Marinades are probably the most important ingredient to any cooked dish. A good marinade not only keeps your grilling moist and flavorful, but they make it healthier. During the marina�on process normally the food is soaked in the marinade.The 'marinade', can be either acidic (made with ingredients such as vinegar, lemon juice, or wine) or enzyma�c (made with ingredients such as pineapple, papaya or ginger). In addi�on to these ingredients, a marinade o�en contains oils, herbs, and spices to further flavor the food items. These acidic ingredients breaks down proteins and work as liquid tenderizers. They also add flavor to meat and help keep everything moist however, too much acid can be detrimental to the end product.It is commonly used to flavor foods and to tenderize tougher cuts of meat. The process may last seconds or days. Different marinades are used in different cuisines. For example, in Indian cuisine the marinade is usually prepared with a mixture of spices.

Safety While Marinating

Raw pork, seafood, beef and poultry may contain harmful bacteria which may contaminate the marinade. Marina�ng should be done in the refrigerator to inhibit bacterial growth. A good marinade has a balance of acid, oil and spice. If raw marinated meat is frozen, the marinade can break down the surface and turn the outer layer mushy.Used marinade should not be made into a sauce unless rendered safe by boiling directly before use; otherwise, fresh or set-aside marinade that has not touched meat should be used. The container used for marina�ng should be glass or food safe plas�c. Metal, including po�ery glazes which can contain lead, reacts with the acid in the marinade and should be avoided.

Types Of Marinates

This marinade is sure to add flavor to whatever you're grilling. This marinade works par�cularly well with pork and poultry but is also great on beef. This par�cular marinate can be used as a sauce. If using as a sauce. Bring ingredients to a medium simmer. S�r occasionally and watch for burning. Reduce heat as needed. Let mixture simmer for 5 to 6 minutes. If s�ll runny, then thicken with cornstarch.

Recipe:Combine soya sauce, water, brown sugar, white vinegar, vegetable oil, minced garlic and chopped spring onion in a medium bowl. S�r gently un�l sugar is completely dissolved. Use immediately or store in a refrigerator, covered for 6 to 7 days a�er prepara�on.

Teriyaki Marinade

This is a great marinade recipe for chicken. It gives you that lemon-herb flavor that you find on so many store-bought chickens, but this is be�er. Try this marinade with poultry, pork, and lamb.

Recipe:Cut lemons in half and squeeze out the juice into a medium plas�c or glass bowl. Add Salt, pepper, olive oil, minced garlic and rosemary and mix well.

Recipe:Place red-wine vinegar and Worcestershire sauce in a bowl and whisk together. Slowly drizzle in olive oil, whisking constantly, un�l well combined. Add sea salt, oregano, pepper, thyme, onion powder, and minced garlic, and s�r un�l well combined. Let the mixture stand at room temperature for 5 minutes or so before using.

A great steak doesn't need any help. A not so great steak does. If you are grilling a steak that isn't a very tender, then this classic steak marinade is perfect. While perfect for beef, this marinade also works well with pork, poultry, and lamb.

Classic Steak Marinade

Recipe:Mix crushed Pineapple, soya sauce, honey, cider vinegar, minced garlic, ginger powder or minced ginger and powdered clove together in a non-corrosive (non-metal) bowl. Let mixture sit for 15 minutes before using or store in a glass or plas�c air�ght container in the refrigerator for up to 7 days.

This marinade works really well on pork or chicken. It is also great for bringing a Hawaiian flavor to beef dishes. The power of pineapple tenderizes and sweetens meats. This is a great marinade when you don't have a lot of �me.

Recipe:Combine chopped onion, chopped spring onion, chopped chilies, soya sauce, oil, cider vinegar, thyme leaves, sugar, salt, ground Jamaican Pimento/all spice, ground black pepper, ground nutmeg, ground cinnamon and hot sauce as per choice in a blender and blend un�l smooth. Use marinade right away or if making ahead, simply store in an air �ght container and keep in the refrigerator for up to 7 days. It's recommended that this marinade should be prepared one day in advance so that the flavours of spices are blended well within themselves.

You've heard of Jerk seasonings and Jerk rubs, well this is a jerk marinade that gets that great jerk flavor deep into the meat. You can use this marinade on all kinds of meat and poultry.

Jamaican Jerk Marinade

Recipe:Juice two lemons into a small bowl. Slowly drizzle olive oil into the lemon juice while whisking. This will help to mix/blend the mixture. Add Minced garlic, oregano leaves, thyme leaves, bay leaf, salt and crushed black pepper. Allow the mixture to stand at room temperature for 10 minutes before using.

This Greek-style marinade can be applied to any meat but is par�cularly good on lamb dishes. Let the meat marinade for a while so the flavors can infuse.

Recipe:Combine vinegar, vegetable oil, chopped coriander, water, minced garlic, lime juice, cumin seeds, oregano, salt, chili powder and black pepper powder in a plas�c or glass bowl. Blend all together very well and marinate meat in the same.

This marinade can be used on prac�cally any meat or Mexican-style dish. You'll get a great lime and cilantro flavor without overpowering the flavor of the meat.

Mexican Marinade

Recipe:Mix cooking red wine, olive oil, mustard paste, lemon juice, vinegar, horseradish sauce, salt, cayenne pepper, garlic powder or garlic paste and onion paste together. Pour over brisket and let marinate overnight in the refrigerator, turning occasionally.

Whether you are smoking or grilling a brisket, this marinade will add a lot of flavor and help tenderize the meat.

Recipe:Heat sesame oil in a small saucepan. Add garlic and cook for 1 minutes. Then add soya sauce, sugar, sake wine (rice wine), Salt, toasted sesame seeds and crushed black pepper cook for 3-4 minutes �ll sugar is dissolved. In the end add minced spring onion. Use this marinate to marinate meat a�er it cools down. The marinade are very important for all prepara�ons especially for meats. As it adds good valuable flavors and good texture to the meats and enhances the meal experience to make it more precious.

This marinade adds a lot of flavor to your beef ribs. The acid from the lemon juice and vinegar will increase tenderness once they are smoked.

Beef Rib Marinade

This is the tradi�onal marinade recipe for Korean bulgogi, which is a marinated steak cut into strips and served up on le�uce leaves or rice. This is also a great marinade for any cut of beef.

Bulgogi Marinade

Recipe:Mix lemon juice, vinegar, olive oil, honey, minced garlic, salt and crushed black pepper in a plas�c or glass bowl. Pour marinate over beef rib rub well and refrigerate for 12 hours.
