Sous vide - French for "under vacuum" - is amethod of cooking food sealed in airtight

Using traditional methods you would roast a chicken at 190oC using the fan function fora specified amount of time according to weight. Internal sensors then assess the weight and humidity of the food and determine the ovenfunction needed while displaying the end time on the control panel. “ I have owned a lot of ovens in my time from brands ranging from Husqvarna (long gone) to Bosch. Like most consumers whocook a lot, I want all the features, especially pyro – and I want instant, friendly response if it goes wrong. Worst moment ever: apyro oven that locked on Christmas Day with a turkey inside it and my mother in law in the living room! I was not using pyrocleanat the time! My favourite oven of all time was a Hotpoint multifunction with pyroclean – I can’t remember the model number. I think it was probably made in France as it featured a collection of rather bonkers pre programmed recipes that I never usedbecause they were completely off the wall. Sadly the door fell off the Christmas before last and nothing could be done about it asthe cavity was warped – and apparently not covered by the extended warranty. Pet hate: shelves that tip and those side shelfsupports that take up space and mean a Raymonde Blanc Anolon roasting tin will not fit in the oven. Dream oven: one from abrand that has lovely, helpful service people, is equipped with pyroclean, a stay clean glass door inner, a roast probe, lots offunctions, and good, old fashioned heavy chrome grid shelves that don‘t tip and scare me.”

WHAT’S AVAILABLEThe choice ranges from slimline six bottle

chillers that make more profitable and

practical use of what used to be a tray or

towel rail space to large semi professional

models that offer a choice of temperatures

and storage for a large number of bottles.

The basics are a UV protected glass in

the door to shield wine from the harmful

effects of light, shelves so bottles can be

stacked flat (which keeps the wine in

contact with the cork, preventing

oxidisation). Oxidised wine is known as

“corked” and smells and tastes foul.

A choice of two or three temperatures

means the chiller can be set to suit the wine

being stored. Whites and champagne are

happy at 7-12oC and reds at 10-16oC.

Keeping any wine at too high a

temperature can ruin it.

Anti vibration technology is essential for

fine or expensive reds where jolting can

disturb sediment in the bottle.

Good wine chillers offer humidity

control. This prevents the cork from drying

out and shrinking away from the bottle

which will allow air to enter and spoil the

wine.

MATERIAL MATTERSKitchen sinks come in for a fair amount of

punishment, especially in homes without a

dishwasher, so it is important to encourage

the customer to choose a material that does

not stain or scratch easily.

Stainless steel

Stainless steel is the most popular material for sink

manufacture. It is hard wearing and easy to clean.

Designs range from single, double or one and a

half bowl models with drainer to the latest

undermounts designed to fit into natural stone or

solid surfacing.

Composite

This modern material is a mix of resin and crushed

stone and comes in a wide choice of colours. The

choice of styles on the market is mainly

contemporary so composite is not the best choice

for a classic kitchen. The material is hard wearing,

heat and impact resistant but stains from tea and

red wine may linger in a hard water areas and can

be hard to remove.

Ceramic

Traditional fireclay is used for chunky, heavy weight

Butler and Belfast style sinks while fine fireclay is

used for more slim line undermounted and one and

a half bowl inset sinks. Fine fireclay sinks are

available in white, cream, black and some other

colours but traditional fireclay models only come in

white and sometimes a bone colour, as the

production process makes using colour glazes

difficult. Both materials are hard wearing and easy

to clean, but the sink can be damaged if a heavy

object such as a cast iron pan is dropped into it.

Natural stone

Natural stone sinks are very popular in the USA but

hard to find here other than through reclamation

companies. Stone is heavy but non porous so it

won’t stain.

Synthetic or engineered stone

Solid surfacing such as Corian and Silestone can

have sinks in the same material seamlessly

integrated into the surface. These materials are hard

wearing, impact, stain and abrasion resistant but

very expensive.

Copper

Attractive but certainly not a practical choice,

copper kitchen sinks date from the days before

widespread ceramic production. Styles available are

mainly trough or Butler shapes - and prices are

high. Copper is non-porous and will not stain in the

traditional sense of the word but it will gradually

oxidize and develop a patina. That patina initially

will not be even and you may have to wait around

a year for the full effect. Copper is much softer than

stainless steel and scratches easily.

As with so many things, being in the

right place at the right time with the

right product lies at the heart of

Franke’s success in the UK. “Back in about

1973, there was actually a shortage of

stainless steel sinks,” muses Duncan Marr.

“As a result of this, Franke picked up some

business here and it encouraged them to

look at the market seriously. At that time, it

was all drop on sinks here in Imperial sizes –

the only British insets were far too small. All

of this coincided with the appearance of the

first German kitchen suppliers who

promptly invented the kitchen retailer by

setting up smart showrooms equipped with

fabulous kitchens. The trouble was that UK

sinks were no use at all for these new

kitchens – presenting Franke with a

wonderful opportunity.”

Being level headed, financially smart

and Swiss, Franke seized the new market

and tooled up with a UK specific range. “It

was a real revolution for the merchant

minded UK,” recalls Duncan. “Back then

you didn’t really get to choose a sink as

such. People like Grovewood supplied the

cabinet and sink as one and that is what

you got. Franke put sinks on display and

offered a choice that was exactly right for

the new German kitchens. The next move

was to set up a distribution network

because the new kitchen studios did not

want to buy from merchants who were, in

effect, the competition. Many of those

early distributors are still with the company

today.“

Clever, well thought-out design has

always been a Franke strongpoint. The early

sinks had a sliding clip installation system

that was much easier to deal with than the

British method that involved bolting the

sinks to the top. Installation was tricky and

it was easy to distort the edge. The real

revolution came in 1981 when Franke

decided to reinvent the sink. Research

revealed that consumers wanted two bowls

– but kitchens were not getting any bigger.

