Knowing that the community has their back — that the individuals, organizations, and companies are always willing to step up and help the less fortunate in Maple Ridge and Pitt Meadows – gives Lorraine Bates an incredible sense of pride.

Maple Ridge & Pitt Meadows Christmas Hamper Society is once again bracing for a busy year, and Bates said the 100-per-cent volunteer-run organization is so grateful for all the donations and fundraising efforts that are being undertaken during the holiday season to enable them to do that job.

Last year, the hamper society provided aid to almost 550 families. This year, she anticipates the numbers of people in need will be even greater. Consequently, more than ever before, any efforts by people to help raise money for the hampers are going to be gratefully appreci-ated, Bates said.

To help ensure there is enough food and toys for all in need, the Maple Ridge & Pitt Meadows TIMES and Haney Builders are step-ping up to help in a new way.

Partnering on the creation of this popular Cookies & Chorus songbook 2015, every cent from the sale of these books will be donated to the local Christmas bureau.

“Being the beneficiary, I think it’s wonder-ful… It’s just nice knowing someone has our back,” Bates said of the new undertaking.

“We’re all working together to make sure they’re taken care of…,” she added. “We’re all working together to make sure Christmas is a little brighter for every child in our community.”

The Christmas hamper society provides care in a few different forms.

First up, more than 100 of the families in need were sponsored last year through the Good Neighbour Program - meaning sponsors supply not only Christmas Day meals, but toys or gifts for the children.

For other registered families, the hamper so-ciety provides each with a certificate that allows recipients to go food shopping. Each certificate lists specific Christmas Day food, but allows the family to choose their favourite vegetables, juice, and desert items. And, in addition to the food certificate, each child (newborn to age 18) is given a toy bag valued at $75 to $100.

And the giving doesn’t end there.On top of providing food and new toys/gifts

for the families, the Christmas hamper society also administers the Rudolph’s Gift Shoppe where families can shop (free of charge) for a few new and near-new clothes and toys for their kids. As well, the hamper society operate the Kids Only Gift Shoppe, where children from registered families shop for free for a Christmas gift for their parent or caregiver.

Recognizing the potential demands on the hamper society this year, Haney Builders

general manager Alex Yakovyshenko is excited to be part of the Cookies & Chorus project and to assist in the hamper’s efforts to care for local families in need.

Haney Builders receive multiple requests for sponsorship and support each year, but this project – in particular – resonated with Yakovy-shenko and some of his staff.

They were impressed with the hamper soci-ety: inspired by the kindness and compassion of local people who can change empty warehous-es into a Christmas wonderland, and who can bring Christmas to so many local families that would otherwise not celebrate the holidays this year.

Bates said she’s touched by this and other community-driven initiatives that assist the hamper, everything from the Coins for Kids and the CaddyShack Strip-A-Thon, to the Firefight-ers for Families and the West Coast Express Santa Trains, and all the donations made by individuals, companies, and service clubs.

“Thank you to ALL who help make this possible,” Bates said.

Ingredients- 2¾ c. all-purpose flour- ½ tsp. baking soda- pinch of salt- 1 c. butter or margarine- 1 c. sugar- 1 large egg- 1 tsp. almond extract- 1/3 c. shelled pistachios- Green paste food coloring- 1/3 c. red candied cherries- Red paste food coloring

DirectionsLine 9-inch by 5-inch metal loaf pan

with plastic wrap, letting wrap extend on all sides. On waxed paper, combine flour, baking soda, and salt.

In large bowl, with mixer at medium speed, beat butter and sugar 4 minutes or until light and fluffy, occasionally scraping bowl with rubber spatula.

Add egg and almond extract and beat until well blended. Reduce speed to low; beat in flour mixture just until blended, occasionally scraping bowl.

Transfer 1 rounded cup plain dough to medium bowl; with spoon, stir in pistachios and enough green food coloring to tint dough bright green. In another bowl, place 1 rounded cup plain dough; stir in cherries and enough red food coloring to tint dough bright red.

Evenly pat pistachio dough into bottom of prepared pan; freeze 10 min. Pat plain dough on top of pistachio layer; freeze 10 min. Pat cherry dough on top. Cover pan with plastic wrap and refrigerate 4 hours or overnight, until dough is firm enough to slice.

Preheat oven to 350° F. Remove dough from pan; discard plastic

wrap. With serrated knife, cut dough crosswise into 1/4-inch-thick slices. Cut each slice crosswise into 3 cookies. Place cookies, 2 inches apart, on ungreased large cookie sheet.

Bake cookies 10 to 12 min. or until firm and golden brown at edges. Cool cookies on cookie sheet on wire rack 2 minutes. With wide spatula, carefully transfer cookies to rack to cool completely. Repeat with remaining dough. Store cookies in tightly covered container at room temperature up to 2 weeks, or in freezer up to 3 months.

