    Dear Cook!

    It is with great pleasure and thanks to Hashem that we produce this PesachCookbook in draft form (second draft). Pesach is a very special Yom Tov. Every

    Yom Tov has its unique qualities. Each have their own Brochas and strengths whichwe get from Hashem.

    Matzoh is called the Food of Faith. One of the reasons we are so particular with thecleaning of Chometz, eating only hand baked matzoh, and being extra particular withfood on Pesach, is that this Yom Tov strengthens our Emunah, our Faith in Hashem.

    In Lubavitch we are very particular on Pesach. We do not use manufactured goods,even with the most reliable hechsher. Many do not eat in each others homes,although they would not hesitate to do so during the year. Fruit and vegatables areonly used if they can be peeled before consumption. We boil our sugar and teabefore Pesach.

    A kosher un freilichen Pesach

    A little note about the above phrase:

    Before Pesach, Yidden have a Minhag to wish each other a kosher un freilichenPesach.

    Kosher is an abbreviation forKemotzie Shalal Rav Like one who finds a lot ofbooty.

    When we work hard before and during Pesach to keep the highest standards ofKashrus, Hashem rewards us with a lot ofShalal, booty, so we have Simcha and aChag Hapesach KosherVesameach, a Kosher and happy Pesach.

    The lesson in this for Jewish children is that while were very careful that everything

    we eat is 100% kosher, we should also be careful that everything else about us, whatwe do and how we behave, is also 100% kosher. We should behave as is fitting for asoldier in Tzivos Hashem and not make a Chilul Hashem, Chas Vesholom.That is avictory against the Yetzer and brings Shala Rav a lot of booty.

    Another thing: Kemotzie Shalal Rav, when we find the booty, its not a physical war,but, rather, a war against an old and foolish king. The Shalal Ravbrings happinessso we will have a Kosher AND happy Pesach.

    This recipe book is in draft form (second draft). It was found that there is a need for abook which incorporates the Minhagim of Lubavitch for Pesach, without usingmanufactured goods. We are looking for a committee of people who would beinterested in working on improving this booklet. We would like to add recipes andpublish this in a way that it could reach a wider international audience. If you haveany suggestions or recipes, however small, please tell us.

    Many of these recipes are very obvious and simple. When asking for contributions,most people said their families prefer the plain foods, and were encouraged to sharethese too. While you use this booklet, jot down any ideas you have to enhance theYom Tov of others. We were given a few recipes last year which have beenmisplaced. Our apologies for this and we would appreciate receiving a copy ofthese.

    We would like to extend our appreciation to the following contributors of recipes andsuggestions of well over 100 recipes! Who said you had to have a very limited menu?Buy lots of fruit and vegetables and let your imagination fly freeely.

    Tips for successful Pesachcooking

    Invest in blender/food processer /shredder/slicer/good grater.

    Make sure to have a few nut crackers andpeelers.

    Before Yom Tov, prepare cut silver foil andpaper towels.

    Encourage your children to crack as manynuts as possible.

    Wet sliver foil sticks to almost any surface.Great for lining fridges, counters, etc.

    Smile and enjoy Yom Tov. Nothing isbetter than a happy mother! These tipsand recipes are for the adventurous, dontfeel obliged to follow them all.

    Liquid SugarThe whole purpose of liquidizing is tostrain the sugar so it should eliminate anupossibility of Chametz. You will have tokasher the pot when you are finishedmaking the sugar. Also, you have to makethe sugar BEFORE Pesach.

    Boil a pint of water in a saucepan andwhen the water is boiling, pour in 1 packetof sugar and mix it well with a woodenspoon on a low light until the sugardissolves.

    Prepare another saucepan. Put a metalstrainer in the saucepan and put a whitemuslin colth inside it.When the sugar is dissolved, pour it intothe 2nd pot through the muslin cloth.You will have to strain it as soon as it isdissolved otherwise it will become hard.

    If you are stuck with leftover sugar, put itback into the first pot and repeat theproccess, perhaps with another packet ofsugar if you need it.

