The PURE Juicer was designed to fill the need for a modern two-stage

juicer built to the highest engineering, design and manufacturing

standards. My background is in design; I started designing and making

things when I was 14 and have continued now for over 40 years. The

first two-stage juicer I saw was in 1978. When I began rebuilding these

machines in 2011, the design had not changed much. I began researching

the history of the machines I was working on and became expert in its

workings and the fine details and concepts behind the design.

My path as a designer has taken me from textiles, to granite, to machine

tools. I have traveled from my mom’s Singer sewing machine to a 1500kg

metal lathe. I have stood on factory floors all around this country and all

over the world. Along the way I have made many friends and contacts.

When I realized the state-of-the-art in two-state juicing had been static

for almost 50 years, I asked myself, “Could I make a better two-stage

juicer?” The answer was definitely ‘yes’, but the challenges were many.

It helped to have an “anything is possible” attitude. The PURE Juicer

has been made possible by the many people who have been willing to

help. Never before have I been involved in something where so many

people have come together to contribute. I believe the reason for this

is because the PURE Juicer will help people live healthier lives. This

journey to help people is what has made the entire project possible.

I have had the pleasure of being the messenger. I have been led to many

people who have opened doors. None of us knew what the PURE Juicer

would look like or how it would perform but everybody believed in me

and I believed in myself. Because of your faith and support, today we

have the PURE Juicer.

I want to thank you all for making this possible.

We at PURE Juicers are very safety conscious. We designed the juicer with your safety foremost in mind. Please exercise caution and adhere to the precautions and best practices outlined below.

• Lifting: the juicer is heavy; if required request assistance.

• When using electrical appliances, basic safety precautions should always be followed, including the following:

• To protect against fire, electrical shock and injury to persons, do not immerse the appliance, cord or plug in water or any other liquid.

• Close attention is necessary when the juicer is used near children.

• Children should never operate the juicer.

• Unplug from outlet when not in use, before putting on or taking off parts, and before cleaning or attempting to move the juicer.

• Avoid contact with moving parts.

• When removing the cutter please note that it is sharp. Only remove with the provided tools.

• Regularly inspect the power supply cord, plug and juicer for any damage. Inspect the cord if the appliance malfunctions or is dropped or damaged in any manner. At any time, contact PURE Juicers customer support for assistance.

• Any 3rd party modifications not recommended or sold by PURE may cause fire, electric shock, mechanical failure or injury and will void the warranty.

• This juicer is for indoor use only. Do not use this juicer for anything other than its intended use. Do not use in moving vehicles or boats. Do not use outdoors. Misuse may cause injury.

• Do not let the power cord hang over the edge of a table or counter top.

• Do not let the power cord touch hot surfaces, like your stove, or become knotted.

• Always make sure the feed tube is securely locked in place (with locking pin engaged) before the motor is turned on. Do not attempt to remove the feed tube while the juicer is in operation.

• Always ensure the juicer is turned off after each use. Make sure the cutter has stopped rotating and the motor has completely stopped and the valve handle is in the press-down position before disassembling.

• Do not push produce into the feed tube with your fingers or other utensils.

• Always use the pusher provided. Do not place hand or fingers into the food tube when it is attached to the juicer. If food becomes lodged in the feed tube, use the pusher to dislodge it. Turn the motor off and ensure that all moving parts have stopped before disassembling the juicer to remove the remaining food.

• If the cutter jams and the motor stalls, immediately turn the machine off and then clear the blockage. Leaving the motor on for more than 10 seconds when stalled may cause permanent motor damage.

• Never operate the motor with the press plate removed. Severe damage will occur if the piston reaches full extension without the press plate installed.

• Make sure the juice tray is properly centered on the press plate prior to operating the press.

• The PURE Juicer is equipped with an IEC plug/receptacle on the back of the machine. The PURE Juicer is designed to operate on 115 volts or 230 volts at 50hz or 60hz. All juicers shipped from PURE Juicer Company are set to 115V unless otherwise marked. For ease of use PURE chose the IEC plug/receptacle to simplify connecting the machine to the wall receptacle. This is the same style of cord found on most computers. PURE recommends a dedicated 15 amp receptacle and circuit to power your juicer.

• For countries/areas/territories with 230 volt electrical supply, connecting the PURE Juicer to the local voltage is as simple as finding a replacement power cord that fits local outlets and has an IEC connector on the end. Use a cord no longer than 2 meters. Confirm there is a 230 volt label attached next to the IEC plug/receptacle. If not, proceed to the instructions on page 60 to configure the motor to 230 volts.

