y D-Gustouna versión del Quiche Lorrain

Preparación:

Precalentar el horno a 200 ºC.Poner la masa quebrada en un molde de horno, con el papel sulfurizado en el que viene envuelta, y pincharla un poco con el tenedor para evitar que suba.Pre-hornearla a 200 ºC durante 10 minutos y reservar.Lavar y cortar los puerros en medias lunas.Cortar los chorizos en mirepoix (dados medianos de unos 5 milímetros de lado).En una sartén a fuego medio, rehogar los puerros hasta que empiecen a coger color.Añadir los chorizos en trocitos y dejar que suden su grasa.Batir los huevos con la nata y salpimentar.Cortar la mozzarella en cuadritos.Repartir equitativamente el sofrito de puerro y chorizos encima de la masa y hacer un poco de presión contra las paredes del molde.Añadir la mozzarella y cubrir la mezcla con los huevos y la nata.Meter al horno y cocer a 200 ºC durante 30-35 minutos.Sabemos que está listo cuando metemos un pincho de metal y sale limpio y la masa se ve dorada.Retirar del horno y dejar templar.Servir caliente o frío.Se puede conservar en un lugar seco como el horno, un par de días por lo menos.

Este mes vamos a darle un nuevo aire a nuestra sección D-gusto con una deliciosa y sencilla re-ceta: una versión del Quiche Lorraine, en la que he cambiado el bacon por chorizo y he añadido un poco de mozzarella.

Mi intención es que os sirva de base para darle rienda suelta a vuestra imaginación e ir cambiando ingredientes, respetando las normas básicas, para llegar a nuevas crea-ciones.Así que podéis usar distintas clases de masa, como el ho-jaldre por ejemplo, cambiar los vegetales del sofrito, po-ner diferentes carnes o pescados, añadir distintos tipos de quesos, condimentar con hierbas...¡Espero que os guste!

This month we’ll give a new lease of life to our D-gusto section with a delicious and simple recipe: a version of Quiche Lorraine, where bacon has been substituted for red sausage and a bit of mozzarella has been added.

My intention is that you can use it as a base to give free rein to your imagination, changing ingredients, respecting the basic norms to get new creations. So, you can use different kinds of dough, like puff pastry, change the vegetables in the sauté, add different meat or fish, different kinds of cheese, season with herbs...I hope you like it!

Ingredientes:Para 2 personas, como plato único, o para 4 personas como entrante:—1 masa quebrada—1 puerro—3 huevos—10 cl. nata líquida—1 bola de mozzarella—1,5 chorizo—3 cucharadas de grasa (aceite, mantequilla o margarina)—Sal y pimienta

Tiempo estimado:—Trabajo:15 minutos—Cocción 30-40 minutos

Ingredients:For 2 people, as a complete meal, of for 4 people as a starter: —1 short pastry—1 leek—3 eggs—10 cl. cream—1 mozzarella ball—1,5 red sausage—Salt and pepper—3 spoonfuls of grease (oil, butter or margarine)

Estimated time:—Elaboration: 15 minutes—Cooking: 30-40 minutes

Preparation:Preheat oven at 200 ºC.Put the short pastry in a baking dish on the baking paper it is wrapped in and prick it with a fork to stop it rising during cooking. Pre-bake at 200º for 10 minutes and put aside. Wash and cut the leeks in semicircular shapes. Cut the red sausage in mirepoix (middle size 5mm wide cubes).Cook the leeks in a pan over a medium heat, until they start to brown. Add the red sausage in little pieces and let them release the fat.Beat the eggs with cream and add salt and pepper.Chop the mozzarella.Divide equitably the lleek and red sausage sauté on the dough and press against the baking dish. Add the mozzarella and cover the mixture with the eggs and cream. Bake in the oven at 200º for 30-35 minutes. We will know when it’s ready if we prick the dough with a metal stick and it’s clean when taking it out, and the dough is brown. Remove from the oven and let it cool down. Serve hot of cold. You can keep it in a dry place such as the oven, at least for a couple of days.