    Liquid Sugar 2This has to be done BEFORE Pesach.If you run out of it on pesach, youcannot make more.

    2 poundsof sugar2 glasses of water

    Put on medium fire. Bring to the boil,stirring all the time. Strain through asoft cloth.

    PS. Pot will need kashering after use.Kashering method: Bring water to the boil,pour out, rinse with cold water.

    Tea Essence

    Prepare before Pesach:

    20 tea bags or 125grm tea essence

    Tear tea bags open. Place teaessence/granules into pot. Add waterand boil. Strain through muslin cloth.

    Refrigerate.

    SchmaltzRemove fat from chicken.

    Cook 1 1/ hours. Add onions forflavour.

    Beat EggsEggs beat up best at roomtemperature

    Peeled TomatoesTo peel the tomatoes, place in acontainer and pour boiling water overto cover. Let the sit for 2 minutes, thenrun them under the cold tap for about30 seconds. The peel should come offeasily.

    Remove bones from chicken:A. With a sharp knife loosen the

    skin off the parts of thechicken except the breast.

    B. Cut off the wingsC. Cut away and remove the

    carcass by the breast and the

    polkas and thighs leaving theskin intactD. You are left with a whole skin

    (dont worry about the holesetc) and two pieces of breastinside

    Put the stuffing laid on top ofbreasts and wrap with the skin

    Mashing EggsWhen mashing eggs, try rubbing the eggagainst the masher, as if grating. It ismuch quicker and much less pressurethan normal mashing but does the job just

    as well.

    Sweet PotatoUse cooked orange sweet potato forsweetening instead of sugar. (The Englishsweet potatoes are not as sweet as theorange ones from USA, India or SouthAfrica.)

    Chicken with ApplesauceChicken is good with applesauce

    Orange Ice PopsPour freshly sqeezed orange juice into icelolly molds and freeze, either with or

    without sugar.

    Pesach Food Management Tips

    Potatoes in cold water

    Keep a clean bucket of raw peeledpotatoes in cold water, ready for use

    Morning TipFirst thing in the morning,Boil a pot of potatoesBoil a pot of eggsPrepare a large cucumber saladPrepare a fresh fruit salad

    Have these readily available for anyonehungry. For supper, you can roast thepotatoes or use them for a variety ofdishes.

    Chol Hamoed favourite

    Cube cooked chicken (from the soup isfine)Cube boiled potatoesFry with an egg for a filling meal.

    Entre

    Avocadoes2 large avocadoes, mashed1 onion, dicedsaltlemon juice

    Mix avocado and onion. Add salt andlemon to taste.

    Beetroot1 large beetroot1 small onion1 Tsp salt1 Tsp lemon juice

    Cook beetroot until tender. Slice. Diceonion finely. Toss beetroot and onion. Addlemon and salt to taste.

    Eggplant1 eggplant1 onion

    Peel eggplant. Wrap in silver foil.Burn/roast on open fire. Blend inprocessor with onion.

    Courgette2 courgette (zuchinnis)2 carrots

    1 onion

    Slice everything and fry it all. Add salt totaste.

    Egg Salad5 boiled eggs2 small onions.

    Fry one onion in schmaltz. Dice the otheronion finely half. Mix onion and eggs andmash.

    Avocado with Chopped EggsServes 63 avocadoes3 eggs1 Onion

    Boil eggs and chop them with diced onion.Slice avocadoes in half. Fill each halfavocado with egg mixture.

    Citrus5 Oranges5 tangerines (optional)3 pink grapefruitLiquid sugar

    Peel fruit. Cut up removing as much aspossible the white skins and seeds. Addliquid sugar to taste.Serve in small bowls as a starter.

    Grapefruit

    Using a sharp knife, cut zig zag shapeacross centre of grapefruit. Decorate withslice of kiwi.

    Faigelach

    Boil eggs. Cut lenghtwise. Scoop outyolks. Mash yolks with schmaltz and salt.Fill up whites with yolk mixture. For wings,put kveckling (little pieces of schmaltz) onthe sides.

