Do not be intimidated forany reason. That is rule numberone (and there are very few realrules after that). For the mostpart, going wine tasting is aboutthe easiest thing in the world,especially here in Californiawhere wineries and tastingrooms abound. You can findwineries specializing in redwines of all types, those that arefamous for their white winesand others who pour sparkling wine. It is a matter ofdoing a little research and planning your day. Most tastingrooms open around 10 a.m. and close between 4:30 and6 p.m.

Before you start off pack a few essentials: Water(plenty of water) and something to snack on – crackers ora baguette. Many wineries have picnic areas and there areplenty of delis and bakeries that can make up a lunch foryou, or make your own. Which brings us to eating anddrinking, the kind that doesn’t directly involve wine.

Be sure to nibble during the day and make sure youmake time for lunch. Two tips: drink at least twice asmuch water as you do wine, and remember that youdon’t have to drink everything poured into your glass.There is a reason tasting bars have dump buckets and apitcher of water to wash out your glass.

That said, here are some tips that have proven to behelpful and are designed to help make the sensoryadventure of wine tasting all the more enjoyable.

Don’t be afraid to ask questions. Time and time againI have heard knowledgeable winery workers say thatthere is no such thing as a stupid question, and theymean that.

You can drink what you want, in the order you want.If you only like reds, say so; if you don’t like sweet wines,speak up. But the idea of starting with whites, then goingon to reds and then sweet wines is a good guide.

Zinfandel is red. I am sure you know that but it neverhurts to remind everyone.

If there is a particular wine you want to try and it isnot on the list, ask. There might be a bottle around thatwas opened for a trade tasting or by the winemaker. Mosttasting rooms are happy to pour a little if you showenthusiasm.

If you plan to take wine home with you, either in the

car or on a plane, buy acardboard box with Styrofoamwine inserts. Fill it during theday and this keeps wine fromrolling around in the trunk.

Check out the smallerwineries. It is a revelation.

Take notes on the wines youmost enjoyed.

Take advantage of tourswhen the winery offers them,but keep in mind that they take

anywhere from 20 minutes to well over an hour, so one aday is plenty.

Buy wines that you can only find at the winery.These often include smaller (375 ml) bottles of limitedproduction Ports or dessert wines. Don’t buy a wine youcan get at a supermarket back home. You’ll pay more, andbesides, what’s the point?

Look for tasting rooms in towns. Many of these arecooperative tasting rooms, where in one place you mightfind wines from a dozen or more small-to-mediumpremium producers. They are scattered throughout thearea and more are opening all the time.

Don’t give too much thought to ratings and vintages.It’s like art: if you like it, it’s a good wine. It is as simple asthat.

Remember that you don’t have to do the driving. Ittakes no more than a phone call to rent anything from aTown Car or restored classic convertible to stretch limosand a 20-passenger bus. All have drivers that will stowyour wine for you and the local companies know thearea. As to taking that wine home, ten people sharing oneof those impossibly long limousines is fine and fun, but ifyou all plan to buy a couple of cases the trunk – which isno bigger than a normal luxury cars – is going to fill upfast and you’re going to find yourself filling the interiorfloor with boxes and using cases of Cabernet as footrest.

Tell the transportation company what you have inmind and listen to their advice. They know the territoryand the people and personalities.

Know your limits. If you get close to it let others tasteand you can listen. It beats ending the day in a blur, andif need be calling a taxi is cheaper than the alternative.

And if at a seated tasting, don’t be afraid to leave agratuity. It’s more than worth the five or ten dollars to getwisdom – and wine – and a great time. BY CHARLES NEAVE

An acre of vineyard land can give the grower:…four-five tons of grapes (though it is also less, de-pending on a variety of farming and winemakingpractices, and on the varietal and the vineyard location) which will give you 797 gallons of juice (or thirteen-and-a-half barrels) which is pretty closeto four thousand bottles of wine .

One standard oak barrel of wine holds:…295 bottles of wine (or 59 gallons) made from 740 pounds of grapeswhich works out to almost – but not precisely – 24+ cases of wine.

One of the questions most asked when it comes to wine is how much of this does it take to make that, and so on. We won’tpretend that it’s simple, but here are some industry statistics that will give a pretty good answer to that query. As with any-thing agricultural, of course, they are all based on countless variables when it comes to acre yields, but this is a good startingpoint. The rest of the information varies little if at all.

What does all that information on a wine label mean?The U.S. Department of Alcohol, Tobacco & Firearms regulates winelabels and requires that information be given in a straightforwardway. Basically, you will want to look for the types of grapes grown,where the grapes are grown and when the grapes were picked.

