La cicerchiata nelle Marche, è legata alla
ricorrenza del Carnevale ma è diffusa anche
in Umbria e, tramite l'immigrazione interna
da queste regioni, a Roma. È simile agli
struffoli napoletani, che però, sono un dolce
natalizio.
The “Cicerchiata” is linked to Carnival
occurrence in the Marche, but it is well known in
Umbria too,
and, through internal immigration from these
areas,
in Rome as well. It’s similar to the Neapolitan
“Struffoli”, although the latter is a Christmas
sweet.
Ingredienti
2 uova 200 g di farina 0050 ml di olio 1 cucchiaio di zucchero semolatoscorza grattugiata di limone 2 cucchiai di vino bianco secco200 g di miele millefiori 50 g di mandorle spellatedecorazione di marzapane (facoltativa) olio di semi per friggere
In una ciotola preparate un impasto morbido con la farina, le uova, lo zucchero, il vino, e l’olio, profumando alla fine con la scorza di limone. Formate tanti bastoncini dal diametro di 1 cm e tagliate a gnocchetti. Friggete in abbondante olio bollente.In un largo tegame fate caramellare il miele, versate le cicerchie e le mandorle e mescolate velocemente in modo da amalgamare bene il tutto. Trasferite il composto su un piatto da portata dandogli la forma di una ciambella. Decorate la cicerchiata con fiorellini di marzapane o codette di zucchero.

In a bowl prepare a soft dough with flour, eggs, sugar, wine and oil,
perfuming with the lemon rind in the end. Make up many sticks with a
diameter of 1cm and cut into little dumplings or “cicerchie” . Deep fry
them in hot oil. In a wide pan caramelize the honey, pour the
cicerchie and the almonds in, and stir quickly in order to mix them
well. Put the mixture onto a serving platter, shaping it as a ring.
Decorate the “Cicerchiata” with little marzipan flowers or sprinkles.(1) Common abbreviation for “Table spoon”
Le castagnole sono diffuse in tutta Italia.
Vengono servite con zucchero a velo o, in alcune
varianti, anche con alchermes o miele. Ne
esistono due versioni: una senza ripieno ed
un'altra con ripieno o alla crema pasticcera o alla
panna. Altra variante è quella che prevede la
cottura al forno.The “Castagnole” are widespread throughout
Italy[2]. They are served with icing sugar or, in
some variants, even with alchermes or honey.
Two types exist: one without filling and
another filled either with custard or cream.
One more variant involves baking instead of
frying.

Ingredienti
2 uova50 gr di zucchero40 gr di burro200 gr di farina1 cucchiaio mistrà o rhum
1 bustina di vanillina1/2 bustina di lievito sale 1 pizzico scorza grattugiata ½ limone zucchero semolato o a velo olio di semi
Mettere in una ciotola la farina, le uova, lo zucchero, il burro, la vanillina, il sale, la scorza grattugiata del limone, il liquore e il lievito; lavorare gli ingredienti fino ad amalgamarli, poi trasferite l'impasto su di una spianatoia leggermente infarinata e impastare fino ad ottenere un composto morbido (ma non molle) liscio e compatto .
Lasciare riposare l'impasto per qualche minuto e poi formare dei cordoncini di pasta dello spessore di un paio di centimetri circa e tagliare a pezzetti grandi come delle grosse nocciole. Formare con i palmi delle mani delle palline, friggerle un po’ alla volta in abbondante olio e a fiamma bassa, rigirandole nella padella finchè risulteranno ben gonfie e dorate e cominceranno a galleggiare.
Una volta pronte, fare asciugare le castagnole su un foglio di carta assorbente, spolverizzarle con dello zucchero a velo o semolato e... Buon Carnevale!

