Inside cover

My brother, my cousin and I (Italians all) opened Pagliacci Pizza on the “Ave” in the University District in 1979. It didn’t have a cash register or a safe. It was more than a year before we got around to putting up a sign. It was not a very business-like business. We just wanted a place where we could get good pizza. It was as simple as that. The place did make good pizza, just as we knew it would. It became popular, just as we had hoped. It even made a profit and that was nice.

If that is all that had happened, it wouldn’t be much of a story. What surprised us was how much people cared. Pagliacci became this odd place where the customers and the employees lobbied incessantly on behalf of what they said was the “soul” or the “personality” of the place. We had never experienced anything like it. I became curious and started spending my lunch hours there. Then, my evenings. Then weekends. I got caught up in whatever it was that was affecting the customers and the crew. I learned I loved the place. I loved working with the employees and serving the customers. I too got in touch with the soul and personality of the place. That’s when I realized that I really wanted to quit my job and work at Pagliacci. Then and now, many of the really good things about Pagliacci Pizza have come from the customers and the employees.

I first fell in love with Pagliacci Pizza as a teenager. I loved the pizza—the hand-tossed fresh dough and high-quality ingredients—but I also loved the vibe and the staff. Twenty years after becoming one of the owners, my passion and enthusiasm have only grown. I take great pride in our dedication to sourcing premium local ingredients, our commitment to hiring and retaining talented crew who embody our core values, our environmentally friendly approach and the cool-looking design of our new stores and remodels. As Seattle has grown, so too have we, going from one store in 1979 to 25 today. Generations of customers have embraced Pagliacci because we are unique and dedicated to making great pizza day in and day out. Our commitment to quality, to the service we provide, and to each other are what have made Pagliacci an iconic Seattle business. I am excited to welcome you into the Pagliacci family.

PRONUNCIATIONIn Italian, it’s pronounced “pa-YACHT-chee,” in 3 syllables. It has been Americanized to 4 syllables, “pa-lee-[Y]ACHT-chee.” Either is OK, please notice that in both forms the “g” is silent. Many customers (but no employees) strongly stress the “g” to say “PAG-lee-[y]acht-chee.” Because the customers are always right, we never correct their pronunciation. Not even when they shorten it to Pag’s.

OBLIGATIONBy working here, you agree to comply with the contents of this book and with the written plans and policies that are referenced in it. You may have received an earlier version of the Little Book of Answers, but this version is the one that applies. Any changes to the Little Book of Answers in the future must be approved by Matt in writing.

WELCOME TO PAGLIACCI PIZZA. We want you to succeed here and to help you

do that, we’ve prepared a little test. Don’t panic! We’re also giving you the answers.

This “Little Book of Answers” contains information you need to pass the test. This

is a good place to work. But as good as Pagliacci is, it intends to get better and we

hope you will be part of that.

PHILOSOPHYPagliacci serves an East Coast or Neapolitan style pizza. We do everything we can to make the best pizza possible. We never cut corners. We take pride in hand-making a quality product that people appreciate. We like that our pizza is a convenient way for friends and families to get together without having to cook and do dishes. What we do brings pleasure to people’s lives.

CRUSTWe take great care in making fresh dough every day in our own Commissary with natural live yeast and no stabilizers or additives of any kind. We let the dough rest overnight and deliver it fresh in our own refrigerated trucks to every location every day. We hand toss every pizza. Basically, we baby the dough every step of the way. The care we give the dough is the reason our crust is so good. Our crust is vegan.

SAUCEOur sauce is made from premium tomatoes which are fully ripened on the vine and packed just hours after being picked. Our sauce has the natural slightly-tart taste of real tomatoes with none of the added sweeteners that characterize other pizza sauces. We don’t use concentrated products. Our sauce is vegan.

OVENSWe cook directly on hot bricks, like in Italy. The bricks act as “heat sinks” which give a well-baked crust its distinctive texture. For a great crust, the pizza has to lie directly on the hot bricks. That’s why we don’t cook pizzas in conveyor belt ovens where the pizza sits up on a screen and is cooked only by hot air.

