Sweet Grass Co-op is collaboration of livestock producers in Colorado and New Mexico marketing pasture-raised livestock and livestock products. All animals marketed through Sweet Grass Co-op are grassfed, raised entirely on pasture. Most member farms and ranches are certified organic and all are family owned.
They utilize ultrasound scanning, a cutting edge technology, to select animals for their qualities of taste & marbling. Game, and specialty meats like yak, goat, yak, buffalo and rose veal have historically been a mainstay of the American diet, and the co-op is excited to put these meats game back on the center of the plate.
Our shoppers are becoming more adventurous in their home kitchens,” says Grace Graham, Santa Fe Co-op Meat Department Lead “They want more than beef, chicken and pork, and we are growing to meet those demands.”
Game farm animals are NOT wild animals captured on a whim. Most states have special Game Farm licensing proce-dures to be able to buy, sell, contain and raise game meat species, with each state reserving the right to dictate which species and what requirements are necessary for elk farm-ing or deer ranching.
Tierra del Sol farm is located in a small valley on the banks of the Rio Grande in Far West Texas. They raise lambs and goats and operate the region’s only on-farm slaughter and packing facility. They supply the Co-op with goat meat. Tierra del Sol believes in humane treatment of their animals providing appropriate living conditions, which emulate the natural habitat of each species.