    Fish

    Gefilte FishCooked eggs

    Grated, cooked, potatoesWhite FishRaw eggsSaltOnionGrated carrot

    Mix ingredients well. Form balls and boillike gefilte fish balls.

    Gefilte Fish Pike or white fish TroutEggsOnionsSalt

    Mix well. Prepare broth of fish bones,carrots, onions and salt. Cook for 1 hours. Remove bones and vegetables,shape mixed fish into balls and cook for 1 hours.

    Baked Fish LoafServes 6

    1lb minced fish1 onion, grated1 carrot, gratedtwo tabelspoons water.

    1 egg.Salt to tastesugar to taste.

    Onion sliced for the bottom of the tin so itshouldnt stick

    Mix all ingredients together. Mixing in amixer or food processor will help make themixture thicker.Lay out the sliced onionson the bottom of a small loaf tin and putthe fish mixture on top of onions. Coverwith silver foil. Bake in a pre-heated ovenat 175 C for 1 hour. Slice when cold.

    Salmon SteaksBoil cleaned salmon steaks in a little waterwith lemon juice.

    Fish balls

    Use your usual recipe with eggs, salt andonions. Add mashed potato and /orground almond to stiffen. Instead ofboiling fish balls, make patties and grilluntil brown on both sides. Freeze in bags.Perfect to pull out of freezer for outings ora supper.Variation: Form into fish loaves and bakein the oven. Put a little water and onion inthe tray. Cover so they will not dry out.When ready, roll in silver foil and freeze.

    Meat

    Fleishig Tzimmes1lb chuck or goulash (chunks)3lbs potatoes (chunks)2lb carrots (chunks)1 large onion (diced)

    Put everything into a large pot and coverwith water. Bring to the boil and thensimmer covered on a low heat for 6 hours,until the meat falls apart. If there is anyliquid remaining, then boil uncovered.Mash everything together and reheat in

    the oven.

    Dark and Light MeatloafServes 10

    Dark mixture:1 lb mince meat1 egg1 onion grated1 small potato grated tsp salt

    Light mixture:

    1 lb mince chicken1 egg1 onion grated1 small courgette grated1 carrot grated tsp salt

    Preheat oven to 175 C. Mix togetheringredients for a dark loaf. Then mixtogether ingredients for light loaf.

    Note: You can use either one long loaf tinor one medium square tin. Line tin withsliced onion to prevent sticking.

    Lay light mixture out on the bottom of tin.Pat dark mixture on top. Cover with tinfoil.Bake for 1 hour 15 minutes. Remove foiland bake uncovered for an additional 15minutes.

    Hint:You can use either of the obvemixtures and make into balls instead.

    Just drop balls into salted boiling waterand cook for one hour. Add in an onion incarrot.

    Chicken balls made very small look likekneidlach and can be served in the soup.

    Citrus ChickenCook chicken in citrus fruits on top ofstove for 1 hours.From the Original Cookbook

    Chicken and Potato Omelette

    Leftover chicken from soupCooked potato2 eggs per serving (if you have a lot ofchicken and potato, put in more eggs)salt to taste

    Dice chicken and potato into small pieces.Pour in egg and mix well. Fry in a heated,non-stick frying pan with a bit of schmaltz.

    Stuffed ChickenCourgettePotatoEggSeasoning (salt /lemon juice)

    Grate courgette and raw potato. Add egg

    and seasoning. Lift chicken skin slightlyand put in filling. Bake.

    Chicken OmeletteSmall amount of chicken fat4 eggsGrated carrotBoiled chicken cut into small piecesSliced onion

    Fry up carrot, pieces of chicken andpieces of onions (and any other vegetablewhich may combine well). Take out of

    frying pan, make an omelette from eggsand put the chicken and vegetables in itand fold the omelette.

    Meat ballsUse your usual recipe with eggs, salt andonions. Add mashed potato and /orground almond to stiffen. Instead ofboiling meat balls, make patties and grilluntil brown on both sides. Freeze in bags.Perfect to pull out of freezer for outings ora supper.Variation: Form into meat loaves and bake

    in the oven. Put a little water and onion inthe tray. Cover so they will not dry out.When ready, roll in silver foil and freeze.

