Preston Brook Village News September 2019 What a strange spring and summer we had. Blowing hot and cold as they say. A really beautiful warm, if not hot, spring with a short coldish blast into July then another heatwave. Then August decided to change it all. Postpone the BBQs. Of course this is published before the autumn kicks in and I always look forward to September. There is something warm and calming at the start of the harvest. The fruits of the labours are rewarding. An abundance of apples and pears, late raspberries and blackberries. Our local Farmer gathering in the wheat which we put on our breakfast table. That’s if you buy the local product of course from our new store not so far up the road. Whoops am I plugging something? And why not I hear you cry, we should be supporting local produce. In fact there are eggs in abundance on our doorsteps both ends of our village. Canal width of course. How many of us have taken the lovely walk along the canal. Either way is enchanting but if you walk south, as the crow flies, there is that old fashioned rural loveliness before the tunnel. Free Books would you believe, fresh eggs to buy and a doggy poo station. Keeping the canal path clean with grateful thanks to our volunteer Finally remember our Annual Hatton Show is on Saturday 14 th September in the field opposite our Church, All Saints Daresbury. GreenBeanSaladwithBasil,Balsamic,andParmesanINGREDIENTS

• 12oztrimmedgreenbeans,cutto2to3inchlongpieces

• Salt• Smallfinelychoppedredonion• 1tablespoonsbalsamicvinegar2tablespoonsextra

virginoliveoil• Goodhandfulchoppedfreshbasilleaves• 3/4ozfreshlygratedParmesancheese• Freshlygroundblackpepper

METHOD

1. Soakchoppedonionsinwater:Placethechoppedonionsinasmallbowlofwater.Thiswillhelptaketheedgeofftheonions.Letsitwhileyoupreparetherestofthesalad.

2. Blanchthegreenbeans:Bringalargepotofsaltedwatertoaboil.Addthegreenbeanstothewaterandblanchonlyforabout2minutesorso,untilthebeansarejustbarelycookedthrough,butstillcrisp.Freshyoungbeansshouldcookquickly.Older,tougherbeansmaytakelonger.

3. Shockinicewater:Whilethebeansarecooking,preparealargebowloficewater.Whenthebeansareready,useaslottedspoontoremovethemfromtheboilingwatertotheicewatertostopthecooking.Drainthegreenbeansandtheredonions.

4. Tosswithredonion,balsamic,Parmesan:Placethegreenbeans,redonion,andchoppedbasilinalargebowl.Sprinkleintheoliveoil,tosstocoat.SprinkleinthebalsamicandParmesancheese.Tosstocombine.Seasontotastewithsaltandfreshlygroundblackpepper.
