    This question arises often when I am out to dinner with a group

    of people. I am asked to pick a wine for the table that will satisfy

    everyone. This is almost impossible, not only because each person

    has their own preference for wine, but each will order his or her

    own dinner independent of the others, which will invariably result

    in a wide variety of foods on the table. The problem therefore

    becomes how to satisfy as many people as possible with one wine

    selection.

    Depending on the number of people at the table, one way to

    approach the task is to order both a white and a red wine. This is

    always my first choice when dining with more four or more people.

    The wines I like to select on these occasions are light-bodied whites

    and medium-bodied reds. For white, I find Sauvignon Blanc to be

    very versatile with almost all fish, vegetarian and chicken dishes. This

    wine typically has a crisp, refreshing feel and doesnt dominate food

    flavors. People who say they will only drink white wines will pretty

    much always feel comfortable with a Sauvignon Blanc.With the red wine selection for a group there are two roads I can

    take, depending on the style of restaurant were in. If meat and gamedishes and other big, flavorful meals dominate the menu, I like to

    make the red choice a blended wine. This could be one of manydifferent blends that are popular today, such as Cabernet Sauvigno

    combined with Merlot, Cabernet with Shiraz, or Cabernet with

    Sangiovese. These wines combine richness of flavor with a smoothness that will appeal to many red wine drinkers. If, however, the

    menu is mostly middle-of-the-road style with pastas, chicken, lighsauces and salads, I will usually select a Pinot Noir. This wine is

    probably the most versatile of all reds, and will usually appeal to b

    red and white wine lovers. When dining in French restaurants, yocan call out for a red Burgundy and know you will get a Pinot Noi

    finesse on to us.

    a better job storing their wines at the correct temperature).

    Ride White, 2008 Russian River Syrah, 2007 Napa Valley Cabernet, 2008

    Napa is world-known for its winemakers,

    who have managed through several genera-tions hard work and research to produce still,

    dry wines of an astounding array of flavor

    profiles. However, almost no one has turnedthose techniques to producing the same kind

    of range of sweet wines except for the Pragerfamily, that is, who have used that same wine-

    makers eye for detail but applied it in a

    different fashion, honoring the tradition oflong-lived, long-aging, always-representa-

    tive-of-the-vintage Port wines. And not just

    with one or two. How about six, ranging fromdry to off-dry to sweet.

    Ask anyone you come into contact withabout sweet wines in Napa, and almost to a

    person, theyll point you to the three genera-tions of Jim Pragers family who have beenmaking wine in St. Helena for more than three

    decades. Jim himself was raised in Orange

    County back when it was obvious how agri-culture produced its eponymous name. He

    and wife Imogene first found the Napa Valleywhen a wine and food society to which they

    belonged visited in 1974. They fell in love

    with the Valley and relocated, harvesting andthen crushing their first grapes in 1979 in an

    1865-built carriage house on their property in

    south St. Helena. Their first releases were

    Cabernet, Chardonnay, Zinfandel, and theNoble Companion Cabernet Port all 120

    cases of it.

    Over the next three decades, the produc-tion has increased commensurate with the

    Pragers expansion of their offerings such thatnow available are three table wines and six

    Ports, presenting the full array of whats

    possible with this winemaking philosophy,though each is no more than about eight

    hundred cases of production. The long-aging

    Royal Escort Port (and, only released in specialyears, Royal Escort Vintage Port) is made from

    Petite Sirah; and the Noble Companion TawnyPort, aged in oak for a decade or more, is

    ready for drinking right away. The Tomas Port

    is made from the Portuguese varietals Tinto

    Cao, Touriga and Tinta Roriz, which arealmost never seen in California. Going even

    further into rare production territory, the AriaWhite Port is made from Chardonnay, and the

    Alyssa Golden Dry Port you read that right is made from the white Verdelho grape. The

    still wines are equally out of the ordinary:

    Petite Sirah and two late-harvest Rieslings, thefruity and crisp Sweet Claire and the lightly

    fortified Madeline. Also available are three

    vinegars Balsamic, Cabernet and Port chocolate Port drizzle, Port-filled chocolates

    and Imogenes sweet and savory carameli

    walnuts and pecans. If it can be done withfortification process or if it can incorporate

    end product, youll probably only find it at

    Winery and Port Works. The goal is alwayshow how Port goes with anything.

    winerys efforts. The tasting room

    is rustic but casual, reflective of an

    older, more agricultural sense of

    the Valley. As you might imagine,

    discussion of the Port-making

    process often takes place, but in

    a truly relaxed manner befitting

    a long-successful family-runwinery. I dont want to give every-

    thing away, but several totally

    unique tasting room displays

    await visitors, as does explanation

    of the fortification process and

    how and why the Pragers

    produce the least sweet Ports in

    California. Believe it or not, its

    possible to produce dry and off-

    dry Ports, but you have to visit

    the winery to find out the secrets

    of this process from the makersthemselves.

    Its probably not a surprise by

    now, but the Pragers also make

    available something else fairly

    unique: they provide custom

    etched and sand-carved bottles of

    their releases. There are often a

    few of these kinds of items in

    different places around the Valley,

    but almost no one else can

    provide them to order for any

    special event or occasion. Its justanother side-benefit of working

    with a family business, where

    even single-bottle requests can

    easily be handled. In the same

    vein, for those wanting an inner-

    circle experience, the Prager Port

    Club offers access to everything

    the winery makes at a discount,

    biannual wine shipments without

    an enrollment fee, and invitations

    to exclusive events at the winery,

    like the annual lobster feed. Itsimpressive to see what one family

    has produced through their

    combined efforts, and its a privi-

    lege to have access the products

    of their labors. Come up to Prager

    Winery and Port Works in St.

    Helena to see for yourself. As they

    say around the winery, Step off

    the beaten path. Trust me, you

    wont be sorry when you do.

    SEARED AHI TUNA WITH CALABRIAN CHILI AIOLI

    by Khambay Khamsyvoravong, HKG Tasting Room Chef de Cuisine

    Calabrian Chili Aioli

    1 egg yolk Calabrian chilis to taste

    1 egg 10 oz. canola oil

    lemon, juiced Salt, to taste

    In a blender, add egg yolk, egg, lemon juice and Calabrian chili (these little

    peppers pack a lot of heat, so add as much as you can stand). Blend until fairly

    smooth. While the blender is on, drizzle in canola oil and add salt to taste.

    Seared Ahi Tuna with Summer Squash

    1 zucchini 1 pound ahi tuna

    1 yellow summer squash Pepper, to taste 1 tablespoon butter Salt, to taste

    Thinly slice summer squash. Heat a saut pan until it is hot. Add butter and

    summer squash, season with salt and pepper. Quickly saut squash for about

    30 seconds and transfer to plate as the base for the tuna.

    With the same saut pan, heat until it is hot. Season tuna with salt & pepper

    to taste. Sear tuna until you get a nice browning on each side (about 15

    seconds on each side). Transfer to a cutting board and slice into thick slices

    Place on top of sauted summer squash and serve with Calabrian chili aioli.

    Estate Pinot Ros is perfect. Ros wine is

    light, fun and exciting to drink, and I love

    opening the bottle with that distinct soft red

    hue that has everyone wondering what you

    are drinking.

    This recipe is from Khambay Khamsyvo-

    ravong, HKG Estate Tasting Room Chef de

    Cuisine who knows how to perfectly pair

    foods with the HKG Estate varietals. HKG

    Estate wines are the ultra-premium wines

    produced by Hop Kiln Winery from all

    estate grown grapes in the Russian River

    Valley. The 2009 HKG Estate Pinot Ros is

    a perfect match for the seared tuna as this

    dry style Ros highlights the Calabrian chili

    spice while the fattiness of the dish keeps

    the wines tannins in check. Slightly sweet

    with a hint of strawberry and tropical guava

    characters, the Ros pairs well with the

    flavors of ripe summer squash. This seared

    tuna recipe is quick, easy and so tasty. The

    squash brought nice vibrant colors to the

    plate but also made the dish feel light so it

    is ideal for summer dining while the wine

    retains its bright acidity and finishes crisp,

    dry and refreshing.