    Blend together.

    Take bones out of roaster leaving chickenwhole with skin as intact as possible

    blend peeled vegetables with salt andsome raw chicken. Stuff chicken wrap upin silver foil, bake or boil. Let it cool andcut into slices.(See TIPS for how to remove bones fromchickens)

    Cover wings with lemon juice, sugar syrup,(and cook with apple or pineapple ifdesired).

    Meat and chicken Roll

    1lb minced beef1lb minced chicken breast (or turkey)

    2 onion1 grated carrotsalt

    Grate onion and mix half with beefmixture. Spread it into a rectangle onto apiece of greaseproof paper. Mix thesecond half of grated onion with whitechicken/carrot. Grate carrot and spreadonto the beef mixture. Spread the whitemixture and roll Swiss roll style. Enclose ingenerous greaseproof paper. Boil in

    seasoned water for one hour.

    Chicken Stew10 medium potaooes (sliced thickly)10 large tomatoes (blanched and peeled)2 large onions (peeled and diced)2 roasters (quartered)4 cups water

    saltOptional vegetables such as swede,courgettes, carrots)

    Put all ingredients in large pot. Bring toboil and then cook on low flame for onehour.

    Serves 8

    Potato Parcel

    Boiled potatoesChicken pieces

    Wet hands. Flatten some mashedpotatoes in hand. Place some chicken incentre and roll it to hide the chicken. Fry.

    Chicken a lorange

    ChickenSlices of peeled oranges

    Place slices of orange around the chicken. Puta little water in pot. Cook on low flame,checking to see there is sufficient liquid.

    Soup

    Vegetable Soup1 onion2 carrotspiece of sweed parsnip1 courgette potatoCeleriac

    Peel all vegetables. Dice. Cook untileverything is soft. Pour in blender, a bit ata time, and mix at high speed to puree thevegetables. Serve hot.

    Creamy Orange SoupThis needs vegetables that will keep theorange colour of the soup:1 onion1 celeriac2 lbs carrots4 medium potatoes1 sweet potato1 swede1 parsnip

    a piece of pumpkin or butternut squash(optional)salt

    Peel the vegetables and cube them/ Cookin water and salt or in chicken stock.Liquidise (blend). Serve hot.

    Creamy Green SoupThis needs vegetables that will keep thegreen colour:1 onion1 celeriac3 lbs courgettes4 medium potatoes1 parsnip

    Potato and Carrot Charlotte

    1 cup grated carrots, cooked 15 minutes3 cups raw grated, drained potatoes3 egg yolks, beaten6 tsp hazelnuts

    1 tsp salt and 1 tsp sugarLemon juice4 tbsp schmaltz

    3 egg whites, beaten until stiff

    Mix all ingredients besides egg whites.Add beaten egg whites at end. Bake 175C approx 1 hour

    Nut loafMix any ground nuts with lots of anygrated vegetables and onions. Add egg toform firm mixture. Add salt to taste. Youcan add cooked mashed potatoes andcarrots to bind. Bake in oven.

    LatkesBoil potatoes for mashed potatoes. Mashwith egg. Add salt.Fry in schmaltz as latkes.

    Kugel

    Carrot KugelServes: 1 loaf

    2 cups grated carrots1 sweet apple grated

    4 eggs2 T wine1 T lemon juice cup ground almonds cup sugar

    Mix everything together and bake for 40minutes on No 5 / 375 F / 190 C

    Kugel in Frying PanBoil potaotes for mashed potatoes. Mashwith egg. Add salt.Mix it in a mixer until it is creamy andsmooth. It looks a bit like whipped cream

    before you fry it.Pour the mixture into a frying pan with avery little bit of schmaltz, on a very smallflame. To turn over, turn the pan upsidedown onto a plate greased with schmaltz.Slide it back into the pan to fry on theother side.It comes out delicious.