CHEESEWe use the best mozzarella on the market. 100% pure, it is never blended or cut with lesser quality mozzarella. It is hand-crafted from the richest milk there is. You can taste the difference. We’re the only pizza place of any size to use this top-of-the-line mozzarella. In addition to its superior flavor and texture, it doesn’t have the bubble-gum effect you get with other mozzarella.

COMMON SENSEWhen you are not sure how to handle a situation, use common sense, put the customer first and think of long-term results. If there is an emergency, call 9-1-1.

PUNCTUALITY“On time” means you are at your scheduled position and ready for work in proper uniform at the beginning of your shift.

DEPENDABILITYIt is your responsibility to look at the schedule yourself (not call in to have someone else look at it for you) and to work your scheduled shifts. Your schedule is posted at your store, emailed to you and available online. The business and your co-workers depend on you to work as scheduled. If you cannot meet the schedule, arrange for a qualified crew member to take your shift unless it is for a reason protected by law, such as related to use of Paid Sick and Safe Time. Tell your manager right away and at least four hours prior to your shift, or as soon as possible if there is an unforeseeable need or emergency. The company may require you to provide a doctor’s note or other substantiation justifying why you did not meet a scheduled shift.

PHONE USEThe store phones are for business use only and are not to be used for making or receiving personal calls, whether or not you’re on duty. Personal cell phones are not to be used unless you are on break or for any business reasons without prior approval. If your responsibilities include delivering pizza, you are required to follow all driving laws as they relate to cell phone use.

Smoking or vaping does not entitle you to extra break time in addition to meal and/or rest breaks.

URGENCYWe have a strong sense of urgency and immediacy about taking care of the customer. In general, we take care of business first and defer personnel matters, whether raised by you or by a manager, until after the rush and after people have had their breaks. However, if there is a medical or safety emergency, employees should notify their supervisors immediately, or call 9-1-1.

It is fine for a crew member and manager to have a personal relationship as long as they work at different stores. You should disclose to your supervisor if you have a personal relationship with another employee that works at the same store location as you.

SOCIAL MEDIAUse your best judgment and exercise personal responsibility before posting about Pagliacci on social media. Stay above the fray. Do not give people an opening to involve you personally in a public debate or have your words or thoughts misconstrued. If you post about Pagliacci from your personal accounts, you must include a statement that the opinions are your own and not Pagliacci’s.

ON THE JOB INJURYReport to work in a safe and fit condition as it affects your own safety and the safety of others. Immediately report any unsafe condition, act or person, no matter how small or minor, to your manager. Employees will be trained on equipment safety protocols. If you are tasked with operating a piece of equipment you are untrained on, please talk with your manager before doing so. If you are injured or suspect that you have been injured on the job, you must notify your manager immediately. It is the manager’s responsibility to help you evaluate the situation and assist you in obtaining appropriate medical assistance should it be necessary. As soon as possible, but in no case later than 24 hours following the injury or suspected injury, you must complete the Occupational Injury Report form (Accident Report) describing the circumstances surrounding the incident. You may obtain this form from your manager. It is important that you complete this form and submit it to your manager. If you need to be off work due to such injury, please contact your manager for more information.

HEALTH AND MAST PERMITSEmployees must have a valid food handlers permit and, if applicable, an alcohol serving permit (MAST) at the time of orientation at Pagliacci Support Central. Visit www.kingcounty.gov/healthservices/health/ehs/foodsafety.aspx to find out how to get your food handlers permit. If your position requires you to have a MAST permit, visit lcb.wa.gov/mastrvp/mandatory_alcohol_server_training.

TALKING TO THE PRESSNo one should talk to the press about any matter concerning Pagliacci unless it has been arranged by Matt or Shelley. If the press should call or stop by your location, direct them to call Matt or Shelley at (206) 652-0877 and notify your manager. If the press have already talked to Matt or Shelley, one of them will notify your manager and make arrangements with him or her for the press to visit your store. If the press says they already talked to Matt and he said it was okay to interview you, please get your manager. It is never okay to talk to the press unless Matt or your manager have talked to you directly and given you approval to talk to the press about a certain situation.

