters. The buck moves further into the undergrowth. We can clearly see that he is favoring his left foreleg – “Is he wounded?” springs to mind. The lame buck retreats from the beaters into the thick vegetation. In the hopes of getting a chance at a shot, we switch positions and try to cut him off on the other side of the cliffs. We barely reach our stand before the buck arrives. I mount the SAUER 101 and take it off safe in one fluid motion. The buck stops at 80 meters and the bullet is on its way. He visibly reacts to the shot. I reload and watch as the buck sinks into the high grass 30 meters from where he was hit.

My pulse slowly lowers as I approach the downed an-imal. Jake congratulates me on my first whitetail. It is the same eight-pointer from this morning, young and

“275 yards!” whispers Bill, who has just measured the distance with his rangefinder. I quickly assume a stable prone position but all I see through my scope is the buck disappearing into the bush.

Mike tells me, “That was an eight-pointer, a fat one.” We observe the area for a good while before we decide that, after we have taken a short lunch, we’ll shake up the hillside with a few beaters.

Not two hours later, Jake and I are back on the ledge. Mike and Bill are looking for a stand on the other side of the river. I see the drivers on the opposite hillside. They make slow progress through the steep and brushy landscape. They are still far away when a doe comes toward us at an angle. It sticks to the path and stops directly under our position. As Jake leans out to snap a picture, the doe takes flight across the river with several other females following her lead. Still no sign of our

unquestionably beefy. He really does have a gunshot wound making these other things seem unimportant in comparison. The wound on his left foreleg is only a few days old. We drive the ATV to the buck, recover it and strike out for camp where we are awaited by our fellow hunters.

That very evening under a starry sky, the venison filets land on the grill and we say farewell to the day with thrilling hunting stories, a few bottles of beer and a glass of good bourbon. This Wild West campfire atmosphere is only highlighted by the bright full moon as the plaintive howls of coyotes echo off the nearby cliffs.

Whether hunting at home in the southern Black Forest or far away in strange lands, it is the hunting experience that is most important for SAUER’s Product Manager.

Two additional features underscore the excep­tional safety of the S 101: First is the inter­nal firing pin block that prevents the rifle from firing when the bolt is not 100 % locked; second is the button behind the bolt handle that allows the bolt of the S 101 to be opened while remaining on safe. Loading and unloading on safe is the icing on the DURA SAFE cake.

The firing pin safety is without a doubt the most effective of all safety systems. But it is only when it can be operated comfortably and quietly when mounted to the shoulder that it is really field­ready. The DURA SAFE makes the S 101 the only rifle that fulfills both requirements: The safety slider is perfectly positioned so that it can be easily placed on “Fire” right before it is needed. Toast the open bun halves on the grill. Garnish the lower half with lettuce, tomato and meat patty. Place the pineapple slice on top of the meat patty and fill the hole in the pineapple with lingon-berries. Cover the venison burger with the top half of the bun.

Knead the meat dough between the fingers and, with mois-tened hands, form it into ten patties. Lightly oil both sides of each patty then cook on a hot grill for 4– 5 minutes per side.

Soften some stale hard rolls in lukewarm water. Cut the venison into cubes and process through the coarse disk on a meat grinder. Squeeze the rolls out by hand and stir into the ground meat along with the egg, shallot and plucked thyme. Season with nutmeg, salt and pepper.

Stone the plums for the compote, setting apart any that are overripe. Peel the shal-lot, dice it and sauté the cubes in butter. Add the ripe plums, sprinkle with sugar, drizzle with honey and caramelize. Deglaze with Riesling wine and Mirabelle brandy. Stir in lemon and grape juices, bring to a low boil and then press through a strainer. Season with coriander, anise and pepper. Add the rest of the Mirabelle plums and re-heat. Finish by refining with the white wine vinegar.

To prepare the salad, clean and wash the wild herbs, carefully shaking them dry. Dice the shallot and sauté in vegetable oil until the cubes become transparent. Blend in mustard and honey. Deglaze with Mirabelle brandy. Add broth and bring to a boil, then bind with cornstarch. Add the oils and season well with salt, pepper, allspice, coriander seeds and lemon juice.

Preheat oven to 180°C (350°F). Prepare the deer liver by first removing the silver membrane with a small, sharp knife. Cut into slices, flour lightly and shake off excess. Heat the vegetable oil in the pan and sauté the livers until they turn golden brown, then place them in a warm oven for about 5 minutes depending upon how thick they are cut. Add butter, garlic and the rosemary sprig to the pan, but only let simmer for a couple of minutes so that the liver maintains a rare center. Carve and lightly season with the aromatic rose salt.

