Recipe Corner
Ingredients: 1/4 cup cornstarch 1 1/2 pounds beef flank steak 3/4 cup water 3/4 cup soy sauce 3/4 cup brown sugar
1/2 cup shredded carrots 3 green onions, chopped 2 tablespoons olive oil 2 cloves garlic, minced 1/2 teaspoon minced fresh ginger root
Directions:1 - Spread cornstarch into a wide, shallow bowl.
Dredge flank steak in the cornstarch to coat com-pletely; put into a large resealable plastic bag.
2 - Stir water, soy sauce, brown sugar, carrots, green onions, olive oil, garlic, and ginger together in a bowl; pour into the bag with the beef and seal.
3 - Put bag of marinating beef in the freezer until
the day before you wish to prepare it.4- Remove bag from freezer and put bag into a
bowl and place in refrigerator to thaw, at least 24 hours before you wish to prepare the beef.
5 - Empty bag into the crock of a slow cooker.6 - Cook on High until the beef is tender, 2 to 3
hours. Alternately, you can cook this on Low for 4 to 5 hours.

Ingredients: 4 large baking potatoes 8 slices bacon 1 cup sour cream 1/2 cup milk
4 tablespoons butter 1/2 teaspoon salt 1/2 teaspoon pepper 1 cup shredded Cheddar cheese, divided 8 green onions, sliced, divided
Directions:1 - Preheat oven to 350 degrees F (175 degrees C).2 - Bake potatoes in preheated oven for 1 hour.3 - Meanwhile, place bacon in a large, deep
skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
4 - When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise
and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
5 - Bake for another 15 minutes.
Twice baked potatoes go great with the slow cooker beef!
This is a quick and easy recipe for beef in the slow cooker.

1788 U.S. Constitution ratifiedNew Hampshire becomes the ninth and last
necessary state to ratify the Constitution of the United States, thereby making the document the law of the land.
By 1786, defects in the post-Revolutionary War Articles of Confederation were apparent, such as the lack of central authority over foreign and domestic commerce. Congress endorsed a plan to draft a new constitution, and on May 25, 1787, the Constitutional Convention convened at In-dependence Hall in Philadelphia. On September 17, 1787, after three months of debate moderat-ed by convention president George Washington, the new U.S. constitution, which created a strong federal government with an intricate system of checks and balances, was signed by 38 of the 41 delegates present at the conclusion of the con-vention. As dictated by Article VII, the document would not become binding until it was ratified by nine of the 13 states.
Beginning on December 7, five states–Delaware, Pennsylvania, New Jersey, Georgia, and Con-necticut–ratified it in quick succession. However, other states, especially Massachusetts, opposed the document, as it failed to reserve undelegat-ed powers to the states and lacked constitutional protection of basic political rights, such as free-dom of speech, religion, and the press. In Febru-ary 1788, a compromise was reached under which Massachusetts and other states would agree to ratify the document with the assurance that amendments would be immediately proposed. The Constitution was thus narrowly ratified in Massachusetts, followed by Maryland and South Carolina. On June 21, 1788, New Hampshire be-came the ninth state to ratify the document, and it was subsequently agreed that government un-der the U.S. Constitution would begin on March 4, 1789. In June, Virginia ratified the Constitution, followed by New York in July.
On September 25, 1789, the first Congress of the United States adopted 12 amendments to the U.S. Constitution–the Bill of Rights–and sent them to the states for ratification. Ten of these amend-ments were ratified in 1791. In November 1789, North Carolina became the 12th state to ratify the U.S. Constitution. Rhode Island, which opposed federal control of currency and was critical of compromise on the issue of slavery, resisted rati-fying the Constitution until the U.S. government threatened to sever commercial relations with the state. On May 29, 1790, Rhode Island voted by two votes to ratify the document, and the last of the original 13 colonies joined the United States. Today the U.S. Constitution is the oldest written constitution in operation in the world.

If life is war, then friends are our allies.
Best friends Gladys Smartt Short and Mary Magdalene Johnson Nun-ley know exactly what that means as they have shared more than 80 years leaning on each other through good times and bad, losses and gains, and have been each other’s strength through friendship.
Born in Grundy County, Short was born on July 4, 1914, and will soon turn 102. Mary was born April 22, 1914, and recently turned 102. The two bonded as children and have been best friends ever since.
Calvin Coolidge was the presi-dent of the United States in 1914. World War I started that year. To-gether, the friends saw each other through a century filled with wars with World War II, Korean War, Vietnam War, Iraq War, as well as The Great Depression.
They also witnessed some life-changing advancements in tech-nology, medicine and convenienc-es that we take for granted today. While computers, smartphones and the World Wide Web are a given, they saw the invention of electronic TV and when programs were first available in color. Other inventions include instant cameras, pacemak-ers, penicillin, microwaves, video games, jet airplanes, smoke detec-
tors, and even sliced bread.At an early age, Mary received
the nickname “Duck” which has followed her until this day. Most folks referred to her as “Aunt Duck” whether there is any relationship or not.
The two were full-time home-makers with lifelong, low-paid, coal miner husbands. Duck and Gladys told family members they shared hardships and happiness as best friends throughout their early mar-riages and child-bearing years and those will always stand out as pre-cious memories.
More like sisters, the two leaned on each other through the lowest points in their lives with the loss of husbands and children. Both ladies contribute black coffee and strong snuff to their sanity and longevity.
Best friends to this day, the two always celebrate their birthdays to-gether. Their grandchildren have a special birthday planned June 25 at noon.
A “Celebration of Life” party will be offered at Short’s home near Coalmont with Las Vegas perform-er Adam Tucker, who is a Tim Mc-Graw impersonator.
The Nunley, Johnson, Short and Smartt family members are ex-pected to attend, as well as other friends, family and anyone else who wants to drop by – everyone is asked to bring a covered dish and lawn chairs.
