Fall is finally in full swing. Now that we’ve scared away the lingering Halloween ghosts, we can focus on family, food
and the things we’re grateful for. And at Law Offices of Shane Smith, we’re grateful for YOU!
Directions
INGREDIENTSFOR THE CRUST• 1 1/4 c. gingersnap cookie crumbs• 2 tbsp. granulated sugar• 1/4 c. unsalted butter, melted FOR THE FILLING• 12 oz. cream cheese, softened to room temperature• 1/2 c. pumpkin puree• 1 large egg, plus 1 large egg yolk• 1/2 c. granulated sugar• 1/2 tsp. ground cinnamon• 1 tsp. pumpkin pie spice• 1 tsp. pure vanilla extract
Mini Pumpkin Cheesecakes!
1. Preheat oven to 350°. Fill a 12-count muffin pan with 12 liners and a second 12-count muffin pan with 4 liners (this recipe makes 16). Set aside.
2. Make crust: Mix together cookie crumbs, sugar, and butter in a medium bowl until combined. (The mixture will be thick, coarse, and sandy.) Press a heaping tablespoon of mixture into each liner, making sure the crust is tight and compact. Pre-bake crusts for 5 minutes, then remove from oven and set aside.

Xarelto®, a blood thinner, has been linked to serious side effects including internal bleeding, gastrointestinal bleeding, brain
bleed and death. Lawsuits filed against the maker, Johnson & Johnson subsidiary Janssen Pharmaceuticals and Bayer Corp.,
have been consolidated in Louisiana federal court. These lawsuits come on the heels of
the recent $650 million Pradaxa® settlement. Researchers linked Praxada®, also a blood-
thinning medication, to more than 500 deaths. Xarelto® blood thinner litigation has been consolidated before U.S. District Court Judge Eldon Fallon in the Eastern District of
Louisiana, who presided over suits against Merck & Co. over its medication Vioxx. The
Vioxx litigation resulted in a $4.25 billion settlement in 2007.
This Thanksgiving, my humans seem to have promoted me to cook. A decision they will surely regret when they realize I have ulterior motives. Yeah, that’s right—I’m going for the BIG ONE this year. That turkey never stood a chance. And after that, it’s the stuffing and mashed potatoes. Skip the veggies (veggies on Thanksgiving? Barbarians!). And if I make it that far, I’ll try diving into that sweet, sweet pecan pie to finish off my campaign. Wait…this is just a costume for the picture? DOGGONIT! Well, a pup can dream.
I hope you and your family have a plentiful Thanksgiving and don’t forget to sneak some scraps under the table for your furry baby when that food coma hits!
Dangers of Xarelto®
1. They’re a charity that creates custom costumes for kids in wheelchairs, designing the costume around the chair. The goal? To make the wheelchairs fun and exciting for the kids who need them.
2. The founders, Ryan and Lana Weimer began the charity for their kids, 3 of whom have Spinal Muscular Atrophy, which requires the use of wheelchairs for the rest of their lives.
3. They saw how much joy their kids got from their decked-out chairs and realized that every child in a wheelchair should feel that way.
4. The charity works by organizing a team of volunteers and artists to build whatever kind of costume the child wants.
5. Each chair costs about $1,500 in materials and 120 hours of build time.

DIY Velvet Pumpkins
Chef Gizmo at your service!
Step 1: Prep Materials Prepare and protect your work surface by laying down a length of kraft paper. Pull stems off of each foam pumpkin but do not discard them. Lay the velvet fabric flat on the workspace, then place a pumpkin in the center.
Step 2: Cut Fabric Cut a two-inch wide hole where the pumpkin stem was located. Cut a circle out of your fabric that’s large enough to fit around the pumpkin. You need the outside edges of the fabric to reach the stem area. Cut an elongated triangle on the edge of the fabric (called a “dart”).
Step 3: Glue Velvet Pull one side of the velvet fabric up and around the pumpkin. Secure it at the stem hole with hot glue on low heat. Repeat on opposite side. Gather fabric in a pleated fashion on both sides of the secured areas. Repeat on all sides until pumpkin is covered. Dab hot glue around the stem hole. Gather any excess velvet at the top and stuff it into the hole. Use a dowel, if necessary, to push the fabric in. Let dry.
Step 4: Create Stem Unfurl a length of twine and wrap it around the pumpkin stem. Start at the top and work around until the stem is covered, securing with hot glue as you go. Attach the wrapped stem to the pumpkin with hot glue.
Step 5: Add Leaves Trace or draw leaf-shapes onto kraft paper. Trace onto felt and cut out. Place a dab of glue near the base of the leaf and pinch together to give it shape. Repeat to create as many leaves as desired. Then attach around the stem of the pumpkin with hot glue.

FOR THE TOPPING• 1 c. store-bought or homemade salted caramel• 1/2 c. pecans, chopped and toasted
3. Make filling: In a large bowl using a hand mixer or in the bowl of a stand mixer using the whisk attachment, beat cream cheese on high speed until smooth, about 1 minute. On medium-high speed, beat in pumpkin, egg and egg yolk, scraping down sides of bowl as needed. On high speed, beat in sugar, cinnamon, pumpkin pie spice, and vanilla until combined.
4. Pour filling evenly into each crust, then bake until centers of pies only slightly jiggle, 18 to 20 minutes. Let cheesecakes cool at room temperature in pan set on a wire rack. Once completely cool, place pan in refrigerator for at least 2 hours.
5. Once chilled, drizzle with caramel and garnish with pecans, then serve.