ONLINE CREW PAGESMany of your benefits, paystubs, available PTO, location information, schedule and company news can be accessed on the crew pages found at pagliacci.com. To access the employee portion of our website, go to the “Crew Only” page and select “Crew Pages Login.” If you are accessing this for the first time, you will need to set up an account. We will need to have an email address saved in your employee file to do so. Use this email address and set up a password for access to these pages.

DISCOUNT CARDYou will receive a 25% Discount Card upon hire. Your discount will increase to 50% after 3 months. Discount is valid for dine-in, take-out or delivery on all products except alcohol and gift cards. Order total may not exceed $75 pre discount. Not valid at University of Washington locations. Employee discount may not be used on Friday nights between 5 p.m. and 8 p.m. and is non-transferable. You may be asked to show your Ciao card and ID to receive your discount.

FOOD & BEVERAGEFood and Beverage (FAB) is an optional benefit which gives participants employee meals for free in exchange for a meal break. The free food and beverages may not be shared with others or taken from the workplace. To participate, which is not automatic, you make a written election. If you choose not to participate, you order and pay for all food and beverage just like any other customer. Opting in to FAB by your written election means you are voluntarily waiving your right to a 30-minute unpaid meal break.

MEAL BREAKOn shifts of 5+ hours you are entitled to a 30-minute unpaid meal break beginning 2 to 5 hours after the start of the shift. The timing of the meal break is up to your manager. You have to clock out when you leave for the meal break and clock in when you return to work. If you elect into the FAB Benefit, you voluntarily waive your right to the unpaid meal break.

REST BREAKSYou are entitled to 10 minutes of cumulative rest for every 4 hours on a shift. You must take a break as close as possible to the middle of your work period, and should not work more than three hours without a rest break. By law, the 10-minute rest can include all non-working time such as chatting, going to the bathroom, smoking, intermittent lulls in the work, etc. If you participate in the FAB Benefit, your manager will permit you more generous rest breaks than those required by law - this is to give you time to eat your employee meal! Rest breaks are on the clock and paid.

PAID TIME OFFOn your date of hire you will begin to accumulate paid time off (PTO). PTO accumulation is calculated at a rate of one hour per every 30 hours that you work. PTO will roll over from year to year and will not expire. Your PTO balance is available on our crew pages online. Once you have completed 90 days of continuous employment you may begin to use any PTO that you have accrued. PTO may be used to cover absences such as a vacation, a physical or mental illness, or an absence resulting from being the victim of domestic violence. The amount of PTO earned is based on your average hours worked per day during the previous 6 months and is calculated at your rate of pay when you take the PTO. Requests for leave must be made in advance and reviewed by your manager. You must enter the request into Luigi prior to your leave and select the number of days that you wish to apply PTO towards. If the leave is unforeseeable a PTO request must be entered the day that you return to work. If an employee misses more than 3 days of work without PTO approval, Pagliacci may require verification for absence.

UNIFORMCrew members wear Pagliacci shirts (and sometimes jackets and sweatshirts) which are provided by the company. If you leave the company and fail to return them you have to pay for them or the amounts will be deducted from your final paycheck with your authorization in accordance with any laws.

Our benefits are just one reason Pagliacci is a great place

to work. If you ever have any questions about your benefits,

talk to your manager or email [email protected].

FAMILY AND MEDICAL LEAVEYou may be entitled to an unpaid family and medical leave, the details and administration of which are controlled exclusively by the written plan which you should review for further details. See the Benefits Administrator if you would like more information. Generally speaking (subject in each instance to the provisions of the written plan), employees may be eligible for leave if they have worked for the company for more than 12 months and have worked 1,250 hours in the past 12 months. Such employees may receive 12 work weeks of leave in a 12-month period for their serious health condition; the serious health condition of a spouse, child or parent; or to bond with a child newly arriving in their family. Such leave must be requested by the employee 30 days prior to the requested start date if foreseeable, or as soon as possible if the need for leave is not foreseeable.

Beginning January 1, 2020, you may also be eligible for paid family and medical leave. You must work 820 hours or more in the applicable qualifying period, and can generally take up to 12 weeks of paid family and medical leave, or as otherwise prescribed by law. See the Benefits Administrator for more information.