Macaronesia: ¿Cuándo te inicias en los deportes acuáticos?Will: Practico Windsurf desde los 11 años. Mi padre me dio una clase en un estanque de patos, me encantó y no lo he dejado nunca.M: ¿Cómo descubriste Fuerteventura?W: La primera vez, vine a las Islas Canarias de vaca-ciones para hacer wind-surf en el 2000. El primer mes estuve en Gran Ca-naria, haciendo windsurf en Pozo, y después vine al sur de Fuerteventura con mis amigos a com-petir. Hicimos windsurf y fiestas durante cuatro meses. Cuando la com-petición terminó, vinimos al norte y dormimos en las fundas de las tablas, en la playa de Bristol. Hacíamos windsurf durante el día y por la noche íbamos al bar de Corky. ¡Fue genial!M: ¿Cuándo decides venir a vivir?W: Dos meses después volví a Inglaterra y soñaba con vivir en Fuerteventura. Trabajé durante 6 meses, haciendo tra-bajos horribles en el Reino Unido, y después volví a Fuer-teventura, donde Stephen Gibson me dio trabajo, lavando platos, y alojamiento. M: ¿Has competido? W: Participé en unas cuantas competiciones de windsurf en el Reino Unido pero nunca me gustaron demasiado. Siempre te pasabas más tiempo fuera que dentro del agua. Sin embargo, el Fuerteventura Wave Classic fue divertido y diferente a las competiciones normales, y además era interesante tener una competición en la Isla. Esperemos que pronto tengamos otra. In this Macaronesia issue we are interviewing Will Ward, one of our island’s windsurf leading figures. Will has been

attached to a windsurf board since he was 11, and in spite of his shyness and not liking to be talked about he is an example for many sports-people in this island because of his windsurf style and his passion for this sport.

Macaronesia: When did you first have a go at water sports?

Will: I have been windsurfing since I was 11. My father gave me a lesson on a small duck pond, and I loved it and never stopped.M: How did you find out Fuerteventura?W: I first came to the Canary Islands on a windsurfing Holiday in 2000. The first month I was in Gran Canaria, windsurfing in Pozo and then we came over to the South of Fuerteventura with my friends competing in the comp, we windsurfed and partied for 4 weeks. When the competition finished we came up the North and slept in board bags on the beach at Bristol; during the day we windsurfed and in the evening we went to Corky’s bar. It was amazing! M: When did you decide to settle here?W: Two months later I went back to England and dreamed of living in Fuerteventura. I worked for 6 months doing horrible jobs in the UK and then I came back to Fuerteventura, Stephen Gibson gave me a job washing plates and a place to stay.

W: Lo que más me gusta del windsurf es surfear las olas, golpear el labio haciendo aéreos. Mis condiciones favoritas son cuando el viento viene del SW y podemos hacer wind-surf en grandes olas limpias como Acid drop o Caleta. M: ¿Cómo ves el nivel de windsurf en Fuerteventura?W: El nivel de Windsurf en Fuerteventura es bueno, pero es una pena que no se vean chicos jóvenes iniciándose. M: Sitios en los que has estado para hacer windsurf…W: He hecho viajes de windsurf a Maui, Capetown, el este de Australia e Irlanda. Siempre me siento feliz al volver a Fuerteventura, es un sitio especial. M: ¿Qué más te gusta hacer?W: No soy el tipo de persona al que le gusta estar sentado por mucho tiempo y Fuerteventura es el sitio perfecto para mí —cuando el viento no sopla, salto en mi motocross o mi mountainbike y recorro senderos, o voy a surfear o a pescar. Siempre hay algo divertido que hacer aquí...

M: Have you ever taken part in competitions? W: I did a few windsurf competitions in the Uk but I never liked it much, it was always more time standing around than time on the water. The Fuerteventura wave classic was fun and different to normal competitions and it was great to have a comp on the island, hopefully we will have another one soon. M: What are your favourite modality and conditions?W: My favourite part of windsurfing is wave riding, smacking the lip doing Aerials. My favourite conditions are when the wind comes from the SW and we can windsurf big clean waves like Acid drop or Caleta. M: What do you think about the level of windsurfing in Fuerteventura?W: The level of windsurfing here in Fuerteventura is good but I see no new young kids starting which is a shame M: Places where you have been windsurfing…W: I have been on windsurf trips to Maui, Cape town, Western Australia and Ireland, I am always happy to come back to Fuerteventura, it is a special place. M: What else do you like doing?W: I’m not the type of person who can sit still for long,

and Fuerteventura is the perfect place for me- when the wind isn’t blowing, I jump on my motocross bike or my mountain bike and hit the trails or go surfing or fishing, there is always something fun to do here...

