ORCHID PAYS TRIBUTE TO JIMJIM FOWKES • ‘SIR JAMES’ • 1955-2012

IF CARLSBERG DID LANDLORDS...JIM WAS ONE OF THE BEST!In 1991, Jim and Rach moved to Southsea when theyworked for Friary Meux and it was then that Jim’s lovefor another woman started……. Her name was Owens. 21 years later with a stint at running The Pheasant inAmersham and The Red Lion, in Cosham, his true lovewas still Owens where he introduced the regulars toBEANO’S (jolly days out) trips to Amsterdam andenjoyed his love of England rugby, with trips toTwickenham for the Army v Navy battles on the pitch. So we ask that everyone raise their glasses one last time and say.....

CHEERS!

THANKS...Jim’s passing was sudden andwithout warning, but what comeswithout warning is no suffering.

His celebration of life servicetook place at PortchesterCrematorium on Friday 27th January 2012

Our thanks go to Vicky from The Channings Hotel, Paul and Johnfrom The Three Blackbirds, Wendy andMarcel from The Red Lion Hotel andJames and Dan from Sovereigns, all ofwhom helped on the day of the funeral.

RUFUS REMEMBERS..There are two things I will really always remember about Jim – he was a wonderful character and a truly great Pub Manager.His wonderful character was summed up at his funeral whereeverybody celebrated his life dressed in England rugby shirts;only Jim could do that. A truly great pub Manager, he left ushaving earned a performance bonus; only Jim could do that.

Assistant Manager Sam has supported Help for Heroes fora while and was due to take part in a long distance walkfor the charity last year. Unfortunately an injury to hisknee stopped him. This year’s charity challenge is set to go ahead and both Sams are very excited. Sam Lawless says: “We aim to leave Bath on Saturday14th July and head towards the Midlands crossingthrough the Cotswolds; we aim to complete the walk injust under two weeks. Please donate to the cause, even ifit’s a small amount, to help us raise money and help thepeople fighting and protecting our country.

ABOUT ‘HELP FOR HEROES’The charity ‘Help for Heroes’ was launched in October2007 in order to provide direct, practical support to thosewounded, sick or injured in the line of duty since 9/11. Allthe funds raised to date are either allocated or spent onthe direct, practical support of those wounded in thecurrent conflicts. To date, H4H has funded a variety ofprojects including the £8m Rehabilitation Complex atHeadley Court, a new £3.5m treatment centre for CombatStress, adaptive adventure training through the BattleBack programme and the creation of a £6m QuickReaction Fund to support individuals in need.

“It’s about the 'blokes', our men and women of theArmed Forces. It’s about Derek, a rugby player who haslost both his legs, it’s about Carl whose jaw is wired upso he has been drinking through a straw. n I’VE DONE IT - 30.09.11I’ve done it! I’ve done it! I’ve signed up for myDiamond Club card. Under pressure from Kath andTony at the Talbot Inn in Milton Keynes. To be honest it’s unbelievable value for the over-50's: £6.95for a Great British Carvery (went for gammon thistime around) followed by Cherry Bakewell SpongePudding, the best dessert in the history of desserts,with a little pot of fresh cream on the side (better than the ice cream or custard option). Question is: do we use the Diamond Club enough? – Orchidalready has more than half a million Diamond Clubmembers (Mike Wilson is the oldest at 82, I'm theyoungest at 36) driving great sales across ourbusinesses during the week, but could we use it more?

Bear these facts in mind:• 75% of UK wealth held by over 50's• Over 50's are joining Gyms at a faster rate than any other group (2010)• Over 50's bought more Wii Fit games consoles than any other age group (2010)• Over 50's account for 50% of all consumer spending but only 10% advertising aimed at them• 40% of chocolate is bought by grandparents• In a study to be released this week, the charity Age UK says people aged between 65 and

74 spend more on recreation, relative to their income, than any other age group• Meanwhile, more than a third of holidays are taken by over-50s, according to insurer LV.• The "grey pound" has never been more valuable. Annual spending in the UK by

households that include someone over the age of65 passed the £100bn mark in 2009, with retiredpeople more likely than ever to enjoy foreignholidays and cultural activities or to spend moneyon home improvements.

