The Movement can count on a network that covers 5 continents and was developed thanks to active collaborations in over 83 countries, with the signing of 151 Memoranda of Understanding with international institutions on the governmental and non-governmental level.

In this publication we have collected the companies that joined our Movement in 2018 and are now part of our International network and Global Cultural Portal www.lifebeyondtourism.org.

The website is a virtual platform that contains and brings together cultural expressions of territories, as well as of the Movements affiliate members the portal’s affiliated members: 12640 members, 360 institutions and 210 companies, 97 events & courses, 75000 fans on our Facebook page contributing all together to knowledge, cultural and commercial exchange and new forms of collaboration.

We believe that we can change our role in the world of tourism.

Wine-making and sale. The company was founded by Gino and Silvano Zanobini in 1944 and is located 50 meters from the Central Market in the San Lorenzo district. It is currently run by their respective sons, Mario and Simone, sommelier, who have inherited a true passion for wine.

The shop has a simple furniture with wooden shelves (the old furniture was destroyed by the Florentine flood of 1966), on which a selection of about 2500 products is displayed, including wines, sparkling wines, olive oils, vinegars, liqueurs and spirits, as well as wines produced directly by the family in the Le Lame estate in San Casciano Val di Pesa, in the Chianti Classico production area.

The wine shop is a lively and varied environment, where tourists and locals can get a taste of the true Florentine lifestyle that is getting lost as time passes, and at the same time, enjoy the passionate and professional advice for a good wine and food pairing.

In addition to retail sales, Fratelli Zanobini also provides wholesale of wine, spirits and distillates. They can satisfy even the most demanding chef or bartender.

The techniques Marcela uses to blend are typical of the traditional cuisine. It is all hand-blended: grounding the cacao beans with a mortar, cutting the Eucalyptus leaf, removing the flower petals, pestle the spices and many more artisan techniques. All that, to maximize quality and freshness of each ingredient and to give you a unique taste.

Tenuta Fornace is an organic farm of 125 hectares entirely planted with vineyards, composed of 5 organic farms in Lombardy and 4 organic farms in Piedmont, all located on different hills in order to be able to produce every single variety of grapes in their most suitable terroir.

The winery in Lombardy is located in the production area of the Oltrepò Pavese in the municipality of Rovescala, a small town where the Rossi family has been producing grapes and wines since 1823. Andrea Rossi is the owner but above

all the agronomist and the oenologist who represents the last generation.

farmhouse built in the heart of a park. This is also an interesting production area where Andrea is the first producer of a medieval grape that was completely lost: the “Timorasso” a white wine of great structure with intense mineral notes, one of the best white wines of Italy that can be aged for several years, always remaining at the highest levels of excellence.

Tenuta Fornace has a large production of Pinot Noir, Pinot Grigio, Barbera Bonarda, Moscato, Riesling and other varieties but is specialized above all in the production of particular reserves of highly structured native red wines and of various vintages. Another peculiarity typical only of this company is a unique Classic Method of only Pinot Noir (Blanc de Noir) that is aged sixty-six months on the lees in the bottle, “66”. The peculiarity is that on the whole farm an environmentally friendly agriculture is practiced respecting the environment and the human being and therefore we do not use genetically

modified plants, nor fertilizers, herbicides or desiccants, nor synthetic pesticides that would enter the pots lymphatics including the bunch and no acaricides and insecticides are used if not natural. In the wines, only native yeasts are used and sulfites are not added.

The Pasticceria Gualtieri was founded in 1933 thanks to an idea by my grandfather Alfredo, a young Florentine pastry chef who at the time was working at Pasticceria Cennini. During this period (we are in the 30s) he met Lina, the young “blonde Cennini”, who worked with his sister Jolanda. Alfredo could not hide his sympathy and admiration for Lina and soon the two got married (year 1932).

Their union was a true marriage of ideas, and in 1933 the two of them founded the Pasticceria Gualtieri together. In 1934 Alfredo and Lina become the parents of Rolando, a beautiful blond child who later became the innovator of Pasticceria Gualtieri.

The old shop had simple furniture with a wooden counter, an old

“Chiccaio”, and it was considered a simple shop of Caramelle and Zuccherini. In 1949 it became a luxury pastry shop, with furniture in the style of the 1940s, Carrara marble floor and a stylish coffee machine.

In difficult times, my grandfather Alfredo worked at night to bake Brioches and Sfogliatelle, to be delivered as a supply to local Florentines. This was when Rolando, just fifteen, put on his white apron and began to work. He had always been there, because at that time children stayed often with their parents in the shop.

