For a young girl on a farm in Northwest Ohio prior to the Civil War, that may have been a gift from a suit- or. Plus, it would have been shared with her whole fami- ly. Farm families who lived in Northwest Ohio during the 19th century truly knew a hard life — yet while many left the region — others stayed and conquered the Great Black Swamp. Debbie Haubert, educa- tion specialist for the Sandusky County Park District, shares the tales and a first-hand demonstration of life during a 1850s Christmas at the cabins in White Star Park during a series of din- ners each Christmas season. The Christmas at the Cabins program is celebrat- ing its 10th anniversary this year, and the 10 dinners set for the Reineck and Schlea- Swartzlander cabins were booked solid in under a week of reservations being opened for 2012. In late November, Haubert was decorating the Schlea-Swartzlander cabin for the upcom- ing Christmas dinners. That cabin was origi- nally built in 1874, while the Reineck Cabin was built in 1950. Both were originally from the Gibsonburg area and donat- ed to the park district, which moved them to 800-acre White Star Park. “Neither of our log homes had fireplaces when they were built,” Haubert said as wood cracked in a large four- burner cook stove. The entire floor area of the Schlea-Swartzlander cabin would fit in most of today's living rooms. Yet for a family in that region of the state, the cabin was kitchen, bedroom, living area and work space. Haubert said this cabin was the bigger of the two as it was newer and built at a time when families in the Great Black Swamp were seeing just a bit more pros- perity by the 1870s. The swamp was starting to be drained just before the Civil War, she said. She also explained that the two log cabins at the park were built at a time when Ohio was modern enough that families could buy cast-iron pot belly stoves for their homes instead of building a fireplace into the wall. That stove would have set in the center of the cabin for heat with a stove pipe leading out a side wall instead of extending up through the loft where other family members would be sleeping. Like others living at the time in Ohio — fires were always a concern for people living in log homes. Haubert pointed out that for much of Northwest Ohio — the Great Black Swamp was part of daily life until nearly the 1900s. The swamp stretched from mid- Sandusky County near Clyde north to nearly Sandusky (then called Portland) and then west all the way to Fort Wayne, Indiana. Wood County, for example, the home of Bowling Green State University today, was completely covered in swamp. That swamp affected fam- ilies who moved to the region to farm and how they celebrated Christmas. Just as people realized they could drain swampland for clearing and farming — the Civil War came and postponed improvements, Haubert shared. After the war, families used drainage pipes made from the clay under their feet and a system of ditches to change the landscape, she explained while sitting at a cabin table covered in oil lamps being cleaned and wicks trimmed for the upcoming dinners. Because of the Swamp, Ohio has a system of drainage laws that remain in effect today, she added. The people who lived in the Great Black Swamp changed over the years in the 1800s — First it was trappers like the French who moved through the area, and then German families and others came to the area to claim land for farming. They discovered the difficulties of life in the swamp. Farming was not easy and the land quality was poor, Haubert said. “Life in the swamp was difficult,” she reiterated. Some city homes and a few farm homes from the same period in Northwest Ohio had more amenities. For farms, it depended on the type of land the family had to work — and on the geography. Some areas were higher and more workable. U.S. Route 20 that is a major east-west corridor — then called the Western Reserve Road — played a major role in Northwest Ohio. “It was one of the highest roads going through the swamp,” Haubert pointed out. Living in the swamp changed the way many fami- lies celebrated Christmas in the 1800s, she added.     With just a few weeks to gobefore the end of the year, Ohiosfarmers can breathe a sign of reliefthat 2012 will soon be over andtheir attention can turn to 2013.

    In fairness to 2012, most farmersare now saying that, while theextended drought this past summerwas bad, and had a serious impacton many crops at harvest time itwas not as bad as some feared andcould have been far worse.

    What now has farmers con-cerned is the uncertainty of thefuture. What lies ahead in 2013 forOhios farmers?

    Right now, as of the end ofNovember, a lot of things thataffect our farmers remain cloudy.

    First, there is the federal FarmBill. It hasnt been passed, and ifthere isnt a resolution to the stale-mate in Washington, all bets areoff in 2013. That is because with-out the legislation in place, manyregulations either end or revertback to earlier laws.

