Everyone at Fresh HQ either has children of their own
or a special niece and/or nephew in their lives. So when
we set upon the idea of having a whole issue dedicated
to food that kids would love to make or eat, it got the
whole office excited. We consulted every child we knew
about the food they find yummy, and the activities
around food that they have the most fun taking part in.
We’re proud to present the colourful food in this issue,
as voted the best by Aussie kids! We’re especially
pleased to bring you our bonus magazine of party cakes
and activities (flip Fresh over for the special bonus issue!)
Loaded down with fun ideas from the kids, we created
special photo shoots and brought back fond memories
from our own childhoods. We recalled our “trick or treat”
stories (see p26) and our top weeknight dinners (p16).

Cut 600g macro tenderloins in half
lengthwise. Toss in a bowl with½ cup
macro teriyaki marinade to coat.
Chill for 30 minutes. Meanwhile,
prepare 270g pkt udon noodles
following packet directions, adding
200g sliced snow peas for the last
minute. Refresh in cold water. Drain
well. Toss with 3 tsp sesame oil, 2 tsp
mirin and 2 sliced spring onions.
Remove chicken from marinade and
thread onto pre-soaked skewers. Spray
well with sesame oil spray. Cook on
a preheated chargrill pan, basting with
reserved marinade, for 10 minutes or
until cooked through. Sprinkle toasted
sesame seeds over salad. Serve
chicken skewers with noodle salad.
EASY LUNCHchicken tortillasPrep 10 mins | Cook 10 mins | Serves 4
Mix 600g macro chicken tenderloins,
1 tbs oil and 2 tsp each of ground
cumin and coriander together in a
bowl. Cover to marinate for 15 minutes.
Meanwhile, combine 1 diced avocado,
2 tbs diced red onion, 1 seeded and
diced tomato and 1 tbs lime juice
together in a bowl. Cook chicken in a
pan over medium heat for 10 minutes.
Lay 4 tortillas on a board. Top with
rocket, avocado mix and cooked

Mangoes are synonymous with
summer – why are they so special?
On a scorching summer’s day,
mangoes sell like hotcakes because
there’s no beating that tropical taste!
My three boys grew up eating buckets
of fresh mango – they would suck on
the seed until there’s nothing left! Kids
all over the country do the same, they
really get into it. Now my boys have
moved interstate and their own boys
– my grandkids – love mango so much
that my wife is flat out drying mango
cheeks and making mango chutney
and mango syrup to ship to them!
How quickly do mangoes get from
the farm to the supermarket?
In as little as four days. The key is to
pick them at exactly the right maturity
– pick them too early and they won’t be
sweet enough. A mango is ready when
it’s smiling at you – all you need to do
is look at the beak, the slightly pointy
end, which should have a small black
mark around 10mm that looks like a
curved smile! If it’s smiling, it’s ready.
Packing more than 12,000 trays of
mangoes daily in spring and summer
– how do you maintain quality control?
It’s a long process that starts with
monitoring in the field, and then
gathers pace in the packing shed.
We slice up five mangoes in every
bin to check for colour and texture.
The mangoes are then professionally
graded and re-graded by the packers.
We also have a quality assurance staff
member who checks the final boxes
every 30 minutes to ensure perfection.
How should you store mangoes?
Never, ever put one in the fridge – keep
them in the fruit bowl out of the sun. If
it’s a Kensington Pride, you’ll smell it
when it’s ripe – it’s a beautiful fragrance.