• Brand name

• Designation for a special wine

• Vineyard or appellation known for its grapes might be designated

• Location where the grapes used were grown

• Grape Variety used

• Vintage year in which the grapes were picked

• Location where the wine was made and/or bottled(Not to be confused with the area the grapes are grown.)

• Alcohol content may be stated or the the label may simply say "Table Wine”

Each type of grape, also referred to as agrape variety – from Chardonnay toZinfandel – gets its primary flavors as itgrows on the vine; it creates a “default”flavor profile based on the grape’s geneticcomposition. This primary flavor profileforms the grape’s true varietal character.For example, you may have noticed flavorsand aromas similar to melon and tropicalfruit in virtually every Chardonnay;blackcurrant and cassis in CabernetSauvignon; red and black cherry in PinotNoir. Although there are always variations indegree, these characteristics are fairly typicalof wines made from these grapes regardlessof where the wine is made or who makes it.True varietal character develops as thegrapevine, like all plants, converts sunlightenergy to chemical activity in the naturalprocess of photosynthesis.

Yeast, a microscopic organism living ongrape skins, gets to work releasing truevarietal character – and creating even moreflavors – once thousands of grapes havebeen picked from vines, cracked open, andtransferred to a tank or bin. As sugar in thegrapes is converted into alcohol by yeast,sweet fresh juice evolves into dry, potentwine. Later, even more wine flavors andaromas emerge during the wine’s aging

period when chemical compounds interactwith each other and microscopic amounts ofair. Generally, fragrance developed duringaging is referred to as wine bouquet, while“aroma” derives directly from fermentation.

Wines aged in oak barrels get additionalcontributions of aroma and flavor fromwood, variable due to differences in both thegeographic origin of the tree (most often,America or France) and the degree to whichthe wood is toasted (heated by exposure toan open flame). Toasted oak can add hintsof coconut, vanilla, mocha, coffee, toastedbread, or clove, among other aspects, whileinjecting sweetness to the wine’s bouquet.Brand new barrels filled with wine for thefirst time add these qualities withsignificantly greater impact than olderbarrels. Old, aroma-less barrels, referred toas neutral, are used to hold wine duringaging without adding new flavors.

While primary flavors and aromasoriginate from grapes, specifically, it’s thegrape skin that gives color to wine.

Dario Sattui knows how to give a wine country experienceunlike any other. Castello di Amorosa, opened in 2007 afterfifteen years of planning and construction, is true to the Sattuiform. The 107 rooms of the 13th-century-styled castle containramparts, hand-painted frescoes, a torture chamber andlabyrinthine cellars amidst their 136,000 square feet, making theCastello a winery like no other anywhere in the United States.There’s even a chapel, too, and all this takes place inside astructure of imported European brick, wood and iron, as well asmore than 8,000 tons of Napa stone.

As is to be expected, given the Sattui philosphy of wine, thereare lots of options – at least a dozen and a half at last count.These various offerings can be tasted as part of the GeneralAdmission and Tasting or the Reserve Tasting, and wine andchocolate pairing is always an option, too, as is non-alcoholicbottled grape juice for non-imbibers. Grapeseed oil andgrapeseed flour are available for purchase. These are healthy,antioxidant-rich products that are produced from the seeds ofCastello’s wine grapes.

Touring options abound and definitely help to heighten theexperience. Winding through picturesque fields, undulating

vineyards and oakstudded hills, one gets the feeling of

being transported back in time heading northeast away

There is one very important element that truly defines Burgess Cellars: the unique site. As Steve Burgesssays, “It is why our wines are different. It is why we aredifferent.”

Located high on Howell Mountain, and commanding abreathtaking view of the Napa Valley, Burgess can trace itsorigins to a winery that was established on the property inthe 1880s. established in the Chiles Valley District by Italian-Swiss pioneerwinemaker Anton Nichelini in 1890. Anton planted many of the sitesstill in use by the current generations of this family enterprise. Notonly is this one of the longest continuous winemaking families in theUnited States, but the scenic drive to Chiles Valley will take you back,mile by mile, to a simpler time. With the exception of the road, muchof what surrounds looks as it did one hundred years ago during thefirst heyday of winemaking in the North Coast.

Upon arrival, visitors are greeted by a snapshot of Napawinemaking circa 1900, including a gigantic Roman-style wine presswhich was used commercially until 1955. The vineyards are nearbyand range in age from two-decades to nearly ten decades – that’s whatcomes of caretaking the same set of rows generation after generation.Inside the 1895 seven-bedroom farmhouse, the bottom floor is now atasting room, and outside are picnic tables and a bocce court. Noreservations are required for groups of up to a dozen, and the winerydoes offer tours of the facility and barrel chai.