Rolando was precise, fast and innovative, and immediately showed a predisposition for a refined production. Rolando, in 1959, married Anna. The legendary 60s are the magical years of economic recovery, and everything improved, grew and evolved. It is in these years that Rolando opened a new laboratory. Here the “Merendine” packages

were produced with modern machinery. I still remember the “Divo Cake” and the “Rosin Cake” all with their beautiful wrapping. They were delicious mini cakes! ... furthermore ... It was the year 1972 when the Gualtieri pastry shop was renewed for the second time (1949-1972).

The place acquired a more modern taste, in typical 70s style, but with a classic, traditional touch. Many parts in walnut wood were embellished with steel elements. The shop was now separated from the laboratory by a large window, which showed customers the stage of pastry production, while at the bar customers enjoyed a fragrant coffee.

From 1972 to 1990 the management was carried out by my parents Rolando and Anna Gualtieri. Only after the 1990 the new generation, Riccardo and Cristina, collected the responsibility of continuing in the family tradition, keeping unchanged the recipes and the quality that have always distinguished Gualtieri until today.

From 1990 to 2013 everything proceeded according to plan, but in May 2013 Riccardo introduced a new Vegan production, (without butter, milk and eggs) which renewed and stimulated a “light without cholesterol and bio-organic” production, and since September 2014 also GLUTEN FREE

Until today, these innovations have given us great satisfaction. Carrying on a just and healthy cause to satisfy the ever more numerous customers who want to feed themselves with a light and healthy pastry. Producers in the surrounding area of Villafrati and Cefalà Diana have entrusted their olives to the Terrano oil mill over the last half a century in order to produce precious extra virgin olive oil.

The passion for agriculture encouraged the Terrano family to invest in the construction of the first oil mill, consisting just of millstones and a press, which opened in 1954. Since then, the constant focus of the company on the needs of farmers, as well as on the natural, agricultural vocation of the nearby environment has guaranteed a continuous growth and development in the business. A few generations later, the Terrano family still owns and takes care of this business dating back to the after-war years.

Production

The Terrano Oil Mill selects top quality olives every year, exclusively from areas in Sicily where trees are cultivated with no use of fertilizers or insecticides.

All production processes are still carried out according to the dictates craft: from selection to washing, from malaxation to decantation, and this with the most modern machineries.

Oil is obtained through cold

extraction and natural decantation, and it is bottled just a short time before sale without any further filtration process. The Terrano oil mill can thus guarantee a product of unique fragrance and organoleptic sensory properties.

The Vivoli ice-cream parlor was founded as Latteria Vivoli back in 1929. The family lived in Pelago, a village located between the plains and the mountains. It was hard times for all the Italians and one of the three brothers, Serafino, decided to try his luck by moving to Florence. He opened the Dairy in via Isola delle Stinche n. 3/r in the popular district of Santa Croce. The area was full of artisan shops of all kinds and the dairy soon became a pleasant meeting point where to have coffee every day and to buy whipped cream on Sundays. The arrival of his brother Raffaello gave a further impulse to the activity and in 1932 he decided to try with ice cream.

Obviously at that time there were no fridges and to make ice cream you had to resort to buying ice, which came from the

Apennines, to be exact from a place called Saltino. In that region were large pools that in winter used to be filled with water that turned into ice because of the cold. The people involved in this work used to use peaks to broke into large blocks the formed ice to be stored immediately in the underground rooms where they were stored until the indicated time to be taken to the city and be sold to whom will need them.

That’s how the Gelatiere work of Raffaello began.

During that time, Saltino’s location was not only famous for its ice production, but it was also a popular summer resort. To escape from the heat of the cities, the people who had the means to do it,

used to go to the Saltino hotels. The Vivoli family did not miss the opportunity to make their gelato known to non-Florentine tourists and it was in 1936 that a branch of the Florentine dairy in Saltino was opened only during the summer period.

Many renovations were carried out in 1941, 1959, 1984, 1997, 2002 and 2017.

In the 60s, things were good for the Vivoli family; the passion for good ice cream, the scruple in the choice of raw materials, the enthusiasm for presenting the finished product given an increasingly popularity to the gelato and the quality of it was really appreciated. However, on November 4, 1966 the activity in Florence was interrupted drastically due to a flood that wiped out most of the city. A new business renovation was carried out in 1967 after the flood.

Piero Vivoli and his family with the usual tenacity, gave their all and after just two weeks they were able to reopen the business. In the 70s, the Vivoli ice cream shop

Students, Italians and foreigners, artists, motorcyclists, whole families, gathered in Vivoli for an ice cream after dinner. The American, English, French and German tour guides, strangers to the Vivoli family, realized this and little by little began to point out the ice cream shop as a place you should visit when you were in the city; first, for the delicious ice cream and second, for the cheerful atmosphere that reigned there.

