1. Choose a focal point for suggestive selling – in this case, we want to emphasize the value of your combo meals. Define success with quantifiable goals, e.g., selling “X” combos per day.

2. Communicate the program. There’s no such thing as too much communication. Tell all employees about the program in advance, especially what you expect them to do and the prizes they could earn.

Execute: Train your crew. Your suggestive selling program may require crew members to do new or different tasks. Make sure they have opportunities to learn the skills needed to achieve your goals.Analyze: Track and evaluate results. If you’ve done a good job of defining specific goals, it will be easy to track your crew’s progress. Monitor and communicate results to your crew throughout the program and emphasize what worked well and lessons learned at the end.

Equipment, Utensils: -Gloves -Large Spoon or Rubber Spatula -#16 Blue Scoop -Chef Knife or Block Chopper -Measuring Cups -Cutting Board -Measuring Spoons -Mixing Bowl Large Batch Procedures: Makes 24 Scoops or 12 Medium Sandwich Portions 1. Thaw 2.5 lb grilled chicken from frozen minimum 24 hours in advance. 2. Place thawed grilled chicken on a cutting board and coarsely chop with chef knife. 3. Place chopped grilled chicken in a mixing bowl and add 1 ¼ cups mayonnaise to bowl. 4. From cooler remove and wash about (2) stalks of celery. Place celery on cutting board and chop into 1/4 x 1/2 size pieces. Add (2) #16 Blue Scoops chopped celery to grilled chicken mix. 5. Add 1 tsp of black pepper to grilled chicken mix. 6. Using a large metal spoon or rubber spatula, mix ingredients thoroughly. 7. Place grilled chicken salad mix in an NSF container. Cover with a lid. Seal tightly, add day dot, date, and initial. Butterscotch Brownie Mix Ingredients Large Batch Small Batch Brownie Box Mix 2 pouches 1 pouch Water 2 cups 1 cup Olive Oil 2 cups 1 cup Liquid Eggs (12) 2 oz ladles (6) 2 oz ladles Butterscotch Chips (1) 11 oz bag (0.7 lb) (1/2) 11 oz bag (0.3 lb)

Equipment, Utensils: -Large bowl or lettuce pan -Measuring cup -Scale -Rubber Spatula or large metal spoon -Bread Pan (spray heavily with pan spray) Large Batch Procedures

1. Combine 2 cups hot water, 2 cups olive pomace oil and (6) 2 oz ladles of liquid eggs in mixing bowl (make sure not to over-portion liquid ingredients).

2. Add 2 pouches of brownie mix and carefully stir ingredients with a spatula or large metal spoon. To get desired brownie mixture fold powder over liquids just till wet. (Heavy stirring creates more of a cake texture which is not desired).

3. Using the spatula or spoon, carefully pour the liquid ingredients into a bread pan well-sprayed with pan spray to ensure brownie mix will not stick to sides or bottom of pan. Do not tap or bang the pan on the table as this will change the brownie texture.

4. Carefully and evenly place (1) 11 oz bag (0.7 lb) of butterscotch chips evenly over entire pan of brownie mix.

5. Place the pan in the oven at normal dessert baking temperature. 6. Oven Baking temperatures:

i. Pre-heat Duke oven to 300° - 325° ii. Pre-heat Supersystem, Nuvu, or Turbofan oven to 325° - 350°

iii. Bake for approximately 45 to 50 minutes 7. After sheet of brownies has cooled, cut 24 individual pieces (4"x4") with a

plastic knife (watch to make corner cuts very clean). 8. Wrap each square in plastic wrap for 24-hour use. Apply label and place the

appropriate Day dot on each brownie before displaying. Place special LTO Butterscotch Brownie sticker on each of the LTO Brownies.

Discard after 72 hours

Garlic Parmesan White Bread Procedures Shelf Life: 24 hours

Equipment, Utensils: Bread Pan NSF Spray Bottle Teaspoon #40 Purple Scoop

Preparation 1. Follow normal white bread preparation procedures for prepping.2. Proof bread normally until about 1/3 to 1/2 of the normal proof.3. Remove from the proofer and use a NSF spray bottle labeled and filled with water. Spray

bread sticks with a water mist until bread sticks look wet.4. Lightly shake dried minced garlic from shaker bottle onto the bread, ensuring little drop-

off on to pan (will use approximately 1 teaspoon).5. Return bread to proofer for the remaining time, ensuring bread achieves the required 3-

inch width and 1.75-inch height (use a Bread Template to measure).6. Once bread is proofed, place in the oven and cook at normal temperature until golden

brown. Place bread on cooling rack until cool, turning once top side is cool.7. Once cooled, bag the bread as normal in designated, labeled bags.9. When using a Panini Press there are two options for the top of the sandwich:

1) Use Sandwich paper on top (ink facing outside) to keep the garlic and parmesan fromsticking to the inside top of the panini plate or

2) Turn the top of the sandwich over so the underside of the bread will be grilled whilethe top side will not get stuck to the plate.

Serving Procedures: 1. Garlic Parmesan Bread can be used in place of any other type of bread for any sandwich

on menu at no additional cost. Do not charge customers extra when serving this bread.2. Suggest new products to customers and always follow marketing and service guidelines.
