Both boiled sweets and gummy candies typically have high acidity and low moisture, which allow for a variety of vibrant hues. Hard candies and lollies are boiled to high temperatures so colors need to have high heat stability, like plain caramels, annatto, Amaize™ red, turmeric, or Emulsitech® beta-car-otene and paprika.

When making aerated confections, such as marshmallows or fruit chews, the optimal colors should be water-soluble to keep the foam intact. These in-clude red beet, spirulina, or anthocyanins.

For panned confections, there are many color options available since the panning syrup does not have to be boiled to high temperatures. Since the syrup is usually at a higher pH than gummies or lollies, anthocyanins will achieve more purple tones. To get bright reds for cherry and raspberry fla-vors, try red beet or carmine, or contact us to get a custom blend to match a specific flavor or label!

Natural colors are great for confections! Generally, ingredients added to help preserve candies, like citric acid, will also help to protect natural colors. Natural colors perform best in confections when added during the cooling or forming stage to preserve their vibrancy.

Creating the ideal color to convey a particular flavor is critical to the success of confectionery products. Most of the time, a single color doesn’t work as well as a combination of two or more colors to achieve the perfect shade. Using a simple example - the bright yellow you can achieve with turmeric may work well for a lemon flavor in a boiled sweet, but if you need to differentiate a lemon sweet from a pineapple sweet, adding a bit of class I caramel or a Naturbrown® ingredient makes all the difference.