La Spiga D’Oro is an organic farm in the hills of Foiano della Chiana. It offers a peaceful setting in private parkland and panoramic views of the Tuscan countryside.

Pastry is an art, each product is the result of a long and meticulous process that requires ingenuity, creativity but requires strict precision.

The skill of a great pastry chef is to find the synergy, the space, between the severe mathematics and the whimsical imagination.

We need to find our own canvas on which to affix the signature.The roasting process is the core of the coffee production chain.

The checkpoint between plantation and cup.

Chemistry is at the base of this process: the powerful fire that beats on the combustion chamber generates an explosive heat that affects a firmly the coffee.

The cellular structure changes in sudden ways towards the chasm of carbonization but it is the coffee roaster who must masterly handle this difficult metamorphosis of the grain, which like a butterfly is preparing to take flight and show its beauty.

The farm Valleprima was taken over by Giuseppe Compagnucci in 1953. It is situated in a land of 15 hectares and it was mainly used for producing cereals and forage crops, other than growing beef cattle. In the early 1960s, the company was split among Giuseppe’s three sons: Nello, Pasquale and Italo. Nello is the father of the current owner Artemio Compagnucci, and he was the one who chose to focus the activity of the company toward the wine production and joined the DOCG Chianti in 1968.

In the 1990s, Artemio acquired new lands, making their company grow even further with these new 9 hectares dedicated to wine and oil-making. In that period the company started also cultivating grapes on top of vinification. More than 10 years later, in 2003, the Compagnucci family decided to start selling their products also directly, and this is an activity consolidated in 2012 thanks to their new shop, where they currently make wine tastings and organize visits to see the wine-making process.

The butcher shop was opened in the late 19th century by Mr. Calò and then replaced by Pietro Anzuini and Loreto Massi who have kept the original furnishings: the counter, walls and tables made of marble, the antique chest and an old wooden press to make lard and cracklings, the structures for hanging items and the brass scales of the early 20th century. The original marble sign was restored in 1999.

The street is named after the Nori family, that lived here with other noble families as evidenced by the large heritage of buildings, houses and towers still visible. It is one of the lowest points of the historical center that falls below the level of the Arno, hit by the floods of 1333 and 1966 as mentioned by plaques that testify the level reached by the water.

Shop born in 1980 thanks to Franco Chiesi, who learned the job by working with the Miniatura master Bini for the Vatican museums, and then decided to open his own store.

Arte della Miniatura

During the years the staff increased with the collaborator Stefania Pastacaldi and Franco’s daughter Fulvia Chiesi, who still carry on this antique art by adding new techniques and innovative collaborations with other companies in the field of fashion and private buyers to create unique objects that are all hand-made.

The Miniatura is an antique art born in the medieval age to “enlighten”, or decorate, the codes written on paper by the monks. This art was developed in the 18th century, thanks to the painter Rosalba Carriera, who found out that by water painting on an ivory plate, colors gained a brighter light and felt more natural.

Today, this “Atelier” in Florence preserves the same techniques of those ancient times, creating works in any sort of frame (wood, silver, boxes etc.) and jewels, making unique pieces, impossible to find anywhere else. All the works have a warranty certificate.

Located in what was once the Via del Fosso, adjacent to the back of the sixteenth century church of Niccolò di Bari (called “del Ceppo”), the shop has remained unchanged through the centuries, resisting two floods, on November 3, 1844 and November 4, 1966.

The shop was born when Florence was governed by Cosimo III de ‘Medici. At that time, the barber was also a hairdresser, apothecary, “cava-denti”, phlebotomist, perfumer, hairdresser and make-up artist both for women and men.

This was the era in which the wig was an accessory in increasing evolution, and it was used by nobles, ladies, knights and servants. When the fashion changed, the Bottega started working mostly for theatre and since the first years of the 20th century, also for cinema.

The world’s most important theaters have worked with the Filistrucchis for generations,

and the services of the Bottega are still highly requested.

CONTACTSThe Ricceri company was founded in 1950. Ricceri Giuliano, the founder of this artisanal production of ceramic items, started his activity by reproducing Florentine Renaissance items. All the objects crafted and sold in this bottega are unique, as they are entirely made and decorated by hand.