• Make sure the motor is configured to 230V before operating or irreparable motor damage will occur. If in doubt contact an electrician.

• Do not modify the plug in any way. The unit has a 3-pin polarized plug. To reduce the risk of electric shock, this plug will fit in a polarized outlet only one way. If the plug requires replacement and you are unsure how to change the plug, contact a qualified electrician.

1. Lift the shipping box onto a sturdy table.

2. Cut the tape where the upper box joins the lower tray.

3. Lift the box off the tray.

4. Remove the upper foam block from inside the box top to access the cutter pull sleeve, grids, grid tray, pusher and power cord.

5. Open the plastic bag covering the juicer and remove the juice tray and feed pan from the press chamber.

Save the packing box and foam!

PURE Juicer Company has a 30-day money back guarantee. Returns are only accepted with a Return Authorization Code (RA#).The juicer must also be in the original PURE packing. Please contact PURE Customer Support to obtain a Return Authorization Code.

For future shipping or warranty return the packaging materials should be saved. These materials conform to UPS & FedEx standards for a high value item. Most damage occurs in transit even when professionally packed. Please save the custom made PURE packaging as it is the best way to ship the juicer.

Every effort has been made to deliver the machine to you in a perfectly clean state. However, PURE recommends pre-washing all food contact parts prior to use with soap and water.

1. Install cutter: a. Align the cutter flats to flats on the motor shaft b. Press the cutter onto motor shaft until the cutter and motor shaft are flush

2. Attach the offset feed tube: a. Align the attachment marks on the feed tube and the mounting hub. b. Engage the cleats on the feed tube with the slots on the mounting hub. c. Rotate clockwise until the lock tab locks in place with a clicking sound. d. Confirm the feed tube is locked vertically in place. e. If the feed tube can be rotated back to 11 o’clock it is not locked; repeat steps a-e until the feed tube is locked. Do not operate if it is unlocked.

5. Place the press plate into the piston. Engage the guide fork with the guide rail inside the center post.

6. Place the juice tray onto the press plate, being sure to engage the press plate into the recess on the juice tray.

7. Make sure the valve handle is rotated counterclockwise to the press-down position. Caution: Always make sure the handle is left in the press-down position.

The PURE Juicer is a true two-stage juicer. All of the PURE food contact parts are stainless steel. On the left side is a grinder/triturator and on the right is a hydraulic press. Many companies claim to make cold-press or two-stage juicers but have two screen sizes or progressively smaller screens, which is not the same. A true

two-stage juicer has a grinder and a separate press - period.

THE PURE GRINDER/TRITURATOR The system is composed of the following: feed tube, hardened cutter, grids and grid tray. This combination of elements grinds the mash finer while at the same time keeping it cooler to produce the

best juice in the world.

FEED TUBE The PURE feed tube is unique in several ways: first and foremost the user experience is revolutionary in its absolute simplicity. The feed tube is extremely simple to install and remove. PURE has designed a unique twist lock mount. It is so easy to use, it can be put on with one hand. To release the feed tube, press the lock tab & twist

counterclockwise.

PUSHERWhen we redesigned this simple and overlooked part, we made a huge discovery. We’d designed the shaped end of the pusher to eliminate a left-over chunk of produce by the cutter. This reshaping also reduced the amount of pressure needed to push the produce, and lowered both the heat of the mash and the operating temperature of the juicer. It turns out the left-over chunk added a lot of friction and heat. This heat was transferred to the mash and also back into

the motor.

HARDENED CUTTERThe heart of the grinder/triturator is the PURE cutter made from knife grade 440a stainless steel that has been heat-treated to stay sharp longer. The cutter is so sharp and hard that, with good care, it will stay sharp for years and possibly the life of the machine. The cutter has been sharpened to the precise angle to triturate vegetables with the lightest push. These flow through the grid and grid tray and out

the flared discharge tube at the bottom of the feed tube.

JUICE TRAYThe sloped gutter allows quicker evacuation of the juice. With the tall sides the need for slowing the press to reduce overflow is reduced.

THE HYDRAULIC PRESS5000lbs of force combined with the largest press chamber produces not just the best quality juice. It also means up to 1 liter per pressing. The PURE Juicer’s streamlined center post opens up the press chamber to allow up to three pulp packs and plenty of room for you

to work.

GRID TRAYThe grid tray mounts flush to the feed tube. The low profile minimizes snagging of the pulp pack when transferring it to the press tray. The grid tray pull-tab is also designed as the cutter release-tab; with the

lightest touch it freely ejects the cutter.

GRIDSSmooth Sided, No Sharp Edges.