1 ripe mango
1 small banana
2 tbs plain unsweetened yoghurt
1 Cut cheeks from both sides of the
mango. Scoop out flesh and transfer
to a food processor. Add banana and
yoghurt. Puree mixture until smooth.
FRESH TIP Divide puree into ice-cube
trays and place in freezer. Freeze until
solid. Transfer to a snap-lock bag until
needed. For older kids, these can be
made with apple or orange juice and
frozen into larger ice blocks. Creamy

Motta Produce is a family business,
which started growing asparagus,
as well as many other vegetables,
in the early ’70s. By the mid ’80s
Motta farms were dedicated solely
to producing asparagus. Motta
Produce now supplies asparagus
throughout Australia, and have
been a partner of Woolworths
for more than 20 years. Motta
is located in Koo Wee Rup in Victoria,
which is about an hour’s drive
south-east of Melbourne.
Mario and Gina Vizzarri were dairy
farmers in South Gippsland and
moved to the Koo Wee Rup area
in 1971. In the late ‘80s, they
started growing asparagus. Today
Vizzarri Farms oversee a total
of 26 properties with more than
2000 asparagus-producing acres.

500g beef mince
¼ cup tomato paste
440g can Woolworths Select
Peeled Tomatoes
250g San Remo Spaghetti (see tip)

1 Heat oil in a frying pan over medium
heat. Add onion and cook for 2-3 minutes
until soft. Add mince and cook, stirring to
break lumps, for 10 minutes until browned.
Stir in paste and peeled tomatoes.
Cover and simmer for 20 minutes.
2 Meanwhile, cook the spaghetti
following packet instructions until
al dente. Serve spaghetti with bolognaise
and top with grated cheese and parsley.

winner – spaghetti bolognaise!
The popular dish took first place
with a whopping 50 per cent of
the vote. Followed by pizza (13 per
cent) in second place; chicken
bites (12 per cent) were a close
third, with chicken wings taking
8 per cent in fourth place; while
the comforting macaroni and cheese
placed fifth. It seems the classic

⅓ cup plain flour
2 eggs, lightly beaten
vegetable oil for frying

and mayonnaise, to serve
1 Cut chicken breast into 3cm chunks.
Place breadcrumbs into a snap-lock bag.
Place flour into one bowl and egg into
another. Lightly dust the chicken pieces
in the flour, dip into egg and add to bag

shake to coat. Lay chicken on a plate.

3-4 minutes each side until golden

1 cup grated cheese
1 Cook macaroni following packet

2 Melt the butter in a small saucepan
over a medium heat. Add flour and
mix until smooth. Cook for 1 minute.
Gradually whisk in milk. Bring to the

1 Preheat the oven to 200ºC. Line

Depending on their weight and
sex, toddlers need roughly about
4000-5000 kilojoules a day, but
you may find your little one won’t eat
a lot in one sitting. That’s where healthy
and nutritious snacks will come in handy.
Snacks are a part of my boys’ daily
routine because they rarely sit down.
Hunting for T-Rex or catching a shark
can often outweigh sitting still to eat.
Along with three good meals a day,
you will probably want to incorporate
a couple of nutritious snacks into your
toddler’s daily routine, at regular times.
This can continue throughout childhood
with morning and afternoon teas at day
care and, later, at school. The best trick
is to mentally tick off the foods they eat
from each of the four main food groups:
• Carbohydrates: bread, cereal, rice
• Protein-rich food: meat, fish
• Fruit and vegetables
• Dairy

Prepare your jack-o’-lantern ahead and allow the inside to dry out. Place tea
light candles inside and close the lid back on the pumpkin. You can also
decorate your jack-o’-lantern with added extras, such as using a parsnip

1 Preheat oven on 180°C. Grease a 22cm
loaf pan and line with baking paper.
2Beat cakemix, water, oil and eggs
in a large bowl with electric mixer until
creamy. Pour into pan and smooth top.
3Bake for 50-55minutes or cooked when
tested with a skewer. Set aside to cool
for 10minutes, before turning out onto
a wire rack to cool completely.
4Cut cake in half lengthways. Place one
half, cut-side up on a serving plate. Cover
cake top with frosting. Place remaining
cake half, cut-side downon top of frosting.
Frost cake top and sides. Stick fingers
around sides of cake to create fence.
5Using the cake writing pens, write
“boo”or various scary halloween
things and names on biscuits to
create the headstones. Set aside.
6 Sprinkle chocolate powder over cake
for graveyard surface. Push headstones
randomly into surface. Mix a drop of food
colour into coconut. Place coloured
coconut around edges of headstones.
7 Push cocktail forks into corners of cake,
tines pointing up. String or tie licorice
around to form a graveyard fence.
8 Squashmilk bottles with a rolling pin.
Use black icing pen tomake ghost faces.
Decorate cake with skeleton and ghosts.