    This will effect farmers and agri-culture producers throughout theUnited States and right here inOhio.

    According to our ACRES articlein this edition, the bill includes anarray of policies that influence theprice of agricultural commodities,ensure the availability of food, tem-per the cost of farming and provide

    for agricultural research and con-servation. The 2008 farm billexpired on Sept. 30, but many ofits provisions will retain funding orcontinue to pay out until the endof the harvesting season in 2013.

    But the major worry is the safetynet that many farmers receiveeither yearly or when needed farm subsidies. Will some or all ofthose subsidies expire in 2013 ifthere is no Farm Bill approved?

    What will happen in 2013with the corn industry and theongoing need for corn in the pro-duction of ethanol? Just beforeThanksgiving, the U.S. EPA rejecta request from a coalition of statesand special interest groups to rollthe ethanol standard back becauseof the corn shortage this year.

    The EPA said no dice thestandard is the standard. What thatmeans is that millions of tons ofcorn will still be needed in 2013for the production of ethanol.What isn't known is what impactthat will have on corn prices andthe prices of so many other prod-ucts that use corn as its base.Supplies of corn will be scarce afterthe ethanol produces take theirshare. Will livestock owners take amajor hit in 2013 in the cost offeed?

    Then there is the possibilityof new U.S. Department ofAgriculture rules regarding healthand food safety standards. Willthose change next year? Will there

    be increased pressure on morerestaurant and supermarkets chainsto tell suppliers that the animalsused for meat they receive musthave received more humane treat-ment than present standardsrequire?

    On top of this is the newbiodiesel tax incentive legislation.Will it be renewed? And the listgoes on.

    As we prepare to welcome in2013, there are plenty of questionsfrom Ohio farmers about what kindof year '13 will be. Will it be agreat year or an unlucky one as the"13" implies? Time will tell.

    NORWALK Gary and Mary Bauer wanted allthree of their children to attend college. They alsorealized that with three children to put throughschool they needed to figure out a way to help withthat process.

    They came up with the idea of planting aChristmas Tree Farm and are now into the secondgeneration of children who are working on that farmto help with their college tuition.

    I planted my first seedlings in 1978, Gary said.We now have between 18,000 and 20,000 trees.

    Piney Paradise Christmas Tree Farms has twolocations. One is on Snyder Road just off of StateRoute. 61 in Norwalk and the other is located onNorwalk Road, also in Norwalk in Huron County.

    Gary said the farm was more than just a way togenerate tuition funds for his children.

    We wanted to help them but also wanted themto do a little of the work to get it, he added.

    Gary, who has an education degree from TheOhio State University, also taught ag classes at bothSunbury Big Walnut and Monroeville High schoolsfrom 1967-81. He would later become an associateProfessor at the Erie County Extension office of TheOhio State University until 2004.

    All three of my kids play parts in the farm, Garysaid. As far as that goes so do their families. We arenow into the second generation of kids who are sav-ing money for college.

    Garys three children, Scott, Wendy and Robyn,who also have teaching degrees from OSU, all still

    play a role in the family business.I pretty much do everything, smiled Robyn as

    she helped her dad hang decorations at the SouthNorwalk Road farm.

    Honestly we all have our parts and things runvery smoothly around here, she added.

    The two farms coverover 21 acres of trees invarious stages of growth.The farm, first plantedin 1978, was officiallyopened in 1984.

    We sold a few treesthose first few years, butit takes time to get towhere we are today,said Gary.

    The farm has ever-greens trees rangingfrom Scotch and WhitePines, to Blue andNorway Spruce as wellas Douglas, Frasier,Concolor and CanaanFirs.

    Our pines are oureasiest to take care ofand grow the fastest,Gary pointed out. Wedont usually have toeven water them mostyears. It takes aboutseven years to get ourpines to about 6 foot to7 foot and that makes avery nice tree.

    The spruce and firstake longer and needmore maintenance, headded. It takes thembetween seven and 10

    years to get to 7 feet, Gary added.I always tell people that this is harder work than

    my teaching job, said Scott. You dont just plantseedlings and then start selling trees over night. Ittakes over 13 continuous hours just to mow thefarms.

