Section Meeting Thursday 25 Feb 2016 SPICES AND HERBS Chemistry & Health Carolyn Fisher Decernis Rockville, MD A general overview of the components of spices and herbs is presented, along with their attributes for the food industry. Rosemary, ginger, capsicum, and cinnamon as well as others are surveyed. Bioactivities of their components are dis- cussed, with emphasis on antimicrobial, antioxidant, anti- carcinogenic and anti-diabetic activities. Her research at OSU includes molecular biology (cloning, mutagenesis), protein chemistry, biophysics (circular dichro- ism, fluorescence, mass spectrometry and high-resolution NMR, crystallography) and computational chemistry (protein modeling, protein-drug/ligand/substrate modeling).

Meet the 2016 Chair Elect Smita Mohanty is an Associate Pro-fessor in Chemistry at OSU since 2014. She received her B.S. in Chem-istry in 1981, M.S. in Chemistry in 1983 and Ph.D. in Organic Chemistry in 1988 from University of Delhi, India. She did postdoctoral studies in Chem-ical Biology/Structural Biology in the laboratories of Gary Drobny and Ra-chel Klevit in the University Washington and in the laboratory of Mark Girvin at Albert Einstein College of Medicine. English and Spanish). At McCormick & Co., Carolyn was a member of cross-functional teams developing visions, strategies and action plans for more efficient commer-cialization processes, moving from quality assurance (1996–2005) to regulatory (2005–2010) to knowledge management (2011). She completed the 5-year leader-ship training program known as the Corporate Multiple Management Board. Using her QA skills in regulatory, she managed cross-training and consensus sessions for regulatory professionals which resulted in updated desk procedures, communications explaining the science be-hind certain regulatory compliance strategies and a course within the Learning Development Center for McCormick professional development.

As senior scientist at Decernis (2012–present), Carolyn directed data capture of over 160 countries’ food additive regulations and supported the development of rule-based queries to provide regulatory evaluation of ingre-dients and formulas for global compliance. She trans-lates customer desires into actionable working solutions as well as provides customer training and issue resolu-tion related to gComply and gComply Plus.

An active Institute of Food Technologists (IFT) member and Fellow, Carolyn was an instructor for the IFT short course, Labeling Requirements and Implications for Foods Marketed in the U.S. (2008–2014) and is currently on the IFT Board of Directors (2015–2017). She is also an active member of the Flavor & Extract Manufacturers Association and the American Chemical Society.

NSF funds the REU program to provide undergraduate stu-dents experience in research. The program is aimed toward students who have completed their sophomore year major-ing in an area related to the particular REU site. The pro-gram duration is 10 weeks and provides a stipend. The US is not participating in the International Chemistry Olympiad this year because it is in Pakistan. Below is an excerpt from the letter from USNCO.

I am writing to inform you of some changes related to the participation of the U.S. at the 48th International Chemistry Olympiad (IChO) in 2016. Next year’s competition will be held in Karachi, Pakistan. Due to security concerns for U.S. citizens traveling to Pakistan, the ACS is adopting the rec-ommendation of the U.S. Department of State warning U.S. citizens against all non-essential travel to Pakistan.

Regarding the 2016 competition, the USNCO Subcommittee has decided to conduct the local and national exams as usu-al in order to motivate students to learn chemistry and rec-ognize high-level academic work. Medal recognition will be awarded based on students’ national exam scores. The study camp will not be held in 2016.
