Terry Martin of M&J SeafoodCrowned NFF British Fish Craft Champion 2011Sunday the 28th of August 2011 was the date that Britain’s top fishmongers competed for the coveted title of British Fish CraftChampion. Fifty competitors travelled to Cardiff Bay from all over the UK to go head to head in eleven separate competitions, allsponsored by some of the fish industries big names. Competition was fierce this year with only a few points separating the top six.
After 8 hours of continuous competitions, Terry Martin of M&J Seafood took the coveted title of NFF British Fish Craft Champion for the second time,
having won in 2009. He was rewarded with the NFF Ernest Cox Shield, an engraved bowl from sponsors Young’s, an embroidered jacket, prize money
and a Fishmongers’ Company engraved tankard. Hot on his heels and narrowly missing the title was his colleague Gopal Nandy who was winner of
the Cardiff Harbour Authority Salmon Challenge. Gopal was placed 3rd in the Scottish Salmon Trophy, 2nd in the Trafalgar Fisheries Trophy, 3rd in
Snowden & Co and 3rd in the M&J Seafood Cod Challenge.

NFF British Fish Craft Championships™ 2011 continued
Last year’s Champion, Nick Wood, took two titles this year - National Poultry Champion and Quayside
Shellfish Champion and Mike Crates also of E Ashton Fishmongers picking up the title of Marine
Harvest Halibut Champion. Wm Morrison took a clean sweep in the Collage Champion with Grahame
King 4th, Alison Cowan 3rd, Andy Davies 2nd and Carly Taylor a well deserved Collage Champion
2011. The ever popular Trafalgar Fisheries Trophy was won by Richard Lucas of J Sainsbury who
was also the winner of the Billingsgate Fishmongers trophy.
Newcomer, David Preest of Severn and Wye Smokery became Snowden & Co Fishmongers
Champion. Presentations for The Fish Craft Challenge sponsored by Morrisons were made by Vera
Foreman of Morrison Plc with the overall Fish Craft Challenge winner being Jeff Moreland of Tesco.
Joey Morgan of E Ashton fishmongers was presented with the Charlie Caisey Award for the most
promising newcomer not to reach the final of the Fish Craft Challenge. The Brian Bunkell Award was
presented to George Hooper as the competitor with the highest score in the Fish Craft Challenge and
aged under 21 years. E. Ashton of Cardiff sponsored the Portion Cut trophy with 1st place going to
Jon Bernasconi of Wm Morrison.
This year saw two of the major supermarkets Morrisons and Tesco as sponsors as well as Young’s,
Marine Harvest, Snowden & Co, M & J Seafood, Quayside Transport, Scottish Salmon Producers
Organisation, Billingsgate Fish Merchants’ Association, Grimsby Fish Market, Grimsby Fish
Merchants’ Association, Fishmongers’ Company, Poulters’ Company, New England Seafood
International, Trafalgar Fisheries, Fal Fish, Trelawney and many more. The Federation is hugely
grateful for the continued support of all its sponsors.
Amongst the weekend’s most popular competitions were the Marine Harvest Halibut, The Scottish
Salmon Championship and the Fish Craft Challenge sponsored by Morrisons. The latter attracting
many new faces.
The brand new competition for 2011, The Sustainability Challenge sponsored by Tesco attracted
great interest and competitors were required to perform five tasks using sustainably sourced species.
4th place was awarded to David Preest of Severn & Wye smoker, 3rd place to Richard Lucas of
J Sainsbury, 2nd place to Mike Crates of E Ashton fishmongers and the Tesco Sustainability
Challenge Champion was Jonny Jenkins of Vin Sullivan Foods.
The Golden Jubilee Perpetual Challenge Cup was presented by Nikki Hawkins of Seafish to Tom Dye
of Wm Morrison who caught the eye of the judges in the Fish Craft Challenge. The Trafalgar Challenge
Cup - presented to the competitor with the highest number of points in any competition was
awarded to Mike Crates of E. Ashton Fishmongers.
NFF President, Gary Hooper, thanked everyone who had helped to make the Championships such
an enormous success, the event sponsors, the Welsh Assembly Government, Cardiff Council,
Mr Paul Male of Snowden & Co and his team for their invaluable assistance. A huge thank you to all
the competitors and judges and the entire crew that turn up and work solidly for the whole weekend.
Special thanks go to M.C. Mr Alun Tandy who helped to promote the benefits of sustainably sourced
fish and whose commentary raises the event to another level. Alun was also ably supported by
Mr Ralph Kellythorn who was timekeeper. The team were also delighted to welcome representatives
from the Championship sponsors who were also available to present their prizes, Mr Brian Coombe,
immediate Past Master of the Poulters’ Company, David Hilton of Quayside Distribution, Ken Hughes
of the Scottish Salmon Producers Organisation. Also attending were Dave Savage of Trafalgar
Fisheries, Gary Furlong and Lisa McCaig from Marine Harvest, A Farrell and Kris Comerford of Tesco,
Nikki Hawkins of Seafish and Vera Foreman of Wm Morrison. Other sponsors representatives

