Slow Food Springfield is a “convivium” or chapter of Slow Food USA (slowfoodusa.org) and was

established in January of 2006. Slow Food is an international organization founded in 1986 in Rome.

It now has 80,000 members in 80+ countries, including the U.S. Slow Food is focused on preserving

traditional ways of growing, preparing and enjoying foods, and saving the biodiversity of livestock

and crops that once existed. We hold monthly events which have included Mardi Gras celebrations,
