    Audience: 

    School Aged Elementary Students $Ages %&'() who *artici*ate in the afterschool *rogram at Mill

    Cree+, Julia P, angston Cha*el, Mattie i#ely and Sally -, which are Bulloch county schools

    located in Southeast Georgia.

    Purpose/Background

    The *ur*ose of this lesson *lan is to teach students aout *lant&ased *roteins. Students

    will e taught aout the im*ortance of ha#ing enough *rotein in their diet and the functions of

     *roteins. Meat is often associated with *rotein ut there are many *lant ased *rotein sources

    that are more nutritious than meat. The lesson *lan will focus on *lant *roteins ecause most

    Americans consume too much animal *roteins. Consuming too much animal *rotein can increase

    the ris+ of cardio#ascular diseases ecause of its saturated fat content. The American /eart

    Association recommends limiting total fat inta+e to 01&213 of total calories for ages 4&'5. Most

    of the fat consumed should e monounsaturated fat and *olyunsaturated fatty acids that come

    from #egetale oils, nuts, seeds and fish. 6ocusing on *lant *roteins will hel* students meet their

     *rotein needs and limit saturated fat. Ade7uate *rotein inta+e is #ery im*ortant for this age grou*

     ecause they are growing ra*idly. The American /eart Association recommends moderating

    meat inta+e for e#eryone o#er age 0. Plant *roteins also contain many #itamins and minerals that

    are not found in animal *rotein. Students who +now more aout nutrition at a young age can start

    de#elo*ing healthy food haits and ma+e healthier food choices. Pre#entati#e measures can

     *ositi#ely im*act an indi#idual8s li#elihood of comating weight gain and comoridities

    associated with weight gain.

     eans, +idney eans, tofu, rown rice, nuts, 7uinoa, chia seeds, hummus, *eanut utter, and

    whole grains. As+ students if they li+e any of these foods.

    Protein contains uilding loc+s that hel* us grow. There are two +inds of *roteins: com*lete

    and incom*lete. Com*lete *roteins contain all of the uilding loc+s to hel* us grow, while

    incom*lete *rotein contains only some of these uilding loc+s. Proteins from *lants tend to e

    incom*lete *roteins, ut that does not mean that are worse, ecause they also contain many other 

    things that are im*ortant for your health. By eating many different ty*es of *lant *roteins, you

    are ale to get all the uilding loc+s that are found in a com*lete *rotein.H

    Along with hel*ing you grow, *roteins can hel* you heal if you get hurt. 6or eam*le, when

    you fall and cut your +nee, *rotein hel*s uild new s+in. The following are more eam*les of

    what *rotein does.

    & @t can hel* you uild strong ones and muscles, this hel*s you grow.

    & @t hel*s uild healthy hair, s+in, and nails. >ur hair, s+in, and nails are made u* of *rotein.

    Plant vs, Anial Protein

    Plant ased *roteins contain many good things for our ody that are not found in animal

     *rotein. Plant ased *roteins contain many different #itamins and minerals. These etra #itamins

    and minerals in *lant ased *roteins hel* our odies heal when we get hurt. 6or eam*le, when

    longer. These #itamins and minerals are also good for our heartL they ma+e it stronger.

    such as nuts, es*ecially walnuts, hel* our rains grow. This hel*s us do etter in school.

    animal *rotein that hel* us grow taller and faster. @f you eat more *lant *rotein, you will grow

    faster.

    two incom*lete *roteins together to ma+e a com*lete *rotein. The *rotein cominations that

    they ma+e during the acti#ity will show them healthier snac+ and meal o*tions. !uring this

    acti#ity, the students will e e*osed to many different *lant ased *roteins, and they will learn

    com*lete *ule with their *iece. Mention again that these com*lete *ules are

    eam*les of how they can *ut two incom*lete *roteins together to ma+e a delicious

    snac+ or meal.

    & At this time, tell the +ids to get u* and wal+ around, and sto*

    where they are when they find the other *ule *iece that will go with theirs.

     *ule is made of.& After all the students ha#e heard all the *airings, discuss how

    these com*lete *rotein *airs are the healthy *rotein o*tions. These are etter o*tions

    than food such as unchales ecause they contain a lot of those #itamins and

    minerals that hel* you grow. They are also good sources of *rotein.

    they need to e a com*lete *rotein, so you need to comine two incom*lete *roteins to ma+e a

    com*lete *rotein. This does not ma+e *lant *rotein any less im*ortant, ecause *lant ased

     *roteins are a #ery im*ortant *art of your diet, ecause they are full of #itamins and minerals that

    will hel* you grow. @n this acti#ity, it is your ?o to find the matching incom*lete *rotein *ule

     *iece in order to ma+e a com*lete *rotein *ule. The *lant ased *rotein *airs that you will e

    ma+ing right now are ?ust a few eam*les of the many different *airs you can ma+e at home for

    students wash their hands under with warm soa*y water for 0( seconds. Students will learn

    nutrition information aout their reci*e. !escrie to students that the *lant *rotein in the smiling

     urrito reci*e comes from the hummus, which is made from garano eans $chic+*eas), and the

     lac+ eans. These ingredients along with the wheat tortilla form a com*lete *rotein, as learned

    from the earlier lecture and game. A large *icture of the finished *roduct will e *ro#ided for

    reference.

    & !emonstrate how the urrito man will e assemled. Tell students that they ma+e this reci*e at

    home, they will need to as+ an adult to hel* them cut the tomatoes and cucumers. /el*ers are to

    wal+ around and *ro#ide assistance as needed. As students com*lete their smiling urrito, they

    may *ut all ingredients inside and roll the urrito u* then eat it or they may eat it howe#er they