What is a simple, tasty way
to cook seafood? Because fish
can easily overcook, it helps if you
cook it in foil or a bag to keep the
steam in. Try our “Fish Bag ‘n’ Bake”

1 Cook rice following the packet

and chill overnight (this will stop the

2 Heat a wok or frying pan over high
heat. Add egg and swirl pan so that
it forms a thin omelette. Cook for
2 minutes until just set. Transfer to
a board and when cool, cut into thin
shreds. Meanwhile add bacon to the
pan and cook for 2-3 minutes or until
golden and crisp. Transfer to the plate.
3 Heat the oil in the wok. Add the garlic
and ginger and cook for 10 seconds.
Add the cooked rice and stir-fry for
2 minutes, until lightly toasted. Stir in
the peas and spring onions and cook
for 2 minutes. Add prawns, soy sauce,
egg and bacon until heated through
and combined. Serve.

1 cup sushi rice
1½ cups water
2 tbs rice wine vinegar
1 tbs sugar
6 sheets nori
smoked salmon slices
avocado slices
cucumber sticks
soy sauce and pickled ginger, to serve
1 Rinse rice under cold running water
until water runs clear. Place rice and
water in a saucepan, cover with lid and
bring to the boil. Reduce heat to low and
simmer for 10 minutes. Turn off heat and
leave covered for a further 10 minutes.
2 Combine vinegar and sugar in a cup.
Stir until sugar dissolves. Add to rice
and stir through. Spread rice out onto
a baking tray and leave to cool.
3 Place 1 nori sheet, shiny side down
onto a bamboo mat. Using damp hands
(the moisture will stop the rice sticking
to your hands), place some of the
rice on the sheet and spread out,
leaving the top edge clear by 1cm.
Lay smoked salmon slices over rice
and add avocado and cucumber
along the side closest to you.
4 Roll up using the bamboo mat, starting
from the end with the fillings. Wet the
uncovered strip at the far end and
press to seal. Slice into 6 or 8 pieces.
Place on a serving platter. Repeat with
rice and fillings. Serve sushi with soy
sauce and pickled ginger.

Line muffin tins with pastry. Halve

jelly orangesHalve 6 small oranges and juice (to make 1¾ cups). Remove
pulp and place shells in a muffin tray. Place ¼ cup boiling water
in a jug and sprinkle over 1 tbs gelatine. Stir well to dissolve. Stir
juice into jelly. Half fill shells and chill until nearly set. Add some
berries and cover with more jelly. Chill until set. Quarter to serve.
cupcake flowersFlatten out a small and a large paper muffin case and lay
on top of a paper doily. Push a bamboo skewer through
a marshmallow, then through the 3 paper layers and lastly
into a Woolworths Mini Iced Cupcake (available in pk6, pk9 or
pk24). Display flowers in jars or push skewers into polystyrene.

Simply soften rice paper in warm water and fill with a
selection of different ingredients. A popular choice is rice
noodles and your choice of vegies and meat, such as grated
carrot, avocado and finely shredded ham. Roll up and serve.
sandwich rollsTrim crusts from wholemeal and white bread. Flatten each
slice with a rolling pin. Spread hommus on white slices. Lay
wholemeal bread on top. Place ham slices over. Add cheese.
Roll up firmly to enclose. Cut into 3 even pieces and push

with a melted dark chocolate,
cream and a raspberry sweet.

Mix 4 cups of cooked cake crumbs
with ⅓ cup frosting. Roll tablespoonfuls
of mix into balls and freeze until firm.
Melt 375g white chocolate until
smooth. Dip bamboo skewer tips
into chocolate and push into cake
balls. Add pink food colour to
chocolate. Swirl cake pops in
chocolate to coat. Add Dollar Sweets
Butterfly Sprinkles. Leave to set.