    The process from seedling to a Christmas tree thatis ready to cut is an extensive process - the first stepbeing to plant the seedlings.

    We get our seedlings from Vans Pine Nursery inMichigan, Gary shared.

    It hurts me to say this, but they do us a greatjob, the OSU alumnus smiled.

    Seedlings will be planted in their nursery in Aprilfor one year before they are dug up and planted onthe farm.

    I plant our seedlings between April 12 and the15 every year, said Gary. Each time the tree is dugup and replanted, it actually makes the root systemstronger in that tree.

    The trees are then tended to or sheared once ayear usually in mid to late June.

    Shearing the trees, or shaping them, is one of ourhardest jobs, explained Scott. Honestly you canonly do it about 3 hours a day before your armsbecome like wet noodles.

    Shearing the trees is the process of shaping theminto what a Christmas tree should look like. It is apainstaking process of using a hand-held shears andjust trimming the tree into shape.

    We dont let just anyone shear our trees, saidScott. You really have to know what you are doingin order to not hurt the tree or yourself.

    The Bauers actually do almost all of the farm workthemselves.

    Each one of us does our own thing, Robyn said.We have maybe hired a hand full of helpers over

    the years, but this is truly a family operation, Garyagreed. All my kids rather it be in the socialmedia part of the business or the physical labor of it all are all directly related to the process.

    I dont want to leave out my wife, Mary, saidGary.

    She might have one of the hardest jobs of all.She handles all of our pest spraying every year.Although we dont have a lot of problems with pests,there have been years that she has used a magnifyingglass to look for pests to spray.

    This is not an easy business, Gary said. Theaverage success rate of planted seedlings making it toadult trees is around 67 percent, he said. We arevery proud however to have a much higher successrate. We see around 97 percent of our seedlingsbecome adult trees.

    Piney Paradise sells between 500 and 600 freshcut-your-own trees each year. They also sell another100 to 200 trees on the wholesale market.

    Our focus is on the family experience, saidRobyn.

    We want families to come and get into theChristmas spirit. We have horse and wagon rides anda visit from Santa himself every Dec. 1 at our SnyderRoad Farm.

    I just think it gives our kids something construc-tive to do, said Scott.

    My son, Remington, is only eight but loves tocome work on the farm. I think kids today are intoto many other things like computer and video gamesthat they dont know what work is. I was very happyto have to come to work on the farm, and I love thefact that my children share that passion.

    FINDLAY In the mid1730s thousands of Germansescaped the country for economicreasons and to gain religious free-dom.Johann Georg and George

    Michael Spahr, two brothers fromWaldenburg, Germany, were apart of that movement. They hadheard of dreams being fulfilled inAmerica, and knew that theirfuture in Germany wouldonly get worse.After much deliberation they

    decided to take the chance. In1737, the brothers gathered theirfamilies, left their homes, friends,and possessions, and made theperilous voyage to Lancaster,Pennsylvania, (later moving toYork County, Pennsylvania).Around 1850, and three gen-

    erations later, Johann HeinrichSpahr, Henry, and his familymoved to Medina County, Ohio,where his wifes (Mary Bower)family lived. His son (E.Y.)Elmore Yocum, came with them.Within the next four years

    Henry purchased some land nearFindlay, which may have con-tributed to his son E.Y. meetingCatharine Bright (Findlay), whohe married on Feb. 17, 1874.Back then most people met at

    some sort of church function,explained Linda Spahr, who cur-

    rently owns that land with her hus-band, David Spahr. So, we kind offigured thats what happened. Andat some point our last name wasspelled Sparr. We dont knowwhen or why it was changed, butI might find out if I keep dig-ging.After they were married, E.Y.

    and Catharine Spahr purchased160 acres of land at $60 per acrein section 22, Marion Township,buying it off from a widow,Rachel Kring. This was the begin-ning of Spahr Jersey farm,and E.Y. is listed as the founder.Originally, a cabin was the only

    structure on the originalfarmstead. It was probably built bythe Kring brothers, and its gonenow. Linda noted. But in 1879,not too long after they bought theland, E.Y. and Catharine had a 10-room Victorian home built on asmall hill on the east side andhighest point on the property.They also planted two

    Cottonwood trees about 50 yardsin front of the house, which stooduntil 2008 and had to be removedbecause they were beginning tocrumble. And one of those treeshad been the tallest tree inHancock County!The main barn used to stand

    Chuck Schepflin went towork at the family business35 years ago and would havenever imagined where thatwould lead him.

