LADYBIRDS WITH SALMON

INGREDIENTS

a baguette

200 grams Philadelphia cheese

200 grams smoked salmon or ham York

4 Cherry tomatoes

8 black olives and some parsley decorating

STEPS

Wash all the ingredients. Cut a baguette and smoked salmon or ham york in small slices. Smear 8 slices with cream cheese and put the smoked salmon or ham york slices above. Cut the cherry tomatoes and olives in half. The olive is the head and the tomato is the body of our ladybug. And with the other half of the olives make small pieces and place on top of cherry tomato imitating motes wings ladybugs. Put the parsley for garnish.

SPRING ROLL

INGREDIENTS

sliced bread, (better without crust),

spread cheese

your favorite cold meat.

STEPS

Over the table, you have to put slices of bread, one by one. Two lines of three slices, I think that It’s enough. But you see how many are necessary. You have to put them very close and after that you have to pass a rolling pin for the slices to join them, but it’s no necessary that this you do it strong. After that, you spread the cheese over the bread, and over the cheese, you put slices of cold meat. When you have finished to do it, the next step is to roll it. Carefully, you put the Swiss roll into the fridge, wrap in foil. And you finished. When you want service it, only you have to take it from de fridge and slices. I think that she will like it.

LASAGNE

INGREDIENTS

12 sheet lasagne pasta

1 can tomate sauce

400g beef mince

200 g grated mozzarella

1 red pepper

2 carrots

3 tbsp olive oil

2 tbsp oregano

2 tsp salt

First of all, boil the pasta for 10 minutes. Meanwhile, cut the vegetables and reserve. After 10 minutes, the pasta will be ready so, drain and reserve.

Heat the oil in a frying pan. Add the meat and vegetables and fry. Add the tomato sauce, the oregano and the salt. Stir and mix. This will be the stuffing.

Place some of the pasta strips on a baking pan and then add the stuffing. Repeat as many times as you want but remember to end up with a layer of pasta.

Sprinkle some mozzarella cheese and cook in the oven for about 30 – 40 minutes until golden brown on top.

ESCALIVADA

INGREDIENTS

Red pepper

Aubergine

Tomato and onion

Brown bread

1 roll goat cheese

Black olives

Anchovies

Olive oil

Salt

STEPS

Put the pepper and aubergine on a grill in the oven (200-180º) When the vegetables are cooked (about 40 minutes). Take them out of the oven and wait a few minutes. Peel the pepper and aubergine remove the seeds. Then, shred them.

Slice some bread. Cover with a few strips of pepper and aubergine. Add salt and olive oil. Then, you can complete the toast with one or two anchovies and back olives or with a small piece of cheese roll. Serve warm.

“BOCAPIZZA” 

INGREDIENTS 

6 loaves bread

1 can crushed tomato

6 cheese slices

6 cooked ham

1 tin pineapple

2 tins mushrooms

STEPS

Open a loaf of bread in two slices. Spread the crushed tomatoes over the bread slices. Put three or four slices of cheese on top. Cut up the cooked ham into small pieces and cover the cheese. Add the mushrooms and small pieces of pineapple. Finally, cook in the oven for 15 minutes at 225.

SPAGHETTI CARBONARA 

INGREDIENTS

250 g spaghetti

1 onion

4 mushrooms

100g bacon

200ml cream

1 egg

olive oil

oregan leaf

salt

pepper

STEPS

First of all, cook the spaghetti in slightly salted boiling water for 15 minutes. Strain them in cold water.

For the sauce, chop the onion, mushrooms and bacon and fry them in a pan. Season to taste.

Mix the eggs and cream and add them into the pan. Cook at low temperature for about 10 minutes.

Pour the spaghetti on a dish and add the sauce. Sprinkle some oregan on top.

CHICKEN AND PASTA SALAD 

INGREDIENTS

Pasta

Tuna

Eggs

Ham

Mushrooms

Chicken.

STEPS

Bake the pasta and eggs and bake the chicken in separate pots. Then, chop the tuna, mushrooms and chicken. Peel and chop the eggs. Mix all the ingredients.

MAIN COURSES

MEATBALLS WITH POTATOES

INGREDIENTS

500g minced beef

500g minced pork

1 egg

2 cloves garlic

4 potatoes

Olive oil, flour, parsley, salt and pepper

For the sauce:

3 cloves garliC

1 onion

1 carrot

1 red pepper

1 green pepper

1 bay leaf

250g fried tomato

100 ml white wine

STEPS

Peel the potatoes and chop them. Fry them in a pan with hot oil until they´re golden brown. Then, drain them.