    Grate everything in food processor.Season with salt and lemon juice.Bake for 1 hour, gas mark 4 / 350 F / 175C

    Sephardi Kugel2 large potatoes1 carrot1 small onion6 eggsSalt

    Cut vegetables into very small squaresthis size.Beat eggs lightly, add salt and fold invegetables.

    Put schmaltz in foil tin, heat in oven. Pour

    in ingredients and bake in oven untilbrown.

    Apple KugelApples eatingGround almondsEggs

    Slice apples. Mix everything together andbake.

    Salads

    Tropical SaladGrate raw CoconutBananas, slicedKiwis, slicedMango

    2 raw beetroots

    Toss all ingredients. Season with eggsauce or lemon and sugar.

    Potato Salad

    Sweet Tooth

    Many recipes are almost identical. We

    have chosen to write them all down.See which variation suits you most.

    Cake

    Almond Sponge CakeServes: one 9 x 9 cake7 eggs1 cup sugar200g ground almonds1 T. lemon juice

    Beat eggs and sugar together on highspeed for 8 minutes, until thick and light in

    colour. Add lemon juice. Gently fold in theground almonds.Bake for 50 min on No 4 / 350 F /175 C

    Apple Charlotte3 eggs separated yolks2/3-cup sugarPinch salt2 cups grated apples cup ground hazelnuts/4 tbsp groundwalnuts2 tsp lemon1tbsp wine or grape juice

    Beat egg yolks and sugar until thick. Addall ingredients besides egg whites. Beategg whites until stiff. Fold into mixture.Sprinkle nuts on top. Bake at 175 C 35-40minutes

    Coconut Pyramids/Tray Bake4 oz coconut2 oz sugar1 eggfew spoons ground almond

    Mix all ingredients together. Shape into

    pyramids or flat in tray. Bakeoven gas 5for 20 minutes.If in tray, slice in sqares.Coconuts can be shelled and cut p, driedin low 90 C oven overnight and grated.

    Marzipan

    Ground almondsSugarWater or liquid sugar

    Add enough sugar to taste. Add water

    slowly, not too much. Roll in n balls andfreeze. May be eaten frozen

    (Editors note: Try adding beetroot juice asfood colouring)

    Nut Cake6 eggs, separated1 cup of liquid sugar2 cup of nuts

    Wisk egg whites until stiff. Add sugar andmix again. Add nuts until the mixturereaches the desired consistency. Bake ina 9X13 tin for 1 hour at 175C. / 350F.Serves 6.

    Nut Cake hazelnuts7 eggs9 tbsp sugar lb ground almonds

    Separate eggs, beat whites until stiff. Addsugar, Gently add nuts and yolks Bake in10 inch square tin 1 hour 325 F

    Carrot Cake9 egg yolks1 cups sugar1 finely mashed carrots1 tbsp sweet wine2 - 3 cups ground almonds9 egg whites, beaten until stifflittle ground hazelnuts to stiffenJuice of orange or lemon

    Beat yolks and sugar until thick. Addcarrots, juice, wine and nuts. Fold inwhites. Bake 350 F for 50 minutes.

    Cake before Pesach7 eggs separated10 tsp sugar100 grm ground almonds100grm ground hazelnuts lemon squeezed

    Beat egg whites with sugar until stiff. Addother ingredients and mix by hand.

    Bake in a 9 x 9 tin or cupcake.

    Biscuit

    Coconut Macaroons

    3 egg whites cup sugar1 T. lemon juice

    185g coconuts

    Beat the egg whites stiff. Add the sugarand lemon juice. Fold in the coconut. Dropby spoonfuls onto baking tray.Bake for 10 12 minutes on No 5 /375 F /190 C until golden brown.

    Variation: Substitute ground almond orhazelnut for the coconut.

    Almond Biscuits

    1 lb ground almonds1 lb sugar4 egg whites, beaten until stiff4 tsp ground hazelnuts

    Mix well all ingredients. Spoon onto tray.Bake 400 F 10 15 minutes until lightbrown.

