Thirty-four people bravedThursday nights rain to attenda twilight meeting at New EarthOrganic Farm in Colebrook,and it was well worth the effort.

New Earth grows 2 acres of cer-tified organic vegetables, raiseschickens, and 3 years ago theystarted a new enterprise, woodsgrown shitake mushrooms.During the course of the meet-ing we got to hear from Pierre,Vanessa, Luc and Gloria, thecreative minds behind the farmand see all the crops, but for the

purposes of this article Ill just

focus on the shitakes.

Luc Lamirande and PierreMiron, gave us a very thoroughexplanation of how they wentabout inoculating their logs andsetting up their log yard. Theystarted the project with 100 logs

but like other parts of the farmit quickly grew to its currentsize with 500 logs. The firststep is to cut the trees in thespring about 2-3 weeks beforethey will bud out. In Colebrookthat usually works out to theend of maple season or mid-April. Oak is considered the

best logs for Shitakes but ofcourse it is much cheaper if youcan cut the trees yourself fromyour own property. New Earthuses maple because it is the sec-

Incessantly scouring the uni-verse (and my back yard) forthe weird, the wacky, and thethoughtful so you dont haveto.

As I said before, since I startedworking again, I am back to

juggling errands and events(and preparing this column).Most things get done, but theyoften have to be squeezed in (Iknow, welcome to your world).Today is one of those days: takedaughters car to be looked atand worked on; take bike to getinspected and tires mounted(not in that order), stop at a cou-

ple of stores, write this, do adump run, and whatever elsecomes up in the next couple ofhours (get car and get bike and

pay for both [the worst part]).Not used to this at all.

I am not sure whether I believe

in signs or not, but what hap-pened gave me some food forthought. I am still working(they havent told me not tocome back yet), and two things

happened. First, they gave me akey to the place (not to the city

just the store), which meansthere will be times I will bealone and able to open andclose the door to let people in or

keep them out! Also, at lunch atwork, I ordered out for the firsttime. When I brought the food

back, I took out my fortunecookie and got a fully sealed

packet that was empty, totallyempty (except for some air kind of like a potato chip bag)!If that isnt symbolic, I dontknow what is! Cue the Twilight

Zone music.

I generally like to get to knowpeople well enough to likethem, which is pretty mucheveryone. After that, if I dontlike someone, I dont necessari-ly dislike them. Both are activestates, so if I dont like some-one, they are neutrally just

there. In reality, there are very,very few people I currentlyactively dislike (just one comesto mind). Just thought I wouldshare that, which is why I liketo see almost all people.

So, looking at a small snackbox of Sun-Maid raisins, itappears to be the same size boxas the Hannafords own brand,BUT Hannafords has 1 fullounce while the Sun-Maid is7/8 of an ounce. I have to start

paying more attention to otherproducts (like some packages ofeight hot dogs dropped from 16ounces to 14, and some pints ofice cream really arent). Alwaysgood to offer a reminder to look

closer; consider yourselfreminded. Got examples ofyour own? Send em along.

The political calls and pollshave already started. It justoccurred to me there could andshould be a NOTA Party(None of the Above). Someonecan take this and run with it Iam sure.

About the kid who got shot andkilled in Ferguson, MO., againno one knows what really hap-

pened except the policeman andmaybe some alleged witnesses

time will tell. When such loss-es occur, we always hear what agood kid and great friend thekid was. He was getting his life

back together, etc. Then a videoclip is released showing a thug,and theres an outcry. Gotta behard being a police officer thesedays people seem so muchmore... violent and disrespect-ful. As a Bail Commissioner, Isee most people as good peoplehaving done something stupidand learning from it. There have

been a few who continuallybehave badly and dont care its who they have become. Isuspect today there are those

who just as soon shoot you aslook at you. Maybe its time torereadLord of the Flies again!

I recently bought some cannedair to blow out my keyboardand computer fan. Where have I

been? Apparently one needs tobe 18 to buy such a dangerousproduct... not that Im not 18(they dont even look twicewhen I buy wine or whatever).