Make a batch of vanilla cupcakes
(use half of recipe on page 14, or use
a packet mix). You could add some
grated orange or lemon rind to the
cake batter. When cold, decorate
with a generous swirl of purchased
or homemade frosting (add orange
of lemon juice for extra flavour) and
top each frosted cupcake with fresh
blueberries. Finish with mint leaves.

Make cake pop mixture as for

on a sheet of baking paper to 1.5cm
thick. Cut out using a heart-shaped

Chocolate, melted
1 Preheat oven to 160°C. Grease and
line a deep 23 x 33cm pan with paper.
2 Prepare the cake mixes together,
following packet instructions. Transfer
to pan and bake for 60 to 75 minutes
or until cooked through when tested.
Cool for 10 minutes in pan before turning
out onto a wire rack to cool completely.
3 Meanwhile, prepare icing mixture
following packet instructions. Cut cake
into a football shape (use trimmings to
make Cake Pops, see p16). Trim top of
cake to level then cut in half through the
middle to make 2 layers. Spread bottom
layer with some of the icing mixture and
replace top layer. Transfer to a rectangle
cake board. Spread remaining icing over
top and sides. Chill for 20 mins to set.
4 Fit a piping bag with a plain nozzle
and fill bag with melted white chocolate.
Pipe ‘laces’ onto centre of cake and
stitching as shown. Serve.

350g butter, at room temperature
1½ cups caster sugar
1 tsp vanilla extract
4 eggs, at room temperature
1½ cups self-raising flour
½ cup plain flour
1⅓ cups buttermilk
1 Preheat oven to 180°C. Line a
12-hole medium-muffin pan with
the large patty pans and a 12-hole
mini-muffin pan with mini patty pans.
2 Beat the butter, sugar and vanilla in
bowl of an electric mixer until pale and
creamy. Add eggs, one at a time, beating
well after each addition. Sift the flours
together and fold into butter mixture,
alternating with buttermilk, in 2 batches.
3 Divide mixture between large and
mini patty pans. Smooth tops and bake
mini cupcakes for 12-15 minutes and
medium cupcakes for 25-30 minutes
or until cooked when tested. Cool for
5 minutes before transferring
to a wire rack to cool completely.
4 Decorate cupcakes to your liking
(see our suggestions as a guide).

1 Preheat oven to 180°C. Grease and line
base of 2 deep 23 x 33cm cake pans.
2 To make cake, beat butter and sugar
using electric beaters until light and
fluffy. Add all remaining ingredients, and
mix on low until well combined. Scrape
down sides and base of bowl. Beat on
high for 3 minutes. Divide mixture evenly
between cake pans and smooth tops.
Bake for 35-40 minutes. Cool cakes
for 5 minutes in pans, then transfer
to a wire rack to cool completely.
3 For the icing, cream butter and vanilla
until light and fluffy. Add icing sugar
gradually, beating constantly. Add hot
water, and continue beating until smooth.
4 Trim both cakes to level the tops
(see tip 1). Cut 1 cake evenly in half to
form 2 slabs. Spread one of the smaller
cakes with icing and place second
slab on top, keeping the cut edges
aligned. Measure and cut into 6 cubes
(see tip 2 for instructions). Trim off
rounded edges and discard. Spread
sides and tops of each cube with a thin
layer of icing and chill for 20 minutes.
Spread an even layer of icing over top
and sides of large cake and transfer
to a cake board. Chill to set.
5 Divide remaining icing into 6 separate
bowls, and using food colours, tint as
desired. Spread icing onto cubes and
sit cubes onto the iced base cake.
6 Decorate the iced cubes using
a different combination of white
chocolate letters or numbers,
and assorted icing kits to add
your own special touch. Serve.

tips for creating the cake base and building blocks.
TIP1 cutting baseTo level cakes: measure from the flat
base up and insert toothpicks around the
cake. Place a hand on the top of cake and,
with a large knife, slowly slice through the
cake, using the toothpicks as a guide.
TIP2 cutting blocksCut the second cake in the same way.
Stick the two halves together with icing.
Measure into 6 even pieces and mark
the blocks with toothpicks. Cut into
cubes, using the toothpicks as a guide.