Mix the beef, pork, egg and chopped garlic and parsley in a bowl and let stand for at least 30 minutes to allow the flavors to mix. Season to taste. Then, shape the meatballs.

Flour and fry them in hot oil until they´re golden on the outside.

In a pot put a little oil and fry the meatballs. Add the chopped onion and garlic and bay leaf.

When the onion is poached, add the chopped pepper and carrot. Fry and add the fried tomato. A few minutes later, add the meatballs and white wine, letting it boil. Simmer for 10 minutes.

ROAST CHICKEN

INGREDIENTS

1 chicken

1 garlic clove

4 potatoes

1 cayenne stick

Oil

Salt

Parsley

STEPS

First, peel the potatoes and the garlic. Then, cut the potatoes and the chicken into pieces. Chop the garlic. Season the chicken with some salt and parsley. After that, pour some oil in a frying pan and heat it. Put the garlic in the frying pan. Then, drop the chicken in. Also, add the cayenne. Cook it for about three minutes. Turn the chicken over and fry it for three more minutes. On the other hand, fry the potatoes in a frying pan with some oil. Pre-heat the oven to 200ºC . Put the chicken with the potatoes in an oven dish. Bake it for about ten minutes. Finally, turn off the oven and after five minutes, serve it with some salad.

CHICKEN WITH LEMON

INGREDIENTS

1 chicken

10 tbsp oil

1 tbsp sugar

1 glass white wine

1 glass water with stock cube

1 big onion

1 bay leaf

3 lemons

Salt

pepper

STEPS

Firstly, chop the onion and lemons. Heat the oil in a pan and add the chicken. Cook until golden brown. Remove it and put it on a plate. Secondly, put the onion in a pan for 5 or 7 minutes to brown. Then, put the chicken again in a pan with the lemon. Add the white wine and the water with the stock cube. Besides, add the bay leaf, sugar and salt. Two minutes later add a pinch of pepper slightly. Finally, cook for about 45 minutes. With a fork you can check if the chicken is tender. Then it is ready to serve.

SIRLOIN STEAK WITH FRUIT SAUCE 

INGREDIENTS

Beef top sirloin steak

Olive oil

Salt

Freshly ground black pepper

2 apples

a nut of butter

4 tsp sugar

Cinnamon

½ glass water

Start with the sauce. Peel and cut the apples. Then, boil in water with the other ingredients for 15 minutes. Then, crush with the mixer.

Next, sprinkle both sides of the steaks with salt and pepper. Grill the steaks 3-4 minutes per side.

PAELLA   

INGREDIENTS

PAELLA BROTH

3 cups rice 1 Large onion, chunked

1 Large onion, diced 2 garlic cloves, diced

3 garlic cloves, minced 1/2 large pepper, diced

1 large pepper, diced 1 plum tomatoes,

1 piquillo pepper 2 Carrots, pieces

1 sweet pepper 1 Leek, sliced

4 plum tomatoes, diced Parsley, celery, rosemary

2 Tin (4 ounces) homemade tomato sauce

2-3 tbsp fresh thyme

4 3 Lemons, quartered and 1 lemon sliced

5 clams

16 prawns 5 prawns

1/2kg Clams (Type: Babosa) 4 King prawns

16 prawns 8 cockles

16 King Prawns 1 Monkfish head or hake head

1/4 Cockles 3-4 Piece of fish

16 mussels 3-4 squid

1/2 Tabs paprika and a pinch saffron

STEPS

Prepare the broth first. Put the olive oil, 1 onio, chunked, 2 garlic cloves diced in a pot and cook. Add the rest of vegetables and the seafood when they are tender.

When the cockles and clams open, add the water. When boiling, add the fish with the rosemary and 2-3 tbsp fresh thyme, a pinch salt, saffron and lower to a medium heat for 25 min. Strain before you add the paella.

Coat the bottom of your paellera with olive oil. Add the garlic and onion. Then, put the shellfish unless the mussels. When the cockles and clams open, remove the shellfish. Add the rest of the vegetables. When they’re tender, stir and add the paprika, parsley, thyme and tomato sauce for 1-2 min on high heat.

Add the rice. Stir for 1-1/2 minutes. Then add the broth very slowly. Cover the whole mixture and add the saffron. Keep warm and it will boil immediately. Lower to a medium heat but keep it at a steady boil.