So, in the bigger picture, howfar is too far? A Tennessee highschool student was suspendedafter breaking a class rule ofsaying bless you when aclassmate sneezed, according toWMC. Dyer County High

School senior Kendra Turnersays she was standing up for herreligious beliefs, but she saysthe teacher said such languageis for church. She said thatwere not going to have godlyspeaking in her class, and thatswhen I said we have a constitu-tional right, Turner tells WMC.Turner says she was sent to seean administrator and finishedthe class period in in-schoolsuspension. Bless you wasone of several words or phrases

banned in the teachers class.The district had yet to commenton the case.

Finally, a Florida man wasarrested for allegedly spying

Foundation of New Hampshireannounces another successfulyear for the Moose PermitAuction. The 2014 Auctionraised $23,500, with all moneygoing to grants supporting pro-grams of the New HampshireFish and Game Department.

In all, seven bids were receivedfrom five states - NewHampshire, Massachusetts,

New York, New Jersey andWisconsin, with the winning

bids of $12,000 and $11,500.

The Foundation received onlytwo permits this year to auctionoff, a part of Fish and Game's

overall reduction in the total

number of moose permits for2014 related to the impact ofticks on the moose population.

"With only two permits to auc-tion this year, receiving bidsfrom five states continues tospeak to how hunters view thequality of the hunting experi-ence here in New Hampshire,"said Steve White, Chairman ofthe Foundation.

The annual auction is the pri-mary fundraiser for theFoundation, whose mission asthe official non-profit partner ofthe New Hampshire Fish andGame Department is to support

the wildlife, conservation, edu-

cation and outdoor programs ofthe Department. These pro-grams are critical to preservingthe outdoor way of life in NewHampshire, so people can con-tinue to enjoy family traditionssuch as hiking, hunting, fishingand watching wildlife.

Make thisstatement to a farmer or aforester and you will get anoth-er reaction. Tell that same groupthat we are going to increase the

number of deer in this state bydecreasing the doe harvest and

see what reaction is given! Allwildlife is a public trust and thatis how it is managed, we allhave some control.

New Hampshires forests arevery diverse, with dramatic dif-ferences in population densitiesof deer as you travel north,south, east and west. Theanswer to managing our deerherd is not a simple answer, butwe all get some opportunity to

be part of this discussion.

participants is Dave Conway ofYawnoc Farms in Jefferson,NH, who is showing his farmsbrown Swiss cows.Participating in the Fair is afamily tradition. My motherwas a 4-H exhibitor, first show-ing sheep in 1942, and thencows in 1949. This will be the56th year that our family farmhas been showing our browncows.

There are food stands featuringfried dough, grilled sausagewith pepper and onions, amongother offerings. Dave Fuller, of

Fullers Sugarhouse, will beselling vanilla ice cream withits award-winning maple syrup,as well as maple cotton candy.Fullers Sugarhouse has partici-

pated in the Lancaster Fair forover 20 years. This is an old-fashioned agricultural fair,where the entire family canexperience and learn about ourregions farming heritage, saidDave Fuller. Its great to seechildren visiting the barnyardand milking cows. There are

just so many things for familiesto do.

Entertaining Grandstand Shows

Each day of the Fair features avariety of grandstand shows Cruise Night, 5th AnnualFiremans Muster, NewEngland ChampionshipWrestling, and Pig Scramble,concert by ConfederateRailroad all free with paidadmission. Its all about thehorsepower at the Fairs paid($8 admission) grandstandshows: a Big Rig Truck Pull at1 pm and a 4 x 4 Truck Pull at 6

pm on Sunday, August 31, and a

Demolition Derby at 3:30 pmon Monday, September 1.Drivers are coming from as farnorth as Canada and as farsouth as New Jersey to partici-

pate in these high-octane,motorized competitions.

The New Hampshire Fish andGame Department has set finalseason dates and bag limits forthe 2014-2015 waterfowl hunt-ing season, after consideringcomments from sportsmen atthe recent public meeting.

New Hampshire's upcomingwaterfowl season is very muchlike last year's. The overallduck season is 60 days, with a

bag limit of six birds daily; andthe Canada goose season is 70days, with three birds in thedaily bag. One significantchange in this year's regulationsis that the daily bag limit forcanvasbacks has been reducedfrom two birds to one bird daily

bag limit, with a possessionlimit of three birds.

Following are the waterfowlseasons for ducks, Canadageese, mergansers and coots:

a voluntary harvest survey.