Sello de calidad europeo para El Gofio CanarioTras un largo proceso iniciado en enero de 2011, por la Asociación de Productores de Gofio de Canarias, y trami-tado por la Consejería de Agricultura, Ganadería, Pesca y Aguas del Gobierno de Canarias, el pasado 11 de febrero se consiguió el sello de calidad europeo para el «Gofio Ca-nario», lo que se traduce en reconocimiento y protección para este característico producto isleño que constituye el alimento más tradicional de Canrias y un referente de la identidad del archipiélago.Con este distintivo solo los gofios producidos en las islas, bajo los controles y certificación requeridos, podrán comer-cializarse aludiendo a Las Islas, evitando así la competencia desleal.Otros productos que disfrutan de este reconocimiento son los vinos y el queso con denominación de origen, las Papas Antiguas, el Plátano de Canarias, la Miel de Tenerife y el Ronmiel.

European quality label for El Gofio CanarioAfter a long process, started in January 2011 by the Association of Gofio producers in the Canary Islands and negotiated by the Department of Agriculture, Livestock, Aquaculture and Fisheries in the Canarian Government, the last 11th February the European quality label for «El Gofio Canario» was awarded, which means recognition and protection for this characteristic island product which is the most traditional food in The Canary Islands and a model for the archipelago’s identity. With this distinction, only the «gofio» produced in the Islands, under required controls and certification, will be launched to the market as coming from The Islands, thus avoiding unfair competition. Other products that enjoy this recognition are the wine and cheese with designation of origin, potatoes from Antigua, the Canarian banana, the honey from Tenerife and the «Ronmiel».

Se digitalizan en 2013 más de 150 bobinas con imágenes antiguas de las islas

A lo largo del pasado año 2013 la Filmoteca Canaria, en-tidad gestionada por el área de Cultura del Gobierno au-tónomo, ha conseguido recuperar y digitalizar más de 150 bobinas de 8mm, súper 8mm y Pathé Baby (9mm), cedidas en su mayoría por filmadores aficionados para su conser-vación. Las más antiguas de ellas están datadas de los años 20 en Tenerife y Gran Canaria. A parte del material mentado, también se han recibido

revistas, publicaciones varias, aparatos, grabaciones mag-netofónicas, películas en video y producciones cinemato-gráficas más recientes, para conformar este gran archivo: grabaciones caseras de aficionados, documentales de los 70 del cineasta amateur Manuel Touroni, bobinas del artis-ta plástico Baudillo Miró Mainou, películas del grancanario Domingo Báez Solís…

More that 150 spools with old pictures of the Islands`s weredigitized in 2013 The Canarian film library, an entity run by the home rule government’s area of culture, managed to get back and digitize more than 150 8mm spools, super 8mm and Pathé Baby (9mm), most of them given up by amateur film-makers for their safekeeping. The oldest ones date back to the 20’s in Tenerife and Gran Canaria. Apart from the above mentioned material, some magazines, several publications, appliances, recorded tapes, video films and more recent film productions have also been received to make up this large archive: in-house recordings by amateur film makers, documentaries from the 70’s by the amateur film-maker Manuel Touroni, spools by the artist Baudillo Miró Mainou, films by Domingo Báez Solís, from Gran Canaria...

Columbus Runner Fuer took part in the combined events championship in Los Realejos, Tenerife, getting three golden medals (Angelo Iaccarino, Alisia Hernández and Eduardo Figueroa Morera), one silver medal (Antonio Iaccarino ) and two bronze ones (Sonya Trevisan and Francisco Gómez Luzón), junior and juvenile categories. They also got three finalist positions for Yassir Segura, Izasku Martín del Campo and Amaury Rodríguez Gutiérrez, thus improving the quality of majorero sports among The Islands.