1 Preheat oven to 180°C. Grease and line
2 deep 20cm (base) springform pans.
2 To make one batter: place half the
butter, half the vanilla extract and half
the sugar into a large bowl of an electric
mixer. Beat until pale and creamy. Add
2 eggs, one at a time, beating well between
each addition. Fold in 1¼ cups of the
flour and half the milk, in alternating
batches, until well combined.
3 To make second batter: repeat with
remaining butter, vanilla, sugar and eggs.
Sift remaining flour with cocoa and fold
into mixture with remaining milk.
4 Drop spoonfuls of batter into pans,
in alternating batches, swirling to create
a marbled effect. Bake for 45 minutes
or until cooked when tested. Cool in
pans for 10 minutes. Transfer to wire
racks to cool completely.
5 Meanwhile make ganache: stir dark-
chocolate melts and 150ml of the cream
in a bowl over simmering water until
smooth. Cover and refrigerate until thick.
Repeat with white-chocolate melts
and remaining cream. Divide mixture
into 2 bowls and add drops of green
food colour to make pale and dark-green
ganache shades. Set aside.
6 Make milk-chocolate tree decorations
following our tips below.
7 To assemble the jungle cake: sandwich
the two marble buttercakes together,
using about ¼ of the dark-chocolate
ganache. Place the whole cake onto
a cake plate. Spread remaining dark
chocolate ganache over top and side
of cake. Remove the tree decorations
from the baking paper and arrange
around cake, pressing into ganache to
hold. Arrange remaining caramel bits
around base of the cake. Roughly spread
dollops of both pale and dark green-
tinted white ganache over top of cake
to make tree canopy. Decorate tree
canopy with sweets and toys as shown.

200g milk chocolate, melted

6 ice-cream wafers
1 Line a deep 18cm (base) springform
pan with a double layer of plastic wrap.
Trim icing from cake and discard, transfer
cake into pan and place in freezer to chill.
2 Working quickly: scoop 10 balls from
each ice-cream and place on a baking
paper lined tray. Place in freezer (see tip 1).
3 Soften one remaining ice-cream flavour
for 5 minutes. Spread over cake base
in pan. Freeze for 15 minutes. Repeat
with second and third ice-cream
flavours, returning to freezer between
layers. Freeze for 4 hours or overnight.
4 Meanwhile, dip tops of waffle cones
into melted chocolate and then into the
100s and 1000s to coat. Leave to set
(see tip 2). Cut wafers to form 2 triangles.
Trim short sides so tip is centred. Dip short
side into chocolate and sprinkles. Set.
5 When ready to serve, remove ice-
cream cake from freezer and wipe
outside of pan with a hot, wet cloth.
Remove cake from tin and plastic.
Transfer to a chilled cake stand. Press
cones firmly but gently around the side,
pushing into the ice-cream. Position
wafers into spaces between cones. Fill
cones and cover top with pre-scooped
ice-cream. Return cake to the freezer
to firm up again. Serve immediately.

and keep them in the freezer on a baking
paper lined tray until needed. When you
are ready to assemble the cake, you can

while they dry: fill a bowl with sugar. Dip
the cones and push pointed ends into
sugar so the cones stay upright. You can
do the same with the wafer triangles.

TIP 1 spiderwebMeasure and mark the centre of the
cake with a toothpick. Pipe straight
lines of dark ganache from centre
out to edge and down the side. Pipe
looping lines around the cake to
connect the straight lines and form
a web. Add mini drops to top of web.
TIP 2 witch’s hatSpoon discs of extra melted chocolate
onto baking paper. Dip cone into
chocolate to coat. Stand onto discs
and leave to set. Colour reserved
white ganache with green. Pipe green
band around hat brim. Add reserved
orange ganache to make buckle.