Stir in the first 5-10 minutes adding as much broth as necessary to keep the rice fully covered. 10 min later, let the paella sit and cook for other 10 min, adding broth bit by bit to keep the rice submerged until the rice on top is tender.

8 minutes later, add the shellfish on top and cover for 4 min. Then turn over the prawns and king prawns. Cover the paella and take off heat. Let it sit for a few minutes.

Once you're sure it's ready to uncover, garnish with lemon wedges and enjoy!

CUSTARD CAKE

INGREDIENTS 12 eggs 1 spoontable sugar for every eg. 1l. whole milk 150 gr. Sugar STEPS

Bring a pan, put it over the stove. Add 150 gr of sugar, let the sugar simmer but don’t forget to stir it with a wool spoon. Take a cake mold, and pour the mix. Be careful!!! Let it cool. In other contairner, break the eggs, add 12 spoontable sugar and pour 1l. milk, bet it in the mixer 1-2 minutes and add the mixture to the cake mold. Last step, stem it in the oven 45 minutes, 150 degrees

A SOFT CAKE

INGREDIENTS 3 eggs ¼ kilo sugar ½ glass milk ½ glass olive oil ¼ kilo flour 15 grams yeast grated lemon and ½ orange Optional: chopped nuts Trick: a little salt in the dough STEPS Preheat the oven to 180º and grease a baking pan. Then, coat with flour. Mix the milk, eggs, oil, lemon, sugar, grated lemon and orange. Beat at high speed with a mixer for 2 minutes. In another bowl, combine the flour with the yeast and sift it. Add the flour slowly to the mixture. Knead until you get a homogeneous mass. Pour into the pan and bake for about 40 minutes. Decorate with sugar glass or chocolate.

TRIPLE CHOCOLATE CAKE

INGREDIENTS 1 bar (250g) dark chocolate 1l cream 2 bars (250g) milk chocolate 3 glasses milk 3 bars (250g) white chocolate 4 packets powdered gelatin STEPS First, chop the dark chocolate. Add a little milk and cook it to low heat. Put 1 and 1/3 packets of powdered gelatin to the rest of milk and stir until they are both mixed. Add the mixture and 1 glass of cream into the pot. When this mixture is boiling, add the chocolate. Then, when the mixture is cooked, pour it into the baking pan. Let it sit for about 30min. Repeat the same steps for the other types of chocolate. When you finish, put the cake into the fridge for 4-6h. IMPORTANT: remember that you have to wait 30min before pour the next chocolate into the pan.

OREO CAKE

INGREDIENTS 1l cream 2 or 3 tbsp sugar Powdered gelatin A package of Oreo cookies 1 chocolate bar STEPS First prepare the gelatin and let it stand. Then melt the chocolate. Put the liter of cream and the rest of the ingredients (gelatin, sugar and melted chocolate) in a big bowl and mix all of them. In another container put the cookies, previously crushed. When you have the oreo base, add the mixture and finally keep it in the fridge during the night. The next day it will be ready to serve.

LEBKUCHEN

INGREDIENTS 1 Kg flour 1 Kg sugar 2 packets “Lebkuchen” spices. 1 l milk 2 packets yeast 8 tsp oil STEPS Heat the oven. Mix all the ingredients in a bowl. Yyou can use a mixer but it´s much better to do it by hand. Then put the mixture in the baking pan with parchment paper. Bake it at 180º for 30-40 min. Then, let it cool. You can cover it with chocolate or whatever you like.

BROWNIE WITH WALNUTS

INGREDIENTS 125 g chocolate 125 g unsalted butter 130 g sugar 2 eggs 75 g ground walnuts 50 g flour 1 tsp cinnamon 1 tsp vanilla extract STEPS First, melt the chocolate and butter. Beat the eggs with the sugar and add the melted chocolate and butter. Add the flour, crushed nuts, ground cinnamon and vanilla. Stir well until smooth. Cover an oven dish with parchment paper. Pour the dough and bake at 160 degrees for 25-30 minutes. Decorate it with “lacasitos”.

LEMON CAKE

INGREDIENTS 225g unsalted butter 225g sugar 4 eggs 1 grated lemon 225g flour STEPS Heat the oven to 180. Beat the butter and sugar until the mixture is creamy. Then, add the eggs, one at a time, slowly mixing through. Sift in the flour, add the lemon and mix. Finally, put the mixture in a loaf tin. Bake in the oven for 45 – 50 minutes until a thin knife inserted into the cake comes out clean.
