I started my culinary career in 1987, I
started my apprenticeship with
renowned Chef Ryner Poewe at The
Paradys Kloof Restaurant in
Stellenbosch. I soon developed a keen
skill and worked my way up the ranks. I
got my first Head Chef position in 1994
at a small family style restaurant on the
Welmoed Wine Estate in Stellenbosch
where I also did a short wine paring
course.
I spent most of my early years of in the
Western Cape working for some well-
known establishments such as De Ouwe
Werf Country Inn in Stellenbosch and La
Masson De Chamonix in Franchhoek,
From there I relocated to the Eastern
Cape and most recently to the North
West Provence at Tau Game Lodge a 5
star lodge situated on Madikwe Game
Reserve.
Ingredients 450g Prawns – 16 each tails only and shell off 250g half Mussels – 16 each 1 tsp Mild curry Powder ½ tsp Masala ½ tsp Cumin ½ tsp Cumin seeds ½ tsp Coriander 1 tsp Dijon Mustard 1 star anis 1 stick cinnamon ½ tsp Garlic ½ tsp Ginger 2 Tbsp chutney 400ml fresh cream 100ml fine chopped tomato (deseeded and skinned) ½ tsp chopped Thyme ½ tsp chopped Origanum 2 Tbps butter & oil Method Heat the oil in a medium saucepan. Add the onion and Sautee until glossy Add all the dry ingredients and fry for 5 minutes, keep stirring. Add the chutney, mustard, thyme, origanum, garlic and ginger, mix well. Add in the cream, tomato and butter Add prawns and mussels and cook over low heat for a further 10 minutes or until Prawns and mussels are cooked. Serve 2 Prawns and 2 mussels and generous amount of sauce in Pre-made baked Phylo pastry cups Serves 8

Ingredients
Citrus, sliced -- lemons, oranges, limes (may use peel only,
if preferred)
Herbs -- rosemary, thyme, & bay leaves
Spices-- whole cinnamon, cloves, nutmeg, allspice
(optional), anise (optional); may substitute
ground/powdered spices
Ginger (fresh or powdered)
Extracts--vanilla, almond, mint
Pine twigs (or other fragrant twigs)
Directions
Use a pint (2 cup) jar, container, or pot to combine scent
waters. Add ingredients to container, cover with water, and
choose from these options:
--simmer on stove top, topping off with more water as it
evaporates
--add heated mixture to a slow cooker, fondue pot, or
something similar that will keep mixture heated. Preheat
waters to a boil (in microwave or on stove top). As water
evaporates, always top it off with HOT water to keep the
temperature as high as possible. Higher heat = more
fragrance.
FRAGRANT COMBINATIONS:
1. Orange, Cinnamon & Spice. 1 orange, 2 cinnamon sticks
(or 2 teaspoons ground cinnamon), 1/2 tablespoon whole
cloves (or 1/8 teaspoon ground cloves), 1/2 tablespoon
whole allspice (or 1/4 teaspoon ground allspice), 1 anise
star (optional)
2. Lemon, Rosemary & Vanilla. 3 sprigs of fresh rosemary,
2 lemons, 1 teaspoon vanilla extract.
3. Lime, Thyme, Mint & Vanilla. 3 limes, 3-4 sprigs fresh
thyme, 1/2 teaspoon mint extract, 1 teaspoon vanilla.
4. Orange, Ginger, & Almond. 1 orange (or peel from 2
oranges), 1 4" finger of ginger, sliced (or 1 tsp ground
ginger), 1/2 teaspoon almond extract.
5. Pine, Bay Leaves, & Nutmeg. Handful of pine twigs or
needles, 4 bay leaves, 1 whole nutmeg, outer layer grated
into mixture.
Scented waters may be refrigerated between uses. Reuse
for 2-3 days, or as long as they still have a pleasant
fragrance.

