CAPRIS

CaprisMALVAZIJA (Malvasia)

Variety: 100% Malvasia Origin: Primorska wine-growing region, wine-

growing district of Slovenian Istria Vineyards: Debeli rtič, Labor – Eocene flysch,

marl and sandstone Sugar content: dry

Picking: by hand, late SeptemberVinification: After short maceration and

pressing, the must is left to ferment, partly in large oak barrels, and partly in acacia

and oak barrique barrels, where malolactic fermentation takes place. The wine is stored

on fine lees for 8 months.

Colour: Brilliant golden yellow Aroma: Intense fruity and floral notes, reminiscent of ripe apple, acacia flower,

vanilla and almond.Flavour: Full-bodied, juicy and ripe. The wine

gives an impression of charming fruitiness and minerality. It offers a harmonious balance

between freshness and elegance. The finish delivers delightful notes of vanilla and bitter

almond.Aging potential: up to 5 years

Food pairings: Pairs well with seafood appetizers, light pasta and risotto, scallops

au gratin, asparagus omelette, fish, shellfish, vegetables, and so forth.

CaprisREFOŠK (Refosco)

Variety: 100% Refošk Origin: Primorska wine-growing region, wine-growing district of Slovenian Istria Vineyards: Šantoma, Purissima – Eocene

Picking: by hand, late September and early October

Vinification: Grapes are macerated for 8-14 days at a temperature of 25-28°C. After

malolactic fermentation, the wine is left to mature in large oak barrels and barrique

barrels for at least 12 months.

Colour: Intense ruby with purple huesAroma: Sweet, ripe notes of blackberry, sour cherry, dried plums, with fragrant

and sophisticated earthy and woody undertones.

Flavour: The wine is fruity and complex. The soft tannins blend harmoniously into a deep and high-extract wine, distinctive of

After malolactic fermentation the wine is left to mature in large, 1000 litre oak barrels (botticelle) and barrique barrels for at least

Colour: Ruby with brick-red edgeAroma: Ripe and fruity, reminiscent of ripe strawberry, black mulberry, spices like pink pepper and cinnamon, dark

chocolate, cedar and rose.Flavour: Ripe and fruity, structured and

Vinification: Each variety is crafted separately. After short maceration and pressing, the must is left to ferment, partly in large oak barrels,

and partly in acacia and oak barrique barrels, where malolactic fermentation takes place. The

wine remains on fine lees for 8 months.

Colour: Intense gold with subtle glints of green

Aroma: On the nose, it offers a wide spectrum of scents, reminiscent of acacia flower, peach,

dried pears, citrus, dried apricots. Notes of wood, vanilla and silica round the incredibly

complex aroma of this wine.Flavour: Mouth-filling, sweet, smooth

and nicely ripe. The palate is greeted with delightful fruity notes that intertwine perfectly with the sophisticated wood

undertones, the minerality and the nice spicy buttery finish.

Aging potential: up to 5 years Food pairings: Pairs well with seafood,

poultry, vegetable risotto, white meat and pasta.

CaprisROSÉ

Variety: 90% Refošk, 10% Merlot Origin: Primorska wine-growing region, wine-growing district of Slovenian Istria Vineyards: Kortina, Sečovlje, Baredi –

flysch, marl and sandstone Sugar content: dry

Picking: by hand, late September Vinification: Crafted according to the

white wine production technology. Grapes undergo short maceration. Fermentation

takes place in stainless steel vats at a temperature of 14–18°C to preserve the

freshness and fruitiness of the wine.

Colour: Sparkly pale pink with cherry-red hues

Aroma: Delightful notes of raspberry, cherry, strawberry and other red fruit on the nose are a sign of the wine's incredible fruitiness

and freshness.Flavour: Its intense fruity character makes it thirst-quenching. The impression on the

palate is of wonderful freshness and appeal of red fruit, like strawberry, raspberry, cherry

and redcurrant.Aging potential: up to 3 years

Food pairings: Rosé can be served as an aperitif or as a companion to grilled tuna,

salmon, paella, salads, mozzarella with tomato, grilled poultry, curry and spicy

Colour: Intense ruby Aroma: Exceptionally complex, with

scents of ripe dark berries, sour cherry, kirsch-soaked cherries, undergrowth,

leather, liquorice, earth, dried mint and Mediterranean herbs.

Flavour: Rich and full on the palate. Tannins harbour a great potential for long-term aging in the bottle. The pleasant ripe fruitiness of the Refosco variety makes the

Picking: by hand, late September Vinification: Perfectly ripe and intact grapes are destemmed and undergo cold maceration. After pressing and

clarification, fermentation takes place in barrique barrels. The wine is aged in large

oak barrels until bottling.