    Summer Movie Series Benefits Napa Valley Family Centers

    Sterling Vineyards, the landmark Calistoga winery, announces the

    ninth annual Sterling Silver Screen Series. Once again, through the

    generosity of NBC Universal, the 2011 summer season of movies in

    the vineyards will feature classic and neo-classic films in a range ofgenres from the Universal archives. All proceeds from the summer

    screenings will benefit two local non profits; the Calistoga Family

    Center and the St. Helena Family Centers. To date, the Sterling

    Silver Screen program has raised more than $120,000 for local char-

    ities.

    The next Sterling Silver Screenings features the Marx Brothers in

    Monkey Business on Saturday, August 20. Made in 1931, this classic

    comic favorite was the boys first Hollywood feature and stars

    Groucho, Zeppo, Harpo and Chico as stowaways on an ocean liner.

    Hilarious antics ensue as they encounter gangsters and true love while

    avoiding capture by the crew.

    Seabiscuit, on Saturday, September 10, is the true story of the

    Depression-era racehorse that, despite his small stature and a slight

    limp, became an unlikely track champion and symbol of hope for a

    generation of Americans. Seabiscuit united his owner, trainer, jockey

    and an entire nation and proved that heart and tenacity can triumph

    against all odds.

    The season concludes on Saturday, October 1 with Saboteur, a

    1942 Hitchcock thriller. When sabotage destroys part of an aircraft

    factory, plant worker Barry Kane is accused of the crime. In an

    attempt to clear his name, he sets out to track down the man he

    believes to be the actual saboteur. The two men confront each other

    in a memorable showdown atop the Statue of Liberty. A precursor toNorth by Northwest and The Fugitive, the Saboteur screenplay was

    written by the legendary Dorothy Parker.

    In 1969, Sonoma County issued a winery permit to two enthusi-astic entrepreneurs in pursuit of Pinot and Chardonnay. It was the first

    time in almost 20 years that Sonoma issued a winery permit. SonomaCounty picked wisely.

    Norman deLeuze and partner Gino Zepponi the ZD in ZD

    Wines were two aerospace engineers with a penchant for makingBurgundian varietals of Pinot Noir and Chardonnay. This new winery

    permit would alter the lives of both men and their families forever.

    Pooling resources, Norman, Gino and Rosa Lee (Normans wife)rented a small farm building in the Carneros region. They purchased

    wine grapes, some 50-gallon oak barrels and a redwood vat. Three

    hundred cases of Pinot Noir and a small batch of White Riesling repre-sented ZDs first commercial vintage in 1969. The rest, they say, is

    history.ZD Wines is still a family run operation; Julie, Brett and Robert

    deLeuze have taken the torch from their parents and have furthergrown this premiere Napa Valley winery.

    At ZD Wines, a commitment to family is equal to their commitment

    to sustainably grown and produced wines. Before there was green oreco or organic, there were Norman and Gino out in their vineyards

    in what is now known as Carneros. This was 1969 and they were still

    hobbyists. But these visionaries shared a passion for the earth andhealthy farming. Today, some 40 years later, ZD estate vines are still

    farmed 100% organically. Their winery is 100% solar run and theyrecycle all of their wastewater with an aerobic digester and a reclama-

    tion system. (Pause for applause.)

    Family and responsible winemaking are vital to the ZD Winesfamily as is giving back to the Napa Valley community that has

    nurtured and sustained their dream for so many years.