History of a creative woman

Scagliola technique

The selected subject is sketched on a sheet of slate, marble, or scagliola stone itself, which is then engraved. The incision is filled with a paste called “mistura” (a mix of selenite powder, natural glue and natural pigments). When the mistura is dried, the piece is smoothed by using a pumice stone to reveal the variety of color shades. Then, further engravings are realized to make the embellishment even more detailed. The technique ends with a manual polishing process using wax or a feather-brush.

Curiosity: the selenite naturally comes in scales (“scaglie”) in Italian, that’s why the technique is called “scagliola”. Scagliola is also called “moonstone”.

Florentine mosaic technique

The Florentine mosaic is not created by using tiles; each piece is cut and assembled in order to create a subject by following a design template.

All sections of hard stone and marble are smoothed, placed side by side and glued in such a way to recreate the specific design. Once all sections are assembled together, the entire surface is smoothed and polished.

Curiosity:

During the “Macchiatura” phase of the technique, specific parts of the stone sheets are selected because of their colors and shades, in order to obtain a specific final result for the selected design.

The medieval building dates back to 1335 and for several centuries housed the famous “Madonna of Harpies”, a painting by Andrea del Sarto now belonging to the Uffizi Gallery.

Visit to these historical rooms, which today form the headquarters of the Studio Musivo Lastrucci, is certainly an unforgettable experience.

All mosaics are entirely produced according to the original techniques dating back to the 16th century, which highlight the natural color of every stone.

As in the 16th century, every piece is cut with a simple saw, made of a tree branch bent in the form of a bow with an iron wire stretched from end to end and covered with water and emery powder; the pieces are then glued together with a mixture of virgin wax and pine resin.

The tools used are of ancient origin; progress and technology have not been able to create

suitable substitutes for them, because the original tools were crafted for recreating a sense of beauty that modern technology is unable to reproduce.

The artists personally follow the whole creative process and all mosaics are entirely produced in the studio of the Masters Iacopo and Bruno Lastrucci, situated in Via de’ Macci 9 and annexed to the Galleria Musiva, selling Florentine mosaics of their own production.

The Studio Lastrucci has received in 2010 the special Prize “Bottega Artigiana Fiorentina” (with the patronage of the UNESCO Centre of Florence).

More than 50 years have passed since Giovanni Tirinnanzi opened his factory in Florence with the name of S.T.P. This name was changed in TIRINNANZI S.r.l. starting from January 2003 .

The search for all the beauty provided by the classical Florentine manufacturing tradition, in order to reintroduce it in a more modern way, has been one of the main objectives pursued by the firm throughout these years. I attended goldsmithing courses, but at the moment my attention is focused on different materials. Nature is at the center of my creative process. Thanks to recycling and reuse I want to give voice and space to wild nature.

I live in Rome but the inspiration for my creations comes from numerous trips. As a young girl, I discovered in southern England my passion for being in contact with nature. Growing up I began to observe carefully the colors of the landscapes, such as the many shades of green in Ireland, all the shades of orange in Africa, the gray of northern Europe. Discovering the sub-Saharan Africa gave me even a deeper inspiration and it had a great influence on my works. There I experienced Wild Nature. I spent days watching lions, cheetahs, hyenas, buffaloes, giraffes, elephants and waterbucks, a particular African deer. I was able to admire marvelous birds, to drink from the river

and to prepare their nests on the trees.

I do not create jewels to make the woman who wears them simply more beautiful. Each creation is the bearer of a strong message of respect and revenge of Nature, which at the end of the creative process, joyfully coexists with the human race. We no longer speak of “winners” and “losers”, it is nature that takes up its rightful space.

With her husband Lelio Mazzanti, an expert mechanical technician of the Officine Galileo Galilei of Florence, they decided in 1935 to found their own activity in the processing of feathers and flowers.

During the 1960s, Maurizio, their son, took over the company. In those years the market was changing, so Maurizio decided to focus the production on boas and feather trimmings, expanding their creations from the theater industry to clothing. In 1971 the Mazzanti company expanded, finding new premises and becoming more “industrialized”, without however losing its handicraft nature.

Maurizio’s son, Duccio, has joined the company since 1997, and he is the one that keeps the company’s mastery and know-how alive, adapting to the new demands of the market.

In 2005 the “Nanà Firenze” line was born, from the nickname of grandma Natalina, who

was the representative of the experience and creativity of the Mazzanti company. Every day they realize many feather ornaments for hair that are small works of art.

Mazzanti Piume, always dedicated to the world of fashion, haute couture, fashion shows and weddings, offers the customer also other valuable services, such as supply of natural feathers, advice and design, and finished or semi-finished products. Originally from the first valley of the Arno, the Casentino cloth was known, from the middle age until the nineteenth century, as a rustic and hard cloth made with the wools produced by the sheep of these mountains.

