Tomato sauce and tomato ketchup are popular condiments all over the world. Clean, wholesome tomatoes of intense red colour and of meaty, not watery texture are used for sauce making. High acidity and a rich tomato flavour are additional desirable qualities.

Sound tomatoes are washed very thoroughly, cored, sliced, heat crushed and pulped (through a pulper or juice extractor) to remove seeds and skins. Tomato pulp or paste is then cooked with the requisite quantities of spices, onions, garlic, sugar, salt and vinegar.

The whole mass is concentrated to a final TSS (Total Soluble Solids) of more than 25 per cent. The mass is finally passed through the finisher and filled into clean, dry bottles.

Bottles are cleaned, labelled and packaged for marketing. (Preservation is assured either by use of preservatives or by pasteurization).

Vacuum Dehydration Technology is currently worldwide most advanced technology for food dehydration processing. Compared with the traditional dehydration methods, the freeze-dried food produced with this technology features long period of quality assurance, good re-hydration nature, good-looking color, good flavor, taste and high content of nutritional ingredients. The dried food basically remains unchanged in its volume and shape, looks like sponge and has no shrinking. This drying technology can be widely used in process of vegetables, fruits, condiments, aquatic products, biological products, medicine, beverage, exemplar etc.

The vacuum Dehydration makes the subliming of the moisture in the pre-processed substance from solid state into gaseous state by -30quick-freezing under the vacuum condition.

The vacuum system is in combination structure of water-sealed pump + oil-sealed pump. The extraction of pre-vacuum is performed by oil-sealed pump group of large power and the vacuum for operation remains by water-sealed Roots pump group of small power so as to reduce energy consumption. Meanwhile, the water-sealed pump group can remove vacuity instability of the system due to poor water-removal performance of oil-sealed pump and emulsification deterioration of the pump oil.

Heating is conducted in closed water circulation system, where three-way adjusting valve is used for automatic adjustment of heat supply to the water circulation system to precisely control temperature of the heating plate. Besides, nitrogen is used for automatic pressure-keeping to ensure the working temperature of the hot water reaching 120 .

The rear-installed and side-installed water-catching cold trap is adopted. Compared with the outside-installed cold trap, the former one has advantages of short canal, lower resistance, and smooth steam canal, uniform and high-efficient water-catching. The cold trap uses special method of ammonium single-phase circulating refrigeration. It is more stable in supplying refrigerating liquid and easier in operation than the general method of liquid supply.

SP-I type quick-frozen vegetable pretreatment flow line mainly consists of high-pressure cleaning machine, selecting conveying machine, air bubble cleaning machine, screw blanching machine, normal temperature cooling machine, iced water pre-cooling machine and vibration water-dropping machine. It realizes automation of pretreatment and quick-freezing procedures, such as vegetable cleaning, selecting, blanching, cooling and water-dropping.The design and fabrication of this flow line absorbs the main advantages of foreign similar production line. It can adjust the time and temperature of vegetable blanching, and conveying speed to obtain the best processing effects for various kinds of vegetables. The equipment features stable running, reliable performance, low energy consumption, small land occupation, simple operation, convenient maintenance and flexible food stacking. The principles of preservation are: pasteurization to destroy most micro-organisms and enzymes freezing to inhibit microbial growth.

PasteurizationPasteurization is carried out by heating to 65 C for a period of 30 minutes.

Cooling and beating Ice cream is a complex mix of small ice crystals and air bubbles in a milk-fat/water emulsion. To achieve this, it is necessary to cool the mixture quickly to produce small ice crystals and at the same time incorporate air into the product by beating.

Ice cream makers are available commercially and work on the following principle. The mixture is placed in a bowl which is kept at a low temperature (either surrounded by ice and salt, or having been chilled in a freezer). It is then agitated by a manually-operated rotor or by a powered stirrer. At the end of this process the ice cream should be at a temperature of approximately -5 C, and be partly frozen.

Packaging and storage The ice cream is usually packaged in plastic, waxed paper, or cardboard containers, and is stored at below -18 C. The storage temperature is important for two reasons:

to maintain the texture of the product to prevent the growth of micro-organisms.

Ice Cream Processing

Ice cream is a frozen mixture which contains milk, sugar, fat, and optional thickeners (e.g. pectin or gelatin), colouring, and flavouring. It may be sweetened and flavoured in numerous ways with nuts, fruit pieces, and natural or artificial flavours and colours.

Ice cream may be transported in an insulated box (e.g. for sale from a bicycle). It is especially important to guard against thawing and re-freezing as this will cause changes in texture and mouthfeel, and there is the increased possibility of food poisoning by contaminating food poisoning microorganisms.

Tubular Heat Exchanger is specifically designed for the thermal treatment of low to high-viscosity products as well as products containingparticles, pulp and fibres.

You can choose between three types of heat exchanger plates with different embossed profiles:Plate type A for high thermal efficiency.Plate type B for lower pressure drops.Plates type C for highest differential pressure resistance.

CIP is the method used in sanitary processing plants to clean tanks, piping and even workspaces between production batches by automatically recirculating detergent and rinse solutions. The washing process consists of several cycles in which rinsing material is recycled through the vessels, pumps, valves and other process equipment in the flow system.

The system consists of a detergent tank for the readymade cleaning solution, pre-assembled on a base frame.The cleaning solution is circulated and heated up to the operating temperature. Conductivity measurement and in-line concentrate metering ensure that the required amount of detergent is added. The detergent flow rates are adjusted by the cleaning program. CIP modules are easy to integrate into the process and offer the mostappropriate cleaning even for demanding products.

Any closed vessel(tanker, tank, vat, chamber, hopper, or bin) can be "CIP". cleaned using one of the following spray devices: disc, stick, ball, ring, or tanker spray. Also, any closed circuit, including piping, pumps, valves, and plate heat exchangers can be cleaned in place.

With appropriate adaption, a "CIP" system can clean both tanks and line circuits.

Homogeniser

Homogenisation technology is based on the use of pressure on liquids to subdivide particles or droplets present in fluids into the very smallest sizes (submicron) and create a stable dispersion ideal for further processing. The passage of the product at very high pressure through a specially designed valve with an adjustable gap, called the homogenizing valve, is able to microsize dispersed particles down to the order of magnitude of micrometers and nanometers.

Homogenisers can apply dynamic pressure under continuous flow conditions, processing fluids like emulsions and dispersions for a large variety of applications, viscosities and physical properties.

This series of equipment are specially developed for material requiring better pulverization and homogenization at present .The link speed of multilayer stator-rotor reaches 115m/s at the rotation rate of 9000 RPM, which is first in China .So shearing pulverization technique is improved to a higher layer to satisfy processing requirements of some better pulverization and homogenization in the field of food, medicine and chemical industry concerned with products for daily use.The equipment uses modular design and insures high efficiency, security and stabilization through three-dimensional modeling and thermomechanical analysis with ANSYS .For different materials, we choose according processing models to satisfy different processing modes and consumers with higher processing requirements.

High-speed super shearing pulverization homogenizer operates at the relative high-speed movement of the rotor and stator. The material can be dispersed, blended, homogenized, emulsified and superfine ground effectively by the synthetic action of strong shearing, striking, grinding and cavity resulted from the very high link speed. The stator and rotor are both multistoried frames, which can improve the shearing time and efficiency availably and insure the processing effect energetically.
