Painted Hills Natural Beef Monthly August 2011, Issue 34 Meet Daniel Doverspike our summer intern and one of the newest members of the Painted Hills Natural Beef Family. Daniel grew up on a family cattle ranch outside of Burns, Oregon with two older brothers. He is cur- rently a junior at Eastern Oregon University majoring in Ag Business with a minor in Animal Science and is planning on graduating in the spring of 2013. Dan- iel’s future goals include working at Painted Hills Natural Beef and someday returning to Hotchkiss Company; his family’s ranch. Daniel will do a number of things for Painted Hills Natural Beef this summer including touring Simplot Feeders and Tyson Fresh Meats. We are excited to educate the younger generation of men and women whom aspire to work in the cattle industry. This time of the year Ben can be found fixing miles of barbed wire fence, gathering cows, moving pastures, and shipping cattle to the feed yards. As many ranchers in the area are busy harvesting & cutting hay during the summer months, Ben steps in to help with the cattle operations. INSTRUCTIONS:• Soak eight 8-inch bamboo skewers in water 10 minutes; drain. • Cut beef steak into 1-1/4-inch pieces. Toss beef and bell peppers with 1 tablespoon basil,

dressing and garlic in large bowl. Alternately thread beef and peppers onto skewers.• Toss Orzo ingredients in medium bowl; keep warm. • Place kabobs on grid over medium, ash-covered coals. Grill, uncovered, about 8 to 10

minutes (over medium heat on pre-heated gas grill, covered, 9 to 10 minutes) for medium rare (145°F) to medium (160°F) doneness, turning occasionally. Season with salt and pepper, as desired. Serve with orzo. Recipe from: www.beefitswhatsfordinner.com

• 1 cup uncooked orzo pasta, cooked according to package directions• 2 to 3 tablespoons chopped fresh basil or parsley• 2 tablespoons shredded Parmesan cheese• 2 teaspoons olive oil