Famosos contra las prospeccionesLa iniciativa del modelo español Jon Kortajarena es todo un ejemplo de implicación en el panorama de las islas. Celebrities against oil prospectingThe initiative by the Spanish model Jon Kortajanera is an example of commitment to the islands scene. Fuerteventura: the best island in Spain, according to TripAdvisorTripAdvisor, the website where travellers leave their most sincere opinions about their travels all over the world, has presented the prizes Travellers Choice Islas, where Fuerteventura has been highlighted as the best Island in Spain, followed by Lanzarote and Tenerife. Gran Canaria got the 5th position, La Palma, the 9th one and La Gomera got the 10th position.

Una vez más, me encuentro delante del ordenador escribien-do unas cuantas líneas con el fin de ofrecerles mi opinión sobre las vivencias actuales del sector inmobiliario en nues-tra querida isla que, como siempre digo, tiene una especial y particular importancia dentro de nuestra economía local.

En mi artículo anterior, en agosto de 2013, comentaba una mejora sustancial en el interés por la compra de viviendas en Fuerteventura. Hoy, casi 7 meses después, podría decir que esa mejora se mantiene e incluso que comienza a consolidarse. Aunque vuelvo a repetir lo que comenté en aquel entonces: esto no significa que estemos ante una recuperación del mer-cado y, mucho menos aún, ante una posible recuperación de precios. Simplemente esta referencia intenta transmitir el des-pertar de la demanda nacional/europea que, según apuntan todos los indicadores, parece se mantendrá en 2014. Además de nuestro pálpito, al operar en el día a día en el mercado, me gustaría sumar algunos datos e informes que afirman mi impresión. He seleccionado un titular de un periódico económico de relevancia y una afirmación de un alto directivo de una consultora inmobiliaria, que me parecen muy significativos por transmitir lo que esta-mos viviendo actualmente:

«España ha pasado de ser ‘la oveja negra’ a convertirse en la ‘estrella’ del mercado inmobiliario» (Informe de Tendencias del mercado inmobiliario en Europa 2014, elaborado por PriceWaterhouseCoopers y el Urban Land Institute (ULI).)«Hace un año, todos tenían miedo de invertir en Espa-ña, hoy todos tienen miedo de perder la oportunidad de hacerlo».

Si bien estas afirmaciones vienen dadas por actores relevantes a nivel nacional, son perfectamente extrapolables a la coyun-tura económica del mercado inmobiliario, en la comunidad canaria en general, y en nuestra Fuerteventura en particular. En el pulso diario que sentimos los inmobiliarios de nues-tra isla, existe un dato objetivo que me llama mucho la atención: cuando ofrecemos una vivienda a precio de mer-cado, la vivienda no dura más de 1 mes en venta.Dentro de los datos más relevantes que he encontrado, y que ayudan a confirmar este posible punto de inflexión del sector inmobiliario en 2014, les traslado los siguientes apuntes:

— 2014 será el año de tránsito hacia la estabilización del mercado de la vivienda, según un informe de BBVA Re-search.

— Se estima que habrá creación de empleo durante este año, con lo cual muy posiblemente se reactive la de-manda de primera de vivienda o de reposición (mejora de calidad de vida, reducción núcleo familiar, indepen-dencia de jóvenes, etc). Esta demanda actualmente está muy dormida en nuestra isla, y si esta previsión se cumple, no sólo conseguiríamos ventas de clientes que demandan segundas residencias o activos de inversión, sino que volveríamos a tener en marcha un mercado que hasta hoy está muy estancado.

— Los tipos de interés hipotecarios continuarán estables e incluso se reducirán ligeramente hasta situarse entorno al 3% en 2015, además poco a poco, los bancos co-mienzan a abrir el grifo de créditos para la compra de vivienda, como podemos ver incluso en campañas tele-visivas, donde grandes bancos como Santander, Bankin-

ter, Cajasur ofertan abiertamente hipotecas con condi-ciones atractivas, y no solo para financiar las viviendas que tienen en su Stock, sino también las compraventas entre particulares.