Kate Carlyle from Newport won overthe judges with her sea bream withchilli, garlic and tomato.In the run-up to this weekend’sCardiff Harbour Festival (August 27 –29), the competition to find a prizecatch fish dish was launched byCardiff Harbour Authority inpartnership with Jamie’s Italian in thecity centre.
The restaurant was looking for disheswith an Italian flavour, in line with theirexisting menu, and with Jamie Oliverleading a crusade against theoceans’ endangered species theywanted recipes that do not involveSalmon, Prawns, Cod, Haddock andTuna.Kate’s prize included dinner for two atJamie’s Italian where she will be ableto try out the chef’s take on her ownrecipe, a copy of Jamie Oliver’s latestbook and an overnight stay at FutureInns, Cardiff Bay. “Kate’s dish was demonstrated atthe festival on the Saturday - it was agreat chance for other budding chefsto find out what gave her recipe allthe right ingredients for success.“Offering a prize of this calibreenhances the reputation of theCardiff Harbour Festival. I personallywould like to thank Jamie's Italianand The Federation of Fishmongersfor supporting the inaugural 'Find aFish Dish' competition.”

Cardiff Harbour Festivaland NFF Fish DemonstrationsDuring the lead up to the Cardiff Harbour Festival, a prize fish dish was launchedby Cardiff Harbour Authority in partnership with Jamie’s Italian Restaurant inCardiff in the city centre.
Competitors were asked not to involve salmon, prawns, cod, haddock or tuna to sit with
Jamie’s crusade against the ocean’s endangered species. Three recipes were shortlisted and
after sampling the dishes, a team of judges chose the winning recipe. The winning recipe - a
Sea Bream with chilli, garlic and tomato, by Kate Carlyle of Newport was demonstrated at the
NFF marquee by Mike Caplan of the Fig Tree Restaurant in nearby Penarth the first day of the
Harbour Festival. The Gilt Head Sea Bream was filleted by local fishmonger Mike Crates before
cooking. The winning recipe was on the specials menu
in the Cardiff restaurant. Mike Caplan continued with his
cooking demonstrations on the Sunday and Monday of
the Harbour Festival and these proved to be popular
new demonstrations which the crowd enjoyed very
much. It is hoped that this inaugural ‘Find a Fish Dish’
competition will become a regular feature.
Not forgetting there was the usual stunning display of
fish on the counter outside of the marquee for
members of the public to see and purchase. Grateful
thanks go to Sue and Ducan Lucas for managing this
on the Saturday and Charlotte Lyons and Carrie Black
who also helped to clear all the competition fish on
the Sunday and Monday. They did a sterling job and
enjoyed every minute.
Also outside of the marquee were staff from the
Scottish Salmon Company offering smoked salmon
tasters to members of the public. Demonstrations were also provided on
Saturday to huge crowds, some of whom stayed for hours watching and learning.
Demonstators included Duncan Lucas, Dave Bennett, Terry Martin, Mike Crates, Neil Poxon,
Ken Welch and not forgetting our very own President, Gary Hooper and his son George.
Grateful thanks must go to the backroom team headed up by Rob Kewn who keep the supply
of fish coming for the demonstrations.
Thousands of people were drawn to the waterfront for a bank holiday weekend packed full of
fun and family entertainment. The Harbour Festival served up its annual portion of Fish and
Ships to amuse and entertain and included Tall ships, sea shanty singers, a continental market,
fairground rides and much, much more.
Welsh National OysterOpening Championships
Following more fish demonstrations to packed audiences, the Welsh OysterOpening Championships took place at midday on Monday 30th August.Competitors were whittled down to 5 finalists, Terry Martin and Andrew Barker ofM&J, Nick Wood and Mike Crates of E Ashton and Lewis John of Loch Fyne.
Competitors were asked to open 24 oysters in as fast a time as possible. As well as speed, the
judges were looking for a clean finish with no shell fragments. This very entertaining competiton
resulted in Nick Wood of E Ashton being judged The Welsh National Oyster Opening Champion
2011 with a time of 2:59, with 15 seconds added as penalties making a very fast time of 3:14
the runner up was Andrew Barker of M & J Seafood with a time of 3:59 with only 5 seconds of
penalty so an overall time of 4:04 in his first ever entry to the competition.

