First, pure milk is selected and separated.This milk is pasteurized at a temperature SQ high that extermination of all bacteri a i s insured . Then the ripening process is controlled perfectly at the proper temperatureand withPEl':! cultures of Lacticus and Bulgaricus, which insures a smooth consistancy and completedigestion of the casein. This also'secures the presence of the two necessary agents-lacticacid and the Bulgarian ferment, and without the formation of any gas. One per cent. ofpasteurized cream is added, increasing the food value and improving the flavor.