What Franke did was to rotate the bowl so

that it was bigger from back to front than it

was from left to right – and today most

sinks are designed in that way. “The idea

was a massive success in the UK,” says

Duncan. “Once we added the accessories,

our advertising agent Arthur Wood decided

it was time to advertise. The campaign was

so distinctive the sinks simply flew off the

shelves and people were actually asking for

the brand by name.”

The other 80s revolution in the sink

world was the introduction of colour. “Until

colour meant enamel which was terrible

stuff because it chipped,” Duncan

remembers. “There were lots of problems

with the early coloured sinks. The surface

was quite coarse so limescale would cling

to it and stains would cling to the limescale.

The other problem was cracking through

thermal shock – Christmas was a favourite

time for this when people would put a

frozen turkey in the sink to thaw then run

hot water on to the cold surface with

catastrophic results. All of these problems

are long gone now. Franke had its own

material called Fradura that became

Fragranite with the acquisition of Carron

Phoenix.”

Duncan’s all time favourite Franke

As worktops are usually selected once the door choice has been made, it is vital that the two

According to component specialist Blum there has been a notable upturn in the sales ofstorage fittings over the last few years as consumers and kitchen planners become more

The vinyl wrapped collectionHPP’s vinyl wrapped collection is manufactured on site to bespoke sizes with a quick seven day

turnaround and is available nationwide. The new product launch sees the range extended to

over 30 doors, covering everything from traditional designs to modern slab based styles. The

decor range now includes over 40 colours that are constantly evolving to keep up with the latest

market trends and ever improving vinyl quality that offers incredibly realistic wood effects.

Four new door styles have been added to the vinyl range. These are Avienda, Chardonnay,

Duo high gloss pvc edged doors are available in black, cream and white with 3D 1.2mm pvc

edging to give an attractive glass effect finish. Duo Ultra Gloss doors are available in Autumn

Plum and Rosales with matching pvc edging. The woodgrain range is manufactured using

matching 2mm pvc edging and Egger mfc with the premium structure 22 finish that gives a

deep brush effect with both a glossy and a matt linear grain, offering a very realistic wood

effect. The biggest change to the Duo range since its launch is the introduction of nine acrylic

decors. Driven by strong consumer demand, every acrylic door is available with either a

matching or a 3D glass effect edging and is manufactured using Senoplast which offers superior

gloss levels and scratch resistance.

A traditional range cooker can burn wood,solid fuel, oil, gas, or electricity and somemodels will provide central heating as well ascooking facilities. If your customer wants atraditional range, make sure they know thedifference between a cook only heat storagemodel and the more adaptable type that willprovide heating and hot water.

In the 1920’s a Swede, Dr Gustave Dalen, invented what we know

now as the Aga cooker - a closed cast iron range with ovens that

stored heat rather than sending most of it up the chimney. The

traditional Aga and other stored heat cookers such as those from

Dunsley and Redfyre still work on Dr Dalen’s basic principle. The

heat source is always on, heating a massive griddle and the heavy

well insulated ovens. The temperature rises slowly but stays fairly

constant. There is a large temperature gradient between the upper

and lower ovens with one perfect for faster cooking and one for

slow. There’s no grill as such. Because the heat up time is about six

hours, the cooker has to be on 24 hours a day, 365 days of the year.

Domestic hot water can be heated off a small boiler, which is

available as an add on but the burner has to be increased in power

to do this - and the experts say it is not the most efficient or cost

effective way to provide hot water.

● The only concession to modernisation from the original design

concept is the change of fuel from coal to oil, gas, wood, or

electricity. A chimney or flue is needed for most gas, oil and solid

fuel cast iron ranges. The AGA and Everhot Electric, and the Redfyre

and Esse gas flueless, do not need a chimney but there is also a

power flue and balanced flue gas AGA - worth considering if the

kitchen does not have a chimney.

● The oven temperature is steady and constant, as is the

temperature of the hot plates - but care has to be taken when doing

large amounts of cooking. If a lot of heat is taken from the oven or

hot plates, it takes quite a long time to build back up again. The heat

up time is at least six to eight hours from cold. In the summer the

kitchen can be hot if the cooker is left on all year for cooking. For this

reason most people who have a stored heat cooker usually have a

second electric or gas model for summer use.

● The alternative to the stored heat range cooker is a single or

twin burner cast iron range that can also be used to run central

heating. The rapid heat up time means there is no real need for

another cooker, nor does the kitchen become unbearably hot in

summer, as the cooker is only on when needed. To make a range

cooker even more in tune with today’s cooks, and to get higher

boiler outputs for larger houses in a smaller unit, all the

manufacturers now make a range of twin burner cookers. One

burner runs the boiler and the other the oven. You get timed

warmth for the kitchen, instant cooking, a cooler room in the

summer and efficient burners. It is possible to have hot water/central

heating without the cooker heating up.

● Traditional cast iron range cookers can be fuelled by solid fuel,

wood, electricity, natural or LPG gas or oil. Oil used to be the

favoured choice for country houses but ever rising prices and the

huge risk of theft from the garden tank have made it less popular. A

number of wood burning range cookers have come on to the market

- but there are several things for would be customers to consider.

One is a source of economically priced wood - last winter the cost of

logs rose to an all time high. Users also need to store wood properly

and plan ahead. The secret of efficient wood burning is dry wood.

This means storing at least 10 cu/metres of wood, half of which must

be near the point of use and dry. The calorific value of wood is low

so the owner has to keep feeding it into the range to get the output,

which is not easy for anyone who leaves early for work and arrives

home late. Lugging and storing wood is hard work - no wonder they

say it warms you three times - when you cut it down, when you cut

it up and when you burn it!