The least understood part of the two-stage juicer are the grids. The grids regulate the fineness of the grind. The PURE Juicer comes with seven grids: four for juicing (#5, #6, #7 & #10) and three for fine grinding and nut butters (#2, #3, #4). For the highest yield use the

#5 or #6 grid. For the coolest mash use the #7 or #10 grid.

PRESS PLATE The press plate is stainless steel so it won’t corrode, and is removable for easy cleaning of the press chamber. It is also

dishwasher safe.

PURE PRESS CLOTH Our cloths are specially woven for PURE from food-grade yarn.

These low-stick high-porosity (LSHP) cloths have the longest life and highest yield of any press cloth.

Juicing is a balance between yield, effort, speed and heat. A residential user will often choose

the smallest grid for the highest yield.

A commercial user will often use the largest to reduce fatigue, increase speed and decrease heat. When a two-stage juicer is run for hours

there can be a lot of heat generated.

If not effectively controlled, this heats the mash and shortens the life of the juice. The PURE

Juicer is unique in how it dissipates heat. The machine is self-cooling and does not overheat. The goal is not to make the most juice, it is to

make the best juice.

The best juice is the coolest juice. At home you win with higher yield. At work, you also win,

because you are producing the finest juice with the least effort. It’s a true win-win.

CUTTER REMOVAL

The cutter may not feel sharp like a knife but it is very

sharp. NEVER grab it barehanded. A silicone grab-

sleeve is included to remove the cutter. Slide the

sleeve over the cutter, grasp firmly and pull.

If the cutter becomes stuck, the grid tray has been

designed to act as a cutter removal tool. On the

back of the cutter, one tooth is shorter than all the

rest of the teeth. Locate and rotate to 12:00. Insert

the grab tab portion of the grid tray behind this

tooth and use it as a pry tool.

CUTTER SHARPENING

PURE Juicer offers free sharpening (once every two

years) as long as the juicer is under warranty. Please

request a RA# (Return Authorization Number) from

PURE Customer Support. Once you have the RA#, just

mail your cutter in; be sure to include: name, address

and RA#. Note: this service covers normal wear and

tear; it does not cover damage from improper use

(such as pebbles, or a fork or knife as a pusher, oops!)

Removal and cutting: first, remove the

cutter, then the O-ring. Wipe the O-ring

and receptacle groove down daily with a

3% hydrogen peroxide solution as a best

practice to disinfect and sanitize.

JUICING SET UP

Apple Carrot Juice

1kg / 2lbs carrots and 1kg / 2lbs granny smith apples; yield 1 liter / 1 quart

1. Choose the #7 grid and place it onto grid tray.

2. Slide the grid tray into the feed tube.

3. Place a bowl under the feed tube.

4. Turn on the PURE Juicer

5. Feed ingredients into the feed tube, never insert fingers into the food chute always use the pusher to complete the push.

6. Make sure you stir the mash in the bowl well. This will activate more minerals in the mash so you get the most out of your juice.

7. Lay 2pc PURE press cloths in a rectangular baking dish or lasagna pan on the left side of the Juicer.

8. Place a 2 liter / 2 quart measuring cup

under the spout of the juice tray.

SIMULTANEOUS GRINDING AND PRESSING

9. Scoop 250 - 400ml / 1.0 - 1.5 cups into the center of a PURE press cloth.

10. Fold in thirds in both directions.

11. Place 1-3 juice packs into the press and center them on the tray (loose folds down).

12. Rotate the press handle clockwise. When pressing two or more packs, run the press slowly to prevent the juice from

overflowing the juice tray.

13. Press until the juice stream breaks from a continuous stream (13) to a broken stream (14). This takes

approximately 45-60 seconds.

A note on saving time: You may grind more produce while waiting for the press to finish pressing. Limit simultaneous grinding and pressing to not more than 25% of operating time.

A NOTE ON KICKBACK

The PURE feed tube has been designed to virtually eliminate produce kicking back up the tube when it is in inserted. If you experience any kickback, clean the grid and consider increasing to a larger grid size.

Two-stage cold press juicing is like the name says, a two-step process of:

1st Stage: Grinding (triturating) produce into a fine wet mash that releases the nutrients and activates the enzymes. Stir the mash well to activate and achieve the best nutritional value.

2nd Stage: After grinding, the pulp is placed inside a PURE press cloth or bag and pressed for up to one minute to release all the juice.

The cold pressing process extracts more nutrients and enzymes and produces higher quality juice. This results in better taste with longer shelf life. While cold pressed juice does store very well, the fresher the juice the better the juice. Green juice is best drunk within 24 hours.