401K PLANThis benefit is a tax-deferred retirement savings plan. It allows you to save money for retirement without paying taxes until the funds are withdrawn. The company makes a matching contribution on salary deferrals in an amount equal to 100% up to 3% of compensation plus a 50% matching contribution on any additional salary deferrals above 3% up to 5% of compensation. Generally speaking, all employees age 21 or older are eligible after 1 year of employment. Please talk to your manager or the Benefits Administrator or visit the crew pages online. Once you have met the eligibility requirements you may enroll during any one of the quarterly enrollment periods which are December, March, June and September. Changes are effective the first of the following month.

FLEXIBLE SCHEDULEWork schedules are emailed, available on our crew pages online, and posted on the bulletin board at your store, usually by Thursday for 3 weeks in advance. Enter any schedule requests in Luigi (the same system you clock in and out of). Your manager will take your request into consideration when creating the schedule.

PEER REVIEWPagliacci has regularly scheduled periods where your peers will evaluate your performance and you will evaluate their performance. You will also be asked to perform a self-evaluation answering the same questions as your peers. Your general manager will review the results with you and help create a development plan for improving future performance.

REFERRAL BONUSThis is a good place to work. Recruit a friend to work for Pagliacci Pizza. Have your friend apply and help set up an interview. We’ll thank you and so will your friend. When your friend is hired, you will receive a $20 gift card. After 6 months of continuous employment, you get a $100 bonus. After their 1 year anniversary, you get an additional $300 bonus.

CREW SURVEYEach year, the crew members grade the company, its managers and its policies. The results of the Crew Survey are shared with you. Company managers personally meet with the crew, answer questions and listen to comments. There is a rich tradition of employees affecting the direction of the company by their comments at the Crew Survey Meetings.

PIZZA WITH A-PEELEvery period we pick up identical pizzas from every location, and judge them for quality. The location that makes the best pizza gets a trophy and everyone working at the top 3 stores earn a bonus on their paycheck.

GET TOGETHERSEach winter we close early one night and have a party. Every year it seems bigger and more crowded. On the 4th of July we have a picnic, complete with fun competitions and munchies. Some years we even have sunshine. Some years we close early one night and stage a battle of the bands. At least one band member from the competing bands must be a Pagliacci employee.

REMEMBRANCESWe remember your birthday and employment anniversary with a note of congratulations and a small gift.

CREW MEMBER MEDICAL INSURANCEThe company offers three medical plans, the details and administration of which are controlled exclusively by the written plan which you should review for further information. Your general manager has a copy and additional copies may be obtained from the Benefits Administrator or viewed on our crew pages online. Our standard insurance is offered by Kaiser Permanente. There is a bronze, base and a buy-up option. The bronze and base plans allow employees to choose physicians in the Kaiser Permanente network while the buy-up plan allows you to self-refer to any licensed provider. To enroll, you must have 60 days of continuous employment, regularly work an average of at least 25 hours a week and take action in compliance with the provisions of the plan. The cost of the medical plans is based on your tenure with the company. Enrollment is not automatic; you must contact your general manager or the Benefits Administrator if you would like to enroll. Forms are available on our crew pages online. If you choose not to enroll when you are eligible, you will not be able to enroll again until the following open enrollment period. Open enrollment occurs annually during the month of February with any changes effective March 1st of that year.

VOLUNTARY VISION AND DENTAL INSURANCEThe company offers voluntary vision and dental insurance, the details and administration of which are controlled exclusively by the written plan which you should review for further information. You must enroll in each plan separately as vision insurance and dental insurance are two distinct benefits. You may choose to enroll in one and not the other, both or neither. Your general manager has a copy and additional copies may be obtained from the Benefits Administrator or viewed on our crew pages online. Generally speaking (subject in each particular to the provisions of the written plan), the insurance premiums for crew members are paid in full by those who have voluntarily enrolled in the plan. To enroll, which is not automatic, you must have 60 days of continuous employment, regularly work an average of at least 20 hours a week and take action in compliance with the provisions of the plan. Enrollment forms are available on our crew pages online. If you choose not to enroll when you are eligible, you will not be able to enroll again until the following open enrollment period. Open enrollment occurs annually during the month of February with any changes effective March 1st of that year.