    Meringues Before Pesach5 Egg whites250 grm sugar

    Whip whites until very stiff. Slowly addsugar. Bake Gas 3 for 30 minutes.

    Nut Biscuits3 eggs, separated cup liquid sugar4 cups nuts

    Wisk egg whites until stiff. Add sugar andmix again. Add nuts and mix well. Dropteaspoons of batter onto a cookie sheet,spaced about apart. Bake for hour at

    175C. / 350F. Serves 6.

    Nut Brittles1 pound of sugar pound of hazelnuts, crushed not toosmall1 level teaspoon of salt

    Add salt to nuts.

    Put sugar into dry pan. Bring to the boil,stirring continously until sugar begins to gobrown. Put in nuts and salt mixture. Mix.Quickly put into flat aluminiu container.When cooled break into pieces.Enjoy it.

    Ice Cream

    Banana Ice Lollies - Ice Cream3 bananas3 eggssugarcitrus juice (lemon or lime or orange orcombination)

    Mash the bananas. Mix in the eggs. Addsugar and juice to taste. Spoon into icelolly containers and freeze. (Can also bemade on Chol Hamoed with liquid sugar.)

    Banana LolliesPlace banana onto lolly stick. Freeze

    Banana Ice Cream3 bananas (mashed)5 eggs,1/2 cup sugarFruit juice

    Beat eggs and sugar together for 8 10minutes, until very thick. Fold in thebananas and juice. Freeze.

    Nut Ice Cream6 eggs, separated1 cup liquid sugar1 cup nuts.

    Wisk egg whites until stiff. Add sugar andmix again. Add nuts and mix well.Pour into container and freeze. Serves 6.

    Banana Ice Cream3 eggs, separated cup liquid sugar1 banana, mashed cup orange juice, optional

    Wisk egg whites until stiff. Add sugar andmix again. Add banana and orange juiceand mix well.Pour into container and freeze. Serves 10.

    Sorbet

    Tropical Sorbet1 pineapple1 mango4 passion fruit

    Puree all fruit to a fine blend. Pour intocontainer and freeze for 2 hours. Take outof freezer and mix very well. Do this every2 hours until the whole thing is nearlyfrozen. The last time, mix it in the mixer for2 minutes. Freeze.

    Mango Sorbet2 mangoesSmall amount of liquid sugar.

    Put mangoes in food processor.

    Combine it with sugar and freeze it.

    When it is frozen beat it up again and

    freeze it back.

    Fruit

    Fruit Hors dOeuvreGrapefruit and orOranges TangerinesMinneolaLemon JuiceLiquid Sugar

    Peel and slice fruit into a bowl. Pour a little

    lemon juice or liquid sugar to suit taste andrefrigerate. Serve with a slice of kiwi ontop.

    CompoteBramley applesPears

    Peel and slice/chop fruit. Put a tiny bit ofwater and leave overnight on low fire.

    Variation: Use eating apples

    ApplesauceCooking apples

    Large amount of liquid sugar or water.With sugar to taste

    Cut cooking apples in small pieces. Boilthem for about 20 minutes. Drain off thewater. Let cool down. When completelycold and liquid sugar.

    Fruit Compote8 apples4 pears2 quincesLiquid sugar

    Peel and dice all fruit. Cook with a littlewater over moderate flame until soft.Blend. Refrigerate. Freezes well.

    Apple StewUse green Bramely apples.

    Peel, cut into quarters. Bring to the boiland turn off the flame immediately. Addsugar to taste.

    Baked ApplesApples

    Liquid sugarLemon juiceNuts

    Optional liquidised banana or pineapplePeel and core apples. Spoon over liquidsugar. Add a little lemon juice. Addpineapple or banana and sprinkle withnuts. Bake until soft.

    Stewed Pears6 pearsLiquid sugarPell, half and core pears. Cook covered in1 cup of sugar and water. Cool. Serve indesert bowls with ice cream.

    Stewed PineapplesFresh pineappleLiquid sugar.Slice pineapple. Cook for one hour withliquid sugar. Delicious!

