    Choosing TheTurkey

    The Holiday Rub2 Tbsp. chopped fresh thyme

    leaves (save stems)2 Tbsp. chopped fresh rose-

    mary (save stems)2 Tbsp. chopped fresh sage

    (save stems)2 Tbsp. minced garlic

    2 Tbsp. minced shallots

    3 lemonsMix all ingredients above, set

    aside stems. Pepper to taste.

    Step 4: Wash turkey insideand out with cold water and patdry with paper towels. Place tur-key in roasting pan and lift upthe skin starting near the neck,and rub mixture onto the meatunder the skin.

    Squeeze juice of one lemonover turkey. Use remaining herbmixture to coat top of bird. Pricktwo lemons and place them intocavity with the stems from sage,rosemary, and thyme.

    Step 5:Preheat oven to 350.Cook until juice runs clear whenturkey is pierced at the base of

    leg. The turkey is done when themeat thermometer reads 180in the thickest part of the bird.

    After the turkey is cooked, letit cool for 15 minutes. Coolingmakes the meat easier to slice.

    How to Carve ATurkey

    BreakfastAn interesting study in the Journal of Pediatrics this year showed that eating breakfast had a significant impact on

    the weight of teenagers and adults. This study of 2,200 teenagers in the Minneapolis area looked at the average BMI(Body Mass Index).

    The BMI is a measuring tool that compares weight/height ratios. (weight in kilograms divided by height in meterssquared) A BMI of 18-25 is considered healthy, anything over 25 is considered over weight and over 30 is consideredobese. BMI calculators can be found on the internet or at your Doctors office.

    The study showed that teens that ate breakfast had a BMI of 21.7 on average and those that did not eat breakfasthas a BMI of 23.4. These people we followed up five years later and the study found that the pattern was the same.Those that did not eat breakfast had considerable more weight related health problems. As high as 34% of teenagersdo not eat breakfast.

    In natural health, we recommend a large breakfast, medium lunch and small supper. This is typically not the patternof most Americans. The saying, Breakfast like a King, Lunch like a Queen and Supper like a Pauper seems to be a verygood model for most of us. A good breakfast should be balanced with fats, carbohydrates, and protein. A pop-tartand a coke is not really the best breakfast.

    The word break fast actually tells us what that meal is all about, to break the overnight fast. At night our digestivesystem including the liver is supposed to rest and recharge itself. Literally break fast means to start things up again forthe new day. A cup of hot lemon or hot herbal tea, followed by a meal is one of the bestways to start the day. Coffee, the choice of millions, really is too acidic and does not reallyassist in the start up of all the enzymes systems that need to get going. If you must drinkcoffee, make it weak (should be able to see through it) and limit it to one or two cups.Remember, it takes 400 mg of calcium to buffer (neutralize) the acid in one cup of strongcoffee.

    Have a lunch with meat and protein in it. That way all the protein will be handled by 8pm. Then, you and your liver will be able to shut down for the night and rest. If you have abig meat meal for supper, the liver has to continue operations until past midnight and it getsvery little down time. This may contribute to insomnia.

    So, consider an experiment for 3-4 weeks. Have a good big balanced breakfast, highprotein lunch, and light low protein supper. See how you feel after a month or so. Thingswill most likely be much better.

    Michigan Gov. Jennifer M. Granholm has proclaimed October as

    Michigan Car-Deer Crash Safety Awareness Month.In Michigan in 2009 there were 61,486 reported car-deer crashes with 10 motorists killed and 1,648

    injured. About 80 percent of all car-deer crashes take place on two-lane roads between dusk and dawn.

    (Of the reported car-deer accidents Kent County is number one and Montcalm County is number five in

    the states highest accident rate).

    What can you do?

    Stay aware, awake, alert, and sober.

    Remember, safety belts are your best defense in any collision.

    Be alert for deer in spring and fall, especially at dawn and dusk.

    Heed deer crossing and speed limit signs, particularly on two-lane roads.If a crash is unavoidable:

    Dont swerve!

    Brake firmly

    Hold on to the steering wheel.

    Stay in your lane.

    Bring you vehicle to a controlled stop.
