About Opti.Form Pro P24 Opti.Form ® Pro P24 belongs to Corbion Purac’s Opti.Form ® line of products which are the gold standard in Listeria control. Opti.Form Pro P24 is the first generation of antimicrobial blends developed to contain sodium propionate. This blend of potassium acetate and sodium propionate allows you to match existing safety levels of your products while reducing cost up to ±75%. Cost-effective The combination of acetate and propionate allows for a more cost effective solution than Opti.Form PD4. Opti.Form® Pro P24 belongs to Corbion Purac’s Opti.Form® line of products which are the gold standard in Listeria control. Opti.Form Pro P24 is the fi rst generation of antimicrobial blends developed to contain sodium propionate. This blend of potassium acetate and sodium propionate allows you to match existing safety levels of your products while reducing cost up to ±75%.

Targeted use

Opti.Form Pro P24 can be used in both cured and uncured RTE meat items with a full fl avor profi le. As of March 2013, the FSIS has approved the use of sodium propionate in USDA meat products. Sodium propionate can contribute a sweet or musky fl avor so seasoning blends may need to be adjusted. Opti.Form Pro P24 at 0.8-1.5% can replace traditional lactate/diacetate inhibitors, resulting in decreased level of solids contributed to the meat formulation. As such, this product will result in the greatest cost savings where this empty space can be fi lled in with additional water, as opposed to solids from another source.

The Listeria Control Model 2012

Corbion Purac o� ers a unique software tool – The Listeria Control Model. The model calculates the appropriate amount of Corbion Purac solution required to control Listeria in meat items. The model is adjustable for several formulation parameters to accurately predict Listeria suppression. This tool enables producers to save development cost, decrease time to market end increase food safety levels.

Figure 1 shows the results of Listeria suppression in a hot dog formulation, stored at 4°C/39°F. Addition of Opti.Form Pro P24 inhibited Listeria growth below 1 log for 120 days
