Exposure to heat: When fats and oils are exposed to high heat or while cooking, they can be damaged.

Oxidative damage of Oils: Depends on 2 factors

1.Oils which has high concentration of polyunsaturated fatty acids tend to oxidize on reaction with oxygen or heated at high temperature.

2.The presence of antioxidants in the Oils counteract the oxidative damage when consumed.

Oils like soybean and canola are high in polyunsaturated fats, thus get oxidized easily when exposed to heat.

When cooking with these oils, some of the carcinogenic compounds actually vaporize and may contribute to lung cancer when inhaled

Oils are can have either saturated,

monounsaturated or polyunsaturated fats

Use oils only for cooking which has fats (monounsaturated fats) that are stable at high heat.

Olive oils has got the highest amount of monounsaturated fatty

acids

All vegetable oils have polyunsaturated fatty acids making them unstable after heating

There are two properties of cooking oils that matter most:

Smoke Point: The temperature at which the fats begin to break down and turn into smoke.

Oxidative Stability: How resistant the fats are to reacting with oxygen.

Olive oils meant for cooking has a high smoke point and contains mostly monounsaturated fatty acids, which are actually pretty resistant to heating & oxidative stress
