Originally it was hard enough to prove that small family farms growing organically were sustainable and that customers would pay the higher price for the higher quality. Now that the sustainability and consumer demand has been soundly established we have another chal-lenge. Organics have become so popular that big corporations now own and make decisions regarding many organic farms and brands and we know that big corporations are pretty

synonymous with cutting corners to cut costs and raise profits. The organic dairy industry is a perfect example.

FAMILY ORGANICS: Organic Valley™ HOW IT BEGAN It all started in 1988. George Siemon and a handful of Midwest family farmers were fed up with the state of American agriculture. Family farms were going extinct. Their friends and neighbors were discarded by a bankrupt agricultural system, and were told to “get big, or get out!” Industrial, chemical farming was the only existing option for survival. Never mind its effects on their health, their animals and their environment.

They didn’t want to be industrial, chemical farmers and to be at the mercy of corporate agriculture. One day George Siemon, put up posters calling a bunch of family farmers to band together. And they did. Family farmers filled the County courthouse and they all agreed: There had to be a better way-a more sustainable way-to continue farming like they always had. In a way that protects the land, animals, economy and people’s health. And that’s how their farmer-owned cooperative was born, with George as CEIEIO. George and his band of family farmers went on tho help write the original organic standards for the USDA and he was a founding member of the National Organics Standards Board.

WHAT IT BECAME: The un-corporation Since they are a cooperative of family farmers they work together, pooling their resources and product and share the profits. What began as a handful of dairy farmers in the Coulee region of Wisconsin has grown to 2,000 farmer-owners across the United States, Canada, Australia and the United Kingdom! In 2016 annual sales exceeded 1 billion dollars and George is still at the helm assuring quality and integrity stay at the highest levels

WHAT THEY PROVED: Organic Valley™ whole milk is nutritionally superior to conventional whole milk Over the course of 18 months (2011-2012), 384 whole fat milk samples from 14 commercial milk processors in seven regions of the United States were analyzed by an independent, accredited laboratory to compare the milk-fat composition of organic whole milk from Organic Valley dairy farms with conventionally produced whole milk.

The study found that Organic Valley whole milk has 62% higher levels of omega-3 fatty acids and 18% higher levels of conjugat-ed linoleic acid compared to conventional whole milk. These powerful nutrients (Omega-3 and CLA), as a part of a balanced diet, can greatly reduce the occurrence of many modern diseases caused by the imbalanced, modern American diet.

CORPORATE ORGANICS: Be informed! The USDA has standards for organic certification but not everyone follows the rules.

The Aurora “Organic” Dairy operates at least five giant factory farms, each with thousands of animals, in both Colorado and Tex-as. The $100 million company supplies private-label, store brand dairy products for many of the Country’s largest grocery chains (Wal-Mart, Safeway, Target, Costco and others). The company has been under intense scrutiny form the Cornucopia Institute due to its highly questionable livestock management and organic practices.

In August 2007, Aurora was sanctioned by the USDA after the agency’s investigators found 14 “willful” violations of federal organic law. It agreed to pay 7.5 million dollars to settle a class action lawsuit and has continued to be charged with violations over the years.

We do play a good amount of the styles of music you mentioned but sometimes other styles of music get into the mix. JP’s Chicken Farm is a local producer based out of Spangle Washington. JP’s is a family owned farm on 5 acres of land that is ran by Patrick Cwik, his wife and their children. Their hens are fed non GMO, corn and soy free feed consisting of grains like alfalfa, grass, wheat, and lentil oats. The feed is also sourced locally. These eggs are hand-picked and delivered straight from the source, and if you have yet to try eggs from JP’s Chicken Farm, be sure to purchase a pack from our chill section because they are seriously delicious and are of the highest quality!

Pleasant Meadow Creamery is a local Dairy Farm that raises Guernsey cows that produce A2A2 milk. A2A2 milk is a cow’s milk that contains predominantly the A2 type of beta-casein protein rather than A1 beta-ca-sein protein found in conventional milk. Their cows are grass fed and are also fed certified organic, no soy, no corn grains. Paul and his wife first moved to the area in 2004. Over the last 13 years Paul and his family have developed and shaped their land into a full on dairy farm. The farm takes a family effort. Their oldest son Christopher is a full time helping hand on the ranch and their two daughters help out part time. Paul said that 2017 is a huge growth year for the farm as they plan on building a grade A parlor and they have had a lot of Guernsey heifers that were born this year that will add to their stock.

Woods Meats is a processing facility located just north of Sandpoint Idaho. Woods supplies our store with some great products including their locally sourced ground beef and pork chops. They have a wide array of sausages and smoked meats among other varieties they process and sell at their facility. Woods processes and raises their own cattle and pork, and their facility is certified to process organically raised livestock. Woods Meat Processing is operated by Steve and Louise Wood. The Woods have been raising cattle in North Idaho since the 1940’s and the business has been passed down from generation to generation.

Chase Honey is a family company operated by Harold Chase, his wife Rhonda, their son Cody, and their children/ grandchildren. Chase Honey is operated out of Otis Orchards Washington and are regionally praised for their exceptionally delicious local honey and their beeswax products. According to their website, owner Harold Chase developed a love for bee keeping in 1962 when he caught a swarm of bees near his house in Western Washington. He got help from his father to build a beehive and purchase a small extractor. That love for bee keeping turned into a lifelong journey and a successful beekeeping and pollination company.

As I turn 44, it becomes more and more relevant to be able to heal quickly and maintain my health. Being in the business of CBD for nearly 3 years, I have seen the industry move and change along with our young and evolving products.