Happy Birthday to Tony Roome!Past President Tony Roome of Derby celebrated his 80th birthday whilst on a salmonfishing trip to Scotland. Tony and his wife Dora and their family have been coming toAberdeenshire for well over 20 years and have many friends within the area.
His birthday dinner along with friends and family, was held in The Fife Arms Hotel in Turriff, a small
market town close to the River Deveron where Tony was spending his time chasing ‘The King of Fish’.
It’s not known how successful he was!
The birthday dinner on the other hand was a great success as Ken and Cath Watmough as guests can
confirm, it was a wonderful evening.
Our Federation conveys best wishes to Tony on reaching his 80th milestone.
Dear Federation Member,
The human brain must be the most sophisticated computer system ever, with a marvellous ability to store memories, which can be recalled at any time. That’s if you’renot at the same age as me, when to recall events from my memory takes a little longerthan it used to. I’m sure many readers will endorse the inability to have ‘total recall’ asageing takes place.
This was not the case recently, when at the August Bank Holiday weekend our group ofScots made its way for a memorable weekend at the Cardiff Bay Festival. Our groupwould be actively involved along with others as part of the judging, demonstrating andhospitality team at The British Fish Craft Championships, our Federation’s major eventof the year. In the past this event took place at Hays Galleria in London before movingto Cardiff in 2009. The Federation has taken to the new venue like the proverbial‘Ducks to Water’, previous doubts as to the suitability of the new venue are nowunfounded, with an ideal site on The Roal Dahl Plaas which is the main route to the Bay.No matter where we are, our Federation with the comprehensive program of professional demonstrations in fish and shellfish skills, continue to be a popular ‘crowdpulling’ event, and of course this year was no exception. The demonstrations took placeall through Saturday and Monday, each demonstration being a magnet of interest forthe public, standing room only in some cases. The continuity was ably conducted by ouroutstanding friend Alan Tandy who does a superb job on our behalf.It’s a well known fact that the general public enjoy watching a skilled person at work,whether it be a blacksmith, woodcarver, butcher or a fishmonger, they just love to seehow the raw material is changed to something useful. In the case of the fishmonger theycan see what eventually lands up on the dinner plate.We are so fortunate as a Federation having such a reserve of skilled members, so willingand dedicated to give of their time to convey their passion for such a lovely product. Welldone to them.
Our British Fish Craft Championships took place on August Bank Holiday Sunday andwas a great success, and all credit must go to the work of our Craftmanship committee,and to the dedicated team of young people who energetically cleared and prepared thecompetition area between each competition task, they were great. Also, all the fish was sold on by Charlotte and her gifted sales team who did a wonderful job.Apart from the competition the weekend is a good time to have some social enjoyment, a time to meet up with some old friends. Just ask the Scots, they know how to enjoythemselves, usually when somebody else is buying the drinks I hear you say!! Not true!! Anyway we’ll be back next year: why don’t you come and join us, we’ll havesome fun I’m sure!

Single Use Carrier Bags Charge(Wales) Regulations 2010The new single use carrier bags charge legislation took effect in Wales on 1 October 2011.From this day onwards single use carrier bags will no longer be given away for free whenpeople buy goods from a seller.
There will be a minimum charge of 5p on all single use carrier bags. This legislation is explained in full
and resources to help business are available at www.carrierbagchargewales.gov.uk Some single use
carrier bags are exempt from the requirement to charge.
Exemptions
The obligation to charge does not apply to the supply of single use carrier bags in five circumstances:-
a) Where the bag is one that meets certain technical specifications concerning its size and the
material from which it is made; these are small bags that can always be supplied free of charge.
b) Where the bag is one that meets certain size specifications and it is used solely to contain
packaged uncooked meat, poultry or fish;
c) Where the bag is one that is used to contain certain items specified in the Regulations
(regardless of the bag’s technical specifications);
d) Where the bag is a mail order dispatch or courier bag (regardless of the bag’s technical specifications;
e) Where the bag is a gusseted liner used to line or cover boxes, crates or other containers
of a similar nature.
Certain small bags that can always be supplied free of charge
There are three types of single use carrier bag that can always be supplied free of charge.These bags are described in the regulations.

