To make lunch service ever-more efficient, we haveintroduced an electronic kitchen management system to all school kitchens. By assisting with thedissemination of key data, improving communicationand increasing the accuracy and processing of financialand other management information. Our electronickitchen management system will enable us to manageand develop your service to even greater levels ofefficiency and effectiveness.

Your Catering Operations Manager will meet with you to agree a development plan for your service and to ensure that our delivery remains in line with both the practicalities of your school day and yourgeneral ethos.

The name reflects our commitment to providing yourpupils with delicious meals made from only the freshest,top-quality ingredients.

Constantly EvolvingOur Menu Development Manager and Skills andStandards Trainers continually strive to find new,innovative and attractive menu items that both meetexisting customer demand and stimulate new interest.We work hard to strive for a balance betweentraditional favourites and new and exciting tastes andexplore imaginative methods of presenting and servingour food to make it easy for even the youngest pupils toselect and enjoy.

We screen all foodstuffs for ingredients and nutritionalvalue against a strict set of criteria and ensure thatproducts do not contain any undesirable additives, foodcolours or Genetically Modified ingredients.

Food for pupils, chosen by pupilsAt LCS, we have a unique approach to creating menus.We understand that there is no nutritional value in a meal that is simply thrown away. To gain a place on ourserveries, each dish is tested by a focus group of pupils.

They must consider that it looks appetising, tastesdelicious, and that it will appeal to a wide variety of their friends and fellow service-users. Armed with thisinformation, our specialist team then evaluate how well it contributes to the achievement of a balanced diet. Only then will it be included within our menu cycle.

Market AwarenessBy keeping abreast of developments through regionaland national catering associations, trade exhibitions,working with a network of Shire authorities and carryingout competitor research, we closely monitor food trendsboth within the industry and on the high street.

The result of all this hard work is dishes and foodconcepts that are fun, relevant and of course, top quality.

To make the best of seasonal produce we change ourmenus a minimum of twice a year.

Our three-week menu cycles have maximum customer appeal.

Special Diets and AllergiesWe are able to supply a wide range of special, medicaland cultural diets.

Special diets are diets for pupils with a medicallydiagnosed requirement; not just a dislike of certainfoods or food groups. It is our policy to provide aservice for those pupils with medically diagnosed food allergies, food intolerances or a medical conditionwhich affects eating requirements. All of our menus areavailable as Gluten or Lactose free alternatives andwhere required, local arrangements can be put in placefor those with other specific allergens and intolerances.

Measuring establishedkitchen management processes and procedures forcompliance with our required standards and statutoryhealth and hygiene, safety and work-based regulations,means that our managers are able to guarantee boththe quality and safety of your school meals service.

Our audit programme follows a linear approach,beginning with the receipt and storage of foodstuffs and continuing through every aspect of the entire food production and service process. Should non-conformances be identified, then the appropriatecorrective actions are agreed and quickly put intoplace. In order to identify any possible trends, we alsoaggregate the results of our audit activity. In this way,we secure ongoing continuous improvement.

Our frontline catering teams are given all the necessarytraining to ensure that they can adhere to our clearly-defined standards. The extensive professionaldevelopment programme is continually refreshed to reflectany and all appropriate changes within the industry.

In addition to food-based training, our catering operativesare subject to Enhanced DBS clearance andSafeguarding, Prevent and Wrap training.

To ensure their safety, along with that of their customersand the food they serve, catering staff are fully equippedwith uniforms, including safety shoes and all necessarypersonal protective equipment.

Menu PresentationSchools are provided with an attractive 3-week menutwice a year. This is always available on our website,the schools portal and in leaflet format for parents.

Menus are planned to comply with School FoodStandards and all new dishes are tested by children.Our fish is MSC certified and we also use a number ofFree Range and Organic products throughout themenu. There is always fresh fruit and salad, bread andlocally produced yoghurt available daily.

Did You Know?We can create bespoke fun learning activities at your school! The following pupil feedback is from therecent ‘Ready, Steady Cook’ event at WoodlandCommunity Primary School. Pupils helped to createsouthern inspired chicken, baked sweet potato fries,citrus bean salsa and lemon and herb-coated salmonwith homemade ketchup.

“At St Thomas’ CE Primary school, between 75% – 88% ofchildren have a school dinner on any given day. This isdue to the excellent choice provided by our catering staffand the fact that they work hard to ensure all the childrenhave a healthy, satisfying meal every day, catering for arange of dietary requirements. The food is home cookedand made with quality ingredients ensuring our HealthyPlus kitchen more than earns its status. Our cook and herteam are dedicated to the school and frequently providethemed meals on special days such as – Red Nose Dayor World Book day to further inspire the children.
