Most of the 1,300 Quebec firms in the food and beverage manufacturing field fall into this category. As a development tool for the food in- dustry, research activity will focus on new and improved processes of new products. Agricultural products in- volved are milk, meats, cereal grains, oilseeds, fruits and vegetables. Flavours and aromas as food com- ponents will be other areas of study. There will also be scientific expertise and equipment to deal with such bio- technology subjets as modification of bacterial cells and use of enzymes. The centre will have the latest in equipment and technology including 30 controlled-atmosphere rooms. Four pilot plants, including one for dairy pro- ducts, will simulate manufacturing conditions. An industrial engineering laboratory will have the capacity to design and manufacture equipment prototypes useful to the food industry. New Publications "Food Safety - it's all in your hands" - revised publication Food borne illness affects half a million Canadians each year. Most could have been prevented with proper handling of food. The revised booklet from Health and Welfare Canada gives eight examples of how food poisoning can happen and how it can be prevented. A pull-out poster called "Recipe for safe food handling" is in the center of the publication. It is ideal to mount on a refrigerator, cupboard or bulletin board.