    Schepflin went to workwith his father, Will, at hislawn and garden equipmentbusiness in the mid 1970s.

    Dad owned and operatedWillies Sales and Service,said Chuck about theFremont business. I came towork for him in 1974 andhave been here ever since.

    Chuck, who graduatedfrom Ross High School in1979, has turned his job atWillies into a second fulltime career.

    I started doing chain sawcarvings back in 1977 behindour display tent at theSandusky County Fair,noted Chuck. It was some-thing that was just gettingstarted back then. Only a fewpeople were doing it, and itjust really appealed to me.

    Chuck entered his first

    pro carving show in 1980.I was part of the

    McCulloch company team atthat time, rememberedChuck. I took third at myfirst show which was at thePaul Bunion show here inOhio. I learned a lot aboutwhat the judges were lookingfor and worked hard the fol-lowing year to change somethings. I came back the fol-lowing year and won thatsame competition in 1981.

    The competition Chuckwon was a 30-minute timedevent.

    The judges judged onaccuracy, speed, design andattention to detail, saidChuck. The winner is cho-sen by how much their carv-ings collected at an auctionfollowing the event. Wewould carve for three daysand the three day total ofwhat you collected at auctiondetermined the winner.

    Chuck, who now is partof the Stihl Pro CarvingTeam, has won 19 nationaltitles in speed and accuracy.

    I was approached by

    Stihl in 1989 to join theirteam, said Chuck. Thereare six of us on the ProCarving Team and we travelthe state year round. We areactually leaving Wednesday,Oct. 10, for the Bob EvansFest in Rio Grand, Ohio.

    Chainsaw carving hadcome a long way since itsearly beginnings. WhenChuck started carving theycarved basic shapes likecrosses and geometricshapes.

    I remember I learned onetrick where if you cut up alog a specific way at the endwhen you cracked it all apart,it made a wood log chain,noted Chuck. The animalsand all the more elaboratecarvings did not start untilaround 1981 or 82, headded.

    Today if you can think itwe can carve it, Chucksmiled. I would say that forthe bigger carvings if youwant something elaboratecarved into a tree stump orsomething like that you canalmost figure about $100 perfoot of tree. So if you have a6-foot tree stump you wantcarved into something specialyou would be looking atabout $600 worth of work.

    Chuck uses a MS 250Stihl for his detail work anda MS 441 for his block outwork. Both his saws are reg-ular stock chain saws.

    I think this is whatmakes me such a good com-petition carver, notedChuck.

    I can use my stock sawto carve anything I want.Most competition guys havespecial carving saws for their

    detail work and that takes uptime. I can use one saw theentire cut.

    Chuck uses his knowl-edge about saws for morethan competition. He givesdemonstrations on chain sawsafety to youth groups and

    organizations all the time.I just finished talking

    with the local Cub ScoutPack at Cristy Cabins here inFremont, he said.

    I gave them a safetydemonstration and actuallyshowed them how (leatherleg) chaps can actually stop asaw and save your life. I havebeen working with saws forover 35 years now, and I stillhave all my fingers and toes,he smiled.

    Safety is very importantto our carving team, henoted. The competitionshave actually stopped mostof the speed events for safetyreasons.

    Chuck is still very much a

    part of Willies Sales andService.

    This is my family busi-ness and I am extremelyproud of that, said Chuck.

    Dad is still here everyday doing this thing but it isnow more of my responsibili-ty to make sure things arerun smoothly.

    I do it all around here asfar as what my responsibili-ties are. I work on the equip-ment, sweep floors and fixtoilets, he smiled.

