Plus Endowment Breakfast and Bake Sale FundraiserA breakfast and bake sale to raise funds for Henry County’s Plus Endowment Program will be held at Ann & Dave’s Restaurant, located at 2613 East Wood St. Breakfast will be served 6-11am and 10% of all sales go to Plus Endowment. The bake sale will be held outside on the front porch of the restaurant. Plus Endowment funds projects for teachers in both the Paris Special School District and the Henry County School System. Plus Endowment Board members will serve as waiters and waitresses.
Paris Danger Soccer Car WashThe Paris Danger 08 Soccer team will be having a car wash at Carroll Bank and Trust from 10am to 2pm Saturday Au-gust 5th. The bank is located at the cor-ner of Tyson Avenue and Mineral Wells. Donations are accepted so come out and support the 8-9 years olds and leave with a clean car.
Expungement Clinic A free Ex-pungement Clinic is planned for Satur-day August 12th from 9am to Noon at the Henry County Courthouse where citizens can come get their non-con-viction misdemeanor record cleared. In order to attend the expungement clinic, you must pick up and drop off an appli-cation no later than Monday August 7th at the General Sessions Court Clerk’s Of-fice, W.G. Rhea Public Library, or First United Methodist Church. The clinic will begin at 9am at the Henry County Court-house and General Sessions Judge Vicky Snyder will be present to sign expunge-
ment orders for people who qualify, and free lawyers will be available to answer questions. Again all of this is presented at no cost to citizens. Season Tickets for Henry Co. Football on Sale Now Season Tickets for Henry County High School Football are currently on sale at the front office at HCHS for $35. Free finger stick Blood Sugars and Blood Pressures will be available. Finger stick Total Cholesterol tests will be offered for a minimal fee of $3.00 or a Full Lipid Panel for $10.00 each. Results will be available at the time of the screening and fasting for 8 hours is required for the most accurate result.

7th Annual Henry County BBQ Cook-off The 7th Annual Henry County BBQ Cook-off will be held this Friday, August 4th and Saturday, August 5th at the Mule Barn, located at 600 Scarbrough Lane in Paris. Teams who place in each of the categories which include ribs, chicken, brisket, and shoul-der will win $200 for 1st place, $150 for 2nd place, and $100 for 3rd place. The Grand Champion of the BBQ Cook-off will win $1,000 and the Reserve Cham-pion will win $500. The public is invited to attend Friday Night, August 4th for the Pitmaster Challenge event as teams are
given specific ingredients and must cook something for the judges. Other events on Friday night include: Corn Hole Tournaments, with $40 entry fee per team, Washer Pitching and Horse Shoe tournaments with $20 entry per team. Payouts in the tournaments are 70% cash payouts. On Saturday, competi-tion judging will run from 11am to 3pm. Chocolate Pudding1/4 cup sugar1/4 cup unsweetened cocoa powder2 Tbsp cornstarchPinch of salt2 cups whole milk1 large egg4 ounces semi-sweet chocolate chipsFour 6-ounce ramekins or custard cups
Whisk together the sugar, cocoa powder, cornstarch, and salt in a heavy 2-quart saucepan. Gradually whisk in the milk. Bring to a boil, whisking constantly, and boil, whisking, until pudding is thick, about 3 to 5 minutes. Remove from heat. Immediately beat the egg lightly in a medium, heat-proof bowl, such as a hard plastic or ceramic mixing bowl. Very gradu-ally add the hot chocolate mixture to the egg, whisking constantly. Whisk in the chocolate chips until they are melted and the mixture is smooth. Pour the pudding into the ramekins or cups. If you want, cover the surface of each of the pudding cups with some cut out wax paper to prevent a skin from forming on the top of the pudding. Refrigerate, covered, until cold, at least 2 hours. Optional: Serve with whipped cream.
Buttermilk Fried Chickenoriginal recipe makes 4 servings1 (3 lb.) fryer, cut into pieces2 cups buttermilk1 large onion, sliced1/4 cup chopped mixed fresh herbs) or a teaspoon each of the dried herbs.1/2 teaspoon paprika1/2 teaspoon cayenne pepper2 cups flour1/2 teaspoon garlic salt1/2 teaspoon onion salt1 teaspoon cayenne pepperSalt and pepper2 cups canola oil, or other high smoke-point oil
Soak chicken overnight (at least 8 hours and up to two days) in buttermilk with onions, herbs, paprika, and cayenne pepper. Drain in a colander, leaving some of the herbs on chicken. In a large paper or plastic (sturdy) bag, mix flour with seasonings. Meanwhile, heat 2 cups of oil in a large, heavy-bottomed skillet (cast iron, stainless steel, or anodized aluminum - something that can take the heat) on medium high heat until a pinch of flour starts to sizzle when dropped in the hot oil (but not so hot that the pan is smoking). Remember when working with hot oil, always have a pan lid close by. Place chicken pieces in bag with flour and shake until thoroughly coated. Add chicken to hot pan and fry on 1 side for 12-15 minutes, until golden brown, and then use tongs to turn the pieces over and fry for another 10-12 minutes, again until golden brown. Be careful to keep the oil hot enough to fry the chicken, but not so high as it burns the chicken. To do this on our electric stove we have to alternate the settings between high to medium high several times while we are cooking.4 Use tongs to remove chicken from pan. Place on a rack over a cookie sheet or broiling pan for the excess oil to drain. Add more salt and pepper to taste.
Kosher, Maldon, or Black salt for topping (optional; not table/iodized salt) Preheat the oven to 425°F. In a large bowl whisk together the flour, cayenne, black pepper, baking powder, and salt. Set aside. Dice the butter into small pieces. If they get too warm then place them in a bowl and put it in the freezer for about 10 minutes before continuing. Toss the diced butter with the flour mixture until well coated. (Again, if into tossing the butter gets hot in your hands place the whole mixture in the freezer for a few minutes.) Add the scallions and cheese and toss until well coated. Add the buttermilk and mix with your hands until it just comes together. You may find you need an extra dribble of but-termilk, if so then go right ahead but do so judiciously. Do not over-knead. Roll the dough out onto a lightly floured surface. Knead once or twice; no more. Form into an 8x8-inch square and cut into 2x2-inch squares and top with a bit of high-quality salt if using. Bake for 12-16 minutes or until golden.
