My annual production is around 9000 bottles, hand-made, hand-bottled. All the wine of My Wyn is unfiltered, labeled by hand (a bit off-centre at times), and with a wax cap instead of a capsule. The nude female on the label symbolises the contents – unadorned and authentic, just as Mother Nature made her. The grapes were crushed together before fermentation and retaining and use of the Viognier tannin in co-fermentation with Shiraz tannins, a decent stabilization and intensity of colour is achieved. Macerated on the skins for almost three weeks in open 500l vats. Skins were pressed in my 40kg basket press and followed by a further 22 months barrel maturation in second fill French oak barrels. In cooler years lower sugar levels in Shiraz helps to achieve this blend as Viognier is normally riper with higher sugar when Shiraz is harvested and in this way it contributes positively with the body and mouthfeel of the blend. Winemakers comments Although full bodied because of thorough extraction of tannins which should contribute to longevity the wine is fruity and elegant with soft silky tannin. To enjoy: Grilled meat, but think you are best to decide on this, focusing in your own cuisine.