Another benefit of being in the wine business as a family for solong is the ability to make wines which speak from the winemaker’spassion rather than for large commercial distribution. The tastingroom is generally the only place to taste and purchase these fifty- toone hundred-case lots, and not many other locations anywhere, letalone in Napa, can give you access to heritage bottlings of old worldreds like Petite Sirah and Primitivo. What’s most impressive, though, isthe guiding philosophy the family will share with you while you arethere, tasting the wines and enjoying the locale: “We encourage you tostep back in time and let us take care of you.” Absolutely! There is a lot of history behind this winery. John

Ballentine emigrated in 1910 from County Tyrone, Ireland

to the Bay Area. His son Van grew up in the Napa Valley

helping to plant vineyards, prune vines and make wine.

The history of this winery also involves the Pocai

family from Italy. Over time, their winemaking, their

families and their fortunes intertwined. Even the

devastating San Francisco earthquake of 1906 played a

part.

Luck was also a major player, especially when it came

to the acquisition of some of the best vineyard land in the

entire Napa Valley. Luck can never be an underestimated

component when it comes to successful winemaking, a

fact that continues to this day.

When you enter the tasting room at this working

winery, you’ll find a long, stylish room with

chocolate-hued walls, an L-shaped bar and lots of stone

and wood. Windows on the north look out on vineyards,

the floor is slate, the lighting modern, and you’re likely to

find yourself talking to the owners and their

always-friendly staff.

Today, all of the Ballentine wines are estate wines and

the wines available in the tasting room are wonderful

One winery I can’t stop talking about is HALL St. Helena.Unveiled late last year, the “reimagined” winery and Visitor’sCenter combines both the old and the new; a sophisticatedtasting room, a historic Napa Valley building dating back to1885, a modern art collection both inside and out and, ofcourse, exquisite wines.

The first thing you’ll notice about HALL is its huge sparklingnew rabbit sculpture on Highway 29. “Bunny Foo-Foo” is oneof the incredible works of famed artist Lawrence Argent, whoalso did a similar installation at the Sacramento Airport.

Modern, one-of-a kind sculptures are infused throughoutthe buildings and in the gardens. On the lower floor of themain building is a state of the art winemaking facility, and wasin fact the first LEED® Gold Certified Winery in the State ofCalifornia. If you look up above the fermentation vats, you’llsee red glass sculptures and large pinwheels that appear to floatfrom the ceiling.

Inside their sophisticated glass-walled tasting room you’ll begreeted with a splash of Sauvignon Blanc, their “welcome wine”– followed by awared-winning Cabernets (HALL has more than30 wines rated 90+). The winery produces 12 differentCabernets each from small lot vineyards, and each withremarkably different qualities. The 2011 Napa Valley Cabernetis full of luscious rich berries, soft notes of oak and smoothtannins. Bill Cadman, the owner of Tulocay Winery, is a treasure

of information about wine. He is also a witty, humorous

and thoroughly entertaining gentleman. Well, the

“gentleman” part might be a bit of a stretch. Bill is old-time

Napa, with not an ounce of pretentiousness about him.

Nowhere else can you sit down with someone as

knowledgeable or as approachable as Bill Cadman. He

simply does not have a snobbish bone in his body. His

irreverent, light-hearted take on the business of

winemaking, however, belies his superior skills. This is

seriously good wine. He doesn’t even maintain a pour list.

He’ll just ask what you like and open bottles accordingly.

In 1972, Bill brazenly bought an old chicken farm and

began pestering the local wineries for a job. He started his

career by operating the crushers at Charles Krug. From

there he went on to enjoy a long history in the industry,

working for the likes of Robert Mondavi, Joe Heitz and

other giants of the winemaking world. In 1975, after

consuming copious amounts of wine one evening, he made

the presumptuous decision to open a winery himself. “My

friends looked at the old chicken coops and declared them

perfect for a winery. In my altered state, I agreed!” What

ensued was the creation of a refreshingly relaxed wine

country experience and a Pinot Noir that would launch his

career. He has been enjoying the heck out of life ever since.

Winemaker Jon Priest believes that great wines are grown,

not made. Priest sums it up best: “Etude was founded on the

philosophy that winemaking begins in the vineyard long before

continue to build the Etude legacy.”

Working with viticulturalist Franci Dewyer, Priest has

developed Etude Winery from this bold philosophical
