Sloping clay. Grapes are chilled at 7-8C and cold-macerated for 24 hours, followed by the Saignée method (Bleeding) without pressing and fermentation in stainless steel tanks at a temperature of 15-16C. Serve with starters, pasta, grilled lamb chops and Greek vegetable dishes cooked with olive oil. Third week of September. Hand harvested. Harsh winters and cool summer nights due to the high altitude, allowing the grapes to ripen slowly and perfect maturation to be reached, as well as aromatic complexity to develop.