    I tell people I have twofull-time jobs. One is runningthis business and the other isthe carving team, and Imjust as proud of one as am ofthe other.

    Its fast-growing and drought-

    tolerant, producing tons of

    biomass per acre. It thrives

    even in poor soil and is a

    self-propagating perennial, so

    it requires little investment

    once established.To people in the renew-

    able fuels industry, Arundo

    donax also known as

    giant reed is nothing

    short of a miracle plant. An

    Oregon power plant is look-

    ing at it as a potential substi-

    tute for coal, and North

    Carolina boosters are salivat-

    ing over the prospect of an

    ethanol bio-refinery that

    would bring millions of dol-

    lars in investment and dozens

    of high-paying jobs to hog

    country.But to many scientists and

    environmentalists, Arundo

    looks less like a miracle than

    a nightmare waiting to hap-

    pen. Officials in at least three

    states have banned the bam-

    boo-like grass as a noxious

    weed; California has spent

    more than $70 million trying

    to eradicate it. The federal

    government has labeled it a

    high risk for invasiveness.

    Many are comparing

    Arundo, which can reach

    heights of 30 feet in a single

    season, to another aggressive

    Asian transplant the vora-

    cious kudzu vine.

    More than 200 scientists

    recently sent a letter to the

    heads of federal agencies

    including the Environmental

    Protection Agency and the

    Departments of Agriculture

    and Energy, urging them not

    to encourage the commercial

    planting of known invasives

    like Arundo.Many of todays most

    problematic invasive plants

    from kudzu to purple

    loosestrife were intention-

    ally imported and released

    into the environment for hor-

    ticultural, agricultural, con-

    servation, and forestry pur-

    poses, they wrote Oct. 22.

    It is imperative that we learn

    from our past mistakes by

    preventing intentional intro-

    duction of energy crops that

    may create the next invasive

    species catastrophe particu-

    larly when introductions are

    funded by taxpayer dollars.

    Mark Conlon, vice presi-

    dent for sector development

    at the nonprofit Biofuels

    Center of North Carolina in

    Oxford, hates the comparison

    with the weed that ate the

    South.Theres no market for

    kudzu, says Conlon, who is

    among those promoting a

    proposed $170 million, 20

    million-gallon-a-year ethanol

    project here and Arundos

    role in it. Theres no reason

    to manage it. It was thrown

    out in the worst places you

    can think of and left there.

    His message about

    Arundo: Itll be different this

    time. We can control it.

    But Mark Newhouser,

    who has spent nearly 20

    years hacking this nasty

    plant from Californias river-

    banks and wetlands, has his

    doubts.Why take a chance? he

    asks.___The back wall of the

    North Carolina biofuels cen-

    ters lobby is dominated bya

    large timeline, beginning

    with the General Assemblys

    2006 recognition of the

    states potential as a biofuels

    leader.The display ends with a

    panel declaring 10 percent

    in 10 Years meaning that

    by 2017, a decade after the

    centers creation, officials

    hope companies here will be

    producing the equivalent ofa

    tenth of the liquid transporta-

    tion fuels consumed in the

    state annually, or 600 million

    gallons of renewable biofuel

    a year.An extraordinarily auda-

    cious goal, W. Steven Burke,

    the centers president and

    CEO, says proudly.

    Near the middle of the

    timeline is this: November

    2011: 50-acre energy grass

    propagation nursery estab-

    lished with Arundo donax.

    The centers staff has

    explored a variety of biofuel

    raw materials, from food

    crops like corn, sugar beets

    and industrial sweet potatoes,

    to cottonwood and loblolly

    pine trees. Even pond scum

    or duckweed. All were

    either hard to raise in quanti-

    ty, too expensive or more

    valuable for other uses.

    The staff also studied so-

    called energy grasses

    giant Miscanthus, coastal

    Bermudagrass, switchgrass.

    Out behind the center, farm-

    ing director Sam Brake plant-

    ed test plots of four varieties

    of sorghum.But for hardiness, ease of

    cultivation and maintenance,

    and, above all, yield per acre,

    none comes even close to

    Arundo donax.Wow! Exclamation

    point, says Burke, who, in

    his matching gray suit and

    shirt and with his snow-white

    hair and beard, evokes the

    evangelical preacher.