1 Preheat oven according to packet
instructions. Grease and line 2 deep
20cm (base) cake pans. Prepare each
cake mix separately. Add red and yellow
food colour to one mixture until it’s
bright-orange. Add green colour to the
second mixture until it’s bright-green.
Pour cakes into prepared pans and bake
following packet instructions. Transfer
cakes to wire racks to cool completely.
2 Meanwhile, place dark chocolate
melts and white chocolate melts into
separate bowls. Heat cream in a saucepan
on medium-low until hot. Divide cream
between chocolates. Stir both until melted
and smooth. Cover and chill until thick.
3 Halve each cake through the middle.
Reserve ¼ cup of each ganache. Spread
remaining dark ganache over top of three
cakes. Chop 1 cup of swirls in half and
scatter over ganache. Stack the cakes,
alternating colours. Finish with plain cake
on top. Transfer to a cake stand. Colour
the white-chocolate ganache with red
and yellow food colours until it becomes
bright orange. Spread orange ganache over
top and sides of cake, reserving some for
the witch hat (make hat following tip 2).
4 Spoon reserved dark ganache into
a piping bag and decorate to and side
of cake with a spiderweb (follow tip 1).
5 For bloodshot eyes, trim tops from
10 swirls and press a mini drop into the
centre to flatten. Place eyes around
base. Place the witch hat on the top
and press large spider onto the side.

1 cup plain flour
1 cup cornflour
12 Pace Farm Natural Living Eggs 700g
2 cups caster sugar
frosting (see tip 1)250g softened butter
1 kg pure icing sugar, sifted
¼ cup cream
2 tsp vanilla extract
2 food colours of your choice
freckle pops (see tip 2)200g white chocolate, melted

1 pkt 100s and 1000s

1 Preheat oven to 180˚C. Grease
4 springform pans (2 x 10cm base,
1 x 18cm base and 1 x 24cm base).
2 Sift ½ cup of each of the flours
together into a bowl. Place 6 eggs
and 1 cup caster sugar in a large bowl.
Beat with an electric mixer until very
pale and tripled in volume. Lightly fold
in sifted flour until just combined.
3 Divide mixture into 2 x 10cm pans
and 18cm pan. Bake the small cakes
for 20 minutes and the medium cake
for 30 minutes or until the cakes spring
back when lightly pressed. Repeat
sponge mixture with remaining
ingredients. Transfer mixture to 24cm
pan and cook for 40 minutes. Cool
sponge cakes in pans for 5 minutes.
Transfer to wire racks to cool completely.
4 Meanwhile prepare frosting: beat
butter in the large bowl of an electric
mixer until pale and creamy. Gradually
add the icing sugar and beat until
mixture is smooth. Add cream and
vanilla extract and beat until smooth.
Divide into portions for each layer and
colour by adding drops of food colour
until the desired colour is achieved.
5 Place large cake onto a stand and tuck
strips of baking paper under the bottom
edge to keep stand clean while decorating.
Using a small angled spatula, smoothly
cover with one frosting. Repeat with
other layers and different frosting. Place
medium layer on bottom layer. Combine
the 10cm sponge cakes to make one top
layer. Smooth frosting over join.
6 Press fruit sticks onto side of the
bottom layer in 2 rows. Press smarties
onto middle layer and push freckle pops
into top layer. Attach ribbon around
centre of bottom layer to hide the join.

cake with a spatula. This first coat will
secure crumbs for a smoother finish.
Apply a thicker second coat. Dip
spatula into warm water to smooth.
Chill for 10 minutes to firm frosting.

baking paper. Place on a baking tray.
Spoon white chocolate onto circles
and press skewers into chocolate.
Cover with a layer of 100s and 1000s.
Allow pops to set at room temperature.
