Pork & vegie stir-fry

SERVES 2 SERVES 4 INGREDIENTS cup (100g) 1 cup (200g) brown rice

250g 400g pork loin steaks, fat trimmed, cut into strips1 tsp 2 tsp oil (see tip) 100g 200g green beans, chopped

1 red capsicum, thinly sliced3 6 spring onions, sliced

stick 1 stick lemongrass, finely chopped1 2 garlic cloves, crushed

1 tbs cup (60ml) lime juice1 tbs cup (60ml) sweet chilli sauce 1 tbs 2 tbs soy sauce

METHOD1. Cook rice following packet instructions. Drain, keep warm. 2. Meanwhile, lightly spray a wok with oil and heat over high heat. Add half the

pork and stir-fry for 1–2 minutes or until browned and cooked. Transfer to a heatproof bowl, then repeat with remaining pork.

3. Wipe wok with a paper towel, then add oil and heat over high heat. Add beans, capsicum and spring onions, along with cup (60ml) water. Add 1 tablespoons water to serve 2. Stir-fry for 4–5 minutes or until vegetables are just tender. Add pork, lemongrass, garlic, juice, sweet chilli sauce and soy sauce to wok. Stir-fry for 2–3 minutes or until fragrant and heated through. Serve pork with steamed brown rice.

Tip: We used canola oil.This recipe is lactose free.