• Recession has affected over 50's less than youngerpeople, 25% of Over 50's the recession had noeffect, 60% have made no cut backs

FACEBOOKFACTS &FIGURES

A NOTE FROM MONIQUE…2011- 2012 proved to be quite a year for Orchid in terms ofcommunication and online presence. We got the Facebooknumbers into thousands, got the ball rolling on an uber swishnew company website and managed to get Rufus Hall writingan online blog – surely the greatest feat of all!

Social media originally served the purpose of connecting friends and allowing peers tocommunicate with one another. However, in more recent years businesses have startedto incorporate social media into their marketing and communications plans. Not onlydoes social media give your business online presence, it also allows you to contactcustomers on a more friendly level, and keep them constantly up to date with anynews to do with your pub and bar, and also in more recent years allow you to offerpromotions and offers. The important thing to remember when handling aFacebook page or a Twitter account for your business is to keep it personal andfriendly. Pubs, bars and restaurants are ‘social environments’, so what better placeto invite drink lovers and food fanatics to talk about their appreciation for thehospitality section than social media networks, such as Facebook or Twitter? Social media has revolutionised the way we communicate, whether with friends,our favourite brands, or how we as a company communicate to others. Since developing Orchid’s Facebook site, I have noticed how much ourcustomers enjoy interacting with the company and current pub affairs.

The most surprising thing was witnessing how shocked customers were when Ireplied to their feedback, and I think they felt genuinely grateful/surprised tohave their opinions acknowledged directly and so quickly. We talk to customersin our venues, on the phone, so why not over social networks? The benefit ofthese networks is that social media is like a conversation; you can listen towhat your customers are saying, and respond in a friendly manner – creatingpositive relationships with the fans. I’m hoping to increase Orchid’s fans toway past the 5,000 mark, but although keen for numbers, I want to makesure I do this in a positive way by continuing to engage with the customersand by avoiding bombarding them with pub marketing; the page needs to befun, interesting and reflect Orchid’s fun and enthusiastic nature.

n THE NEW YORK TIMES

What’s he on about now? Bleating on about Morrisons was bad enough?Well, bear with me on this one! The NYT is the United States’ most respecteddaily newspaper renowned for the quality of its journalism since its inceptionin 1851 and read across the States not just in its hometown NYC. In 2008 it hada daily (albeit declining) circulation of just shy of one million and also won its106th Pulitzer Prize that year. In 2009 the NYT nearly went bust. And here’sthe rub for us. The NYT nearly went bust because it did not move with thetimes (?) in that it did not embrace the digital and social media age:• Online competitors (e.g. The Huffington Post which has just opened a British

online paper) were delivering news quicker and cheaper to the onlinecommunity.

• Advertising revenue reduced dramatically (newspapers cannot cover theirprint cost without advertising revenues) as classified users moved to eBay,Craigslist etc.

• Large companies like Ford, GM, etc moved their sales advertising online.However closure of the title was averted by a swift change of focus onto thedigital age led by Managing Editor Dean Banquet.

• An on-line version, initially with a metered paywall, was introduced in 2010.NY Times has attracted 146 million visitors so far this year.

• Subsequent online advertising revenues tripled• Each reporter was required to blog weekly and tweet daily. The NYT now has

more reporter blogs (120) than any other newspaper on the planet• NYT is the first newspaper to offer a video game as part of its editorial content

and launched Apps for iPhones, iPads and Android smartphones. (Oh, forgotto add the newspaper is now thriving and back in profit!)