Our interest in the wild dog is two-fold. Firstly: the wild dog is South Africa’s most endangered carnivore and the second most endangered in Africa after the Ethiopian wolf. The current population of wild dogs in South Africa is estimated at less than 400. Often seen as a pest and threat to be eliminated, the plight of the wild dog has received scant public attention. We recognise that there is urgent need to support efforts to safeguard the future of this unique animal and we are pleased to be part of it.
Wild Dog
Secondly: the wild dog embodies characteristics that Investec espouses - it is a distinctive, tenacious and collegial animal. Due to unique patterns on their coats, every wild dog is an individual. Yet together they form formidable packs of expert hunters with a legendary teamwork ethic. It is said that close to every wild dog hunt is successful. The EWT launched the research project to obtain long term information on the population, habitat and prey selections and also to identify the threats facing the wild dogs in the Kruger National Park. The first phase of the project involved a survey of the western boundary of the park to assess how far wild dogs occur outside the Kruger, and the second phase involves intensive surveying and monitoring of the dogs inside the park. The park has been divided into three study zones, north, central and south. Some of the field work includes collaring of wild dogs with high-tech GPS collars, investigating feeding ecology and conducting genetic studies.
Physical Characteristics
The African wild dog is long-legged, with massive jaws and
very large, erect batlike ears. Although it resembles some
domestic dogs, it differs in that it has four toes on each foot
instead of five.
The Latin name for the African wild dog means “painted
wolf,” which aptly describes the colorful coat of dark brown,
black and yellow patches. Wild dogs have bushy tails with
white tips that may serve as a flag to keep the pack in
contact while hunting
Habitat
Wild dogs live mostly in arid zones and in the savanna. They
also are found in woodland and montane habitats where
their prey lives.
Behavior
Wild dogs live in packs of six to 20. If the pack numbers fall
below six, hunting efficiency is eroded. The dogs have a
peculiar rather playful ceremony that bonds them for a
common purpose and initiates each hunt. They start
circulating among the other pack members, vocalizing and
touching until they get excited and are ready to hunt. They
start the hunt in an organized, cooperative manner. When
prey is targeted, some of the dogs run close to the animal,
while others follow behind, taking over when the leader tired.
They can run long distances, at speeds up to about 35 miles
per hour.
Of the large carnivores, wild dogs are the most efficient
hunters – targeted prey rarely escapes. They tear the flesh
until the animal falls, consuming even if it is still alive. This
behavior may prejudice people against them, although in
reality it may be no worse than the prolonged kills of other
carnivores. Apart from its undeniable bloodiness, the
remarkable aspect of the their hunting is the complete lack
of aggression toward each other. Wild dogs have a social
hierarchy but unlike many other social animals, there is little
obvious intimidation. They have elaborate greeting rituals,
accompanied by twittering and whining. Their large range of
vocalizations includes a short bark of alarm, a rallying howl
and a bell-like contact call that can be heard over long
distances.
Diet
They usually hunt in the early morning and again in
late evening, prettying on gazelles and other
antelopes, warthogs, wildebeests calves and rat and
birds. They may raid domestic stock, but as wild
dogs seldom stay in one place for long, this damage
is not extensive
Caring for the Young
A nuclear pack of about six dogs usually consists of
one dominant breeding pair and several
nonbreeding adult male helpers. Occasionally
another female in the pack forms a subordinate
breeding pair with one of the other males. A
breeding female gives birth about once a year, with
litters averaging about 10 pups, thought as many as
19 have been recorded. They pups are born in a
shelter of thick bush or grass, or in a hole. Usually
twice as many males are born. Unlike many other
species, the female offspring leave the natal group
when they reach maturity, not the males.
The hunting members of the pack return to the den
where they regurgitate meat for the nursing female
and pups. Although litters are very large, very few
pups survive. Sometimes the dens are flooded, or
the pups die from exposure or disease. When pack
numbers are reduced, hunting is not as efficient and
adults may not bring back sufficient food for the
pups. The entire pack is involved in the welfare of
the pups; both males and females babysit the young
and provide food for them.

down to quench their thirst and wallow in the

105g of flour
(3/4 cup)
200g of caster sugar
(1 cup)
1 ounce of unsweetened cocoa powder, sifted
(1/4 cup)
1 tsp baking powder
1/4 tsp salt
4 ounces butter, melted
2 large free range eggs, beaten
2 tsp vanilla
60g of chopped toasted pecans (1/2 cup)
2 handfuls of mini marshmallows
For the frosting:
2 ounces butter, melted
(1/4 cup)
1 ounce cocoa powder, sifted
(1/4 cup)
2 ounces evaporated milk
(1/4 cup)
8 ounces icing sugar, sifted
Directions:
1. Preheat the oven to 180*C/350*F/ gas mark 4. Butter a 9 inch flan pan with a
removeable bottom well and then set aside.
2. Whisk together the flour, sugar, cocoa powder, baking powder and salt in a bowl. Beat
together the butter, eggs and vanilla. Add to the dry ingredients and mix until smooth.
Stir in the toasted nuts. Pour into the prepared pan. Bake on a middle shelf of the oven
for 25 to 30 minutes, or until a toothpick inserted in the centre comes out clean.
Immediately sprinkle the marshmallows on top and return to the oven for a few minutes
to melt the marshmallows. Remove from the oven and carefully spread the chocolate
frosting over top.
3. To make the chocolate frosting mix all ingredients together in a bowl, beating with an
eletric whisk until smooth and thick. Spread on the hot marshmallows.
4. Let cool completely. Cut into wedges to serve.

Madikwe Game Reserve
Madikwe Game Reserve, one of South Africa‟s foremost Big 5
malaria-free reserves, was envisaged not by conservationists, but
by economists. They found conservation would create more
income and jobs than the existing land-use, which was cattle-
farming. This successful reserve is now a model that has inspired
South African conservation.
Madikwe Game Reserve, right up against the Botswana border in
the North West province, is a strange anomaly in the world of
conservation.
It was transformed from a number of low-yield cattle farms to a
high yield conservation area. This was not land chosen by
ecologists for its rare vegetation or animals. It was chosen by
economists because they found a game reserve here would
generate more jobs and money than any other land use option,
and is now a model of what the benefits of conservation can be.
Another remarkable factor is that this was pioneered in 1991,
within one of South Africa‟s apartheid-era Bantustans –
Bophuthatswana – which was reintegrated into the country in
1994.
Bop Parks, as it was then called, created an initiative where the
state would manage the land and wildlife, the private sector would
profit through game lodges, and the surrounding community would
benefit through sustainable jobs and income.
On paper it seemed idealistic. Yet in practice it worked. Bop Parks
launched Operation Phoenix in 1991. By 1997, it had brought in
more than 8 000 individual animals, the largest translocation of its
kind in the world. Several private companies set up very
successful bush lodges within the 75 000 hectare park. And the 3
villages around Madikwe – Supingstad, Lekgophung and Molatedi
– are doing very well.
Women are particularly empowered – a high proportion of them
are employed in the park.
Social and financial upliftment aside, Madikwe is now better
known as one of the best places to see the Big 5, and it also has
the advantage of being malaria free. Madikwe is seen as a model
of the benefits conservation can bring.