A single use carrier bag made of any material which meets the size specifications set out inthe next paragraph can be supplied free of charge if it is used solely to contain:
a) packaged uncooked fish or fish products;
b) packaged uncooked meat or meat products;
c) packaged uncooked poultry or poultry products
The size specifications are:
(a) maximum width of 205mm;
(b) maximum height of 458mm – inclusive of any handles;
(c) maximum gusset width of 125mm (if any)
This means that bags of any size below the maximum width/height/gusset specifications can also be
supplied free of charge as long as they are used solely to contain the goods specified above. It does not
matter whether the bag in question is the smallest size into which the goods will fit; what matters is that
the bag is used to contain the goods in question.

NFF Presidenton the Lunar BowAs a guest of the RNMDSF, the President wastaken on a guided tour of the Lunar Bow, a stateof the art Pelagic Trawler.
Guests listened to a presentation by Ian Gatt, Chief
Executive of the Scottish Pelagic Fishermen’s
Association (SPFA), which covered topics including
the management of Mackerel Fisheries and the International Agreements
and quotas. The SPFA were particularly unhappy that it would appear that the Faroe Islands and Iceland
who were not part of the EU would make up their own quotas which are basically double the quota
that the SPFA believe to be right and fair. The SPFA also challenged representatives that were present
from NGOs about their lack of support. Discussion also took place on MSC status of the fisheries
and discards.

Changes to theApproval ofEstablishmentson Change ofFood or FeedBusinessOperator (FBO)
The Food Standards Agencyhave announced importantchanges to the approval processfor food and feed establishmentsthat require approval under EUHygiene Legislation which willtake effect on 31st January2012.
Approval is required for particular
food establishments that prepare
and handle products of animal origin
– for example meat, minced meat,
live bivalve molluscs, fishery products,
raw milk and dairy products.
The large majority of UK establishments
(such as retailers and caterers) do
not require approval.
The Agency will be contacting relevant
businesses and enforcement
authorities.

Vice President Jonathan AdamsVisits the FaroesIn early June, Severn and Wye Smokery invited several chefs, food writers and broadcast-ers together with representatives of the fish industry on a trip to the Faroes to see first-handwhat Severn and Wye believed to be the leaders in Salmon farming.
One thing that cannot be denied is that mistakes were made by salmon farmers in the early days but a
radical rethink about farming practises and effects of farming on the environment has meant that the
Gregorson Brothers who own the Luna Salmon Fishery on the Faroes are now regarded as the standard
bearers for salmon farming on the islands. The cold waters, low stocking densities, demand feeding and
a ban on antibiotics have all resulted in the best food conversion rates in the industry. Every process from
the egg hatching to the harvest has the brothers full attention. The most important thing to them is that
the fish are stress free and nowhere is this more important than the harvest.
Update on the National Food HygieneRating SchemeFor England, Wales & Northern Ireland
The Food Standards Agenc has set out measures to support the adoption by all remaininglocal authorities in England and Northern Ireland of the national Food Hygiene RatingScheme (FHRS).
The measures are:
• A new ‘Priorities Fund’ to cover the costs which local authorities may face after adopting the scheme
of unexpectedly high levels of re-visit requests from food businesses. This is in addition to the
existing grant funding programme for pre-launch work.
• A partnership between the FSA and Transparency Data – the company currently running the
scoresonthedoors.org.uk website – to enhance the FHRS IT platform and facilitate the integration
of date from the two schemes.
• An ‘FHRS pledge’ for food businesses that have outlets across the country to give their support
to the FHRS.
The continued existence of different schemes in different parts of the country does not help consumers
or businesses so the FSA is launching the FHRS pledge to encourage businesses with outlets across
the country to give their support to the scheme.