    Believed to have sprung

    from the Indian subcontinent,

    Arundo has spread around

    the globe. Europeans have

    been using it for centuries in

    the production of reeds for

    woodwind instruments.

    Like kudzu, which came

    to the United States as partof

    Japans exhibit at the 1876

    Centennial Exposition in

    Philadelphia, Arundo arrived

    here in the mid- to late 19th

    century. And also like kudzu,

    Arundo was once touted asa

    perfect crop to help stem ero-

    sion. In California and Texas,

    farmers, ranchers and govern-

    ment workers enthusiastically

    planted it along waterways

    The stifling, relentlesssummer heat that devas-tated area corn crops hassome farmers concernedthat changing globalweather patterns maycause a repeat during thenext growing season orbeyond.But an Ohio State

    University agronomistsaid with foresight, properplanning and researchinto hardier corn hybrids,hope remains for adequatecorn yields despiteextremely hot weather.Peter Thomison said

    good yields begin with abalanced fertility program,something farmers dontalways consider. He said acorn after soybean rota-tion has much less animpact on soil than con-tinuous corn planting.We suggest practices

    that will buffer the growerfrom drought. Continuouscorn planting will exacer-bate it, he said.Farmers often grow

    corn after corn in order toprovide feed, butThomison said thatarrangement has left manyOhio fields lacking in

    potassium. Bottom line,potassium is an importantnutrient in preventingdrought stress, he said.(Farmers are) hearingabout new products, newtrends, and sometimestried-and true techniquesget lost in the shuffle.He also advised against

    excessive plant popula-tions. The more plantsthat share space and soil,the more crowding infields, which can lead tohigher plant loss, he said.Too much tillage in the

    spring can also causeproblems, Thomison said.That can occur when farmequipment leaves deeptrack marks in the field,which farmers try to levelout. But that can removetoo much moisture fromthe soil.Many farmers instead

    practice conversion tillageto minimize the numberof trips, Thomison said.The effects of drought

    can also be lessened bythe farmers care in select-ing corn hybrids. Thoseexhibiting high yields in awide series of locationsare better suited to dryconditions and can cutthe number of irrigationtrips, Thomison said.Its by no means sure-

    proof, but you increaseyour odds if you followthat approach, he added.He said drought resist-

    ant hybrids whichinvolve the difficult andcomplicated task of breed-ing multiple genes intoplants are being widelytested by companies, whononetheless are carefulwhat claims they make.I dont think theyre

    going to promise yieldsthat are double whatyoure getting, but thesedrought resistant cornswill reduce the risks ofdrought and provide amodest increase in yields,he said.Thomison recommends

    farmers use hybrids rang-ing in maturity, an impor-tant factor. By usinghybrids with good droughtresisting and insect resist-ing traits we protect thatcrop from potential dam-age, he said. Youre try-ing to limit your exposure.If you use a range ofhybrid, your range of vul-nerability is lower.Because the genetics aremuch different than thoseof 20 years ago, there arehybrids presently that areremarkable in the amountof stress they can take,Thomison said. If the

    corn plant tolerates highplant population and canhandle stress, it can han-dle high temperatures, headded.He said the trick is to

    plant early in the season,preferably April 20 orlater, so growth isntinhibited by a later plant-ing.As agricultural tech-

    nology and practices haveimproved, soil can actual-ly become more resistantto dry conditions, OhioFarm Bureau Federationspokesperson Seth Tetersaid. No-till farming,updated equipment andplanting cover crops canall be used to fightdrought and mitigate loss-es.The unrelenting heat

    last summer stressed thestates corn crop at a criti-cal point of development,

    resulting in damaged earsholding, in some cases,only a few kernels, Tetersaid.In anticipation of next

    years growing season,farmers are looking atimproved seeds and cropvarieties that can bettertolerate moisture or heatstress, he said.Dupont Pioneer

    spokesperson Jamie Butzsaid the company is offer-ing growers a productcalled OptimumAQUAMax, which helpsbenefits corn yields inwater limited environ-ments.Weve been the leader