    Melon / Kiwi PopsSlice melon and kiwi into bitesized chunks.Insert a toothpick into each piece of fruitand freeze. Eat frozen as a refreshingsnack.

    Condiment

    Put egg yolks into a saucepan. Add twiceas much water as yolk. Heat on a very lowlight, stirring constantly, until thick. Add atiny pinch of salt, sugar and lemon totaste.

    Soup LokshenFry an egg very, very, thinly on both sides.Empty it out onto a plate to cool off. Whenit is easy to touch, roll it up a bit like aswiss roll. When it is cold, cut it in thinslices and it looks very nice (but it is a lotof work).

    Soup Lokshen 2Beat eggs, add to boiling soup and stirconstantly for 2 minutes. Allow to reboiland serve.

    Avocado MayonnaiseBlend avocado well with lemon juice and alittle salt until very smooth.

    Tomato ChutneyLarge beef tomatoes (peeled)SugarLemon juiceSalt

    To peel the tomatoes, place in a containerand pour boiling water over to cover. Letthe sit for 2 minutes, then run them underthe cold tap for about 30 seconds. Thepeel should come off easily.

    Put tomatoes in the food processor or

    blender and make a puree. Boil,uncovered, on a very low light, until all theliquid boils out. Add sugar, lemon and saltto taste. Refrigerate. Serve with fish orturkey.

    ChrainRaw beetrootRaw horseradish

    Blend until fine. Store in airtight container.

    Egg SauceWhist lots of egg yolks for awhile. Addsugar and beat until thick. Season withsalt and lemon juice. (Can add whole raweggs and some whites at end to increasebulk if you need a lot. Dont whisk eggwhites, they separate. Can be made withliquid sugar, but not as good.

    Drinks

    Orange Squash (or lemon squash or

    grapefruit squash)18 oranges1 lb sugar5 lemons

    Squeeze juice of the fruit in a pot, strain it.Add sugar. Bring to boil. Let cool andstrain. Store in jars. To use, mix with waterto strength as desired.

    For grapefruit, replace oranges withgrapefruit or else lemons can be used.

    PunchMix amounts of squeezed juice. Vary byadding grape juice. Add liquid sugar totaste.

    Orange JuicePeel and pit 50 oranges12 lemons

    Liquidize.

    Boil in sugar and cover with water, totaste, cook till clear strain throughmuslin. Can be frozen if required.

    Beetroot DrinkPeel fresh beetroots. Cut into quarters.Boil it with a bit of salt. Take out beetroot.When it is lukewarm, add lemon juice, saltand a little sugar. When the liquid is warm,not hot, add egg and stir it very fast so itshould not become like lokshen.

    Serve cold in tall glasses.

    Dairy

    Banana and Milk Breakfast1 banana1 cup ice cold milk

    Slice banana thinly into milk. Thats all.

    If you have a milchig Pesachdig blender,pour the above recipe in and mix for 1minute at high speed.

    Gebrocks

    Gebrocks means mixing the matzo with liquid.During the first 7 days of Pesach we dont dothis because there is a possibilty that some ofthe matzo may not have been bakedthoroughly and if some water gets on it then itmay become Chometz.

    However, on Acharon She Pesach, the last dayof Pesach, we have a Minhag that we can eatgebrocks, although we havent eaten it thewhole Pesach.

    Gebrocks CerealThis is only suitable for the last day ofPesach but it tastes really good. It is a bitlike Weetabix.

    4 tsp matzo meal

    1 tspof liquid sugarA bit of hot waterMilk

    First pour the sugar on top of the matzomeal. Then add the hot water until you getthhe right texture (like thick pudding). Thenadd the milk.

    Matzo KugelPieces of matzoEggSalt

    Crack the matzo into bitesized pieces.Leave to soak in the egg for about hour.Then fry it for a while on each side. Slice itto serve.

    Kneidlach1 cup of Matzo Meal2 eggsPinch of salt

    Beat eggs well with fork and mix withmatzo meal and salt. Refridgerate for 1hour. Shape into balls and drop into boiling

    soup.