Put the flour, eggs, sugar, butter, vanillin, grated lemon rind, liquor and baking powder into a bowl; knead the ingredients until they combine, then transfer the mixture onto a pastry board lightly floured and knead up until the batter gets smooth and compact, soft but not flabby. Leave to rest for a couple of minutes and then form pasta lines, about 2 cm thick; cut them into chunks, as big as almonds.With your hand palms form small balls, and deep fry a bit at a time in hot oil and on low flame, turning them in the pan, until they get swollen and golden brown and they start to float. When ready, leave the “castagnole” to dry on paper towels, sprinkle with caster or icing sugar and … Happy Carnival!
Le chiacchiere o frappe sono
dolci molto friabili che vengono
fritti ed infine vengono cosparsi
di zucchero a velo.
Le chiacchiere vengono
chiamate con nomi diversi a
seconda delle regioni di
provenienza: chiacchiere e
lattughe in Lombardia, cenci e
donzelle in Toscana, frappe e
sfrappole in Emilia, cròstoli in
Trentino, galani e gale in
Veneto, bugie in Piemonte, così
come rosoni, lasagne,
pampuglie, ecc..
Le chiacchiere o frappe hanno
un’antichissima tradizione che
probabilmente risale a quella
delle frictilia, dolci fritti nel
grasso di maiale che nell'antica
Roma venivano preparati
proprio durante il periodo di
Carnevale.

The chiacchiere have an ancient

and “lattughe”, rags and damsels for “cenci”

Ingredienti(per circa 80 chiacchiere)
50 gr di burro1 bustina di vanillina3 uova e 1 tuorlo 1 bustina di lievito chimico
Versare farina e lievito in una ciotola o nella tazza di un robot con il burro, lo zucchero, la vanillina, le uova, mezzo bicchierino di grappa e un pizzico di sale. Lavorare bene gli ingredienti fino a formare un impasto liscio ed elastico, al quale dare la forma di una palla. Lasciarlo riposare avvolto nella pellicola trasparente in luogo fresco per almeno 30 minuti. Spianare poi la pasta macchinetta o con un mattarello, in modo da ottenere una sfoglia non troppo sottile dello spessore di 2 mm. Ricavare con una rotellina a taglio smerlato, delle strisce di 5 cm per 10 cm e praticate su ognuna di esse due tagli centrali e paralleli per il lungo. Porre le strisce così ottenute in abbondante olio ben caldo ma non bollente, girandole su ambo i lati e stando attenti a non bruciarle.Appena diventeranno dorate, sgocciolarle e porle su carta assorbente.Una volta fredde sistemarle su di un piatto da portata e cospargerle di zucchero al velo vanigliato.

Ingredients(for 80 chiacchiere):
50 gr butter 1 vanillin sachet3 eggs and 1 yolk1 sachet of chemical yeast
Pour the flour and yeast into a bowl or in the bowl of a robot with the butter, sugar, vanillin, eggs, half a little glass of grappa and a pinch of salt. Knead the ingredients well in order to form a smooth elastic dough, then shape it as a ball. Wrapping it in a transparent film, then leave it to rest in a cool place for at least 30 minutes. Flatten the dough using a machine or a rolling pin, so as to obtain a sheet, not to thin, about 2 mm thick. By means of a pastry wheel dough cutter with wavy edge make strips 5 cm x 10 cm and cut a line in the middle of each strip, running parallel with its length. Place the strips thus obtained into plenty of oil, which must be hot, yet not boiling, and turn them on both sides, paying attention not to burn them. As soon as they get golden, drain and put them onto paper towel. When cold, set them on a serving dish and sprinkle with vanilla icing sugar.(1) An Italian spirit, a sort of brandy

Altro dolce carnevalesco in Sardegna, Marche e Umbria sono le zeppole che però in altre regioni
italiane, soprattutto meridionali, sono tipiche della festa di San Giuseppe il 19 marzo. Hanno
sempre forma di ciambella ma quelle di carnevale on sono mai accompagnate da crema o
da amarene.
The Zeppole (1) are Carnival sweets in Sardinia, Marche and Umbria, but in other regions, especially in the southern ones, they’re typical of Saint Joseph’s Day , on March 19. They always have a ring shape, but the Carnival zeppole are never accompanied by custard or black cherry.