    in the development of thistype of product, she said.In addition, the mod-

    ern agricultural infrastruc-ture that wasnt availableduring the Great DustBowl of the 1930s has

    made us more tolerant,more resilient to drought,Teter said.He added that veg-

    etable crops benefit great-ly from irrigation wherewater is available, but saidthe equipment is oftencost prohibitive.Still, Teter said, It was

    certainly a noteworthyyear in terms of weatherconditions, but the moodin the countryside doesntreflect how bad conditionscould have been. No oneis throwing in the towel.You have a lot of infra-structure and technologythat wasnt in place beforethat is helping the farmerweather the drought.

    Before you gather the family andhead to your local Christmas treefarm, knowing the size of tree youwill need is key. How big a treeshould you purchase? Measure theheight of the room and the width ofthe space where the tree will belocated. Take your tape measurewith you to measure the actual treeyou have picked out to fit yourspace. Trees appear much smaller outin nature than in your home.

    Next, you will need to select atype of evergreen. There is no rightor wrong choice here, it is a personalpreference. The biggest decision forthe typical consumer is long or shortneedles. The majority of Christmastrees sold in Ohio are Scotch pine,White pine, Blue spruce, Fraser fir,Canaan fir and Douglas fir.

    The Scotch pine is the most pop-ular Christmas tree sold in Ohio andthe United States. Its needles growfrom 1 to 3 inches in length and itretains its needles well. Sturdybranches can support heavy orna-ments.

    The Fraser fir has become knownas the cadillac of trees in recentyears. The blue/silver underside of itsneedles are highly desirable. Thisvery fragrant tree species has a one

    inch soft needle length and hasexcellent needle retention.

    Blue spruce trees have one-inchsharp needles with branches thatsupport heavy ornaments. The mod-erately fragrant tree is often pur-chased as a live tree and plantedafter the holiday as well as a cuttree. The blue spruce tree has anaverage needle retention.

    White pine trees are the secondmost popular Christmas tree inOhio. Their two to five inch longsoft needles are very flexible. Itsfeathery looking branches will bepulled down by heavy ornaments.Needle retention of the White pineis very good.

    Canaan fir is very similar to theFraser fir tree. Its needles are moreblue and slightly longer than theFraser fir. A fragrant tree with softneedles and very good needle reten-tion, the Canaan fir tree supportsornaments well.

    The blue-green Douglas fir hassoft, one inch long needles that arerelatively flat and is highly fragrant.Needle retention of the Douglas firis very good.

    So now that you have selectedyour perfect tree, how do you knowif it is fresh and will last the entireChristmas season? Cutting yourown tree, or having the owner cutthe tree for you at a tree farm is the

    best way to ensure a quality tree. Ifyou purchase a tree from a retail lotcheck for excessive needle loss, plia-bility and color of the needles.

    Once your get your Christmastree home, put it in a bucket ofwater in a cool location if you arenot going to set it up promptly. Treesdrink a lot of water. If you pur-chased your tree from a retail lotyou will want to cut a half-inchfrom the trunk before placing thetree in an appropriatly-sized treestand. The most important thing toremember for a Christmas tree thatwill last all season, is to ensure aconstant water lever above the baseof the tree. This means you mayneed to check the water level daily,especially if your container is on thesmall side.

    Now you are ready to decorateyour perfectly-selected Christmastree. Be sure that your lights areinspected and intended for indooruse. And remember, never leave aChristmas tree unattended whilethe lights are plugged in.

    Disposing of your real Christmastree is the final phase of its life.Being biodegradable, trees are com-monly chipped and used for mulchor as cover in fish ponds.Communities often offer curbsidepick-up or a location where treescan be dropped off to be recycled.