Since it was a very durable cloth, it met the needs of those who were forced to live outdoors or constantly on the road. This fabric was the suit of carters, farmers, peasants and fat townspeople and since most ancient time was traded in Florence and in Prato.

The Casentino, which was a hairy and rough cloth, according to the dictations of the rulers of Tuscany, had a very similar appearance to the fabric of the old Franciscan robe and the color did not deviate too much from it.

In the second half of the nineteenth century, this cloth started being used for making coats for farm animals; they were produced in Stia and traded in Florence, between 1890 and 1915. These coats were manufactured with the same rough wool of the Casentino cloth and were already hard, but to make them “waterproof”, the manufacturers handled them with alum rock, then replaced the robbia, one of the most ancient dye, with some products obtained by synthesis (a type of alizarina solfoconiugate soluble

in water) but the color that came out of it was not exactly a bright red – as they wanted – but a red more tending to orange, probably due to inexperience.

Our strong cloth for coats, so resistant to every inclemency of the season, persuaded the carters that the animals were more protected by wearing them, so people began to sew their own cloak using the orange fabric removed from their horse or mule. That is when the first cloaks made with orange Casentino cloth were born. The ladies, in particular, liked this color so much that the manufacturers dyed in this color all the garments made with the Casentino cloth, which became the image of this valley.

Born from a housewife and a straw hats manufacturer, Giuliacarla inherited from her father the great intellectual and manual skills, which had led the man to receive the gold medal for manual works for his “canoes” (straw headdress) for men.

After the death of her father, the family business – a hats factory – closed. When Giuliacarla was not yet twenty years old, she began an apprenticeship in the “Cappuccini” tailor shop in Florence and, after only five lessons, decided that she would give life to tailoring. She established her own shop at first in the countryside, then in the city, and soon all over the world. As time passed and especially since the 70s, the great foreign markets opened up, in particular the United States, Japan and the Arab countries and Giuliacarla’s activity became one of the most famous stores in the field of world haute couture.

The Nerdi Laboratory is situaded in the “Goldsmith House” placed in a former convent that the Medici family dedicated to craftsmen. It still hosts masters of jewelry with their workshops and it is located near Ponte Vecchio. The Nerdi family creates, transforms and restores every type of jewel, even on commission. They also produce seals and heraldic emblems.

The small road where they are located was founded by Romans in the ancient Florentia. A few meters from what became Ponte Vecchio, starting from a simple wooden walkway that first connected the two banks of the Arno to the narrowest point of the river course.

The goldsmith’s art of Paolo Penko is created in a lab a few steps from Florence’s Duomo from the hands of Paolo Penko, his wife Beatrice, an expert in gemology, and their son Alessandro. Florentine art and architecture inspire Penko’s jewels for every occasion in a unique and unforgettable style. The workshop also makes reproductions of the Forint in gold, gilded bronze and silver.

The road where the shop is located is entitled to an Italian academic, famous for having taken care of the leg of Giuseppe Garibaldi. It houses the Museum of Casa Martelli in the ancient family palace that has maintained its original decors and furnishings in the “country” rooms.

The Shop and workshop is located in Borgo SS. Apostoli, 20red, an ancient road which owes its name to the Church of SS. One of Europe’s oldest shops, the perfumery and spice activity was handled by the Dominican Friars of the Convent of Santa Maria Novella. Cosmetics, perfumes, essences, candles, liqueurs, herbs and herbal teas are made thanks to the traditional processing and the materials collected in the Garden of Santa Maria Novella and exported worldwide.

The Antica Erboristeria San Simone is certainly one of the most ancient shops of Florence: born at the beginning of the 18th century near the Hospital of Santa Maria Nuova, it has sedimented and mixed, in centuries of experience, scientific knowledge of medical care and empirical knowledge of the healing properties of herbs, flowers, and fruits.

The Ancient Herbal and Apothecary San Simone sells various kinds of medicinal plants for herbal teas and preparations can cure most of the disorders caused by the stress of modern life and all kinds of discomfort.

The recipes are strictly secret and follow the precepts of an old monk, a friend of the family that for centuries has managed this workshop. Currently Dr. Fernanda Russo, pharmacist graduated from the University of Modena in Pharmacy specializes in herbal medicine and the current

owner, has taken over the shop to dedicate herself to natural cures. Dr. Fernanda Russo is also Master Perfumer and owner of a Perfumery school.

In fact, the apothecary was a workshop-laboratory where were once prepared and sold medicines based on natural products, managed by the apothecary, alchemical expert and connoisseur of medicinal herbs with which he prepared electuaries, ointments and syrups.
