OUTREACHThe Voellmecke family could really use your help! Caitlyn is getting ready for round three of chemotherapy, and it’s going to be 10 weeks long! Caitlyn is going to get sick this time.
It would be so wonderful if people could volunteer to make their family a meal during this difficult time! The meals don’t have to be anything spectacular—simple is perfectly fine! It’s just a relief to have one less thing to think about.
Please sign up on Meal Train to make the family a meal: http://www.mealtrain.com/view/?id=ve0DXlou0GA%3d
Please contact Maria Hardy if you are expecting a baby or need support, so you can take advantage of this wonderful outreach service! (Please refer to your membership directory for Maria's contact information.)

Moroccan Quinoa Pilafwww.NourishingMeals.com
Prep time: 15 minutesCook time: 30 minutesServes 6
Ingredients2 to 4 tablespoons extra virgin olive oil1 medium onion, diced4 carrots, sliced into rounds1 cup raw almonds, chopped1/2 cup currants1-1/2 to 2 teaspoons mild curry powder1/2 teaspoon turmeric1/2 teaspoon ground cardamom1 teaspoon Herbamare4 cups chopped kale4 to 5 cups cooked and cooled quinoa (2 cups uncooked)1 small lemon, juiced
Instructions1. Heat a large 12-inch skillet or
large pot over medium heat. Add olive oil.
2. Add the chopped onions. Sauté for 4 to 5 minutes.
3. Add the sliced carrots and sauté for about 10 minutes more.
4. Add the almonds, currants, spices and salt and sauté 5 minutes more.
5. Add the kale. Note: it is best if your kale is still dripping wet from rinsing when adding it to the pot. The extra water will help it to cook. Sauté about 5 minutes or until kale is tender.
6. Then add cooked quinoa and stir together over low heat. Add a few tablespoons water if the pilaf seems dry. An
extra tablespoon of oil will also help prevent the quinoa from sticking to the pan.
7. Remove from heat and add the juice of the lemon.
8. Stir together, taste, and adjust salt and seasonings if needed. You can also add a generous amount of freshly ground black pepper for extra kick.
For variation, try replacing the currants with chopped dried apricots and the quinoa withcooked brown basmati rice.
