Born in Barnsley in 1964, of a French mother and an English father. She studied Modern and Medieval

Languages at Cambridge and wasa teacher for fifteen years, during which time she published three novels, including Chocolat which was made into an Oscar-nominated film starring

Juliette Binoche. Since then, she has written 15 more novels, two novellas, two collections of short stories,

a Dr Who novella, guest episodes for the game Zombies, Run, the libretti for two short operas, several

screenplays, a musical and three cookbooks. Her books are now published in over 50 countries and

have won a number of British and international awards. She is an honorary Fellow of St Catharine’s College, Cambridge, has honorary doctorates in

literature from the universities of Sheffield and Huddersfield, and has been a judge for the Whit-bread Prize, the Orange Prize, the Desmond Elliott

Prize and the Royal Society Winton Prize for Science, as well as for the Fragrance Foundation awards for

perfume and perfume journalism (for which she also received an award in 2017). She works from a shed in her garden, plays bass in the band she first

joined when she was 16, is currently co-writing a stage musical and lives with her husband in a little

wood in Yorkshire.

tional chocolate awards, the award winningChocolatier David Greenwood-Haigh is a pioneer

in chocolate and constantly strives to share his passion for the versatile food with as many people

as possible. We all love chocolate but David’s demonstrations and discussions allow you to experi-ence a completely different side to this adaptable food through careful pairings and an eye for intro-ducing the ancient food into savoury dishes. You

cannot help but be swept up in David’s chocolate journey as he walks you through the food’s rich

history and incredible story. David is an international chocolate consultant

helping set up small scale “bean to bar” factories in Haiti and in São Tomé & Príncipe. Spending the last

fifteen years of his life sharing his chocolate story and changing many perceptions along the way

with his “well-refined sensory analysis” of chocolate, his mission goes a little deeper than that and taps

into his strong desire to support Fairtrade and sustainably sourced chocolate.

PROGRAM DESCRIPTIONChocolate is the main element offered at this unique culinary experience on the island of Príncipe (for an

exclusive group of 24 people). Like a sommelier unlocks the secrets of wine, our speakers will guide our guests through the chocolate tasting process using all five senses. Taking them on a journey of flavour, taste and

experience, bringing to life the island's rich cultural and colonial history, which led to São Tomé and Príncipe named the "Chocolate Islands". Guests will venture into the tropical rainforest in search of cacao, harvesting their

own pods and planting a sapling to ensure the sustainability of the crop. To complete the experience, they will make their own, and personalized chocolate. Finally there will be an introduction to the history of chocolate to the children of Príncipe and understand the cacao process from “tree to truffle” while promoting fair-trade and

organic agriculture on this “chocolate island”.