By comparison how are we doing at Orchid?• Well our Facebook site is thriving with nearly 4,000 users (including 40 100

Club members, a number which is increasing monthly)• Twitter has 1,125 followers• Even Simon Dodd has 362 followers on Twitter (lots of sad people around!)

n THE SINGAPORE NOODLE CHALLENGE (MORRISONS VSTHE PLOUGH AND DRAGON)

Okay, so here he goes harping on about Morrisons again… Fresh food, Britishmeat, great value… Just like Orchid, tapping into the move towards, better,fresher food… All that’s still true but slightly different this time. Morrisons haveinitiated a move away from salt-soaked ready meals launching a “Fresh Ideas”range, which is essentially meals ready-to-make with all the fresh ingredientsprovided. I put them to the test last night by preparing myself (!) customers to taste different products and educate them on different cuts• Hunter’s Chicken on the Fresh Ideas range and in the restaurant

STEVE AND TRACY FROM THE OLD BALL had 50 Wales fans visitthem to watch the 6 Nations. It was a totally unexpected visit, butthe team handled it with grace and a good time was had by all. Thegroup arrived at 2.30pm after visiting the pub earlier to check itout. Steve showed the group around and gave them menus to passround the coach whilst they went into Leeds shopping.

The fans sang the Welsh national anthem and continued to singthroughout the match, providing plenty of entertainment for theother customers! The visit put an extra £800 on a normal Sunday –a fantastic result!

Well done to Steve, Tracy and the Old Ball team.

The Knowles, BlackburnTHE KNOWLES HAD THEIR VERY OWN REVERSE BUNGEEjump up and running last month. The ride was in aid ofcancer charity Christies Hospital. The photo on the rightshows Chris from the kitchen and Tom, the front of housesupervisor about to be flung in the air!

OMG! would like to say a huge well done to Jacqueline and allat the Knowles who managed to raise an amazing £3,800from the event, and over £500 as a team.

Loads of money, well done!!!

Place the amaretti biscuits into a bowl and crush them with the end of a rolling pin.Divide among two serving glasses and set aside.

To make the zabaglione, half-fill asaucepan with cold water and bring it tothe boil. Meanwhile, find a large heatproofbowl that will sit over the saucepan withoutthe base touching the water. Place the eggyolks and sugar in it and whisk together untilthe mixture is creamy and light in colour.

Add the marsala or sweet wine, whisky andbrandy and whisk again.

Set the bowl over the pan of simmering waterand continue whisking for a further 5-8minutes, until frothy. Once the whisk leaves a pattern in the surface of the mixture, it is ready.

Pour the hot zabaglione over the amarettibiscuits in the glasses and serve immediately.

COCKTAIL OF THE MONTHHot Buttered Rum“OK, as I’m sure you’ve all realised, it’s bloody cold at the moment!!! So what better way to warm our cockles this month than with a hot rum cocktail!”50ml Dark Rum (I recommend a rich strong rum like Lamb’s Navy)2 tsp soft brown sugar, 1 tsp unsalted butter and hot water

INSTRUCTIONSn First things first, pop the kettle on! While it’s boiling, add the rum, sugar and butter to a

latte glass or small mug. Top up with hot water and stir well with a cinnamon stick untilthe sugar has dissolved and the butter has completely melted.

n Whilst the thought of drinking butter may be off putting to some at first (myself included!)this is definitely a try it before you knock it type of drink! The butter gives a lovely richand velvety texture to the drink and compliments the sweetness of the sugar and therum perfectly!

n Drink it while it’s hot!

Following his resurrection of Tottenham, many willbe sad to see him go from White Hart Lane, howeverit’s safe to say England will be in good hands. Nowthat he’s in the clear of tax evasion, there shouldn’t be anything getting in the way of this happening -unless he says no which is highly unlikely.

Almost every bigwig in football has expressed theirfavour for Redknapp for England. David Beckham,Alan Shearer, Sven-Goran Eriksson, Rio Ferdinandand Phil Neville have praised the TottenhamManager and given their backing to him leading the Three Lions.
