Greetings to students, parents and faculty members!January 2014 marks the beginning of a new semester.

Everyone, how was your winter vacation? We hope your vacation was filled with rewarding experiences and happy memories.Let the Cafeteria and J&J Catering help you to jump start the new, exciting semester!

J&J Catering has always upheld a tradition of providing not only delicious and healthy meals but also of planning various fun and educational events for all those who dine at the Cafeteria based on various Cafeteria operational concepts.During this new semester, we will strive to add an increased number of fun and exciting concepts to upgrade on last semester’s Cafeteria concept, the ”School CAFETERIA is another CLASSROOM.”

In this newsletter, we will explain the improved operational concept, which we at J&J Catering will pursue this upcoming semester, as well as introduce our menu plan and related nutritional information.

Greeting

As part of its efforts to improve the Cafeteria experience, J&J Catering implemented

the first Cafeteria concept titled, “Let’s eat Healthy!” in 2009, offering healthier meals.

Through our “Let’s eat Healthy!” campaign,

we focused the Cafeteria menu on healthy foods essential to promoting student health.

: NO MSG, NO Trans Fat, No Fast Food, Low Sodium(Na), Low Sugar

In 2010, we went one step further on our goal to promote student health and

implemented the second Cafeteria concept, “Let's Eat Right” ,

“Let’s Eat Right” means eating the right foods in the right way. Through this concept,

we strove to correct nutritional imbalances and improper dietary habits of students by

promoting the best daily eating practices.

In 2011, we finally arrived at the current and most evolved Cafeteria concept,

“School Cafeteria is another Classroom” , which positions the Cafeteria as a classroom

teaching health, nutrition, hygiene and culture where students can learn what healthy eating habits

are and practice making these eating habits a part of their daily lives.

Last semester, students were taught good hygiene practices that are an important part of safe

and healthy eating through the “hygiene classroom” program.

Please look forward to this semester’s program, “World Food Culture”, which will introduce

the unique cuisines of many different countries around the world and also give

students the opportunity to learn about the history and food culture of these

many nations.

By providing students with the chance to learn about the food culture of various countries, we want to promote the understanding and acceptance of cultural diversity.

We will strive to provide food and a food culture experience for 4 countries during this semester.

The current semester’s concept, the “School Cafeteria is another Classroom” will be carried out through the Food Culture Class and Experience Program.

Provide students with an opportunity to cook with actual ingredients in order to increase their fondness of various foods

Ensure menu diversity and enjoyability by reflecting students’ and faculty members’ preferences into new menu items

Provide students with an opportunity to personally grow beans, anoften shunned part of a healthy diet, and learn to appreciate thewonders of all life

An educational review of the cuisines and food culture of the various countries that were experienced by students during the semester

Shall we learn about French food culture?

As France is bordered by the Mediterranean Sea and Atlantic Ocean, it enjoys a mild climate and has an abundance of high quality agricultural, livestock and fishery products for cooking. French cuisine is said to utilize advanced cooking techniques to create a delicate taste while drawing out the full flavors of the ingredients. Instead of using premade sauces that can be bought at the market, French chefs create their own sauces from scratch to match their dish of choice. French food’s distinctive subtle taste is said to be decided by the quality of those handmade sauce utilized in the cooking process.For lunch, French people enjoy a ham and cheese between slices of baguette while seated on a park bench or plat du jour, which means “dish of the day”, at the nearby bistro

It is considered improper etiquette to cancel an appointment after accepting the invitation to a meal.When invited to a meal, it is considered rude to bring uninvited guests.In consideration of the lengthy meal preparation process, it is polite to arrive at the venue a little bit later than the promised time.Wait until you hear “bon appétit” (bun ap puhtea) before starting to eat. This means “Enjoy your meal”.Proper French dining etiquette involves slowly enjoying your meal while engaging in plenty of conversation, often spending 3-4 hours at one sitting.

Paella is popular Spanish dish made with seafood, meat, vegetables and rice cooked and served in a large, round, shallow-bottomed frying pan with a handle on both sides of the pan.

The name of the dish Paella originates from the name of the cooking pot also known as Paella. Paella refers to a round, flat pot ranging from 1M-20M in diameter with a handle on both sides.

Paella? WHY

Paella’s origin can be found in its main ingredient, rice. Since the old times, Valencia has been known as Spain’s top rice producer due to the city’s fertile lands and its mild climate. Paella is a food Spanish farmers often ate while working the fields much like Korean farmers eat Saecham(snack).Paella can be compared to Korea’s own Bibimbap that is eaten by mixing cold rice and several side dishes in a bowl while Paella is cooked by putting rice and various ingredients into a flat pan.

What is Paella?

Lemington Cake

1. Put eggs and sugar in a bowl and whip it with a whisk until the sugar is dissolved

2. Mix in filtered flour and add a little bit of vanilla scent and the butter to the batter and stir well.

3. Lay waxed paper on an oven pan, put batter on top and bake at 170 ℃ for about 25 minutes .

4. Cool baked cake completely and cut cake into sufficiently large square pieces.

5. Put in warm water, sugar power, cocoa powder, and melted butter (in that order) into a bowl and stir well

6. Put five layers of the chocolate coating onto the cake, then roll it over coconut powder.

* Refrigerate to quickly solidify the coating, take out and enjoy