300 g patate500 gr di farina 002 cucchiai colmi di zucchero + zucchero q.b. per decorare1 pizzico di sale1 uovo1 cucchiaio di latte succo di 1 arancia
100 g spumante1 bustina di vaniglia1 bustina di zafferano15 g lievito di birraOlio per friggere
Sbucciare le patate, cuocerle in abbondante acqua bollente e schiacciarle con un passaverdura.In una ciotola versare la farina a fontana. Aggiungere le patate schiacciate, due cucchiai colmi di zucchero, la vanillina, l’uovo, lo zafferano sciolto in un cucchiaio di latte tiepido, il succo d’arancia, lo spumante ed il lievito sciolto in pochissima acqua tiepida.Impastare a lungo con le mani fino ad ottenere un panetto liscio ed omogeneo.Porlo in una ciotola infarinata, coprire con un canovaccio e lasciarlo lievitare finché il suo volume non sarà triplicato.Prendere quindi dei pezzetti di impasto e formare dei cilindri del diametro di circa 1,5 cm e lunghi circa 10 cm. Unire le due estremità dei cilindri per formare dei cerchi. Friggere le ciambelline in abbondante olio caldo finché non saranno ben dorate. Porre le Zeppole di Carnevale su carta assorbente per eliminare l’olio in eccesso. Infine cospargerle di zucchero semolato e servirle calde.

100 gr sparkling wine1 vanillin sachet1 sachet of saffron15 gr brewer's yeastoilseed
Peel the potatoes, boil them in a large quantity of water and mash them trough a vegetable mill. In a bowl, pour the flour. Add the mashed potatoes, two heaping tablespoons of sugar, vanillin, egg, saffron dissolved in a tablespoon of warm milk, orange juice, sparkling wine and yeast dissolved in a little warm water. Knead with your hands for a long time until the dough is smooth and homogeneous. Place it in a floured bowl, cover with a cloth and let it rise until its volume will not be tripled.Take then the pieces of dough and form cylinders with a diameter of about 1.5 cm and about 10 cm long. Join the two ends of the cylinder to form rings. Fry the ring shaped sweets in a large quantity of hot oil until they become golden brown. Then put your Carnival Zeppole on paper towels to remove excess oil.Finally sprinkle with caster sugar and serve hot.
Gli arancini o limoncini di Carnevale sono
delle girelle aromatizzate all’arancia o al
limone che vengono naturalmente fritte.
Sono tipicamente marchigiani e
assolutamente da provare!
The Carnival arancini or limoncini are spiral
shaped sweets, seasoned with orange or
lemon, which are fried. They are typical of
the Marche and definitely a must try!
Versare in una ciotola il latte a temperatura ambiente e sciogliervi il lievito.
Setacciare la farina e aggiungere il latte. Mescolare prima con una forchetta e,
mano a mano che l’impasto prende consistenza usate le mani. Aggiungere
quindi l’uovo e la bustina di vanillina. Impastare bene e aggiungere il burro
ammorbidito. Continuare ad impastare fino ad otterrete un impasto liscio ed
omogeneo da lasciar riposare almeno 30 minuti, coperto con un canovaccio.
Intanto preparare il ripieno: grattugiare la buccia delle arance o dei limoni e
unirla allo zucchero. Quando l’impasto sarà lievitato stenderlo con un mattarello
fino ad uno spessore 5 millimetri . Quindi stendervi sopra il ripieno e arrotolare
la sfoglia su sé stessa. Tagliare poi delle fettine dello spessore di circa un
centimetro. Si otterranno tante piccole spirali di pasta da friggere gli in
abbondante olio finchè non saranno ben dorate. Servire gli arancini tiepidi con
una spolverata di zucchero.

1 uovo500 gr di farina 700 gr di zucchero50 gr di burro 25 gr di lievitoolio per friggere 200 ml di latte 4 arance non trattate 1 bustina di vanillina
In a bowl pour the milk at room temperature, add and dissolve the yeast. Sift
the flour in and add the milk. Start stirring with a fork, and when the pastry gets
consistent work with your hands. Then add the egg and the vanillin.
Knead well and add the softened butter. Go on kneading until you obtain a
smooth and homogeneous dough, to be left to rest for at least 30 minutes,
covered with a cloth.
In the meanwhile prepare the filling: grate the orange or lemon rind and
combine it to the sugar.
When the dough is risen, roll it out with a rolling pin up to 5 mm thickness.
So put the filling on it roll up the sheet of pasta dough on itself. Cut little strips,
about an inch thick. Then shape a lot of little pastry spirals, to be fried in a large
quantity of oil until they get golden brown. Serve the arancini warm and
sprinkled with sugar.