Colour: Intense straw yellow with gold glintsAroma: Pronounced aroma of ripe fruit with notes of acacia flower, honey and a hint of

vanilla.Flavour: Mouth-filling, rich, with good

Vinification: Perfectly ripe grapes are macerated for up to 18 days. The wine is

stored in large oak barrels for the duration of malolactic fermentation. Then it is

moved into barrique barrels and aged for at least two more years.

Colour: Intense ruby with purple hues Aroma: On the nose, it surprises with a rich ripe fruitiness, reminiscent of ripe blackberry, sour cherry, mulberry and

bilberry, finely intertwined with notes of wood, undergrowth and spices.

Flavour: Rich and complex. The balancing acidity makes this rich wine lively and fruity. The fine tannin structure and

extract give the wine a beautiful lingering aftertaste.

Aging potential: 5–10 years Food pairings: Refošk pairs well with rich and greasy food. A good accompaniment

for cured meats, steaks, beefsteaks and other meat products.

Picking: by hand, early October Vinification: Ripe grapes are carefully

destemmed and macerated for 15 days. After malolactic fermentation the wine is left to

mature in a mixture of new and old barrique barrels for at least 3 years.

Colour: Very intense ruby with pomegranate edge

Aroma: Intense notes of ripe dark fruit, bilberry jam, vanilla, dark chocolate and juniper berries, with a delightful aroma of

wood.Flavour: Rich and complex aromas of

ripe bilberry, kirsch-soaked cherries, dark chocolate and herbs. A sophisticated note of wood frames a lingering finish supported by

velvety tannins.Aging potential: 5–10 years

Colour: Intense deep ruby with pomegranate glints

Aroma: Delivers aromas of ripe cherry, plum jam, green pepper, dark chocolate and undergrowth, evolving towards a

sophisticated note of wood. Flavour: Rich and full-bodied, with notes of kirsch-soaked cherries, dark chocolate and tobacco. Wonderful, lingering finish

accentuated by fine, velvety tannins.Aging potential: 5–10 years

Food pairings: Pairs well with beefsteaks and steaks, particularly if complemented

Variety: A Cabernet Sauvignon based wine with a touch of Merlot, Shiraz and Refošk

Picking: by hand, early October Vinification: Destemmed grapes are

Colour: Dark ruby, reminiscent of ripe sour cherries, with soft brick-red glints

Aroma: Very complex, reminiscent of forest fruit, tobacco, sour cherry and herbs, complemented by dark chocolate and truffle

aromas in the background.Flavour: Very complex on the palate, it offers

the perfect combination of the Cabernet Sauvignon's rich structure, Merlot's velvety texture, Shiraz's ripe fruitiness and Refosco's

Picking: by hand, early October, when the grapes are at their highest point of noble

ripeness Vinification: After destemming and crushing,

grapes undergo short cold maceration. The fermentation process takes place at a

temperature of 16°C. When the wine reaches the desired alcohol content, fermentation

is terminated by cooling and filtration. The wine is left to age, partly in stainless steel vats, and partly in large oak barrels, until bottling.

Colour: Brilliant, intense gold colour with straw yellow gleams

Aroma: Aromas of rasins, honey, dried apricots and pears, intertwined with acacia

flower, Muscat and citrus notes.Flavour: The Prädikat character follows

through on the palate and reflects the region's plentiful sun and the nobility of Istrian

Malvasia. This delightful semi-sweet wine delivers a wide range of dried fruit flavours,

complemented by almond and honey undertones. The lively acidity ties the flavours

Picking: by hand, early September Vinification: After destemming and

crushing, grapes undergo maceration at a temperature of 23°C for 3 days. When the wine reaches the desired alcohol content, fermentation is terminated by cooling and

filtration. The wine is left to age in stainless steel vats until bottling.

Colour: Brilliant, with a soft scarlet colourAroma: Intense fruity-floral aroma with

notes of candied orange peel, strawberry, rose, vanilla, sweet spices and caramel.

Flavour: Incredibly rich, but elegant and typical of the variety. The aromas on the nose follow through on the palate. Dried cranberries, strawberry, rose and vanilla

dominate the finish.Aging potential: 3–5 years

SLADKI REFOŠK(Sweet Refosco)

Picking: by hand, early October Vinification: After destemming and crushing, grapes undergo maceration at a temperature of 25°C for 4 days. When the wine reaches the desired alcohol content, fermentation

is terminated by cooling and filtration. The wine is left to age in stainless steel vats until

bottling.

Colour: Brilliant, with an intense dark ruby colour and purple edge

Aroma: Intense aromas of blackberry, bilberry and sour cherry dominate this

fruity red.Flavour: Sweet, full-bodied and rich. The variety of ripe fruits on the nose follows through on the palate. The great acidity

and fine tannins keep it from being overly sweet and deliver a lingering and rich finish.