IngredientsCookies:- 2 c. all-purpose flour- ½ c. unsweetened cocoa- 1½ tsp. baking powder- 1 tsp. ground cinnamon- ¼ tsp. ground cloves- ¼ tsp. salt- ¾ c. granulated sugar- ½ c. butter or margarine- 1 large egg- ½ c. whole milk

Chocolate Glaze:- 3 tbsp. unsweetened cocoa- 1¼ c. confectioners’ sugar- White candy decors for garnish

DirectionsCookies: Preheat oven to 400° F. In

medium bowl, combine flour, cocoa, baking powder, cinnamon, cloves, and

salt. In large bowl, with mixer at low speed, beat granulated sugar with butter until blended, occasionally scraping bowl with rubber spatula. Increase speed to high; beat until light and creamy. At low speed, beat in egg.

Alternately beat in flour mixture and milk, beginning and ending with flour mixture, just until combined, occasionally scraping bowl.

With cocoa-dusted hands, shape dough by level tablespoons into 1-inch balls. Place balls, 2 inches apart, on ungreased large cookie sheet. Bake cookies 7 to 9 minutes or until puffed (they will look dry and slightly cracked). Cool on wire rack. Repeat with remaining dough.

Chocolate Glaze: In medium bowl, with wire whisk or fork, gradually mix cocoa with 1/4 cup boiling

water until smooth. Gradually stir in confectioners’ sugar and blend well. Dip top of each cooled cookie into glaze. Place cookies on wire rack set over waxed paper to catch any drips. Immediately sprinkle cookies with decors. Allow glaze to set, about 20 minutes. Store cookies, with waxed paper between layers, in tightly covered container at room temperature up to 3 days, or in freezer up to 3 months.

cookie sheet.

butter and sugars until creamy, occasionally scraping bowl with rubber spatula. Beat in vanilla, then eggs, 1 at a time. At low speed, gradually add flour mixture; beat just until blended, occasionally scraping bowl. With spoon, stir in cereal, walnuts, cherries, and 1 cup chocolate chips.

Drop dough by rounded teaspoons, 1 inch apart, onto cookie sheet. Bake cookies 10 to 11 minutes or until golden. Transfer cookies to wire rack to cool. Repeat with remaining dough.

Place remaining 1/2 cup chocolate chips in small microwave-safe-bowl; heat in microwave on Medium (50%

power) about 2 minutes or until chocolate melts, stirring once. Stir until smooth. Place cookies on waxed paper; drizzle with melted chocolate. When chocolate is set, store cookies, with waxed paper between layers, in tightly covered container at room temperature up to 1 week, or in freezer up to 3 months.

Ingredients- 3 large egg whites- pinch of salt- ¼ tsp. cream of tartar- ½ c. sugar- ¼ tsp. peppermint extract- ¼ tsp. vanilla extract- Green (or red) gel food coloring

DirectionsArrange oven racks in top and

bottom thirds of oven. Preheat oven to 225° F. Line 2 large cookie sheets with parchment paper.

In medium bowl, with mixer on medium speed, beat egg whites and salt until foamy. Add cream of

tartar; beat on medium-high speed until soft peaks form. Add sugar 1 tablespoon at a time. Beat until meringue stands in stiff, glossy peaks. Beat in extracts.

Using small brush, lightly paint 3 to 4 stripes of food coloring inside large piping bag fitted with 1/2-inch tip. Transfer meringue to piping bag. Pipe meringue into 1 1/2-inch rounds onto cookie sheets, spacing 1 inch apart. Bake 1 hour.

Turn oven off. Leave meringues in

oven 1 hour with oven door closed. Remove from oven; cool completely. Meringues can be stored in airtight containers at room temperature for up to 2 weeks.

- 2 c. sugar- 1 c. butter (no substitutions)- 2 large eggs- 2 tsp. vanilla extract- 3½ c. all purpose flour- 4 tsp. baking powder- 1 tsp. salt- 1 tsp. ground nutmeg- Ornamental Frosting (optional)

Directions

In large bowl, with mixer at medium speed, beat sugar and butter until creamy, about 2 minutes. Reduce speed to low; beat in eggs and vanilla until blended. Gradually beat in flour, baking powder, salt, and nutmeg until well blended, occasionally scraping bowl with rubber spatula.

Divide dough in thirds; flatten each into a disk. Wrap each disk in plastic wrap and refrigerate 2 hours or until dough is firm enough to roll. (Or freeze for 30 minutes.)

Preheat oven to 350° F. On lightly floured surface, with floured rolling pin, roll 1 piece of dough 1/8-inch thick. With floured 3 1/2-inch bell-shaped cookie cutter, cut dough into as many cookies as possible; wrap and refrigerate trimmings. Place cookies, 1 inch apart, on ungreased large cookie sheet.

Bake cookies 10 to 12 minutes or until lightly browned. Transfer cookies to wire rack to cool. Repeat with remaining dough and trimmings.

When cookies are cool, prepare Ornamental Frosting if you like; use to decorate cookies as desired. Set cookies aside to allow frosting to dry completely, about 1 hour. Store cookies in tightly covered container (with waxed paper between layers if decorated) at room temperature up to 2 weeks, or in freezer up to 3 months.