Todo esto nos hace creer que realmente estamos ante la famosa luz al final del túnel, por lo que estamos muy convencidos de que este año es el mejor momento para comprar o invertir en el mercado inmobiliario. Nunca se hacen los grandes nego cios en los picos de mercado o al final del ciclo. Estamos claramente en la «zona segura de inversión».En el plan de marketing de nuestro Grupo —www.des-tinyhomefuerteventura.com—, este año hemos diseña-do un icono que pretende transmitir la situación y el re-corrido del mercado inmobiliario de los últimos 5 años. SECTOR INMOBILIARIO

Once more, I find myself in front of the computer writing some lines to give my opinion about the present situation of the real estate sector in our dear Island that, as I always say, has a special and particular relevance within our local economy.

In my previous article in August 2013 I was saying that there has been a substantial improvement in the interest in buying dwellings in Fuerteventura. Nowadays, almost 7 months later, I could say that this improvement remains steady, even it is starting to consolidate.I repeat again what I said then: this is not an evidence of a recovering market, let alone a full recovery in terms of price. This reference only tries to inform about the waking up of the national/European demand, as all the indicators point out, which seems to remain awake in 2014. Apart from our impressions, as we operate in the day-to-day market, I’d like to provide some data and reports that confirm our impressions. I have chosen the headline of a relevant financial newspaper and also the statement by a real estate senior manager, which I consider really meaningful as they transmit what we are experiencing at present:

«Spain has moved from being «the black sheep» to being the star in the real estate market» (Report from Real Estate Trends in Europe 2014, written by PriceWaterhouseCoopers and the Urban Land Institute (ULI).)«One year ago everybody was afraid of investing in Spain; today everybody is afraid of missing the chance to do it».

Although these statements have been made by relevant actors at a national level they can be extrapolated to the

financial situation of the real estate in the Canary Islands in general, and of our Fuerteventura in particular. In the day-to-day of real estate agents in our island there is an objective datum: when we offer a dwelling at market price, the dwelling is sold within a month. Among the most relevant data I have found, which help to confirm this possible real estate turning point in 2014, I highlight the following notes:

— 2014 will be the transition year towards a stabilization of the real estate market, according to a report from BBVA Research.

— Employment is expected to be created this year, so a demand for primary or replacement residences is very likely to start up again ( improvement in the standard

of living, smaller family units, independence of young people etc). This demand has been asleep in our island lately, and if these expectations are fulfilled we would not only get sales from customers that demand a second residence or investment assets but we would also recover a market that nowadays is stuck.

— Mortgage interest rates will remain stable, and they will even be slightly reduced until reaching around the 3% in 2015. Moreover the banks are little by little starting to give more credits for the purchase of dwellings, as we can even see in television campaigns, where big banks like Santander, Bankinter, Cajasur offer mortgages under attractive conditions, not just to finance the dwellings they have in their stock but also the buying and selling among particulars.

All this makes us believe that we are in front of the famous light at the end of the tunnel, so we are really convinced that this year is the best moment to buy, invest in real estate. Big businesses are never made at market peaks or at the end of a cycle. We are clearly in the «safe investment area». In our Group’s marketing plan —www.destinyhomefuerte-ventura.com—, we have designed an icon this year which aims to transmit the situation and development of the real estate market in the last five years. We hope that all those particular owners, banks, promoters and agents who operate within the sector succeed in reaching the aims of selling the dwellings we hold in our portfolio and, most of all, that this recovery trend consolidates, as the development of the real estate market will help our dear island a lot. El Cabildo de Fuerteventura acaba de lanzar este nuevo Portal interactivo de Ahorro y Eficiencia Energética en el sector doméstico y en las PYMES, que pretende concienciar y ayudar al ciudadano a ahorrar energía —y con ello dinero—, a la vez

que contribuye a reducir las emisiones de CO2 y a dar de lado, en la medida de lo posible, al gran gigante del petróleo.