PROMOTION OPPORTUNITYPagliacci Pizza is eager and proud to promote from within. Most management positions have been filled by employees who had been crew members. If you’re interested, talk to your manager. Openings for management positions are posted so you may apply if you are interested.

PAPERLESS PAYROLLOur payroll system is completely paperless. Instead of receiving a paycheck, on each payday your wages will be directly deposited into your bank account. You can access and print your paystubs from our crew pages online.

DELIVERY KITCHEN KRUST BONUS PROGRAMSWe offer a bonus to employees for reducing the number of complaints their store location receives. There is a separate complaint percentage goal for in-house crew (KRUST) and drivers (Driver KRUST). In-house crew and drivers who keep their location’s complaints below the established goal for their respective groups will earn a $0.25 bonus for every hour, including overtime hours, worked during that 4 week period. The location with the lowest percentage earns “Top KRUST” or “Top Driver KRUST” and an additional $0.25 bonus ($0.50 total) for every hour worked during that 4 week period. If two locations tie at the Top KRUST level, the location with the highest number of orders will be awarded the Top KRUST bonus. Only employees who have worked for Pagliacci a minimum of six months are eligible for the bonus.

CUSTOMER SERVICE CENTER KRUST BONUS PROGRAMCustomer Sercive Center employees can earn a KRUST bonus by keeping their own entry error rate below 0.25% over a 4-week period. Employees who meet that goal are paid an extra $1.00 per hour they worked that period. Only employees who have worked for Pagliacci a minimum of six months are eligible for the bonus.

TIME CLOCKUse the time clock to record when you start work and when you stop work. If you take a meal break (as distinguished from a rest break during which you also might eat), use the time clock to record when you leave for the meal break and when you return from the meal break. Payroll generates your pay from your time record. If you make a mistake, give the managers a detailed note so they make the proper adjustments to your time record so you will be paid correctly.

FINAL PAYIn accordance with the law, final pay is issued on the next regular payday following the last day worked.

PAID TIME & UNPAID TIMEPagliacci Pizza wants you to be paid for all time worked, including rest breaks. If your presence at the work place while not clocked in is voluntary (perhaps before or after your scheduled shift), you are not entitled to be paid for that time. However, if your presence at the workplace while not clocked in is at the instruction of your manager (perhaps to attend a crew meeting), you are entitled to be paid for that time. You are required to clock in any time you are required or permitted to work. To confirm that your presence while not clocked in is at the instruction of your manager you must use a written attendance roster, which you can get from your manager and sign. Your manager will then send it to Payroll. You agree to promptly follow the steps laid forth in the F.A.I.R. policy if at any time you are not paid for all the time you work, you do not receive or are encouraged by your supervisor not to take the breaks to which you are entitled or your supervisor precludes or discourages you from having the FAB Benefits to which you are entitled.

MUTUAL FA IRNESS

We want respect, dignity and fairness to be a two-way street

at Pagliacci Pizza. If this isn’t happening for you, we want to

know so we can fix it. The next 5 sections give you the low

down regarding our commitment to mutual respect, dignity

and fairness in the workplace.

PERFORMANCE IS WHAT IT’S ABOUTWe recruit managers who are competent and who are nice people, people with good hearts and the will to do what is right. To do the right thing by you, the managers keep a log about how you’re doing. Although you are not permitted to read the log, you may arrange with the general manager to have it read to you. In your performance evaluations, a manager will sit down with you to discuss your performance. You always have a manager to talk to and you may call a field manager, operations manager and/or Matt at any time.

F.A.I.R. POLICYF.A.I.R. stands for Fair and Amicable Internal Resolution. If you believe you have been treated unfairly in any way in your current employment at Pagliacci Pizza (i.e., in the application of its rules and policies to you, not in the content of the rules and policies themselves), or if you believe the content of any of the rules or policies to be unlawful, or if you believe any of your rights have been violated, including payment of wages, or if you believe you have been harassed, retaliated against or discriminated against as described in the Pagliacci Pizza Arbitration Policy or the Pagliacci Pizza Unlawful Harassment Policy, you will use the steps and procedures of the F.A.I.R. Policy to attempt in good faith to resolve the dispute to the mutual satisfaction of you and Pagliacci Pizza without arbitration.