New VA Head HitsGround Running

The new secretary of VeteransAffairs, Robert A. McDonald,has been on the job only a short

time, but it looks like he's hitthe ground running. A couplethings he's doing:

--By the end of September,every health-care and benefitsfacility will hold a town hallevent. The goal is to hear direct-

ly from veterans around thecountry. "As we seek continualimprovement and to rebuildtrust among veterans, it is criti-cal that we continue to listenand learn," says McDonald.

Each medical center andregional office will put out itsown schedule. Besides veter-ans, they want to hear from vet-eran service organizations andother community partners.

best balance for them is 4 footlogs with diameters between 4and 8 inches.

The logs dont need to be sea-soned first, in fact logs thatwere cut just a couple weeks

before inoculat ion are goodbecause they havent had achance to dry out or becomecolonized by other types ofmushrooms. Pierre and Lucdrill holes about 6 inches apartalong the length of the log, inrows that are about 3 inchesapart and offset from each otherso that the holes create a dia-mond pattern in the log. Thenthey put a 1 inch long mycelium

plug in each hole and cover itwith wax. It takes about 18months for the mycelium togrow throughout the log beforemushroom production can start.Meanwhile the logs need to be

put somewhere where they getplenty of shade and the logsstay above 25% moisture. To

accomplish that, New Earthestablished a log yard in a

wooded area of the farm withoverhead sprinklers that theycan use to wet the logs downwhen rain alone isnt sufficient.

If you allow the logs to produceon their own schedule you willget two crops a year.Alternatively you can forcethem by soaking them so thatthey will start producing in aweek or two. New Earth forcestheir logs in batches starting in

July in the hopes of getting apredictable harvest throughoutthe summer and fall whichmakes the mushrooms easier tomarket. A batch of 100 logsshould produce about 15-20

pounds of shitakes. The photoshows a batch about to be har-vested. The hoops and sheets of

plastic you see in the photo arethere so that the mushrooms can

be covered during a rain stormto prevent them from gettingtoo soft. This batch of mush-rooms will produce for about 4days, with the majority of the

production in the first 2 days.

Thus far the only pests the farmhas had trouble with are slugsand squirrels. Keeping the logs

on pallets and propped up on a

wire when they are beingforced, helps tremendouslywith the slugs, and the squirrelswill probably get a pass as longas they dont get too greedy.

There are always far more quietplaces to seek out in the moun-tains than there are loud and

busy. Summer vacation is com-ing to an end. There will be a

brief respite before the leaf peep-ers clog the major arteries wend-

ing their way through the WhiteMountains, trying our patience

but pumping money into busi-nesses. We live in one of themore beautiful places in theworld and its great that othersget to enjoy it. But its importantto find a way out of the madness

brought by those hurrying to getaround, bringing their hectic paceto the region. Those are the timeswhen the quiet places are mostimportant.

As a hiker you wont find thesolitude you may wish for orneed on Franconia Ridge or thetrails leading up to the top ofMoosilauke or on the CrawfordPath in the southernPresidentials. You wont find it

on any part of Cannon Mountainor on the summits of Loon or

Wildcat. Especially on week-ends. But where it can be foundis in so many places we often for-get about. We only need use ourimagination to find that quiet we

crave, away from cell phones andchattering groups.

Recently, cool weather showedup one morning and it was clearAtticus wanted to hike. The heatand humidity of late spring andearly to midsummer has con-spired with his age to make hik-ing difficult for my friend whohas been on thousands of moun-tains. Its been a strange summerin that way and we miss gettinglost for a few hours.

But when he woke me up beforedawn with an expectant look onhis face, it only took a little whileto know the morning air wasfresh and cool and inviting himout to play. I chose Table

Mountain, which is just off BearNotch Road, because of its easeand the approach, in case Atticus

became tired.

Theres a small pull off withroom enough for three or fourcars, but thats it. And rarely willyou see it with any cars at all.

We started out on the AttitashTrail (an old logging road) and

just a hundred yards in we cameto the beginning of the highlightof this trail. Its called LouisvilleBrook. It swirled, churned, andflowed through the forest in sucha pristine fashion we stoppedseveral times to watch it and sighat her singular beauty. Althoughthe brook is not always right bythe trailside, you can hear it as itcalls to you until you meet again

a short ways up.