Sven Weller assumed his position as Custom Shop Manager for SAUER INDIVIDUAL in the fall of 2013. Thanks to his creativity and craftsman ship, he has already fulfilled countless customer wishes to the highest standards during his 23 years as a gunsmith.

S. WELLER // A personally selected stock wood can drastically change the character of a gun. My opinion is that every person has his own pref-erences for the form, grain structure, and color of a stock. The selection of the right stock wood starts with the selection of the blank. We of-fer our customers the possibility of selecting either a proper blank or finished stock with our guidance. For Grade 6 and better wood, the customer can come down to Isny and pick it out himself. In addition, the gun can be engraved according to

the individual’s wishes. We can use finished drafts or design a completely new engraving scheme according to the customer’s own ideas. Even small decorations on the bolt handle knob, magazine floorplate or pistol grip cap can give any gun a personal touch.

SAUER patent was revolutionary. Its mechanism is based upon the theorem of Thales of Miletus.” I look at him quizzically and he shows mercy: “I’ll spare you the mathematics, but the arrangement of all the lock parts in accordance with this theorem was and is a milestone in terms of safety, speed and good trigger characteristics.”

Marko makes the lock, just as he does the entire gun, more or less like back then: The parts are milled on machines and then, piece by piece, finished and fitted by hand. “This shotgun is called Meisterwerk. There are no compromises.” I ask whether it can be compared with anything else. “Maybe a truly handmade me-chanical clock is made with the same passion and precision as this gun.”

After several weeks, the gun leaves the shop ‘in the white’, unhardened and without any finish. Then his brother takes over …

It smells like hand-made firearms. The eye confirms it: The heart of a Meisterwerk shotgun – the Sauer & Sohn sidelock – is lying atop a scarred workbench. It still appears raw and archaic. “You don’t need to photo-graph that,” says Marko. “It’s not finished. I’ll get back to it when I am through with that stock over there. I can see from a few meters away that the stock boasts cloud and flame patterns that overshadow the other stocks nearby. But “through” with the stock? No, Marko was just putting on yet another coat of stock oil. Oil, let dry, sand – so it goes for weeks until the walnut shines in three-dimension-al glory so deep that you think you can see inside the wood. Now Marko clamps the sidelock in his vise and explains: “Over a century ago, this

At master engraver Hendrik Früh-auf’s studio, you feel right away as if you are in an artist’s atelier: Among stacks of very old original engraving cuts, one finds pictures, sketches and drafts of all sorts of wild species and animal scenes. In the midst of this, the rotary engraving blocks and an armada of gravers and matting tools are mounted on heavy wooden tables. For Hendrik, nature books and tem-plates are only part of the story: “My inspiration is the hunt, since with every sighting I become more in tune with that game animal. For me this is the key to lifelike engraving.” The sideplate of the 20 gauge shotgun in his engraving block shows what he means: Incoming ducks so realistic that a hunting scene starts playing in your head right away!

For this kind of work every touch must be perfect, since with steel there is no second chance. Depending upon the motif and the effort, several hundred hours pass before the ornamentation of a Meister werk shotgun is complete. Stylistically, there are practically no limitations. “I like to orient myself on the historical motifs of the old Sauer & Sohn masters. Other styles also influence my work,” explains Hendrik. “Each has its own allure, from the classic British style with its clear lines to the more ornate Italian engraving. For me this means that I must continue to develop myself and my personal style without cutting off the connection to old school roots and my own heritage. I am only satisfied when I can fully and completely iden-tify with my work.”

After hardening and final finish-ing, Marko assembles the shotgun and gives it its crowning touches. Then the goal is achieved: A ‘best’ gun built upon the most spectacular sidelock of all time, a Meisterwerk from Sauer & Sohn.

HERB-ENCRUSTED VENISON MEDALLIONS

The herb crust should be prepared ahead of time. For the crust, beat the butter until it foams then add the egg yolk. Grind the long pepper in a mortar until fine and sift onto the butter. Pluck the thyme and rosemary needles from their twigs, chop finely and add to the butter mixture. Stir in the parsley, garlic and citrus gratings. Grate the bread, carefully fold in and let the crust mixture rise. Sea-son to taste with salt and pepper. Form the mass into a roll, cover with plastic wrap and refrigerate. The crust will keep for several days in the refrigerator and can be frozen as well. Preheat oven to 160°C (320°F). Season the roe deer medallions with salt and pepper and brown in the canola oil. Place in the oven for about 15 minutes and cook until an internal temperature of 48°C (118°F) has been reached. Place the meat in a warm location and let it rest until it reaches a core temperature of 56°C (132°F).