En este Portal, a parte de encontrar información sobre sencillos hábitos para reducir nuestro consumo de agua, electricidad, combustible y la cantidad de residuos —con las premisas de reutilizar, reciclar y reducir—, podremos llevar un control rutinario de nuestro consumo energético y su equivalente en emisiones de CO2 , siguiendo así una evolución del ahorro de nuestro hogar o nuestra empresa que, sumado al de todos los ciudadanos participantes, nos llevará a unas cifras generales importantes. Desde el Portal se fomenta también la utilización de energías renovables, informando del uso y la implantación de estas. Lo ciudadanos que quieran participar deberán registrarse en www.fuerteventurainteligente.es donde tendrán una ficha personalizada, creando así una red de participantes. Una vez intoducidos los datos de las facturas correspon-dientes —lo que le ayudará a tener un control de lo que gasta: primer paso en toda iniciativa de ahorro—, y segui-dos los métodos para el ahorro de energía que proporcio-na el Portal, se deberán volver a anotar los datos de las nuevas facturas que se vayan recibiendo para así tener un balance de la evolución del ahorro.Uno de los pilares fundamentales del proyecto es fomentar el sentimiento de unión entre los contribuyentes, de sentir-se cada uno parte del problema global y de su solución.

El principal objetivo de este proyecto se centrará y se evaluará por el número de personas que se inscriban en el Portal, y por la cantidad de ahorro de emisiones que estos logren. Las emisiones totales de los 40 mil hogares con los que cuenta esta isla se calculan en torno a las 58 mil toneladas de CO2. Se pretende llegar a reducir un 20% del consumo energético de cara al año 2020, lo que puede suponer un ahorro de más de 11€/mes por hogar.Y las miras de Fuerteventurainteligente.es no están solo puestas en los hogares, sino que se dirigen también a las PYMES, a las que la situación actual está afectando se-riamente. Por tanto se les propone un modelo de aho-rro energético y económico, consistente por otro lado en buscar soluciones energéticas innovadoras, más limpias, competitivas y rentables, que garanticen el mantenimiento de la actividad empresarial. Si todas las PYMES canarias incorporaran medidas en sus negocios para ser más efi-cientes y evitar derroches de energía innecesarios, se aho-rrarían 62,5 millones de euros al año.

Fuerteventura’s inter-island council has just launched this new interactive website of energetic saving and efficiency for homes and PYMEs which aims to make the citizens aware and help them save energy — and thus, money— apart from contributing to reduce CO2 emissions and give the cold shoulder to the great giant petroleum.

In this website, apart from finding information about simple habits to reduce our water, electricity and fuel consumption, and also reduce waste — under the premises of reusing, recycling and reducing— we can carry out a routine follow-up of our energetic consumption and its equivalent in CO2 emissions, and thus witness a saving evolution in our home or company that, added to all the participant citizens´ will take us to important general figures. From this website the use of renewable energies is also encouraged, informing about their use and implementation. The citizens who are willing to take part in this project must register in www.fuerteventurainteligente.es, where they will have a custom tab, thus creating a net of participants. Once the data of invoices have been entered— which will help you control your expenditure: the first step in every saving initiative— and following the saving tips provided by the website, the data from the new invoices you are