Tannin gives the clear water thatwelcoming soft golden tint thatreminds me of iced tea. We

stopped for a short while andwatched the brook pass by andleap over stones in a series ofsmall cascades. This is the kindof scene William Butler Yeatswrote his poetry about in his

beloved Ireland when he picturedmagic and mystery, with woodfairies and water fairies alwaysclose by. Although you wontfind any of these mystical beings

at least we didnt - there aresigns of animals everywhere.Bear prints, moose droppings,

birds flitting about from tree totree.

Below one of the cascades is afine swimming hole just deepenough but not so deep to be dan-gerous. Its perfect for the return

trip on a warm day.When we left the side of the

brook the forest continued tograce us with that wonderfulsense of the natural world we are

blessed with in the nooks andcrannies of New Hampshire. Farfrom society, away from theentanglements of human nature,while being embraced by Mother

Nature.

The trail grew moderately steepand we took our time with foot

placement, working our way upthe trail through the dense greengrowth.

Just after 1.3 miles we came tothe steepest climb of the day.There we found open ledges left

behind from a forest fire thirty

years ago, that offers up uniqueviews. The footing was tricky in

places as we travelled up steepmini slides onto even higherledges.

The trail didnt take us to theviewless summit, but rather nearit, which has always been finewith us since the views from theledges are pretty darn sweet.And there is one special little sideledged hidden by trees right atthe point the trail starts todescend on its way to the summitof Big Attitash Mountain 2.8miles away. But we didnt gothat far. We rarely do. TableMountain is one of those quickerhikes you can squeeze in at anytime and it was just what weneeded.

We stayed and enjoyed the viewsand shared breakfast with eachother and curious chipmunk.

While we lingered at the manylookouts, they are nothing com-pared to the walk through the for-est and by the brook. This has

become one of my favori teapproach routes in the mountains

because of its simple beauty andseclusion.

The round trip is 3.8 miles andthe elevation gain is 1,350 feet.By the time we were down themountain and back home it wasonly 9:30 in the morning andmuch of the day was left to us.

Consider saving this trip for aquick and quiet getaway, espe-cially on busier times of the year,particularly when no one else isparked at the trailhead.

Zucchini Parmesan

4 medium zucchini, cut into slices1 TBSP olive oil1 tsp minced garlic1 can (14 oz) Italian dicedtomatoes, undrained1 tsp seasoned salt cup grated Parmesan cheese

In a large skillet, saute zucchiniin oil until crisp-tender. Addgarlic; cook 1 minute longer.Stir in tomatoes and seasonedsalt. Simmer, uncovered, for 10minutes or until liquid is evapo-rated. Sprinkle with Parmesancheese.

Zucchini Muffins

cup sugar1 large egg beaten1 tsp vanilla3 cups grated zucchini (about 2medium zucchinis)8 TBSP butter, melted2 cups flour1 tsp baking soda

pinch of salt1 tsp cinnamonchopped walnuts (optional)

In a large bowl, mix togethersugar, eggs and vanilla. Mix ingrated zucchini and then themelted butter. Add flour, soda,salt and cinnamon to the zuc-chini mixture. Stir to combine.Coat the muffin pan with non-stick spray or paper liners.Evenly distribute the muffin

batter in the muffin pan. Ifdesired, top with chopped wal-nuts.

Bake on middle rack of oven at375 for 25-30 minutes or untilgolden brown or a toothpickinserted in the center of a muf-fin comes out cleanly.

Cool on a wire rack for 5 min-utes, then remove from the

muffin tins.

Chocolate Zucchini Cake

1 cups sugar cup canola or vegetable oil2 eggs, lightly beaten2/3 cup unsweetened apple-sauce1 tsp vanilla extract2 cups flour cup baking cocoa1 tsp baking soda tsp salt cup buttermilk2 cups shredded zucchini1 cup miniature semisweetchocolate chips cup chopped pecans

In a large bowl, beat sugar andoil for 1 minute. Add eggs,applesauce and vanilla; beat 1minute longer. Combine flour,cocoa, baking soda and salt;add to sugar mixture alternatelywith buttermilk, beating justuntil blended. Stir in zucchini.Pour into a 13 x 9 baking pancoated with cooking spray.

Bake at 350 for 20 minutes.Sprinkle with chocolate chipsand pecans. Bake 10-15 min-utes longer or until a toothpickinserted near the center comesout clean.
