A staggering 217 tonnes of textiles are discarded into Hong Kong landfills every day. Redress, a Hong Kong based charity, aims to promote environmental sustainability in Asia’s fashion industry by reducing textile waste, pollution, water and energy consumption. Together we can protect the environment and look good doing it.
For every sale of the Peking Duck pizza we donate $8 to the Chi Heng Foundation. In 2002 Chi Heng responded to the blood donation tragedy in Central China during the 1990’s which resulted in a shocking number of people being infected by HIV and AIDS, leaving hundreds of thousands of children orphaned. Chi Heng places these children with relatives and in local homes, rather than orphanages, and helps them complete their education.

PIZZAIOLOS - OUR HEROES
OBSESSIVE ABOUT PIZZA
PizzaExpress was founded in 1965 by a well-travelled Englishman called Peter Boizot. Returning from a recent trip to Italy he was dismayed that he could not find real Italian pizza anywhere in England. So he imported an oven from Italy and opened the first PizzaExpress in Soho, London.
The secret to the perfect pizza is in the dough. It has to be carefully hand-stretched and tossed in the air to ensure the right consistency. That’s why our Pizzaiolos (pizza chefs) are our heroes. Everyone of them are trained for 12 weeks learning how to toss and stretch the dough just so. Only then do they get to put on one of those stripy black and white shirts. We call it ‘Earning Your Stripes’.
Like the Italians Peter believed that a beautiful pizza has a thin and crispy base, topped with carefully selected, fresh ingredients. This allows the flavours of the ingredients to really be the hero. So that’s how he did it too, and how we still do it today.

完美薄餅的秘訣在麵團。薄餅所用的麵團必須巧妙的以手工拉伸和拋扔來確保其均勻。這就是為什麼我們的薄餅師傅是我們的 英雄。他們之中的每一位都經歷長達12周的訓練，來學習如何 揉捏拉伸麵團。只有這樣他們才可擁有這套間條制服。我們稱之為「贏取屬於你的間條」。
像意大利一樣,Peter相信一個完美的薄餅是薄而脆的。加入精心 挑選的新鮮食材，這樣才會把餅底上的美味食材真正體現在食客 口中。這就是Peter過去的方法，也是我們今天還在延續的做法。
INSPIRED BY ITALYDuring his travels in Italy, Peter loved to watch the Pizzaiolos (pizza chefs) in Italian restaurants tossing the dough high in the air. These Pizzaiolos wore black and white striped shirts. Which is why today, you will find our kitchens are open, and centre-stage. It’s also why our Pizzaiolos wear stripy shirts. Stripes remind us of our origins. Plus, they look good too.

The dough is gently tossed and hand pressed to lock in the right amount of air and moisture. You’ll also see fewer ingredients. That’s intended. using less but only the best ingredients makes for a cleaner taste and enhances rather than overwhelms the main ingredient - the dough. Every pizza we prepare is hand stretched, following Italian tradition. This stretching and tossing is an art form that requires 12 weeks of training to perfect. It allows the pizza to naturally stretch to size to accommodate the ingredients while keeping the dough light, airy and crisp. It’s what makes our pizza taste so good and you can see it happening, right before you, in each of our kitchens.