receiving must be entered again so that you can have an assessment of your saving evolution.One of the key pillars in this project is to promote the feeling of connection among the contributors, each of them feeling as a part of the global problem and its solution. The main aim of this project will be focused and evaluated according to the number of people registered in the website and the amount of CO2 emissions they manage to save. The total amount of emissions in the forty thousand homes in this island is around fifty-eight thousand tons of CO2. The aim is to reduce this amount up to a 20% in the energetic consumption in the year 2020, which may mean a saving of more than 11€/month per home. The focus of Fuerteventurainteligente.es is not just the homes, but also the PYMEs, which are being seriously affected by the present situation. So, a model of energetic and financial saving is being proposed, consisting of looking for innovative cleaner competitive and profitable energetic solutions, guaranteeing the businesses upkeep.If every PYMEs in the Canary Islands incorporated in their businesses measures to be more efficient and avoid wasting energy, 62,5 million Euros would be saved every year. Te despiertas por las noches y no consigues conciliar el sueño, van pasando las horas y te agobia el hecho de pen-sar en tu día de mañana. Te levantas, te tomas un vaso de leche caliente e intentas relajarte y descansar.¿Es posible que la alimentación influya en tu descan-so, en tus horas de sueño, en el placer de dormir bien?Empecemos explicando las maravillosas funciones de un pequeño neurotransmisor llamado serotonina. Esta sustan-cia impulsa el movimiento y las emociones. Estimula los movimientos intestinales, es responsable del cómo vivimos las experiencias, de las emociones que disfrutamos ante determinadas circunstancias, de la alegría, de las ganas de vivir, de tus sonrisas… A medida que transcurre el día, la concentración de serotonina va cayendo, hasta transfor-marse en otra sustancia llamada melatonina, precursora del sueño. Unos niveles bajos de serotoninasupondrán una síntesis inferior de melatonina, lo que pue-de conllevar alteraciones del sueño. Si sufres de insom-nio, despertares nocturnos o somnolencia diurna puedes, a través de la alimentación, ayudar en la medida de lo posible a paliar estos síntomas. Para ello, debes procurar incluir en tu dieta alimentos que proporcionen los materia-les imprescindibles para fabricar serotonina. Imaginemos que la serotonina es la casa de tus sueños. Una vez te encuentras dentro de la casa que siempre has deseado te encontrarás feliz, relajado, sonriente, alegre, calmado, en paz. Dormirás y comerás de forma adecuada porque te encontrarás bien contigo mismo. Más o menos así te hace sentir una concentración alta de serotonina. Por el con-trario, una concentración baja de este neurotransmisor te lleva al cansancio, depresión, susceptibilidad o problemas de sueño. El material principal para la fabricación de sero-tonina es un aminoácido que hace de ladrillo y sostén para crear tu magnífica e impresionante casa. Este aminoácido se llama triptófano y se encuentra en la leche, huevos, fru-tos secos, chocolate, cereales integrales y plátano. Sin em-bargo, poco podemos hacer con solamente unos ladrillos. Necesitamos más herramientas para su completa síntesis: vitamina B6, ácidos omega 3, magnesio y hierro.Una deficiencia de cualquiera de estos micronutrientes puede desencadenar un déficit de serotonina. Explota la ingesta de verduras de color, pescados, legumbres, cerea-les integrales y espolvorea tus platos con germen de trigo o levadura de cerveza. Los alimentos que proporcionen la química necesaria para la creación de serotonina harán posible mayores concentraciones de melatonina, lo cual favorecerá tu descanso y tu sueño.

Can food influence on your rest, your sleeping time, the pleasure of sleeping well?Let’s start by explaining the marvellous functions of a little neurotransmitter called serotonin. This substance encourages movement and emotions. It stimulates bowel movements, it’s responsible for how we live experiences, the emotions we enjoy when facing certain circumstances, for happiness, the lust for life, your smiles... As the day passes by, the concentration of serotonin decreases until turning into another substance called melatonin, sleep precursor. Low levels of serotonin will mean a lower melatonin-synthesis, which may lead to sleep disruptions. If you suffer from insomnia, you wake up at night and you feel asleep during the day, food can help alleviate these symptoms to a certain extent. With this aim you must include in your diet food that provides key materials to produce serotonin. Let’s imagine that serotonin is the house of your dreams. Once you are inside the house you had always desired you will feel happy, relaxed, smiling, happy, quiet, in peace. You will sleep and eat well because you will feel well with yourself. More or less this is the way that a high concentration of serotonin makes you feel. On the contrary, a low concentration of this neurotransmitter leads to tiredness, depression, susceptibility, or sleep disruptions. The main material for the production of serotonin is an amino acid which works as the bricks and scaffolding to build your magnificent and impressive house. This amino acid is called tryptophan and you find it in milk, eggs, nuts, chocolate, whole grain cereals and banana. However little can we do with just bricks. We need more tools for its complete synthesis: vitamin B6, omega 3 acids, magnesium and iron. A deficiency of any of these micronutrients can lead to a shortage of serotonin. Increase the intake of coloured vegetables, fish, legumes, whole grain cereals and sprinkle wheat germ or brewer’s yeast on your dishes.