TO PEEL... ?

The literature indicates that if the peel is a different color like an apple there are additional nutrients in the peel. The other issue associated with the skin is shelf life. If you drink only freshly made juice this does not apply. Many people believe thorough cleaning like peeling or cleaning sonically or soaking in 3% hydrogen peroxide eliminates bacteria that accelerate decay. Some just prefer to peel instead. The bottom line: the cleaner and fresher the produce, the longer the shelf life of your juice.

The above is a good balance between maximum yield and lowest heat. Slightly larger grids keep mash temperature cool. The PURE Juicer’s high

pressure combined with long pressing times are a better way to increase yield than by using a super

fine grid and adding heat.

While there is a temptation to find other uses for the machine as a grain mill or vegetable shredder,

etc., we at PURE Juicer believe that most of us have other appliances better suited to these tasks.

The PURE Juicer is first and foremost a juicing machine, though it is also excellent for nectars,

pestos, nut butters, smoothies and ice cream when the mood strikes.

The choice of the grid can vary depending with the application. Below are recommendations. People juicing at home will tend to use the smallest practical grid for the highest yield. Since personal juicing sessions tend to be short and quantities small, heat build-up is less of an issue. Commercial juicers may use the largest practical grid to reduce heat build-up, to reduce the time spent cleaning

clogged grids and to make pushing easier.

Food preparation is best done prior to juicing. Many

people prepare produce several hours before or the

night before. This allows the prepared produce to be

refrigerated and juiced while cold thereby improving

storage life of the juice. If juicing spinach or other

leafy vegetables that may contain pebbles, always

wash thoroughly to prevent damage to the cutter

and feed tube*, even if purchased as prewashed. We

recommend using only fresh organic produce.

Prior to turning the motor on always confirm that the

press handle is in the press-down position. Turn the

motor on for a moment, then off, to confirm correct

assembly of all parts onto the juicer. Once confirmed,

turn the motor back on and begin feeding produce

into the feed tube. Feed down the right hand side

of the chute. To prevent any possible kickback, feed

the produce with one hand, covering the opening of

the tube with the other hand, palm down. Once the

produce is even with the top of the juice tube, use

the pusher to feed the produce in the rest of the way.

NEVER insert your fingers into the feed tube.

*Cutter warranty is based on normal wear and tear. Pebbles will

chip and damage the cutting edge and are not covered in the

sharpening warranty.

There are two ways to feed the produce:1. Smooth and continuous:Recommended for soft, easy to push produce like carrots, apples and celery,

2. Hammer Style:Recommended for produce like wheatgrass and kale that are hard to push. For these we use a hammer-like motion. Don’t be timid; lightly pound the top of the pusher with the heel of your palm as if it were a hammer. Pound and pause; pound and pause; repeat until done. The goal is not to push hard and long but to keep advancing the produce. Apply pressure but not forcefully enough to stop the motor and jam the cutter.

As you learn to juice you will identify which technique to use.

Never push so hard as to stall the motor. If the motor stalls and does not restart after 2 to 4 seconds, turn the machine off and clear the jam by removing the grid tray. Try restarting and while running, reinsert the grid tray. If this does not work, remove and rinse the cutter and feed tube and restart the machine.

During the juicing process it may be

necessary to clean the grid one or more

times. Juicing fibrous produce (ginger,

turmeric, celery etc.) will clog a grid

quickly. If there is any kickback, you

notice hot pulp, or find that more force

is required to push the produce through,

check and clear the grid of fibrous pulp.

The best way to clean the grid is to stroke

across the face of the grid with the side

corner of the grid tray. Clean the grid tray

as often as needed. Doing this will extend

the life of the motor. Some users order

additional grids and batch clean them at

the end of the juicing session. If clogs are

too frequent, consider going up one or

more grid sizes (e.g., from 5mm to 6mm

or 7mm to 10mm).

We recommend the following for cleaning and maintaining your PURE Juicer. We use one or all of the following:

Lemon juice, as an organic stainless steel cleaner

Alconox® (low residue laboratory stainless & glass cleaner) in a

spray bottle mixed to 1%, as a stainless steel cleaner

Zep® stainless steel cleaner (removes tough stains)

Cleaning brushes, for the feed tube and juice tray gutters

Blue paper shop towels, for general wipe down

Always wipe with the grain of the stainless steel, never with a circular motion, and only with a Stainless Steel-safe pad

• Remove and wash the press plate.

