Hanging Gingerbread Houses

Ingredients

100g butter1 cup, fi rmly packed brown sugar1 cup treacle2 eggs, lightly whisked4 cups plain fl our1 cup self-raising fl our1 tablespoon ground ginger1 tablespoon ground cinnamon1 1/2 teaspoons ground cloves1 teaspoon bicarbonate of soda2 egg whites2 2/3 cup pure icing sugar1 teaspoon fresh lemon juice

Method

Place butter, sugar and treacle in a small saucepan over low heat stirring until the butter melts and sugar dissolves. Set aside for 10 mins to cool slightly.

Combine butter mixture and egg in a large bowl. Sift the combined fl our, ginger, cinnamon, cloves and bicarbonate of soda over the butter mixture. Stir until well combined. Turn onto a lightly fl oured surface and gently knead until smooth. Shape into a disc and cover with plastic. Place in the fridge for 1 hour to rest.

Preheat oven to 180°C. Line 2 trays with baking paper. Divide the dough into 2 portions. Roll out each portion on a lightly fl oured surface until 5mm thick. Cut dough using a house-shaped cutter and place on baking trays. Make small holes big enough for a piece of string at the top of each biscuit. Bake for 5 mins or until golden. Set aside on the trays to cool before transferring to a wire rack to cool completely.

Place egg whites in a bowl and lightly beat until foamy. Sift over icing sugar and stir until smooth. Stir in lemon juice. Spoon icing into a piping bag and pipe onto the biscuits to decorate. Set aside for 1 hour to set. To fi nish thread a piece of string through the holes and hang to display.
