Pan Roasted Chicken with Local Mushroom Sauce

From the Newport Cooks Kitchen (Adapted from a recipe by Craig Claiborne and Pierre Franey)

Ingredients: 1 chicken, about 3 1/2 - 5 pounds, spatchcocked

(split down the backbone, breast left intact and unsplit)Kosher salt, to taste

Freshly ground pepper, to taste2 - 4 tablespoons unsalted butter

2 - 4 tablespoons all-purpose flour 1 lb. RI Mushroom Company Shitake, Oyster, Hedgehog or

Chanterelle Mushrooms, sliced1 ½ - 2 cups vegetable or chicken broth, ideally homemade

Salt and Pepper, to taste

Special Equipment:

11”-14” cast iron skillet (use a heavy-duty skillet or low stove top pan of the same size if cast iron skillet isn’t available)

1 brick or stone 1 round plate, just wide enough to fit comfortably inside the skillet

Preparation: Sprinkle the spatchcocked chicken on both sides with salt and pep-per and lightly rub. Fold wings under to secure them. Melt the but-ter in the pan over low heat and add the chicken, skin side down. Cover chicken with a plate that will fit comfortably inside the skillet. Place a brick (covered in tin foil, if you’d like) or a heavy can on top of the plate to hold it down. Cook over low heat 25 - 40 minutes, until skin is deeply browned and beginning to crisp. It’s best to leave it alone until at least 20 minutes into the process. Remove brick and plate. Turn chicken so skin side is up. Replace plate and brick and continue cooking for about 15 - 35 minutes more until a meat thermometer inserted into the center of the breast reads almost 165 degrees. Meat should be just beginning to fall off the bone. Remove chicken and pour off excess fat from the skillet, still leaving about 2 - 4 tablespoons in the pan. Over medium low heat, add the sliced mushrooms and cook until moisture begins to release, about 5 minutes. Salt and pepper to taste. Continue to cook another 5 minutes. Add the flour to the mushrooms and fat, stirring with a wire whisk over medium heat. Gradually add the broth and, when thickened, return chicken to the skillet, skin side up. Add additional salt and pepper to taste. Cover with the plate and weight and con-tinue cooking over low heat about 20 to 30 minutes longer or until the meat is exceptionally tender. Spoon the sauce over the chicken. Cut chicken into serving pieces, and serve with the sauce and a side of rice or quinoa.

Court Tennis – also known as Real Tennis or Royal Tennis as it is lovingly referred to by those who play regularly - is considered the foundation of racquet sports (beginning as early as the 12th century). The game is played on an indoor court that resembles lawn tennis but with added quirks like walls and a sloping roofline, recreating the nooks in which the game was originally played. These courts are few and far between. With only 47 in the world, and nine in the United States, Newport is fortunate to be home to one of these rare courts.

Newport’s National Tennis Club continues centuries of tra-dition, has an active community of players, and welcomes all newcomers. The sense of tradition often ignites a pas-sion in a new player that evokes a lifelong love of the sport and its lifestyle. The impressive resume of Rich Smith, the National Tennis Club’s head pro, includes US Court Tennis Association Professional of the Year and a top ten singles in the world ranking with many appearances in tournaments worldwide. The National Tennis Club has easily accessible membership tiers, the best for newbies being the “Taste of Tennis” program for 60 days which includes an introduc-tory lesson, racquet rental, and court rental access during the membership period. Shorter days, falling temperatures and the Interna-tional Tennis Hall of Fame indoor courts in a major rebuild could be considered a perfect storm for those year-round islanders who crave racquet sports ev-ery season. Or this could be the perfect opportunity to branch out to new court sports that thrive in the cooler months.

Paddle Tennis (or Platform Tennis) is yet an-other option for racquet heads. Unlike court tennis and squash, paddle is played outdoors - even in the winter. There is a net, and it has some resemblance to lawn tennis, except the court is about 1/3 of the size and it is on a raised platform surrounded by screens or walls. According to avid paddle player Ag-gie Perkins, “One point could go up to 100 or more shots, so you are constantly running.”

Paddle Tennis is played outdoors year-round at these Rhode Island clubs (contact the clubs for more information about joining or visit PlatformTennis.org): Newport Country Club, Newport; Conanicut Yacht Club, Jamestown; Carnegie Abbey Club, Portsmouth; Sakonnet Paddle Tennis Club, Little Compton; Rhode Island Country Club, Barrington; Point Judith Country Club, Narragansett; Warwick Coun-try Club, Warwick; Misquamicut Club and Shelter Harbor Inn, both in Westerly.

Another racquet sport that can be played lo-cally is squash. It has a faster pace than lawn or court tennis because it is played sans net and within four walls. Played well, the sport can act as more of a chess match of squash ball physics and mental ability.

The Newport Squash Club has two inter-national sized squash courts and is open to members 24/7. John Wilson is the club pro who operates the location and is also avail-able for lessons. here is no doubt that the tenacious sailors of the Vol-vo Ocean Race are in love with the ocean and all of its won-der. The race, a nine month marathon around the globe on a fleet of the world’s most sophisticated racing machines, is acknowledged as the greatest test of sailing prowess and human endeavor.

Of the nine teams competing, only one calls Newport their home base: Team Alvimedia. Team Alvimedica was cre-ated by a group of determined young men who harnessed an equally dedicated sponsor, Alvimedica, to make their dream a reality. Skipper, Charlie Enright of Bristol, bow-man, Nick Dana, and on-board reporter, Amory Ross, both of Newport, are three of the incredible young talents on board manifesting a dream.

After traveling deep into the southern ocean and navigat-ing through the world’s most hostile seas, the port of New-port will welcome these monohull boats to the harbor in early May 2015. Sail Newport will host all nine teams for an extraordinary stopover complete with a race village, in-port racing, a VIP Ocean Club, fabulous food, Volvo Ocean Race simulators and very special marine education experi-ences for all ages in the “Blue Zone”.