• To prevent tannin build-up, soak the food contact parts: food pusher, feed tube, cutter, grid tray, grids and juice tray overnight in a 3-6% hydrogen peroxide solution, then rinse in cold water and let dry.

The PURE JUICER has a brushed stainless steel exterior and an aluminum chassis.

To maintain the brushed finish never use steel wool or an abrasive pad like green scrubbing pads. These will scratch the stainless steel surface and mar the finish. Only use cleaning pads recommended for stainless steel and aluminum. Always wipe with the grain. Never wipe with a circular motion. To avoid scratching the brushed finish, never set the feed tube, cutter or any metal parts on top of the juicer, or any metal parts on top of the juicer.

Bleach is the most effective cleaner (followed by hydrogen peroxide) of tannin deposits on stainless steel. Both bleach and hydrogen peroxide work the same way; they dissolve organic bonds. If the stainless steel parts have a heavy tannin buildup that cannot be removed with hydrogen peroxide; mix 360-720ml / 1.5-3 cups bleach into 12 liters / 3 gallon water to make a 3-6% bleach solution in a 20 liter / 5 gallon bucket. Soak the parts till the tannins dissolve (approximately 12-24 hours) and rinse thoroughly in cold water until clean; the parts should come clean with no scrubbing required.

Because bleach off-gases chlorine, use it with great care and only in a well-ventilated area. Wear gloves, do not inhale, and, if possible, store the soaking bucket outside or on a porch.

DESIGNThe PURE press cloths are designed for hydraulic pressing and

especially to filter juice but not allow pulp through. Our PURE

LSHP (low-stick high-porosity) press cloths are custom woven to

our specification from food-grade yarn. With proper cleaning, the

nylon LSHP material outlasts traditional polyester filter material

by 3-6x. This is possible because the material allows the free

flow of juice without clogging. The LSHP cloth can also be used

many more times between cleaning cycles than the traditional

press cloth and has been approved for the Gerson Therapy by the

Gerson Institute.

CLEANINGPURE press cloth require a thorough weekly cleaning. They may be

soaked to dissolve the organic bonds and restore the cloth to like-

new performance. The best ways to dissolve organic bonds are

bleach (most effective) or hydrogen peroxide (H2O2). Bleach does

the best job but is not always an option. Mix a 3-6% solution and

soak the cloths overnight then rinse thoroughly. If not satisfied,

increase the solution strength and repeat. Note: some staining is

normal. The best way to ‘bleach’ the cloth is to let the sun do it

the old fashioned way – by line drying. The UV rays of the sun are

the best whiteners available.

The press cloth will remain functional if properly cleaned and

sanitized for months or even years. Discoloration is normal.

Discard the cloth when heavily discolored or when it is no longer

functioning properly. Yields will decrease significantly with a cloth

that is ready to be replaced.

STORAGERinse when done, fold in thirds in both directions, press out the

water, place in a plastic bag and freeze; do not refrigerate. Thaw

when ready to re-use.

motor is dual voltage and can be wired at the flip of a switch to run on

115v or 230v current. All motors are wired 115V unless otherwise marked.

Underneath the belt cover on the back of the Juicer body is a switch to reconfigure the motor from 115V to 230V.

1. Loosen 3 screws on the right side of the belt cover. Loosen and remove the three screws on the left side

of the belt cover. Remove cover.

MACHINE WON’T START?Confirm the plug is firmly plugged in at the back of the machine and

the outlet. Confirm there is power to the outlet. Confirm the feed tube housing is in the upright and locked position. If the machine hums but

wont start, check for a foreign object preventing the cutter from rotating.

THE MACHINE STOPS DURING USE?Is there power to the wall socket? Has a GFCI, breaker or fuse tripped?

Has the cutter jammed?

NOTEIf the motor gets too hot there is an internal thermal cutout.

If the motor overheats it will shut down until it has cooled down and resets (5-10 minutes), to protect the motor from damage.

Grinding and pressing simultaneously for extended periods may cause overheating.

The machine can be used to grind or press continuously but not both. If grinding and pressing simultaneously, limit the simultaneous time to 25% of the total operational time to prevent thermal shutdown and overheating of the motor.

PRESS DOES NOT RISE?Check the drive belt for continuity; is the belt broken?

WARNING:Never run the press without the press plate installed;

doing so will cause serious damage.

CUTTER IS STUCK ON THE MOTOR SHAFT?Use the grid tray as a pry-tool first on the small stepped tooth, then on

any other tooth. Once loosened, the cutter should slide off freely. Always use the cutter pull sleeve.

MASH OVERHEATING OR HAVING TO PUSH TOO HARD?