1ST STEP - SUPERVISOR REVIEWInformally report the matter and all details to your supervisor or Human Resources (HR) who will discuss the matter with you.

2ND STEP - ADDITIONAL REVIEWIf Supervisor or HR Review does not resolve the matter to your satisfaction, you may initiate a meeting with another manager at Pagliacci Pizza (who may be its owner) to meet face-to-face with you. Your additional review request must be made in writing.

ARBITRATIONYou should attempt to resolve any complaints or potential claims you have against Pagliacci Pizza through the F.A.I.R. Policy before submitting any claim to binding arbitration or a court of law. Please refer to the Pagliacci Pizza Arbitration Policy and your signed Arbitration Agreement for more information.

RESPONSE TO POOR PERFORMANCEA manager may at any time informally take any disciplinary actions short of termination which may include verbal and/or written warnings. You are required to sign written warnings, which, like signing traffic tickets, means you acknowledge receipt but not guilt. Without the necessity of any prior or contemporaneous verbal or written warning, a manager may take you off the schedule until you have later made and kept an appointment with the general manager at which time the general manager may take other actions, up to and including the termination of your employment. At Pagliacci Pizza, all disciplinary actions up to and including termination, may be reviewed and possibly overturned (with reinstatement of employment) by upper management and/or Matt. You may initiate a review of any disciplinary action against you by calling an operations manager or Matt within seven days of receiving notice of the disciplinary action. Informal review may also be initiated by the general manager, upper management or Matt. Upper management will investigate the disciplinary action and confirm, correct or reverse the action. You may exercise your F.A.I.R. benefits, which are described in the next section, whether or not there has been an informal review.

Pagliacci is committed to growing greener. Doing the right

thing is one of our Core Values and we try to push for a more

responsible, more sustainable business wherever possible.

What are some of the things we do that set us apart? You

are now part of that effort and should work to keep Pagliacci

growing greener!

GROWINGGREENER

WE USE FSC BOXES AND BAGS

WE STRIVE FOR ZERO WASTE

WE PURCHASE GREEN POWER

WE SUPPORT LOCAL VENDORS & LOCAL PRODUCTS

WE REDUCE OUR USE OF UTILITIES

WE USE GREEN CHEMICALS

WE EMBRACE GREEN BUILDING PRACTICES

It may sound like an oxymoron but we make a point to use cleaning products that are more environmentally responsible than others.

Our Madison Park store has been built to LEED (Leadership in Energy and Environment Design) Gold standards. To achieve LEED certification, we feature FSC-certified wood, sustainable finishes, high efficiency lighting and plumbing fixtures, and a design that incorporates ample natural lighting. Whenever possible our other projects utilize green building practices.

By using local products and vendors we not only ensure better quality but build a relationship with them that extends beyond just business. Additionally, by spending our money locally we keep the money in the local economy.

We are Seattle’s 3rd biggest purchaser of green power – which is remarkable when you consider the big companies in our area. We helped Seattle City Light promote green power by giving gift cards to customers who signed up to purchase green power for their homes.

We halved the size of every dumpster in the company and converted trash cans into recycle and compost bins. In fact, we piloted with first commercialized composting program with the city of Seattle. It is the standard now in our industry. We have committed to eliminating single-use plastics in all of our locations.

We are the first pizza company in the world to get pulp for our boxes from lumber certified by the Forest Stewardship Council. FSC works to ensure responsible forest management. The forests, mills, and manufacturer for our boxes are all in the Northwest.

We can reduce our footprint by simply using less. On a bigger level we are replacing old lighting with more efficient bulbs and are using energy saving appliances and devices whenever possible. We encourage locations to turn lights off when not needed, turn ovens off when not needed, and reduce water waste by filling sinks up only as much as necessary and running full loads in the dishwashers.
