Japanese RTD Coffee Market Abstract
Coffee beverage quality is decided by the flavor and aroma compounds generated from metabolites in green beans. However, the relationship between flavor quality
and green bean metabolites is uncharacterized. By using 'non-targeted' metabolic profiling techniques, we studied on correlation between chemical component
information and Coffea arabica. Accordingly, we focused on the maturity level of
green beans, and investigated the relationship between green bean metabolites and flavor quality.
As samples, we used 36 green beans of Guatemala SHB coffee. From non-
targeted LC-MS analysis of green beans, a total of about 2000-7000 chemical
components were obtained. PLS regression analysis showed the possibility that beverage quality is able to be predicted from green beans chemical information. In
the future, further identification of various compounds correlating to beverage quality is expected.