    There was a time when Ithought canning food inmason jars was somethingcountry women and grand-mothers did because theythought it was noble to spendhours paring fruit or vegeta-bles, stand over a hot stoveon an even hotter day andput up 12 quarts of toma-toes or peaches.Why would anyone work

    that hard, I wondered, whenall they had to do was go tothe supermarket and buy acan of tomato sauce orpeaches?Now I know. It took a

    long time but, in 2009, thecanning bug took hold andIve been hooked since. Whatstarted as a campaign tobecome less dependent onelectricity for food preserva-tion turned into an attempt topreserve anything that couldbe safely canned at home,because I could and becauseI knew exactly what wasgoing into that jar. No chem-icals, preservatives, guargum or modified this andthat just fruit and sugarand water.As I researched canning

    methods, techniques, ideasand recipes online, my mostpleasant surprise was howmany younger adults women and men alike, aredoing the same thing.Gardening and canning ishard work, and that is why Iam so impressed by the num-ber of folks out there rollingup their sleeves and taking iton. It also tells me people areconcerned about whats intheir food as much as the ris-ing price of groceries.

    SuppliesIt doesnt have to be

    expensive to can food. Iobtained an old 1946National Model 7 PressureCanner from my husbandsbuddy Mike in 2009. Weordered a new sealing ring(gasket) for the lid and a Ballcanning guide from thePresto company, who stockhard-to-find parts for Presto,Mirro and the now-defunctNational Pressure Cooker Co.The old dial gauge was inworking order so we didntreplace it.A jar lifter, a magnetic lid

    lifter and a funnel (I preferstainless steel) are reallyabout all I use in the way ofspecialty tools. The rest youhave right in your ownkitchen.The majority of the can-

    ning jars I have used so farhave come out of friendsbasements or barns, garagesales and second hand stores.Most I got free or paid verylittle for and, after a goodsoaking and scrubbing,theyre good as new if theyarent chipped. All they needare new lids and occasionallynew rings, which is muchless expensive than buyingnew cases of jars all the time.Jars range in size from half-gallon to 4 ounces, so theresalways a size to suit yourneeds. I prefer wide mouthjars when I can get thembecause solid foods, such asmeats, are much easier toremove. For liquids or softfoods, the regular mouth jarsare just fine.

    Canning fruits and highacid foods:

    Water bath canningApples, peaches, plums,

    tomatoes, jams and jellies

    are just a few foods mostcommonly processed in awater bath canner. High acidfoods and recipes usingvinegar (as in pickles andsauerkraut) can be safelycanned at 212 degrees. Its awonderful way to enjoysummer and fall fruit allwinter long, not to mentionrelishes, pie fillings, jams,jellies and sauces. In thewinter, you can take advan-tage of holiday sales onoranges or citrus; late springbrings strawberries. If youbuy fruits on sale at the gro-cery, you can process themyear round. I save most ofmy canning for fall andthroughout winter because itwarms up the kitchen and Ihave more time, since I amnot occupied with flowergardens or other outsideactivities.

    Pressure canning: veg-etables and meatsThe device I used to fear

    has become an irreplaceableaide to me. Weve all heardthose pressure canner horrorstories through the years:

    canners blowing their tops,imbedding jars in the ceiling;how dangerous they are, etc.It may have happened onceout of a million canner loads80 years ago, folks, but it justdoesnt happen anymore.Models made before the

    1970s were heavy-walled ket-tles with clamp-on or turn-onlids. They were fitted with adial gauge, a vent pipe in theform of a petcock or coveredwith a counterweight, and asafety fuse.Most modern pressure

    canners are lightweight, thin-walled kettles; most haveturn-on lids fitted with gas-kets. Modern pressure can-ners have removable racks,an automatic vent/cover lock,a vent pipe (steam vent), anda safety fuse.As intimidated as I was

    by the very name of thedevice (PRESSURE canner)I was equally determined tomaster it. Another friend ofmy husbands, a devout can-ner of vegetables and meat,helped me test an initial loadin the old canner and got mestarted on my way.I cannot remember what I

    first canned; I just know thatI got so hooked my relativesjust shake their heads nowand sigh, There she goesagain and joke about whatIll try next. The best discov-ery I have made from pres-sure canning is: meat is theeasiest thing of all.You dont have to peel it,

    blanche it, or make a syrupfor it. Just trim the fat offyour raw chicken, ham,pork, beef, venison, fish, etc,slice it to fit the size of jaryoure using, pack it with asfew air pockets as possible,and stick it in the canner.