Aging potential: 3–5 years Food pairings: Pairs well with red and black forest fruit and berry desserts. It makes also a great sweet sauce for ice cream and panna

Sparkling wine – traditional methodCAPRIS

Variety: 80% Chardonnay, 20% Malvasia Origin: Primorska wine-growing region, wine-

growing district of Slovenian IstriaVineyards: Ricorvo, Sečovlje – Eocene flysch,

marl and sandstone Sugar content: brut

Picking: by hand, late August Vinification: This sparkling wine is produced

according to the traditional method. The base wine undergoes temperature-controlled

fermentation and long aging on fine lees. The second fermentation takes place in bottles.

The wine is stored on the lees for at least 36 months.

Colour: Rich golden yellow colour, with fine sparkle and strings of tiny CO2 bubbles.

Aroma: Ripe and rich, the combination of fruit and honey intertwines beautifully with the

elegance of this wine and caresses the senses. Velvety and serious, with a lot of freshness

and zest.Flavour: Structured, full-bodied and delicate at the same time. The aftertaste is elegantly fresh and incredibly dry. The hint of bitter almond on the finish shows off gastronomic power and

pairs pleasingly with particular dishes.Aging potential: 5 years or more

Food pairings: Perfect aperitif. Pairs well with fresh seafood and meat pâtés, pasta with truffles, lobster, white meat, and so forth.

Vinification: Temperature-controlled fermentation at 16°C according to the white wine production technology, and secondary

fermentation according to the Charmat method in pressurised tanks.

Flavour: Delightful, fresh and charismatic, all attributes of the Malvasia variety that after secondary fermentation develops a gorgeous

and aromatic finish with a slightly sweet aftertaste.

Picking: by hand, in SeptemberVinification: Grapes undergo short maceration, just enough for the wine to acquire the trade-

mark pink colour, followed by temperature-con-trolled fermentation at 14 - 18°C according to the white wine production technology. Aging

takes place in stainless steel vats to preserve the freshness and fruitiness of the wine. The second-ary fermentation is carried out according to the

Charmat method in pressurised tanks.

Colour: Sparkly, intense pink colour with cherry-red hues. An exuberant wine with

rising strings of tiny bubbles.Aroma: Delivers fragrant scents of raspberry, cherry, wild strawberry, cranberry and red

currant.Flavour: The impression on the palate is of

fresh strawberry and red fruit like raspberry, cherry and red currant, livened up with fine

soft bubblesFood pairings: Capris Rosé is a great

sparkling wine for socialising and can be served as an aperitif or as a companion to

fresh berries, salmon, paella, summer salads, mozzarella with tomato, seafood dishes,

Picking: by hand, late SeptemberVinification: Grapes undergo short

maceration at a low temperature. Gently pressed must is then clarified and fermented

in stainless steel vats at a temperature of 16°C. A second fermentation according to

the Charmat method allows the preservation of the characteristic aroma, freshness and

fruitiness, inherent to the variety.

Colour: A brilliant, golden yellow coloured wine, with intense sparkle and plenty of

bubbles rising in fine beads.Aroma: Intense aroma of the Muscat variety, reminiscent of jasmine flower, apricot, lychee

and gooseberry.Flavour: The impression on the palate is of

fresh apricot, citrus, cantaloupe and tangerine, complemented by mellow acidity and cheerful

bubbles.Aging potential: up to 3 years

Food pairings: An excellent choice while having a relaxing chat, or if you simply wish

to conclude a meal on a sweet note. Pairs well with spicy dishes, like grilled shrimps or chicken with spicy sauce, Asian food, fresh fruit salads, vanilla custard and fresh fruit

Sparkling wine –Charmat method CAPRIS REFOŠK

Variety: 90% Refošk, 10% Merlot Origin: Primorska wine-growing region, wine-

growing district of Slovenian IstriaVineyards: Prade, Baredi – Eocene flysch,

marl and sandstone Sugar content: sec – (20 g/l)

Picking: by hand, late SeptemberVinification: Grapes are macerated for 4 days

at a temperature of 25°C. Gently pressed must is then fermented in stainless steel

vats at a temperature of 18°C, followed by partial malolactic fermentation and a second

fermentation according to the Charmat method. The wine is stored on the lees for 6

months.

Colour: Deep ruby, with intense sparkle and plenty of bubbles rising in fine beads.

Aroma: The Refosco variety adds aromas of ripe dark berries and sour cherry.

Flavour: Structured, rich and delicate at the same time. The elegant freshness of

lively bubbles is complemented by luscious fruitiness and smoothness. The finish reveals a ripe fruity note of dark berries and sweet

tannins.Aging potential: up to 5 years

Food pairings: Pairs well with cured meats and other cold meat starters, spicy cheeses and not overly sweet dark berry tarts. An excellent choice while spending leisurely

moments in good company.Serving temperature: 6–8°C