    Which is why this month on Saturday, August 20th from noon to4 p.m., ZD Wines will be hosting the ZD Summer Wine Celebration

    specifically benefiting the Napa Boys & Girls Club Teen Center.ZD family and staff will be pairing current and new releases with

    foods cooked personally by the deLeuze family. Founder and march Rosa Lee, uncles and aunts, children as well as grandchildren

    already paired off and wickedly competitive about which foods wil

    the most popular. You be the judge! Already on the lineup will be

    fresh Ceviche with the Rosa Lee Pinot Grigio, Mushroom Crostini w

    Pinot Noir, and Dry Rubbed Grilled Baby Back Ribs paired withBarbera And thats just the start of it.

    Live music will be provided by Marketing Director Scott Fergu

    and his band, The Staves. They will be performing groovy rock

    roll, says Scott with a grin.

    Entirely 100% of all ticket sales and silent auction proceeds wil

    to the Napa Boys & Girls Club Teen Center. The Center has bee

    dear cause for the ZD Wines family. Granddaughter and ZD CalifoSales representative, Jill deLeuze was their Program Director in 2

    (before joining the family business) and felt first hand the heartach

    program planning for at-risk youth with little or no funds. So in 20

    the family contributed $100,000 to overhaul the basement T

    Center on Pueblo Avenue. The funds purchased everything from n

    floors and walls to furniture, computers, electronics and even heasnacks delivered fresh every Monday by a ZD family member.

    This years event will allow ZD Wines to continue their support

    funding of the Teen Center. Tickets are $25 in advance and $30 at

    door.

    In terms of vino, do not miss two wines at this Celebration!

    First is the 2010 Rosa Lee Pinot Grigio ($22). Produced from

    lusciously grayish-pink clusters grown here in Carneros, this PGrigio is mouth-watering with ripe peach, apricot, honeysuckle

    pineapple. Perfect for summer.

    Second is the 2009 Rosa Lee Barbera ($25). Harvested from

    Twin Creeks Vineyard in Wooden Valley, this Napa Valley Barb

    expresses supple tannins and bright acidity. Bold flavors of red

    fruit and hints of cedar, spice and vanilla will pair well with any por tomato sauce dish.

    Both wines do not see any distribution. The ZD Pinot Grigio

    Search for Oldest Charles KrugWine Bottle Announced

    Bottle to be part of history exhibit at Napa Valleys first winery

    In time for the 150th anniversary of Napa Valleys first winery, thePeter Mondavi Sr. Family announces a search for the oldest CharlesKrug Winery bottle in existence. Founded in 1861, Charles Krug

    Winery is the birthplace of the Napa Valley wine industry and has

    been in the Peter Mondavi Family for nearly 70 of its 150 years.Peter Mondavi Jr. puts his family winerys history in perspective:

    Charles Krug was founded the year President Lincoln was inaugu-rated, and the year the Civil War began. At the time, Napa Valley was

    essentially the Wild West. Charles Krug first planted Mission grapes

    on his St. Helena estate but he soon replanted to European varietalswhich he felt would make better wine. Wines made at the time would

    have likely included claret, sherry, Madeira, sweet Tokay and Riesling,

    the latter hugely popular with many of the German immigrant-winemakers in Napa Valley in the late 1800s.

    Readers are encouraged to scour their wine cabinets, cellars, closetsand caves for Charles Krug wine bottles, empty or full, dating either

    from pre-Prohibition or the Peter Mondavi Family era which began

    with the 1944 vintage. Bottles deemed contenders will be authenti-cated by experts in the wine department of Sothebys auction house in

    New York. The Peter Mondavi Family may purchase the winningbottle for display at the winery.

    Plans are for an exhibit of historic artifacts from Charles Krug

    Winery, which will include a towering 9000-gallon vintage redwoodfermentation tank and Charles Krugs original basket press, which he

    used to crush the first harvest at his fledgling winery. The estates

    Redwood Cellar will house the exhibit. The huge structure with itsmany-gabled roof and impressive belvedere was built by Charles Krug

    in 1873 after his original cellar burned to the ground. On the NationalRegister of Historic Places and a California Historic Landmark, the

    Redwood Cellar was restored recently to hold the Peter Mondavi

    Familys reserve barrel aging room. The Cellar will eventually housethe winerys new tasting room and visitors center.
