Success StoryMary Eileen – Learning to Love Exercise!

Hello! My name is Mary Eileen, and I have been a

member of Weight Watchers since May of 2010,

a Lifetime member since July of 2011, and a

staff member quickly thereafter. My lifestyle has

changed so much since starting Weight Watchers,

and my life has changed for the better.

“I learned to take care of myself.”

I was graduating from Auburn University (War

Eagle!!) in 2010, so I needed a dress for the

graduation ceremony. I went shopping, unsure of

what my size was, and started trying on the dress

size that fit me in high school. That one didn’t fit,

nor the next one, nor the next one.

By the time I found a dress that fit me, I felt out

of shape and heartbroken. I started to think about

how not just my mind felt (sad or emotional more

often than not), but how my body felt physically. I

lost my breath walking up and down stairs, I was

exhausted all the time, and my eating habits were

atrocious. As sad as the shopping experience was,

it was just the wakeup call I needed to start taking

care of myself; I decided to join Weight Watchers

the next week.

“I felt out of shape and heartbroken.”

Weight Watchers taught me it’s a lifestyle change

not a diet; I learned to take care of myself, respect

my whole self, and to love myself each step of the

way not just when I reach my ultimate weight

goal. I became wiser about my food choices

without feeling deprived of anything and to put at

least some type of activity into my life throughout

the week.

I reached my ultimate goal in May of 2011 (I lost

60lbs total) and became a Lifetime member in July

(best birthday present I got that year!), and while

I changed physically, I also changed personally. I

was a happy person again.

I started and continue to try new things; I’ve

learned that I love to cook and experiment in

the kitchen, that Zumba and swing dancing are

amazingly fun workouts, and that I have two jobs

I would never have had without Weight Watchers.

One of them is Weight Watchers itself while the

other is as a Preschool teacher; there is no way

I’d be able to keep up with fifteen two year olds

if I didn’t continue to do the Weight Watchers

program!

The Weight Watchers program works for me

because I work the Weight Watchers program.

I’m proud to be a part of the Weight Watchers

family and to help others become healthier and

happier people.

INGREDIENTS

40 ounces peeled and seeded butternut squash, cut into 1-1/2-inch cubes

3/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 tablespoon coconut oil

1/4 cup minced shallots

2-1/4 cups Pacific organic vegetable broth, plus more if needed

1 cup plus 2 tablespoons light canned coconut milk

3/4 teaspoon kosher salt

Freshly cracked black pepper

INSTRUCTIONS

1. Preheat the oven to 375°F.

2. Put the squash on a large baking sheet. Toss with the

cinnamon and nutmeg, cover with foil, and roast until

tender, 40 to 50 minutes. Let cool.

3. Heat a large nonstick pot over medium heat. Add the

coconut oil and shallots and cook, stirring, until tender,

5 minutes.

4. Add the roasted squash to the pot with shallots. Add

the broth and 1 cup of the coconut milk and simmer

about 5 minutes. Using an immersion blender or a

regular blender in batches, puree the soup until smooth.

Add more broth if needed and simmer for 2 to 3

minutes. Season with salt and pepper.

5. To serve, ladle the soup into 6 serving bowls.

I like to make repeated steps putting up my

laundry after it is folded. I put up each group of

items separately. For example, I put all underwear

up, walk back to the laundry room, get the socks,

put them up, walk back to laundry room, etc.

Decide how much you want to lose by each major

holiday or important date. Then put it down

in increments of how much to take off by each

date during the time period. It is easier to reach

short term goals rather than long term goals.

Keep FitThis month our staff and members at Weight Watchers

of Greater Mississippi and Southern Alabama and

Florida Panhandle (FAM) share how they incorporate

exercise into their busy week and what motivates

them to stay moving. These come from their own

experience on the Weight Watchers program and

help them overcome every day struggles. Come back

each month to get new tips and tricks you can use on

your journey.

My special needs sister recently passed away in July.

At the end of her life, her breathing was so compromised

she could not walk even three feet before having to

stop. In her honor, I am doing virtual walks.

One a month for six months following her death. I

have completed three so far. She loved shiny items, so

the medals are reminding me of her. I am using yes.fit

to do virtual walks. I get a medal, and it also helps a

I lay out my workout clothes before going to bed. So,

if you are a morning workout person, you get up and

dressed without going through the whole “I don’t

have anything to wear” or “that requires too much

energy”. The clothes are out. There is no excuse!