I started my venture into the world of CBD by looking at cannabis products in the state of Wash-ington and studying the methods for creating them out of naturally derived components. The ability to help people with a premium CBD product excited me and I set out to bring this product to my home state of Idaho as a priority, which would also make it legal everywhere.

During my stint in WA I found that most people in the industry focused on THC content (which elicits the psychoactive effects) and it has even been considered sort of a joke, that it wasn’t really “medical.” What many don’t know is that CBD does not facilitate those same effects, but does activate the natural ability of our bodies to heal. I researched the Cannabinoids Benefits Wheel, studied the “52 known conditions” list and after realizing the capabilities of CBD, I saw that I had to get the ball rolling.

In further research, I found that when derived from hemp, CBD is much easier to work with internationally and nationally and we would be feder-ally legal to ship almost anywhere. With an original in-vestment of $8000, my business was built to serve as a platform for CBD awareness and for distributing these products as a legal and naturopathic way to achieve comfort, health, and healing. However, we face the issue that some people turn to CBD as a last resort for healing and as a result, the time to heal doesn’t exist. This is due to the fact that the DEA has made attempts to classify CBD as a narcotic and additionally it hasn’t become FDA recognized as a healing supplement.

CBD is a non-narcotic product derived from cannabis that can be used as part of a daily regiment, as a natural solution to quicker healing, and for overall health. CBD manufacturers are currently relying on the general public to do their own research, testing, and come to their own conclusions.

Research has found that CBD interacts with receptors in our brain and react in a specific way which can lower stress levels, reduce inflammation, and relieve pain. In the grand scheme it also assists in the functioning of our immune system, organs, and brain activity. All of us would benefit from keeping our Endo-Cannabinoid System (ECS) receptive and happy with CBD. This stuff is made for us! Once the facts are revealed, we can all see the medical benefits and the improvement of life with the use of CBD.

share industry news, product information, and the personal experiences of our customers. Personally, I use our product to lower my daily stress level and for the aches and pains of being a weekend warrior.

My anxiety levels are very low and don’t have “pull hair out of my head” kind of days anymore. I heal faster from scratches and bruising. When I do get pain in my back it is quickly reduced from CBD.

Simple Strawberry Shortcakes

Açaí Protein Smoothie

• 2 cups all-purpose flour• 1 Tbsp baking powder• 4 Tbsp cane sugar, divided • 4 Tbsp cold Organic Valley butter, cubed• 2/3 cup Organic Valley half & half• 1 Organic Valley large brown egg, lightly beaten

• 1/8 tsp sea salt• 4 cups fresh strawberries, stems removed and cut into quarters• 1 cup Organic Valley heavy whipping cream, whipped• fresh mint for garnish (optional)

• 2 original blend Sambazon açaí superfruit packs• 1/4 cup unsweetened apple juice, coconut water, or nut milk• 1 banana• 1 scoop almond butter or cashew butter

1. Preheat oven to 400° F (200° C) and lightly grease a baking sheet.2. Sift flour, baking powder, and 2 Tbsp sugar into a bowl.3. Add butter, using fingers to work it quickly into the flour until the mixture resembles fine crumbs.4. Mix half & half with the egg and salt, and add this to the flour mixture. Stir with a fork until the dough just comes together.5.Place dough on a lightly floured surface and knead until it’s smooth, but don’t overwork the dough. Roll out the dough to approximately 1/2” thick. Using a floured 2.5” or 3” cookie cutter, cut out 6 rounds. Gather the scraps, roll again and cut 2 more rounds.6. Put the 8 rounds on the baking sheet. Bake in the center of the oven for 15 minutes or until the biscuits are golden brown and firm to the touch.7. For the topping, mix berries and remaining sugar together in a bowl and chill.8. Cool the biscuits on a rack. Cut each biscuit in half and heap the bottom pieces with the chilled strawberries and whipped cream. Place top pieces and serve immediately with remaining whipped cream on the side. What Started your Retail Career?I worked at the Outpost Food co-op as a volunteer produce worker while I was going to school at the University of Wisconsin in 1974. I originally worked in Yakima Washington in 1973 as a migrant worker doing

work on conventional farms and saw how toxic pesticides were being used and it made me start thinking more about the value of organic foods and farming.

Favorite things about Pilgrim’s?I love the independency of the store and the owner Joe Hamilton and I have worked together very well for 14 years. I love the flexibility of the store that we have been able to grow. We offer a lot of organic options and try to keep the junk food out of the store. The food we sell is healthy and we don’t have to sell anything that is not healthy.

What’s your definition of great customer service?I would say with good customer service is ‘how would I want to be treated?’ To me when a customer comes in I like to treat them as if I just invited them into my living room and treat them with respect and try to serve them with the heart of a servant. To think about what their needs are and even anticipate their needs. If a customer can’t find what they want, suggest something they could use as a replacement. Make sure all their questions are answered and they leave satisfied.

Favorite Products from the store?I really love our fresh local organic produce. I also love those Clif Mint Builder Bars from our Grocery Department. I love the cultured mama sauerkrauts and the black cumin oil in supplements as well. One of my other favorites are the puppets we carry over in gift and floral.

Favorite activities outside of work?I work with the homeless a lot in Spokane. I also lead a bible study. I like to play board games with my Wife like cribbage. We cook a lot together and we make all of our own food at home, our philosophy is we can buy whatever we want from Pilgrim’s Market but we don’t buy food out. I spend a lot of time with our grandchildren as well.
